Do you have a recipe for homemade meatloaf?

Q. I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

A. First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.

What Vegetarian Meat substitutes actually taste like meat?
Q. My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

A. Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

What do you eat when your money is tight?
Q. Thanksgiving is around a corner, but my money is tight lol. What does people eat when their money is tight? I cook some ground beefs like meatloaf, spagettie, sloppy joe or humberger helper, but getting bored. Any other ideas?

A. Meat is expensive. I eat a lot of beans to get my protein with only enough meat for flavoring. These can all be cooked in a slow cooker while you are at work.
dry Navy beans cooked with a ham hock. cornbread
dry Butter beans cooked with chicken backs. slice of hot home made bread.
dry Pinto beans with beef ribs. toasted garlic bread.
Kidney bean salad. (1 can kidney beans, 1 hard boiled egg, pickles, & onion chopped, mayo)
Pork & beans made into baked beans with chunks of ham. and scalloped potatoes.
Refried beans and rice. add some shredded pork and you have a meal.

The beans are about $1. for a 1lb. bag which will easily make two meals for 2 people-----$.50 per meal....plus another $1.00 for the meat that is $2.50 for the beans, .50 for the bread and a .35 to add a potato...for a total of $3.35 for a meal for two of beans cooked in meat broth, bread, and a potato.
________________________________________
Eat potatoes...mashed, fried, hash browns, boiled, baked, potato cakes, scalloped, oven fried, creamed with peas or carrots....
A 10 lb. bag of potatoes is $4. on sale for less. You get at least 25 potatoes in that for two people that would be a veggie for each meal for 12 days. (.35 per meal for 2)

Refried Beans Recipe
2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
3 quarts of water
1/2 cup chopped onion (optional)
2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
1/4 cup water
Salt to taste
Cheddar cheese (optional)
1 Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
2 Cook the beans in water.
Regular method Put beans into a pot and cover beans with at least 3 inches of water - about 3 quarts for 2 1/2 cups of dry beans. Bring to a boil and then lower heat to simmer, covered, for about 2 1/2 hours. The cooking time will vary depending on the batch of beans you have. The beans are done when they are soft and the skin is just beginning to break open.
Strain the beans from the cooking water.
3 Add the onions and lard/fat/oil to a wide, sturdy (not with a flimsy stick-free lining) frying pan on medium high heat. Cook onions until translucent. (Note the onions are optional, you can skip them if you want.) Add the strained beans and about a 1/4 cup of water to the pan. Using a potato masher, mash the beans in the pan, while you are cooking them, until they are a rough purée. Add more water if necessary to keep the fried beans from getting too dried out. Add salt to taste. Add a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese if you want. When beans are heated through (and optional cheese melted) the beans are ready to serve.

Vegetarian diet, what do i eat?
Q. I have recently turned vegetarian. I'm not sure what to eat and my parents are annoyed with me because i don't get enough protein.

What are simple meals that are healthy and that i can do everyday and still get full nutrition?

A. Food, silly.

Fruits, vegetables, nuts, grains, and beans--that covers quite a bit of ground, wouldn't you say?

As for protein, even vegans get more protein than they really need. You don't want too much protein because it strips calcium from your bones (animal protein is especially acidic, causing calcium loss) and taxes your kidneys.

If you're parents think you aren't getting enough protein there are three possible reasons: 1) they've fallen for the protein myth like most people; 2) you don't get enough calories; or 3) you eat mostly junk food.

Some simple meals: A bean and rice burrito with salsa or grilled veggies.

Pasta witih marinara sauce. If you saute some kale/collards/greens and pour the marinara over it, it's really healthy.

A stir fry with cubed tofu or tempeh instead of meat. Many grocery stores also carry vegetarian meal-starter strips that are designed for stir-fries or fajitas. Lightlife makes "beef" and "chicken" varieties.

A veggie burger with oven-baked fries.

If you like meatloaf, you can make veggie versions. Google Vegetarian Loaf Studio, and there's a website where you can customize your own veggie loaf.

www.vegweb.com has tons of recipes.

