My husband will happily eat vegetarian, but only if he can't tell it's not real meat
I already make with fake ground beef:

Bolegnese
With fake sausage:
A tomato sauce to serve over pasta

Vegetarian chili is great with fake ground beef. You can also make fake meat meatloaf - here's one recipe but there are others online http://frank.harvard.edu/~howard/recipes/veggieloaf.html
And you can follow the same type of recipe for fake meatloaf and make meatless balls that you can serve with pasta
With the fake sausage you can do Italian style sausage, peppers and onions and serve that either on a bun or over polenta, pasta, rice or even mashed potatoes - just use veggie sausages instead of meat

Morningstarfarms.com , click on recipes. They have a "meatless loaf" that uses their veggie crumblers. It's very good, if you're trying to mimic real meatloaf.
