What Vegetarian Meat substitutes actually taste like meat?

Q. My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

A. Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

What do you eat when your money is tight?
Q. Thanksgiving is around a corner, but my money is tight lol. What does people eat when their money is tight? I cook some ground beefs like meatloaf, spagettie, sloppy joe or humberger helper, but getting bored. Any other ideas?

A. Meat is expensive. I eat a lot of beans to get my protein with only enough meat for flavoring. These can all be cooked in a slow cooker while you are at work.
dry Navy beans cooked with a ham hock. cornbread
dry Butter beans cooked with chicken backs. slice of hot home made bread.
dry Pinto beans with beef ribs. toasted garlic bread.
Kidney bean salad. (1 can kidney beans, 1 hard boiled egg, pickles, & onion chopped, mayo)
Pork & beans made into baked beans with chunks of ham. and scalloped potatoes.
Refried beans and rice. add some shredded pork and you have a meal.

The beans are about $1. for a 1lb. bag which will easily make two meals for 2 people-----$.50 per meal....plus another $1.00 for the meat that is $2.50 for the beans, .50 for the bread and a .35 to add a potato...for a total of $3.35 for a meal for two of beans cooked in meat broth, bread, and a potato.
________________________________________
Eat potatoes...mashed, fried, hash browns, boiled, baked, potato cakes, scalloped, oven fried, creamed with peas or carrots....
A 10 lb. bag of potatoes is $4. on sale for less. You get at least 25 potatoes in that for two people that would be a veggie for each meal for 12 days. (.35 per meal for 2)

Refried Beans Recipe
2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
3 quarts of water
1/2 cup chopped onion (optional)
2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
1/4 cup water
Salt to taste
Cheddar cheese (optional)
1 Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
2 Cook the beans in water.
Regular method Put beans into a pot and cover beans with at least 3 inches of water - about 3 quarts for 2 1/2 cups of dry beans. Bring to a boil and then lower heat to simmer, covered, for about 2 1/2 hours. The cooking time will vary depending on the batch of beans you have. The beans are done when they are soft and the skin is just beginning to break open.
Strain the beans from the cooking water.
3 Add the onions and lard/fat/oil to a wide, sturdy (not with a flimsy stick-free lining) frying pan on medium high heat. Cook onions until translucent. (Note the onions are optional, you can skip them if you want.) Add the strained beans and about a 1/4 cup of water to the pan. Using a potato masher, mash the beans in the pan, while you are cooking them, until they are a rough purée. Add more water if necessary to keep the fried beans from getting too dried out. Add salt to taste. Add a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese if you want. When beans are heated through (and optional cheese melted) the beans are ready to serve.

Cookbooks for beginners and/or college students?
Q. My brother intends to move out of his dorm and into an apartment. He's never really cooked before (stuck with the microwave and toaster.) I see a variety of beginner/college student cookbooks, but I was wondering if people had suggestions.

He's not vegetarian/vegan and he doesn't have any dietary needs/allergies at this time. (Maybe he will depending on his roommates, but that's not set yet.)

What do you suggest?

A. There are some really good "3 ingredient" and "4 ingredient" cookbooks for sale (I think I saw the 4 ingredient one at Costco)

These are a great starting point & not very intimidating. And, of course, you can totally spice things up to taste!

(I'm not much of a cook either! LOL - please check out my meatloaf recipe question!)

Does anyone have any ideas of what I could bring to lunch?

Q. I'm going to a public school from a Catholic school, and there is a student at this school who has a severe peanut allergy. Normally I would just say, "Screw other people's needs," but no nuts are allowed in the building at all. So my problem is, what will I bring for lunch? I'm a vegetarian, and, of course, I'm not really comfortable with being un-vegetarian, so if they are serving meat in the cafeteria, what can I bring besides salad that will fill me up?

A. Are you looking for easy recipes that you can make fast and bring to that lunch? There are so many options. Why don't you start looking at these healthy sandwiches - all without peanuts. I am eating these almost daily in summer, like a whole wheat bread with mustard greens, hummus, and tomatoes or a sandwich wrap with veggies, sesame seeds, and ginger:

http://www.belsandia.com/healthy-lunch.html

I also have plenty of vegetarian full meal recipes that you can prepare. If someone in your home cooks for you, have them make plenty of one recipe and freeze it, so you can take a portion with you every other day or so:http://www.belsandia.com/healthy-meals.html

Why don't you try the vegetarian meatloaf recipe, then bring it to school and have other kids try it too. Wouldn't it be fun if they like it and won't even notice that it is meat-free? Maybe you can win over some like-minded eaters this way:

Does anyone have a recipe for vegetarian stuffing?
Q. I'm looking for something easy and without too many ingredients. Thanks.

A. Ingredients

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.

Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.
Yield 10 servings
Time an hour
Tools

* large frying pan
* wooden spoon
* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.

Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.

What is the best vegetarian recipe for a main course? What is the best dessert?
Q.

A. Veggie Meatloaf

You won't miss the meat in this flavorful dish! Serve with mashed potatoes for a great meal! You can also substitute diced eggplant for the mushrooms.

INGREDIENTS:
1 cup uncooked white rice
2 tablespoons vegetable oil
1 onion, finely chopped
1 cup cooked lentils
1 cup chopped fresh mushrooms
1 tablespoon vegetarian Worcestershire sauce
salt and pepper to taste
1 egg, beaten
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried parsley
1/2 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Meanwhile, heat oil in a small skillet over medium heat. Saute onions until tender. Set aside.
In a large bowl combine cooked rice, lentils, mushrooms, Worcestershire sauce, salt, pepper, egg, garlic powder, Italian seasoning, parsley and cooked onions; mix well. Press mixture into prepared pan; spread ketchup on top of loaf.
Bake in preheated oven for 45 minutes.

Hariton's 'Famous' Vegetarian Casserole

This is a very tasty dish consisting of all kinds of fresh vegetables and herbs baked in the oven. This will tantalize your taste buds. It has been a sell-out at our Greek Church at every function for five years now. We serve this on toasted, warm pita bread.

Original recipe yield: 36 servings.

INGREDIENTS:
8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic, cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 (15 ounce) can tomato sauce
3/4 cup olive oil
salt and pepper to taste

DIRECTIONS:
Prepare the eggplant before assembling ingredients, by cutting them into 2 inch chunks and putting them into an extra large bowl with salted water to cover. This will draw out the bitterness from the eggplant. Let this sit for about 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Cut the potatoes, green bell peppers, onion, squash and tomatoes into 2-inch chunks. Cut the green beans and mushrooms in half and peel the garlic cloves.
Drain and rinse the eggplant, then combine it with all the other chopped vegetables, the dill, oregano and basil and place all into a 3x13x18 inch roasting pan. Pour the tomato sauce and olive oil over all.
Bake at 375 degrees F (190 degrees C) for 2 1/2 hours, adding a little water about halfway through cooking time to keep moist.

Easy Peach Cobbler
This is a great peach cobbler--so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

INGREDIENTS:
1 cup white sugar
1/2 cup butter, room temperature
1 cup self-rising flour
1 cup milk
1 (15 ounce) can peaches

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a one-quart baking dish or 9 inch square pan, cream together sugar and butter. Mix in flour and milk until smooth. Pour peaches and their juice over the top.
Bake 25 to 30 minutes in the preheated oven, until golden brown.

Note: I didn't have self rising flour, so I used (according to a "substitutions" website I found) 1 cup of flour (minus 2 tsp), 1/2 tsp salt and 1 1/2 tsp baking powder for every cup of self rising flour.

I am looking for a good veggie loaf recipe...?
Q. But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

I'm not very creative at cooking so I need a tried and tested recipe. Any help is MUCH appreciated!

A. Veggie Loaf
RECIPE BY: Prose
This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.

Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.

A 10 lb. bag of potatoes is $4. on sale for less.

Looking for some hearty, filling vegetarian recipes?
Q. I am looking for some good, hearty vegetarian recipies. I am mainly looking for lunch items. I try to stay away from soy, I have reactions to it. I am breastfeeding and I have trouble finding food that fills me up.
Thanks!

A. I can absolutely help you out here. Here are some of my favorite recipes:

Vegetarian Meatloaf: http://www.recipezaar.com/Really-Good-Vegetarian-Meatloaf-really-33921

Tamale Pie: http://www.recipezaar.com/vegetarian-tamale-pie-392881

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

What should I make for dinner?

Q. I'm in my early 20's and am slowly teaching myself how to cook. I've decided recently to master a new recipe each week. So far I have done: baked ziti with sausage, baked macaroni and cheese from scratch, Italian meatloaf stuffed with cheddar cheese, and cheesy whipped mashed potatoes.(As you can tell I'm not on a diet) lol. All of these have turned out amazing thanks to all of the research/prep I do ahead of time.

Now here's my problem: I need ideas of new recipes to try. It doesn't matter how much time or money it takes to make the recipe. If it sounds good enough I will try my hardest, as I am very serious about learning to cook.

Please suggest any food you love to eat/cook. Especially comfort food.
Although, I will tell you I am not a vegetarian and love meat, generally do not like soups/ stews, and am not big on recipes with a ton of veggies. No salad recipes please =) Thanks.
Also, in addition to any recipe that tastes good, I am also looking for a good steak recipe. I like my steak to be cooked medium/medium well. I've tried to make it in the oven under the broiler because I really love the charred taste, but it ALWAYS turns out over cooked. Any suggestions? Also, what cut of steak would you recommend?