Anyone have any great vegetarian/vegan recipes?
Q. I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)
Please and thank you

A. It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Tastespotting.com is a round-up of many food blogs from around the world. They have a search term, eg veggie burger, and frequently feature vegetarian/vegan menu items for when you're looking for something new.

Veggie

I'm a vegetarian. What are some simple recipes?
Q. I recently bought tofu and a few broths from whole foods. I didn't even know what I was doing when I was grocery shopping. Anyway, please let me in on some good recipes and/or vegetarian cookbooks.
Excluding the obvious of course. i.e. SALAD! Haha. I need some real meals. Also, I don't eat fish or shellfish because I am allergic. Keep in mind I am 16 (going on 17) so simplicity is key.

A. What about a tofu scramble. You can use it the same way that you would use eggs. I go on tofu binges often so I cook it so many different ways. There are so many different types too, silk or firm are my favorites.
For a tofu scramble it is simple I will give you 2 recipes. One I make is a soy scramble, use soy or tamari. I saute some minced garlic, onions, carrots until tender then add the tofu and scramble it like it was an egg, then top with soy, salt, pepper, and for me always some hot asian chili paste or sauce and green scallion If you have black bean add it with the veg. Another one is to use Balsamic, oregano or basil and the some peppers if you like. More italian or greek influence. So now you have the basic try your hand on a scramble. Another thing I make is chili, I use the tofu like ground turkey or beef. I cook the onions, garlic, spice then add tofu and beans and more spice. You can even make a burrito scramble and put it in some whole wheat tortillas for breakfast or lunch. Tofu curry is always good, tofu with ginger, scallions, peanut oil and soy cold is good. It is good in noodles. I always make tofu curry with eggplant, longbeans, garlic, and thai green curry with a little kabocha pumpkin. The skies the limit with what you can do, make a tofu and veggie meatloaf or a loaf with chickpeas and veggie or lentils and veg. Good luck!

What are some good food alternatives? (lower fat/healthier alternatives)?
Q. anyone have a list of good healthy foods that are alternatives to some of the most common popular foods?
some of the foods i like are
pizza
burgers
meatloaf
baked potato (loaded)
pastas
burritos
chili
etc.

A. PIZZA:
Buy small frozen "individual" pizza's by health brand's such as: Kashi, Amy's, Weight Watcher's Smart One's, Lean Cuisine, Healthy Choice, etc.
Or ..
Order a pizza (consume 1/2 small pizza, 2-3 slices medium and 2 slices large/ extra large). Order thin crust or wholewheat crust with basic tomato sauce and "light ammount of cheese". Order with a variaty of vegetables/ fruits (pineapple/ tomato/ peppers/ onion/ spinach/ zuchinni/ broccoli/ etc) with optional lean meat on pizza (ham/ sliced chicken breast/ anchovies- fish or extra lean ground beef- lean ground turkey).
Dip crust/ pizza in a marinara sauce or light creamy salad dressing (light ranch salad dressing)

BURGERS:
- Try ordering "veggie" burger's at fast- food joints or a kid's single patty burger (no cheese).
Also try turkey burger's/ grilled chicken burgers (no mayonaise).
Or .. Make you're own with extra lean ground meat/ lean ground turkey or purchase a Boca Burger and consume on a wholewheat bun/ pocket with ketchup/ mustard/ relish and vegetable toppings with optional slice of light cheese- light shredded cheese and optional avacado/ guacamolie/ light creamy salad dressing- vinagrette (eg: light ranch salad dressing)
Consume with crunchy vegetables and hummus- cottage cheese, cooked vegetables in olive oil or side salad with light dressing/ vinagrete with optional baked potato wedges/ baked yam wedges.

MEATLOAF (Make with extra lean ground beef- lean ground turkey, basic tomato soup, diced vegetables, ground bran cereal and a egg. Check "google" for hearty meatloaf recipes).
Use tomato sauce as a gravy or onion soup.

Baked potato with a small ammount of either; 1% cottage cheese or light sour cream with chives and herbs/ spice's. Add TBSP ketchup/ tomato sauce/ chili sauce for added flavour.

