My mom is not supportive of my vegetarianism, so most of the time I'll have to cook my own meals. I need recipes for some simple meals with EVERYDAY INGREDIENTS.

I can handle breakfast on my own, but I'm desperate for lunch and dinner recipes. Lunch would have to be something pre-made and packable.

I'm an ovo-lacto vegetarian, so there's no need to substitute dairy or eggs.

Hi, great choice to become a vegetarian. I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 100+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.

Make your own snow-cone with blended ice and juice


DAY 2

Breakfast

A protein shake

-Milk or soy milk
-peanut or cashew butter
-splenda or sugar
-banana
-strawberries
You could top it off with whipped cream
(If you do not have a blender do the following)
-microwave a medly of frozen fruit until warm
-place it in a bowl
-top it off with crumbled cinnamon toast crunch
It tastes like a cobbler YUM!!!


Lunch
Classic Ranch BLT

-Ranch on 1 slice of bread
-Butter on the other
-lettuce
-tomato
-vegan bacon
(If you do not have veggie bacon do the following)
-Cut bacon sized strips of cheese
-Place it on parchment paper in microwave
-Season it with BBQ sauce(just a bit)
-Microwave until crispy and peel off the cookie sheet

Dinner

Mock meatloaf
-onions
-bbq sauce
-crumbled nuts(a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well and put it in the oven and bake until you like it best

Desert
Jamaican me crazy tropical banana
-fry banana slices in a pan
-add some cinnamon and honey
-top with whipped cream

French Toast
-Dip stal bread in mix of sugar cinnamon and egg
-fry in a pan
-eat it with a piece of fruit

Lunch
Burrito
-Avocado
-diced tomato
-refried beans from can

Dinner
Easy veggie salad pizza
-Buy a Pillsbury biscuit can
-flatten out one portion of dough on a cookie sheet
-top it with sliced tomatoes and cheese
-bake at 375 until done
-top with fave lettuce and dressing

Desert
Cute coco Fondue
-melt any random chocolate over fruit

DAY FOUR

Breakfast
Omelet
-put your fave cooked veggies
-spinach
-seasoning salt or pepper
-egg
-put this all in a pan and mix then let it cook
-one minute before it is done add on cheese

Lunch
English Queen Burger
Put
-katsup
-lettuce
-tomato
-A veggie pattie
On an English muffin

Dinner
-ready or frozen Rice
-Teriyaki Sauce
-veggies
-stir fry/cook until ready

Desert
Good old Ice cream

DAY FIVE

Breakfast
-Cut Apples and peaches
-add granola
-one pack of splenda
-milk
Great for hot days

Lunch
Classic PB&J with a side of fruit
Dinner
A fun take on the southern style make three dips
-Corn off the cob with some mashed avocado
-collard greens (in the frozen isle)cooked mix with cream cheese
-Beans with melted cheese
-now arrange this on a plate with your fave seasonings
And dip in with chips or ritz cracker

Lunch
Greek Feast
-Feta cheese
-romaine lettuce
-baby tomatoes
-Gorbanxo beans(from a can)
-put in pita bread and take it to go!

Dinner
âCheese Fondueâ
-melt the following in the microwave
-1/4 cup cream cheese
-1/4 cup of Velveeta
-1 slice of swiss cheese
-After all has melted, mix well
-cut up your fave veggies and dip into cheese like a fondue
(put cheese mix in a thermos when going to school)

Desert
Try some fruit with lemon juice and splenda


DAY 6

Breakfast
Breakfast burrito
-egg(scrambeled)
-spinach and onion cooked
-fave cheese
-flour tortilla
-wrap it up and enjoy with a piece of fruit

Lunch
Pre prepared âvegkabobâ
- diced and micro waved/cooked tomatoes
-chunks of tofu, veggie burger or mushroom micro waved/cooked
-diced zucchini micro waved/cooked
-put it in a pattern form on spears
-if you donât have a meat alternative put on chunks of cheddar cheese
-for the final touch add your fave bbq sauce

Dinner

Mac and cheeseâMY WAYâ
-Ready macaroni noodles(cooked)
-add a bit of seasoning and softened crème cheese
-cheddar cheese
-veggies
-tomato sauce

Desert
Candied Walnuts (see recipe above)



DAY 7

Breakfast
-oatmeal
-micro waved/warm frozen berry medley
-granola

Lunch
Chinese Steamed veggies
-Teriyaki and peanut sauce mixed
( for cheap peanut sauce microwave peanut butter with a bit of oil and sour cream and stir)
-Carrots, Zucchini, eggplant, water chestnuts, (you can get a frozen mix)
-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Dinner
Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)
-onions
-BBQ sauce
-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well
-roll it into balls and coat with flour
-place on a cookie sheet and put it in the oven to bake until brown hot and ready

Easy Vegan Meatloaf Recipe?