A. If you are fond of Chinese cuisine then try your hands on chicken dumplings ( also popularly known as Chicken Jiaozi). They are easy to make and deliciously mouth watering.

What foods are really good for you?
Q. I want to eat healthy all the time now, but i want to know some good but healthy foods I can eat, instead of junk food. I love sweets and I need something healthy to replace that. I'm only giving up junk food and I'm also going to try to drink at least 8 glasses of water a day. Thank you! <3

A. *Fish of any kind...broiled or baked (any way but fried), especially salmon, tuna, etc...My personal favorite is tilapia. Season with something like Ms.Dash, cayenne pepper, etc.

* I personally don't eat beef (I don't like the taste), and it's also an added benefit that in general turkey is healthier. To add, it's not that you should never eat beef, it's that you should try to cut back on it if you do eat it and replace with ground turkey. So when I do eat things that normally use beef like burgers, meatloaf, chili, etc, I just replace it with ground turkey. But in general, I probably eat more Morningstar Farm Grillers & Boca Burgers.(vegetarian burgers). You can buy them in bulk BJ's or Sam's Club or you can look up an easy recipe for black bean burgers online. The good thing about the mock veggie burgers, you not only get your protein, but you get some of your vegetable needs too.

*Eat lots of vegetables like kale, collards, swiss chard, spinach, carrots, cabbage, baked potatoes(to a minimum), cucumbers, cauliflower (cauliflower mock mashed potatoes are really easy & taste exactly like mashed potatoes to me) broccoli, peas, onions, sweet potatoes, etc...It really just depends on what you like.

The same goes for fruit, whatever you like...Apples, bananas, strawberries, plums, grapes, mangoes, peaches, etc.

*Salads-Add things like beans, chicken, eggs, avocado, or canned tuna, for protein; & sprouts, tomatoes, carrots, cucumbers, corn, mandarin oranges, pineapple, apples, nuts, etc...Basically, you can add any fruit or vegetable you like. Just remember to keep your salad dressing healthy & try to make it a well-rounded salad/meal. Just google 'how to make a healthy salad' or 'what vegetables to add to salad', or something similar. I also love spinach salads & fruit salads. You can look up recipes online & tweak them to fit your own personal preference. Watch out for the heavy dressings. For instance, when I'm tired, I just make a spinach salad with walnuts, spinach, and strawberries & my dressing of choice instead of following a recipe.

It goes without saying to eat whole grains such as brown rice & wheat bread. I also eat low-fat cottage cheese (I don't dislike it, but for some reason, I can't just eat it plain, I have to mix it with peanut butter and honey, but you can eat it however you prefer). & I also drink lots of herbal teas, only sweetened with honey, but you can also use any type of natural sweetener you like.

To be honest, I have no problem eating really healthy, but I have a really bad sweet tooth, especially for chocolate, and nothing really combats that, not even dark chocolate, & the only thing I can recommend are granola bars, 100 calorie snack packs, skinny cow desserts, & lean cuisine desserts, all of which are still processed, but at the end of the day are still better than eating a 500 calorie dessert. Plus, you can look up a ton of low-fat, low-carb, low-calorie dessert recipes online...Basically, there's a ton of information you can find just browsing/researching online. Good luck.

My husband likes to eat?
Q. Food that is crappy!!!! He is addicted to Kraft White Cheddar Macaroni and Cheese and frozen pizzas. I am mainly a vegetarian and although I do eat meat on occasion, I eat very healthy. I cannot get him to eat anything "good for you". Occasionally he will eat a green bean but it has to be cooked in butter with ham hocks and bacon grease for 9 hours. I only do this for holidays. He always says, make anything you want honey, I will try it. This doesn't happen. I am always making 2 meals as it is just the two of us and I don't mind cooking at all, I just want to make him eat better. He likes other foods in addition to these things, but his choices are limited. Any suggestions as to what to do? Now, there are about 20 meals I make that all of you have in your arsenal of recipes, meatloaf, polish hambergers, spaghetti, lasagna, ect.... but I want him to come over to the healthy side!!! I don't mind making those things but want him to try "different" things...
I don't argue over food, duh. It is not an issue in my house, I am 36 not stupid. I was just seeking advice idiot.
Everyone in the south cooks thier greenbeans for 9 hours, dude they rock, they are just a heart attack waiting to happen!!!! LOL, really the beans are a staple in Georgia!!!!
Luvly me is obviously not married and concerned about anyone but herself!
Princess doenst have a clue either. ALL of your answers are so GOOD...at least the positive omes are, I have tried EVERTHING ya'll have suggested....he is a hopeless dope but I love him so much and I just want him FOREVER. He is so cool, and I am going to have a hard time trying to pick a best answer. I hope everyone knows, I LOVE YOUR ANSWERS and ya'll have been very helpful, the dumb people are silly! Thanks everyone!

