Q. I have more ground beef than I know what to do with. Other than burgers, meatloaf and chili what are some easy recipes that I you have to share to go through the beef? I have a family of 5 including 2 teenage boys so the beef was packaged in 2 lb increments.
A. We like tacos and burritoes in our family. I usually open a can of refried pinto beans to go with the dish. In your family, you would probably want at least two, and possibly three cans, because of your teenage boys. Or, of course, you could cook the beans from scratch, which would be far more economical, and probably healthier too. Charro beans are good with tacos or burritoes, too. We like Mexican/Spanish rice sometimes, and we always like a nice green salad with all the trimmings.
There's shepherd's or cottage pie, too. I like to make hamburger stroganoff, you can use your own mushrooms and onions and cream sauce and sour cream. My husband and his brothers (his was a blended family, and his mother had FIVE teenage boys at once!) loved spaghetti as boys, and still love it today. In fact, I'm making spaghetti Bolognese for dinner tonight. Salisbury steak is basically hamburger patties (with or without added breadcrumbs), shaped into ovals, and baked in the oven with a cream or mushroom sauce. Make plenty of baked potatoes. I suggest at least two potatoes for each boy, and possibly three, depending on how active they are.
On a side note, learn to make a cream sauce, rather than just opening a can of cream of mushroom soup. Don't get me wrong, I love cream of mushroom soup, and would eat it with a spoon, but it does have a lot of sodium in it, and it's better to make a cream sauce if you have enough time (and energy).
I suggest going to the supermarket and looking at the Hamburger Helper packages. Don't buy them, just look at them for recipe ideas. Just about all of them are some kind of starch and a sauce to go with the hamburger. Oh, and the difference in Stroganoff and Romanoff is that Stroganoff has sour cream in it.
Your boys are old enough to learn to cook, too. Set them to the task of coming up with a new recipe each week. They don't have to invent the recipe, they just have to find them on the internet or in the library or your own cookbooks. And then they have to cook those recipes. ;D Seriously, it's good for teens to learn to cook, and it's a valuable skill for the rest of their lives.
If you have a slow cooker or a big stock pot, now is the time to make stock. Throw the bones in there, with a quartered onion and maybe a stalk of celery and a carrot. Let it simmer for hours. Put some vinegar (white vinegar is fine) into the pot, just a couple of spoonfuls, in order to leach the calcium out of the bones and into the stock. The vinegar flavor won't last. It might smell disgusting (bones by themselves usually do) but it will be fine, once you strain all the solids out of it. Yes, throw away the veggies, because they will be completely flavorless.
Also, have cookouts. Hamburgers taste much better when the patties are cooked over an open flame.

Whats a good recipe to make with hamburger?
Q. I mean something really different. I'm tired of hamburger helper, meatloaf, spaghetti and so on. I tried swedish meatballs but didn't really care for them. I need something completely original. Thanks
A. Hamburger quesadillas are really great and easy to make.
Just get a store-bought tortilla, put some cooked (a little undercooked is fine) hamburger meat all over it, sprinkle with shredded cheese, and drizzle with taco sauce or hot sauce. Place another tortilla on top, and pop it into a toaster oven or a conventional oven at 450 degrees F for a few minutes until the tortilla just starts to brown a little. Better than Taco Bell!
You can also make a chop steak by broiling hamburger in a hefty patty in a pan or grill it, then serve it in a bed of rice or mashed potatoes and drizzle with brown gravy. Serve with veggies on the side for a delicious, complete meal.

Easy recipes for a picky husband?
Q. Help! My husband likes bland food. He won't eat anything really spicy,or strange. I am hoping someone has a website or good recipes that he will actually eat?
Thanks!
He likes mashed potatoes, steak, meatloaf, mac and cheese. Simple comfort food, but without going crazy with flavorings and spices.
Thanks!

A. My hubby can be the same way, not very daring when it comes to food, here are the things I make alot of the time:
Chicken with lemon and garlic, with rice pilaf and salad
Meatloaf, baked potatoes
Bar be qued ribs with mashed potatoes
Chicken casserole, with rice, cheese, salsa, veggies and cream of chicken soup. Layer and bake, fairly simple
Blts on sourdough bread with veggie soup
Grilled cheese with ham, and tomato soup
Pork chops baked with red onion slices, lemon, ketchup, and bar be que sauce... sounds strange but really yummy.
Honey glazed ham
Chili hot dogs
Spaghetti with meat sauce or meat balls
Chicken or beef tacos... Love those!
Lasagna and salad
Tuna casserole
Carne Asada on the grill with rice and beans and warm tortillas, guac and sour cream
Home made potato cheese soup with french bread and salad
Chicken pot pies with salad
Fried chicken with gravy and coleslaw
Fresh fishes, like salmon or halibut with lemon, garlic and butter.
Chicken and brocolli quiche with fresh fruit or a salad.
Baked shells stuffed with spinache, mushrooms and ricotta cheese.
If you are interested in any of these recipes feel free to email me, they are all fairly basic though.
If all else fails, resort to hamburger helper meals LOL! Good luck hon! :)