Does anyone have a recipe for vegan meatloaf that does not call for tofu?

Buy some TVP (textured vegetable protein) most large grochery stores carry it. You can also get it at a health food store.

2 cups TVP
1 cup water
1 cup bbq sauce
1 table spoon corn starch
Wheat flour as needed

Mix water and bbq sauce and heat till almost boiling. Add TVP. Let stand for a few minutes. Add corn starch then a little flour until it make a nice ball. Put into a loaf pan and cook the same way you would a true meat loaf.

I was raised vegetarian and love the worthington and Loma Linda foods. You can find them in most stores in a section by themself. I asked a manager of a major grocery store one time, showed him a couple labels and they stocked it for me.

The canned fake chicken has a taste and texture of it's own but is really delicious in my opinion. You can do countless things with the vegeburger. I have fooled non vegetarians with vegeburger making a meatloaf and they loved it. I told them what it was after they took a couple bites and told me it was great, they did not believe they were NOT eating real meat!
One of my favorite all time for lunch is sliced nuteena (canned Loma Linda foods) and mayo with or without tomatoe maybe a sprinkle of salt if you like. One really special treat for me is the loma linda (made in loma linda, CA) is the OHHHH Tender bits. Here is one way I love to prepare and any non vegearian I served to ( three of them at different times) that has tried them loves them!!
RECIPE #1
1. With a fork, dip a tender bit from the can one at a time, into bowl of seasoned approx 1 cup of flour, or use a zip lock and shake it like shake n bake. (I eat these cold too, a couple while I am cooking them before I put the flour on)
2. Place floured tender bit into hot cooking grease on medium heat, olive oil preferred but whatever you use.
3. Turn when golden brown. Usually cook on three sides to avoid flour being dry. It will just start to go crispy.
4. serve hot.

RECIPE #2 (lunch)
you can do this with no dishes, just a fork or knife to spread the mayo.

Ingredients: Bread, Nuteena (good alone too!!) This 'meat' has a nice peanut taste.
1. open can of Loma Linda nuteena on both ends. You may have done this trick with dog food or cold cranbery sauce, if not you gotta try it. push the food through by pushing into the can with both lids cut but not removed, a little ways out one end. Carefully remove the lid that you pushed out and use the lid to slice off pieces and place on mayo'ed bread. That is the best way to remove all the meat in one piece.
Or. You can open one end, use a knife to cut a slice out at a time from the can by slicing at a slight angle with the first slice thicker on one end and it comes out sorta oblong.

3. The frozen garden burgers are wonderful for breakfast lunch or dinner if you fry them in hot butter, or olive oil or choice of frying substance, and while hot, place on mayo'ed toasted or not bread. I like mine with a slice of tomatoe.

This is making me hungry!

I eat a lot of baked potatoes alone with all the toppings for a snack.

I love being a vegetarian, the cost is a litlte high on the canned foods, as you will see in the website below, but I believe it is worth every cent when it comes to eating healthy and especially if you enjoy the flavors. Try one of ecah and go back and get your favorites each time.

A suggestion without intent to offend anyone: Drop into a Seventh Day Adventist Church on a Saturday just about noon, as they are coming out, by nature they all hang out and talk and visit for a few minutes before they go off to eat lunch, or leave a note on the door for one to call you, and ask them for some recipes. They are vegetarians and have all the ideas!! Guaranteed, and some super nice people to boot! I guarantee these are the most non-judging Christian people and care unconditionally about everyone. --Do not fear they are like family even if they do not know you and they will not try to trap you into joining like somme churches I have seen, they will only offer a nice invite if anything!! Lovely people. Any city, guaranteed! Or you can try it on your own, just a suggestion on the Church and I do not wish to offend anyone. I back these suggestions with my heart. Please use them if you wish.

Does anyone know a really good vegetarian meatloaf recipe?

i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

Is there such thing as "vegetarian" meatloaf? Can you help provide a recipe?