A. what i did with my husband was, i added fresh veggies and herbs to his meals without telling him.

most of the recipes you mention are easy to do that with
add more garlic, onions, carrots, tomatoes, celery, spinach, peas, etc
to everything you cook

and when you make him a salad... add meat to it
he will eat it

Do you think this would taste okay?!?
Q. So tonight we're having spaghetti and meatballs for dinner, but i'm a vegetarian so i was trying to think of a substitute for the meatballs....do you think it would be any good if i just took spicy black bean burgers and rolled them up into balls? lol. or do you have a good, easy recipe for vegetarian "meatballs" thank you! :)

A. That sounds soooooooooooooo good! There are other recipes too! Try anything that comes to mind!--------------------------------------------------------------------------------

i made these "meatballs" tonight and they were fabulous! i also figured out the nutrition of them and one meat ball is only 37 calories and 4 grams of protein and 2 grams of fiber! wow!

http://crueltyfreeshop.com.au/index....roducts_id=131

i added marjoram, thyme, garlic powder instead of raw garlic, and nutritional yeast aswell. (i didnt have tomato juice either so i just mixed tomato sauce and water for the tomato juice it called for) but one thing i would change is cut back on the salt. it calls for 1 tsp of salt, i would have used only a couple dashes or half a tsp instead.

im going to make the "meatloaf" this week sometime. ill post about how it is! (ive been craving for a long time a vegan loaf like this that tastes like my moms old meatloaf. im very excited to try it.)

ive just discovered textured soy protein and how great it is, how much nutrition it has (ive been on the search for lots of different vegan proteins that are really high in protein but not too high in calories) and ive been making lots of stuff with it. hence why i found this recipe for the balls and loaf.

My friend went on a nondairy diet. He said dairy is very bad for you. Is this true?
Q.

A. You’re one of those people who have one of those friends.

No, dairy products are not “very bad” for you. That would be like saying that exercising is very bad for you…just because you can hurt yourself with bad form, or you would become an exercise addict (addicted to your own feel-good body chemicals) or because you can be run over by a car or bitten by a dog while jogging. You just have to use caution, moderation and be safe and alert.

Dairies, especially milk, get a bad rap for several reasons, mostly because we are not calves (I eat carrots and I’m not a rabbit…I eat chicken and I’m not a fox) and also because of the animal fats that it contains (so it can contain a lot of calories of scary saturated fats) and also some people have issues with digesting lactose (the sugar in dairies). Also if dairy products are highly processed and you consume huge quantities, you get the undesirable side effects of getting too much hormones and antibiotics (but the same could be said for any meat or even eggs if you don’t buy organic food).

Basically, dairies are “complete food”…you get your carbs, your protein, your dietary fats, your vitamins/minerals, your water…A human being can survive on a whole milk and potato diet, like the Irish did, until they got a potato crop disease (the Great Famine of Ireland).

Humans are omnivorous (they can digest both plants and animal food). The main benefits of consuming dairy products is the great source of calcium and protein…but you can avoid dairies (like if you’re ovo-vegetarian or vegan) if you’re nutritionally savvy (hopefully you either know how to cook or know someone who does), so you can get your calcium and protein from other sources.
You can get calcium from sardines with bones (they rate second after milk), collard greens and kale, turnip greens, salmon, broccoli, almonds, tofu, tortilla corn, kidney and black beans (in order of calcium content).

Good high protein food are eggs (whites and no more than one yolk a day), lean meat, fish and poultry (do not eat the skin), legumes (beans, peas, lentils, including soy milk and tofu that comes from soybeans which are legumes), grains (rice, maize...called corn in the US, whole-wheat pasta and bread, rye, buckwheat, oats, millet...) and nuts/seeds (peanut butter included).

Combine legumes and grains and you’ll get complete protein. Like eating a slice of bread with beans, or adding rice to lentils, or peas to pasta...even combining legumes and grains in different meals (during the same day) will have them meet later on in the intestines to form complete protein.

Food with both calcium (for the bones) and protein (for the muscle) are the best like fish, legumes combined with grains (and of course dairies).

I like sardines on buttered (that’s a dairy) toasts but I would not eat those every day. I do not like the taste of milk by itself but I love chocolate milk, strawberry milk (like with Nesquik), café au lait (milk and coffee) and use it in countless recipes from making bread to making cakes or meatballs and meatloaves. I do not like the taste of “fake” milk from soy, rice or almond…they can call it “milk” but for me, it just tastes like legumes/grains/seeds juice…eeww (I love legumes, grains and seeds/nuts but not if they’re juiced).