Pastas (use a wholewheat pasta and with a tomato sauce or drizzeled with olive oil, diced vegetables and herbs. Add optional light laughing cow wedge in pasta or 1-2TBSP grated cheese. Add optional lean protein- turkey meatballs/ meatless meatballs, sliced chicken breast, lean ground beef- lean ground turkey- ground soy crumbs, diced tofu, shrimp, scallops, salmon, tuna, prawns, etc)

Burrito (use a wholewheat flour tortilla, ~ two 6' tortillas), use salsa instead of sour cream, lightly shredded cheese, variaty of cubed vegetables (peppers/ onion/ tomato/ lettuce/ etc) with spices/ herbs and either baked beans in tomato sauce- spices, lowfat refried beans, fajita steak sliced, fajita chicken sliced or salmon/ trout sliced or sliced tofu)
Consume with side salad and light dressing/ vinagrette or cooked vegetables in olive oil with optional brown- long grain rice.

Chili (buy canned vegetarian/ turkey chili).

Vegetarian meals made by (and for) a teen?

Q. My mom is not supportive of my vegetarianism, so most of the time I'll have to cook my own meals. I need recipes for some simple meals with EVERYDAY INGREDIENTS.

I can handle breakfast on my own, but I'm desperate for lunch and dinner recipes. Lunch would have to be something pre-made and packable.

I'm an ovo-lacto vegetarian, so there's no need to substitute dairy or eggs.

Thank you so much!!

A. Hi, great choice to become a vegetarian. I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 100+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Don’t forget to regularly see the doctor.

Vegan to Vegetarian and Teen to Teen I wish you the very best of luck!!!!!!!!!!!!!!!

Vegetarians and or Vegans, what's your lunch?
Q. I'm stuck for ideas for lunches.
I go to school everyday, so it's gotta be an easy one. And unless I can make it and put it in a thermos, no hot foods either.

What do you usually pack?

A. Things such as hummus and peanut butter are tasty and convenient solutions for a lunch on the go. Look into buying vegetarian canned soups to pack into a thermo. Most grocers now carry lunch meat alternatives such as veggie hot dogs and tofurky slices- so you may want to consider trying some of those.

gelatin-free yogurt (dairy or nondairy)
fresh fruit or fruit cups
granola
hummus
peanut butter
veggie dip
carrot sticks
celery sticks
cereal
crackers
pretzels
salads
veggie soups
chips
soy milk

Another good idea is to see if your local grocers sell vegetarian-friendly MRE's to the public. MRE's are specially packed foods that can be heated without the use of a microwave or fire. There is a heating pad that is activated with water. Soldiers have and still do use them abroad when at war out in the rugged terrain. These foods include spaghetti, macaroni, veggie meatloaf, and more. http://mreinfo.com/

If you don't mind taking a little time to prepare some of your meals in advance, I have included a link to help you discover and try out vegetarian lunch recipes from a vegan mother's blog. http://veganlunchbox.blogspot.com/

Pros and Cons of Being a Vegetarian?

Q. I absolutely love animals and am debating about whether or not I should become a vegetarian. The reason I want to become a vegetarian is more so of a control issue. With all of the wars, issues with the government etc. I feel like my lifestyle is one of the few things that I have some control over. I like meat but I don't like the fact that meat without growth hormones and junk doesn't taste good as opposed to meat that does include the harmful chemicals. Also I don't like that unless I personally start my own farm that I can't know for sure how the animals are treated and if they are killed humanely. I'm worried about becoming a vegetarian because I like meat (corn beef, steak, ribs, bacon, hot dogs, meatloaf, pork chops etc.) but at the sametime I don't want to contribute to the inhuman murder of animals. Another thing is that when I brought it up to my parents they are fine with me becoming a vegetarian but they said they aren't planning on fixing any special meals for me and that if we're having meat that I will have to fix something myself for dinner. The second thing I'm worried about is staying healthy. A couple of months ago I was anemic and had to take iron supplements and I'm worried about being anemic again as most sources of iron come from meat. If I do decide to become a vegetarian how far should I take it. Should I just rule out all meat (including like chicken stock etc.?). What are the pros and cons of becoming a vegetarian? Also a friend of mine told me that eating meat puts you at higher risk for cancer...is that true? That kinda freaked me out. Then again there are always talks about people claiming almost anything is linked to cancer.