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beefâflavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

⢠Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
⢠Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
⢠Meanwhile, mix together the ingredients for the coating and set aside.
⢠Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

I have several recipes that I use for vege "meatloaf", but all of mine seem to turn mushy after a night in the fridge, so they don't make good sandwich leftovers. Anyone have a good one that doesn't go mushy?

Eat a lot of legumes to replace meat in your diet. In case you don't know legumes are beans, nut, and barley. If you crave meat here are easy substitutes:

Beef Stock>>>Mushroom Stock

Chicken stock>>>Veggie stock

Beef Tacos>>>Bean Burritos

Steak>>>Suted Mushrooms


Recpies:

Banana Muffins
These moist and delicious muffins will please even the pickiest of eaters.

3 ripe bananas
1/4 cup oil or melted margarine
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts (optionalâsee other options listed below)
⢠Mash bananas (overripe ones make the best bread). Add oil/margarine and sugar. Mix well.
⢠Sift the flour, salt, and baking soda together and add to the banana mixture. Mix until the flour is blended (do not beat).
Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

Optional: Add a handful of walnuts, oatmeal, raisins, chocolate chips, currants, coconut, or all of the above!

Makes 1 Dozen Muffins



Avocado Reuben
Give beef the boot and try our take on the classic reuben sandwichâmade with creamy avocado and a tangy, easy-to-make Thousand Island dressing.

2 slices rye or pumpernickel bread
Mustard
Thousand Island dressing (recipe follows)
1/2 avocado, pitted, peeled, and mashed
1/4 cup sauerkraut

⢠Spread one slice of bread with some mustard, the other slice with Thousand Island dressing.
⢠Place the bread slices, dry side down, in a lightly oiled skillet. Top one slice with avocado, and the other with sauerkraut.
⢠Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together and enjoy!

Makes 1 sandwich




Sumptuous Spinach Salad With Orange Sesame Dressing

1 bunch fresh spinach (about 6 cups of leaves)
1 red or yellow bell pepper, cut into strips
1/4 to 1/2 cup thinly sliced red onion
1 orange, peeled and sliced into thin rounds
1 Tbsp. sesame seeds
2 Tbsp. seasoned rice vinegar
1 Tbsp. orange juice concentrate
1 Tbsp. water
⢠Trim the spinach stems and carefully wash the leaves. Dry, then tear any large leaves into bite-size pieces. Place in a salad bowl along with the pepper, onion, and orange slices.
⢠Toast the sesame seeds in a 400°F toaster oven or regular oven for 10 minutes. Transfer to a blender and grind into a powder. Add the vinegar, orange juice concentrate, and water. Blend to mix. Pour over salad and toss just before serving.

Makes 4 to 6 servings

Creamy Chive Mashed Potatoes
Rich mashed potatoes are the perfect side dish for most meals.

5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup fresh chives, chopped
Salt and pepper, to taste

⢠Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
⢠Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
⢠Serve hot.



Brown Gravy
Tired of plain potatoes? Whip up a batch of this creamy gravy, and serve it with your mashed potatoes and biscuits.

2 Tbsp. (1/4 stick) margarine
1 medium-sized onion, diced
2 Tbsp. unbleached all-purpose flour
1 tsp. garlic salt
2 Tbsp. cornstarch
1 1/2 cups water or vegetable broth
1 tsp. yeast extract
1-2 Tbsp. soy sauce or tamari
Pepper, to taste

⢠Heat the margarine in a medium saucepan over medium heat.
⢠Sauté the onion for a few minutes, then add the flour and garlic salt and sauté for another 8 to 9 minutes.
Dissolve the cornstarch in the water or broth.
Gradually add the cornstarch mixture to the onion mixture, bring to a boil, then simmer for 10 minutes.
⢠Strain the gravy into a separate saucepan and add the yeast extract, soy sauce or tamari, and pepper. Simmer for another minute or 2, stirring constantly. Keep warm.

Preparation time: 45 minutes
Baking time: 40 minutes

Makes 6 servings

Trying to make quick, healthy, mostly vegan food for College (vegetarian is ok too)?

So, this is going to be my second semester in College. Only thing is that last semester I had enough time to run home to my appt and eat lunch. This time I added more classes, meaning no running home for lunch (home is a mile away, but my school/appt is on a very busy road and it takes about 30 mins to get home. I only have 10 mins between most classes now. Can't do!)

I'm vegetarian with mostly vegan tendancies. So more of the vegan recipies I get, the better! (Of course vegetarian too.)