At the end, dairy products are just a practical and enjoyable way to get your nutrients. I’d rather snack on cheese and crackers or a yogurt than sardines. I would not eat sea scallops any other way unless I pan fry them in butter sauce (one of the rare food that I pan fry). You can replace butter with dreadful margarine (that contains awful Trans fat to solidify it and contains as many calories as butter) but you’ll never get the subtle buttery taste of (organic) butter that will make your sea scallops taste like Heaven in a few minutes.
Same with almond mini cakes…you absolutely cannot get it right unless you use butter that you clarify (at the half point between melting and burning) and it starts to taste and smell like almonds too with the same color, a beautiful clear amber, so the whole flavor is enhanced.

(End of my answer coming up next...)

Edit: (about another answer you got)
Do not use calcium supplements just because you avoid dairies. Your body cannot absorb minerals (or vitamins) unless they come with the food into which they’re supposed to be. You would need protein (and lactose if you can stomach it) to absorb calcium, not just vitamin D (which you can naturally synthesize with 15 minutes in sunlight btw). Extra unabsorbed calcium will deposit on your bones (calcification) as it’s not like Bs or C vitamins that you just pee out in “expensive pee”. Extra calcium also gives you kidney stones (ouch!).

Vegans: Do you ever crave for foods that you have blocked from your diet?

Q. You know, like the usual craving for something that you haven't had in a while, or when you see something really tasty at the store or in an ad and you look at it and it looks really good..?
Examples:
Ice cream, cake, candy, chips, any canned or boxed foods, meat...

*From someone who craves everything.
If so, how do you work your way through the craving?

A. Let's see,if I want ice cream,I eat soy or rice ice cream. Candy,I hate, but there's so many kinds of vegan candies. Goto-http://veganessentials.com/ or https://www.veganstore.com/index.html?action=myaccount if you want to order things or just go to your local health food store. READ LABELS EVEN IN A HEALTH FOOD STORE!! Chocolate I eat whenever I want, just the dark chocolate kinds, there's so many types and flavors of vegan chocolates to try. Chips,If I really want it I eat it. Chips are only not vegan if cooked in animal fats or coated in cheese or sour cream. Boxed foods are disgusting,I only like to eat healthy foods. For these, once again check out the websites I gave you or hit your health food stores. Meat,is even more disgusting. If I ever want something with a meaty texture then I just make some seitan. Also,I will sometimes eat tempeh,or tofu. If you really "need" something even more meat like try vegan sausages, burgers or "hot dogs". Cheese,I either use nutritional yeast or soy,nut or rice cheeses.
The only things I may crave are dishes from my childhood. If I feel sad or homesick and I want something homey,I may make something like vegan stuffed peppers or mashed potatoes with really great side dishes. Those are both things my mom would make, only the mashed potatoes dish was usually with chicken. I've learned to make everything my mom would make when I was growing up,but vegan style. Even meatloaf,or spaghetti and "meat" balls.
There's no reason to have an unfulfilled craving as a vegan. I think I have a recipe for everything including vegan marshmallows for S'mores.
Here's some great cookbooks that have a lot of those great "childhood" recipes but veganized. They are all by Sarah Kramer and only some call for vegan substitute foods-"How it all Vegan", In the Garden of Vegan" and "La Dolce Vegan". They're lots of fun. Give them a go. Have fun with your diet and be creative.

What should I do when inlaws have taboo conversations?
Q. Every time we have a family dinner it's the same conversations. MIL always starts these debates that we all clearly have different opinions about.

Examples:

my fiancé is vegan and I rarely eat meat or animal products and his family doesn't agree with it. They always try to make us eat meat at dinner and ask us why we have those diets and when we try to explain our reasons they won't hear it and make us feel like we are bad for not eating meat.

Then the dreaded CANCER conversation. They always bring it up. It has been proven that eating lots of fast food and junk food is linked to cancer and other diseases. They always put me on the spot and when I reply they shut me up and basically say all those facts are bogus and getting a disease is like Russian roulette you can get it no matter what you eat or what kind of lifestyle you have.

Politics, faith and religion..it's really just table manners and I don't think anyone should ever talk about those topics while having family dinners! But like usual each person has their personal views and things always get heated with everyone because its MIL favorite topic of conversation.

His family thinks they know everything and try to debunk everything and think their opinions are the only correct way of thinking. I hate going to dinners because they always push me into the conversations. We always just leave right after eating because we don't want to deal with it. They never have any facts to back up what they are trying to prove, but they always think they are right and know everything.

Mermaids and aliens..wtf?? MIL and BIL always argue about their existence. Mermaids! Are you kidding me?? MIL thinks they are real. That's fine with me but BIL thinks she's nuts and they always argue about it. Then they try to drag me and my fiancé into it. MIL ends up upset.

It's always MIL who starts it all. When I tried to explain that I feel uncomfortable with certain topics, they basically say I am too sensitive and family debates are good to have. Please help be we don't want to cut them off but my fiancé and I are sick if it. When he tries to talk to them about not having these conversations anymore then another argument comes up because they are just kind of closed minded and don't care about anyone else's opinions. Are we handling this wrong?
I usually sit there quietly! And I'm not a vegan, I just don't really like meat. What's so wrong with that?
My fiancé does take my side. He doesn't want to go to family dinners any more. Especially because the try to tell us how to raise our child..