A. LIFE puts you at a higher risk for cancer. But some things are associated with cancer.
My sister was a vegetarian for decades, and relied on soy for her protein source (soy and quinoa are the only complete proteins .. otherwise you are eating legumes and grains together). She got thyroid cancer, and had to have her thyroid killed, and now she has to mess with adusting the level of synthroid medication (artifical thyroid hormone).
She found out a couple years after her thyroid cancer that too much soy in the diet is associated with thyroid cancer.

Pro's of vegetarianism:
1. It's cheaper
2. You get to feel proud about yourself as long as it's not arrogance)

Con's:
1. You have to understand protein sources and how to get complete protein in your diet. AND Iron sources too. This means you have to preplan all your meals, checking out the nutritional content ahead of time .. until you have it all in your head.
2. You have to like legumes (beans, lentils, etc) and be prepared for more flatulence. Cheese and eggs have protein but are not healthy to eat on a daily basis. Nuts are fattening. Soy is okay but not every day. Quinoa .. we don't know yet. Best not to rely on it every day.
Most of your protein will be legumes eaten with grains (beans and rice, peanut butter on whole wheat bread, lentils and rice, etc).
3. It takes a lot more complicated recipes to make the food tasty. It's not like you can slap a bunch of garbanzo beans on the barbecue and cook then up in 10 minutes for supper. In the case of your parents, its the difference between having to cook at all and having to do complicated meals.

What is the best vegetarian recipe for a main course? What is the best dessert?
Q.

A. Veggie Meatloaf

You won't miss the meat in this flavorful dish! Serve with mashed potatoes for a great meal! You can also substitute diced eggplant for the mushrooms.

INGREDIENTS:
1 cup uncooked white rice
2 tablespoons vegetable oil
1 onion, finely chopped
1 cup cooked lentils
1 cup chopped fresh mushrooms
1 tablespoon vegetarian Worcestershire sauce
salt and pepper to taste
1 egg, beaten
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried parsley
1/2 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Meanwhile, heat oil in a small skillet over medium heat. Saute onions until tender. Set aside.
In a large bowl combine cooked rice, lentils, mushrooms, Worcestershire sauce, salt, pepper, egg, garlic powder, Italian seasoning, parsley and cooked onions; mix well. Press mixture into prepared pan; spread ketchup on top of loaf.
Bake in preheated oven for 45 minutes.

Hariton's 'Famous' Vegetarian Casserole

This is a very tasty dish consisting of all kinds of fresh vegetables and herbs baked in the oven. This will tantalize your taste buds. It has been a sell-out at our Greek Church at every function for five years now. We serve this on toasted, warm pita bread.

Original recipe yield: 36 servings.

INGREDIENTS:
8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic, cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 (15 ounce) can tomato sauce
3/4 cup olive oil
salt and pepper to taste

DIRECTIONS:
Prepare the eggplant before assembling ingredients, by cutting them into 2 inch chunks and putting them into an extra large bowl with salted water to cover. This will draw out the bitterness from the eggplant. Let this sit for about 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Cut the potatoes, green bell peppers, onion, squash and tomatoes into 2-inch chunks. Cut the green beans and mushrooms in half and peel the garlic cloves.
Drain and rinse the eggplant, then combine it with all the other chopped vegetables, the dill, oregano and basil and place all into a 3x13x18 inch roasting pan. Pour the tomato sauce and olive oil over all.
Bake at 375 degrees F (190 degrees C) for 2 1/2 hours, adding a little water about halfway through cooking time to keep moist.

Easy Peach Cobbler
This is a great peach cobbler--so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

INGREDIENTS:
1 cup white sugar
1/2 cup butter, room temperature
1 cup self-rising flour
1 cup milk
1 (15 ounce) can peaches

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a one-quart baking dish or 9 inch square pan, cream together sugar and butter. Mix in flour and milk until smooth. Pour peaches and their juice over the top.
Bake 25 to 30 minutes in the preheated oven, until golden brown.