A. LOL Are you living my life?! Seriously...this is what happens in my family as well, only it's my mother who always trying to get my husband into conversations or debates that she knows will get him going. It can be a big problem, and for a long time, my husband didn't even want to go over to my parents house because it was always a big, stressful situation or confrontation.

So, my husband and I started therapy about a year ago, and this is one of the issues that we have been working on. Our therapist has given us some great advice, and I am happy to say that after employing the suggestions and practices that she has given to us, we enjoy lots of nice dinners with my parents now.

First things first...because they are my parents, it is MY job to be my husband's advocate. My loyalties must be with my husband at all times. This was tough for me, because I am an only child and very close to my parents, but I realized that my husband is really my immediate family now, and my parents are secondary to my marriage, so I cannot allow them to do things that will purposely drive a wedge into my marriage. I had a sit down talk with my parents, explaining the situation, how it makes me feel and how it makes my husband feel, and as afraid as I was to have the conversation, in the end, it went very well, because my parents love me enough to realize that they were hurting me by creating turmoil with my husband.

Secondly, my husband had to practice not getting roped into these debates and conversations. This was tough for him, but he learned to either be quiet or to change the subject in a really slick way...the therapist helped him with that. The trick is when these debates first start, you have to diffuse them by turning the attention to something else, like asking your mother in law where she got the recipe for the fabulous meatloaf you just ate, or if she has any advice on what you can do to keep your house a little cleaner...things that will work to her own feelings of greatness and make her feel as though she has something to teach that you want to learn. If she attempts to avoid this type of distraction, then you just have to be as agreeable as possible, because she is looking for a fight...you have to say things like "you know, I can understand your point" or "you have a really good arguement, there"...this will diffuse the situation because people like this thrive and feed off of the dramatic confrontation, and if you don't allow the confrontation to happen, then they will get bored and move on.

Lastly, if none of this works, then it will be your husband's job to stand up for you and sit down with his family and let them know that you will not be spending as much time together unless they can "behave". When he comes out on your side and basically says that if things don't change you guys won't be around, then it's likely his parents/family will rethink thier behaviour.

On a final note, I would suggest that maybe you and your husband see a therapist that can help you with this. I only say this because a good family/couples therapist will have more in depth suggestions for you that will help a lot more than what I can give to you in this short space. You'll be amazed at what you can learn from a good therapist, and if you don't get these things under control now, then it will only get worse and start to harm your marriage. Good luck!!!

You think i should be a vegetarian?
Q. I have done i before but i lasted 2 weeks,
But i really want to be one because i love animals :( and i have just recently quit smoking so i wanna put my goal on something else,

could some one please write me out a guide to be one,

Or give me the url for a guide to take me through step by step,?

Giving best answer!

A. To me Loving animals is a Great Reason to be a vegetarian. It is not hard to be one and keep being one. First you must make a commitment to yourself that you not going to eat their bodies anymore even if you like how they taste. You are going to put their lives before your taste buds. I think loving animals and remembering that will keep you going. The first month is the hardest and only because you are used to eating animals. It is habit like anything else. Every day decide what you are having for breakfast . That is easy, Breakfast:cereal, oatmeal, toast, waffles, pancakes, english muffins, donuts, also mock breakfast meats as veggie bacon , veggie patties etc.
Lunch: make a sandwich ( no meat), a bean burrito, bean taco, veggie wrap, humus, falafel on pita, salads, soups, use mock meats as veggie burgers, veggie dogs with beans, veggie sausage etc
Dinner: Pasta a zillion ways, marinara, with pesto, alfredo, prima vera, with beans, veggie lasagna, or have sauteed or roasted veggies over rice, a curry dish, use mock meats to make almost any "meat dish", stews, soups, casseroles, potatoes( fried, roasted, mashed, boiled), tamales, veggie meatballs, veggie meatloaf with mashed potatoes, Tofurkey with pecan cranberry, salads, and even veggie sloppy joes.
These are just a few ideas... eat fresh fruits as apples , bananas, berries and drink fruit juice as OJ fortified with calcium
snack on nuts as almonds, peanuts, cashews, ect
snack on raw veggies as baby carrots or celery ( and use salad dressing as a dip) , I eat lots of raw veggies as well as cooked ones
If you can begin to change to soy or almond milks(they all taste different so it will be trial and error) I like Regular unflavored Silk ( refrigerator section) and Almond breeze chocolate (not refrigerated)

Things to avoid anything with Gelatin, anything with L-Cysteine, Carmine, and Confectioners glaze( the last 2 are bug guts found in lots of candies), avoid any beef, chicken or animal broths in soups and many times in rice dishes, and in cheese make sure it says non animal rennet ( otherwise the cow is killed as animal rennet comes from their 4th stomach).
I would say start here and everyday think to yourself I will not eat an animal today. Soon you will not even think of ever eating one again because your heart is in it and the more you know, the more commited you will be. Do not panic if you make a mistake , just fix it for the next time and keep going.

Good luck and stick with it ( I read some of your other questions and I would say do not try to be a vegan yet, yes you can begin to buy non leather shoes and bags as what you have wears out, and use products not tested on animals, but do not put that much pressure on yourself all at once)

Please email me if I can help or answer questions about any products.
I also suggest you look over PETA's website and read all as well as
check out vegweb.com for recipes

One last thing Vegetarians do not eat any type of Fish ever including shellfish. Fish are living animals until they are killed and gutted for someone to eat them and absolutely not vegetarian. You probably know that, but some people are confused.

vegan?????

Q. I am already a vegetarian. I am, the only one in my family. I am 14

I want to become vegan but still be healthy. The rest of my family are big meat eaters. Can you give me some simple recipes and some advice on being vegan?

Also, do you know anything about the Hallelujah Diet?
Actually, vegan is one of the most healthiest diets. It cuts down on bone problems and cancer. Also, obesity, diabetes, and other serious illnesses.

A. Hi, great choice to become a vegan. I totally understand what you are going through.

I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 50+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Don’t forget to regularly see the doctor.

The Hallelujah Diet is being used by hundreds and thousands of people around the world to accomplish what our present day medical system cannot. People are getting well from a wide array of disorders. In fact the Hallelujah Diet has been so successful that is was recently adopted by the successful Oasis of Hope hospital. Why? You've probably heard the saying "God chose the simple things to confound the wise". You can't get any simpler than the Hallelujah Diet. God didn't create our bodies to run on drugs or artificial, over processed and over cooked foods. Look at what God created us to eat, feed it to your body for several months, get a little exercise and you will be amazed at the difference. It is time to stop fighting the symptoms and change what we eat! There recently was a news report on TV on a large study that proved that folks in the 60's and older benefit more from fresh fruits and vegetables than they do from vitamins. Amazing, perhaps they'll prove that God was right after all....

I think that being vegan is quite similar to this diet in that you are leading a healthy lifestyle.

Tips for new vegetarian?
Q. Any tips? AND I dont want the simple "stop eating all meat in your diet" because I have been a vegetarian for 2 days and want to keep going.
I might get personal trainer cooking today for the recipes and stuff
but recipes help! THX :D

A. Eat a lot of legumes to replace meat in your diet. In case you don't know legumes are beans, nut, and barley. If you crave meat here are easy substitutes:

Chicken stock>>>Veggie stock

Beef Tacos>>>Bean Burritos

Steak>>>Suted Mushrooms

Recpies:

3 ripe bananas
1/4 cup oil or melted margarine
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts (optional—see other options listed below)
• Mash bananas (overripe ones make the best bread). Add oil/margarine and sugar. Mix well.
• Sift the flour, salt, and baking soda together and add to the banana mixture. Mix until the flour is blended (do not beat).
Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

Optional: Add a handful of walnuts, oatmeal, raisins, chocolate chips, currants, coconut, or all of the above!

Avocado Reuben
Give beef the boot and try our take on the classic reuben sandwich—made with creamy avocado and a tangy, easy-to-make Thousand Island dressing.

2 slices rye or pumpernickel bread
Mustard
Thousand Island dressing (recipe follows)
1/2 avocado, pitted, peeled, and mashed
1/4 cup sauerkraut

• Spread one slice of bread with some mustard, the other slice with Thousand Island dressing.
• Place the bread slices, dry side down, in a lightly oiled skillet. Top one slice with avocado, and the other with sauerkraut.
• Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together and enjoy!

Makes 1 sandwich

Sumptuous Spinach Salad With Orange Sesame Dressing

1 bunch fresh spinach (about 6 cups of leaves)
1 red or yellow bell pepper, cut into strips
1/4 to 1/2 cup thinly sliced red onion
1 orange, peeled and sliced into thin rounds
1 Tbsp. sesame seeds
2 Tbsp. seasoned rice vinegar
1 Tbsp. orange juice concentrate
1 Tbsp. water
• Trim the spinach stems and carefully wash the leaves. Dry, then tear any large leaves into bite-size pieces. Place in a salad bowl along with the pepper, onion, and orange slices.
• Toast the sesame seeds in a 400°F toaster oven or regular oven for 10 minutes. Transfer to a blender and grind into a powder. Add the vinegar, orange juice concentrate, and water. Blend to mix. Pour over salad and toss just before serving.

Makes 4 to 6 servings

Mama's Mock Meatloaf
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Creamy Chive Mashed Potatoes
Rich mashed potatoes are the perfect side dish for most meals.