Note: I didn't have self rising flour, so I used (according to a "substitutions" website I found) 1 cup of flour (minus 2 tsp), 1/2 tsp salt and 1 1/2 tsp baking powder for every cup of self rising flour.

Looking for some hearty, filling vegetarian recipes?
Q. I am looking for some good, hearty vegetarian recipies. I am mainly looking for lunch items. I try to stay away from soy, I have reactions to it. I am breastfeeding and I have trouble finding food that fills me up.
Thanks!

A. I can absolutely help you out here. Here are some of my favorite recipes:

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

can you meake "meat"loaf with tofu?

Q. since turning vegan, i really miss meatloaf, is there anyway i can make meatless loaf with tofu? recipes would be great :]]
hahaha it probablly would taste a little bland, but maybe if you seasoned it?

A. I've not heat of "meatloaf" made out of tofu, but you could make a really mean one out of seitan.

You could also make one out of Gimme Lean ground "beef" in a roll. I've tried the second recipe (Mama's Mock Meatloaf) and it is SO good! I hated meatloaf when I actually ate meat, but this recipe made me fall in love with it (go figure).

Here's the link: http://www.vegcooking.com/recipeshow.asp?RequestID=149&Search=meatloaf
I hope you enjoy it as much as I did!

I am looking for a good veggie loaf recipe...?
Q. But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

I'm not very creative at cooking so I need a tried and tested recipe. Any help is MUCH appreciated!

A. Veggie Loaf
RECIPE BY: Prose
This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.

Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.

Im making meatloaf for the first time this weekend. Who has the best recipe?

Q. Btw Im using Buffalo and not beef. For those who have never used Buffalo think XXXX lean, don't worry about fat drippings.
So who has the best recipe?

A. I'll just give you some pointers.

I take three slices of fresh bread and pull them into chunks before kneading them into the meat, this step would be especially beneficial for the buffalo because they absorb fat and create a marbling effect in the meatloaf (fat adds flavor)

I also use crunched up crackers and sometimes a handful of oats.

I season the meat with fresh minced garlic, salt, pepper and lots of old bay seasoning (this is a big tip, it makes the meatloaf taste spicy and homemade, like a warm hug). You could add sauteed peppers and onions if you wanted something more traditional.

Sometimes I'll flatten the loaf, lay spinach leaves on top and fold it around a block of swiss cheese, so it cooks in the middle.

My topping is the best part of my meatloaf and the reason why I have to constantly make it for my family even though I'm vegan now LoL.

Take fresh thinly sliced (not too thin) tomatoes and line them over the top of the roast, letting them overlap just a bit. Bake the loaf for 45 minutes and then take it out. The tomatoes should have caramelized on top of the meatloaf and turned rich and gooey. Now spread a good layer of ketchup over the top and put back in the oven for 15 minutes until the ketchup thickens and starts to brown a little. The topping will be thick, complex and tomato-y. It's addictive.

Tips on a vegetarian diet for a week?
Q. My doc said this would be good for me. I just wanna know the food that i should eat. Thanks.

A. Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

Good Luck, and when in doubt, check out some v&v recipe boards or vegetariantimes.com

Vegan to Vegetarian and Teen to Teen I wish you the very best of luck!!!!!!!!!!!!!!!

i need a tips, i want to cook for my girlfirend but dnt know what to cook, any ideas?
Q. okay so in two weeks its her birthday. and i want to cook for her. like i want to take her to the lake view and dinne there. any ideas please help