5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup fresh chives, chopped
Salt and pepper, to taste

• Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
• Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
• Serve hot.

Brown Gravy
Tired of plain potatoes? Whip up a batch of this creamy gravy, and serve it with your mashed potatoes and biscuits.

2 Tbsp. (1/4 stick) margarine
1 medium-sized onion, diced
2 Tbsp. unbleached all-purpose flour
1 tsp. garlic salt
2 Tbsp. cornstarch
1 1/2 cups water or vegetable broth
1 tsp. yeast extract
1-2 Tbsp. soy sauce or tamari
Pepper, to taste

• Heat the margarine in a medium saucepan over medium heat.
• Sauté the onion for a few minutes, then add the flour and garlic salt and sauté for another 8 to 9 minutes.
Dissolve the cornstarch in the water or broth.
Gradually add the cornstarch mixture to the onion mixture, bring to a boil, then simmer for 10 minutes.
• Strain the gravy into a separate saucepan and add the yeast extract, soy sauce or tamari, and pepper. Simmer for another minute or 2, stirring constantly. Keep warm.

Preparation time: 45 minutes
Baking time: 40 minutes

Makes 6 servings

Going vegetarian, school lunch ideas?
Q. My veggie-friendly friends have finally talked me, a meat-loving carnivore into going "green". Unfortunately I'm still in eighth grade, and restricted to a school menu. Any help with food ideas?

BTW, about the whole "Your still growing" thing, I haven't grown at all since the sixth grade..;(

A. I have been there! I went vegan when I was 12 and it was tough for me, but I managed to eat well at school.

Some ideas:
-bean salads (good beans to use are garbanzos/chickpeas, black beans, and black-eyed beans)
-mock "sloppy joe" sandwiches (use Morningstar brand crumbles in place of beef in any recipe or use on of these recipes: http://vegweb.com/index.php?topic=9635.0 and http://vegweb.com/index.php?topic=15762.0)
-pasta salad
-sandwiches with marinated roasted tofu (available pre-made from Whole Foods and Trader Joes, or look for recipes online)
-vegetarian "meatloaf" (lots of recipes are available online
-baked potato with fixin's or "potato angels" (http://vegweb.com/index.php?topic=32280.0)
-fruit, yogurt, and granola combo with a hearty muffin (e.g. banana or carrot or bran muffin...there are loads of recipes online)
-hummus with tortilla chips, veggies, or pita chips
-sandwiches with vegetarian "lunchmeat"
-vegetarian chili (with cornbread if you want)
-calzones
-waldorf salad

There are lots of websites with more ideas, too...see sources below

Homemade version of Morningstar Farms Grillers Crumbles?
Q. Where I live they don't sell any of these commercial meat substitutes, so I'd like to know if I can make these or something alike with TVP or Seitan or something like that? A lot of recipes call for them and I'm not sure substituting them just for rehydrated TVP would work :/ Thanks in advance!

A. I make a vegan meatloaf with TVP, soya flour, ground mushrooms and eggplant, I have used the leftovers for veggie sloppy joe's, chili, spaghetti sauce, even Mexican taco base, mix it and cook it like if you were ground meat, I always brown my TVP with oil and the fine chopped onions before I do any dish, it adds flavour and texture, I buy a product here in Canada called Soya Chunks, they come either round, oval or flat like slices of meat, I have used them broken up for the same dishes, I mix 2 cups of TVP with 1 cup of soya flour, 1 pound of ground button mushrooms and a small finely chopped eggplant, season it and I use veggie broth/veg oil to moisten, I press this in a greased cookie sheet and bake it for 30 minutes, then cool it, I have even used it for a veggie chicken parmesan with a breading and the tomato sauce and cheese garnish, I some times use soya cheese or regular mozzarella.

Good recipes?
Q. So recently my husband and I have been sort of frightened at some of the things that are unnecessarily put in our food (in the name of preservation, etc.), and have decided that they are no better than poison for our bodies. For this reason, we have made the decision to become vegan, simply because veganism cuts out the things that we find most disturbing--meats, dairy, eggs--and other things that are exposed to horrible environments and processing. I have been a vegetarian in the past (I stopped when we got married because I honestly wasn't doing it very healthfully, and my husband didn't understand back then why I was a vegetarian). Now we are older and wiser and ready to make the jump, but I'm afraid he's going to miss meat, so I'm trying to explore meat substitute products (which I have never explored before). My other concern was that being vegan may be too expensive for our budget.
Any recipe suggestions (esp. with meat subs.), or cost control ideas?
Also, if anyone has any good info pages on the different kinds of meat substitutes and their culinary uses, I would really appreciate it if you sent them my way :)

Thanks.
Sorry to be long (and ignorant), but also, if you knew of any common mistakes that new vegans make, please inform me! Like, what's the deal with gluten?