A. Assess your relationship. Before you plan that exquisite gourmet meal, it's a good idea to think about where you are in your relationship. If you've been with a girl for a while, cooking a fancy meal that takes a lot of time to prepare can seem really romantic. If you just met the girl last week, however, that same meal can seem kind of creepy. Early in a relationship, it may be best to stick with simple dishes--still mindful, of course, of what your girlfriend likes to eat--or you might give the impression that you're too eager to please her. Besides, if you cook a six-course dinner on the second date, imagine how many courses you're going to have to make if you're still together in a year or two.
# Discover what your girlfriend likes to eat. You can cook just about anything you want, really--it's the thought that counts. Put a little more thought into the meal, however, and it counts a little more. It doesn't take a genius to figure out that if your girlfriend is a vegetarian you should skip the meatloaf, but if you really want to make the meal special, you'll need to look beyond the obvious. This can require some advance preparation--you need to listen to her and make mental notes to yourself. For example, maybe a couple months ago she mentioned how she used to love Brunswick stew but she never learned to make it. Surprise her with some for dinner, and she'll be amazed you remembered. In other words, you're not just cooking, you're being an attentive boyfriend or girlfriend.
# Search for a recipe. By now you should know what you want to make. Get out the cookbook (there's probably one lying around somewhere) or get on the web. Want to make chicken enchiladas? Just enter "chicken enchiladas recipe" in your search engine, and you'll have probably hundreds of variations to choose from. Read the instructions and ingredients and choose a recipe that you feel comfortable making--if the first one you find looks too difficult, keep looking.
# Choose accompanying dishes. Depending on what your main dish is and how big a production you've decided to make your meal, you may want to add side dishes, a salad or a dessert. Often, entree recipes will have suggestions for side dishes and wines, or you can find an entire meal planned out. If the recipe you've chosen to make doesn't give you any suggestions, look at similar recipes for ideas.
# Decide on a date for the big meal. If you're planning on cooking today, you're probably in a hurry--skip this step. Otherwise, make plans with your girlfriend. You can just tell her you'd like to cook dinner (or breakfast or lunch) for her, or you can surprise her. If you're going to surprise her, make up some pretext--a good one is to tell her you're taking her out to eat--so that she will (a) show up and (b) show up hungry.
# Make a shopping list. A day or two before you will cook, go through each and every item in your recipe(s) and see if you have it in your kitchen. Make sure you have enough of each ingredient, as well, and make sure they're all edible (1 egg won't substitute for 3, and rotting vegetables just aren't the same as fresh). Also, check to see that you have all the kitchen utensils you will need (you can buy these or, preferably, try to borrow them from somebody). If you don't have something, write it down on your shopping list. Make sure your list is detailed--include the quantity you'll need and any other pertinent information. Of course, if you're like a lot of bachelors, you can probably just take the recipe with you to the grocery store--you know you don't have any of that stuff.

Beverages

Surely you have your favorite wine or champagne. Go nuts! Better yet, visit SoYouWanna learn the basics about wine, SoYouWanna fake being a wine expert, and SoYouWanna choose a champagne. Consider alternating your alcoholic drinks with non-alcoholic ones (such as sparkling fruit drinks.) Remember: a falling down drunk lover is not necessarily the best lover.

Appetizer

This can be made the day before to save you time on the actual day

Ingredients:

* 1 large red pepper, minced
* 1/2 clove garlic, peeled and crushed
* 2 tablespoons olive oil
* 1/2 cup ricotta cheese (or 1/2 lb. soft tofu)
* Pepper to taste
* Fancy crackers (We don't know what they sell where you live! Surely you've seen something cool at the grocery store. Splurge!)

Now here's how to get cooking:

1. In a large frying pan, heat the olive oil on HIGH

2. When oil is hot, turn the heat down to Low/Medium and drop in the garlic. Stir the garlic with a wooden spoon so it does not burn.

3. After about a minute, add the red pepper. By this point, the oil should not be so hot that it requires your constant attention.

4. Turn your attention to pureeing the ricotta cheese or soft tofu with your blender. (Suggestion: the cheese will add more fat to your meal than tofu, which would not help you with later amorous plans. If you can't stand the

canned canneloni or other white beans, undrained
a veggie seasoning cube
frozen broccoli and cauliflower mix
dry pasta
nonstick spray
water

Spray the bottom of a deep saute pan, then layer the ingredients with the pasta on the bottom, the beans next, the veggies, then the veggie cube crumbled over the top. Add some water so that the pasta doesn't boil dry in the bottom. Cook it on medium or medium-high until the pasta is done. Sometimes you have to add a little water to keep the pasta cooking.