Eating at the college cafeteria isnt an option. It's a community college, and it's in the south. Everything is deep fried and most likely chicken on a biscuit. Im not an amature cook, either, but Im in school now with a tight schedule. Simple yet healthy/low cal/low fat would be awsome. When I get home I normally have a decently fattening/calorie laden meal, Ala' Amy's Organic something-or-other for dinner.

Snack ideas, or even breakfast ideas, would help alot too.

-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)

-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella

-roll it into balls and coat with flour

my sister is very picky with food. she wont eat fruits or veggies. she only eats apples and bananas but very rarely. and she'll only eat them if she cant taste them, like in meatloaf or fried rice. but im getting worried because i dont think she's had a fruit or vegetable in a long time and from what she's telling me, i think she's anemic! so can you give me recipes or advice or sumthin cuz i love her to death and i dont want her to get sick. thx a lot and plz no rude/stupid answers

- If your sister is a non-vegetarian, I would not worry about Iron. Iron in meats is ample and more bio-available than in fruits and vegetables

-Let us examine all the food groups
Grains - Does she eat enough whole-grains? about 6 oz per day
Dairy - Does she drink at least 2 cups of milk per day
Proteins - Does she eat good quality 5 to 6 oz of proteins every day
Eggs, skinless poultry, trimmed meats and nuts
Fats - Does she eat good fats high in omega 3
Walnuts Salmon Tuna

If al the other foods are plenty, your sister is not in such a big trouble. Fruits and vegetables provide vitamins and minerals. The basic vitamin she would have problem is in getting Vitamin C. If she drinks enough milk and eats whole eggs, B vitamins should not be problem. II am not saying that fruits and vegetables are not important, they are because her diet will wind up high in Cholesterol and triglycerides.

Your sister should be glad that you care.

On new years I officially became a vegetarian. Everything was fine and I didn't face any cravings (I'm not much of a meat eater). But I saw that my diet has been reduced to a lot of carbs and cheese's.
I can't eat lettuce, raw tomatoes, or anything that could be found in a salad. I cant eat cauliflower, melons, or apples. It's a stomach condition...

That makes having a vegetarian lifestyle hard!!! I've been enjoying my food but I've been eating rice, pizza, spinach, a lot of home cooked Mexican food, and most of my meals contain a lot of cheese in them.
Help. I've been feeling a weaker lately and I think it's because of my poor diet. I'm going grocery shopping tonight. Any suggestions.

Hi , Even with your stomach condition it sounds like you can still eat lots of vegetarian food and eat healthier . You just need some ideas .

You can cut down the cheese when cooking Mexican food by adding Avocado (a very healthy fat) , how about cooked tomato " stewed " or diced and cooked ? ,

You can also make a Fajita out of sauteed veggies ..some choices to add are peppers, onions, and squash .

You can make veggie slopppy Joe's by simply substituting veggie meat .

How about veggie sausage and peppers on or with Italian bread ?

My mom makes awesome Vegan meatballs using TVP (texturized vegetable protein) instead of meat ..She also makes Vegan meatloaf this same way ..served with mashed potatoes .

Stuff peppers with a rice and veggie meat

Stuff Mushrooms with breadcrumbs and a bit veggie cheese.

There are lots of veggie meats today .. you can make sandwiches with veggie bacon , veggie chicken patties , veggie burgers, veggie hotdogs ,plus all the Veggie deli meats as pepperoni , ham , bologna ..etc all NON meat

Pasta dishes with cooked Veggies , Pesto , or Beans are great

Look in the frozen section for Amy's foods ( many are vegetarian) already prepared

I also adore curry foods ..look for Indian recipes

Add more fruit to your diet , Pineapple and strawberries are low calorie as well as oranges, tangerines , peaches, plums

The easiest way is to think of what you like eating and then just substitute .. begin to experiment more..it gets easier as time goes by ..

I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

Recipes that call for eggs often can work just as well with substitute ingredients. You probably have many egg replacement possibilities in your refrigerator or kitchen cabinet.

Eggs serve a variety of functions in recipes. They often work as binders, holding the other ingredients together, as in a casserole or cake. Eggs also can act as leavening agents, providing lift and affecting texture. The purpose of the egg in a recipe determines what you can use as a substitute. In some cases, you can omit the egg altogether, and the recipe isn't noticeably affected.

Ousting eggs from baked goods
Eggs are used in baked goods for leavening, or lightness. They also may serve as a binder. The purpose the egg serves in the original recipe â as well as the amount of egg the recipe calls for â determines whether you need a substitute and, if so, which alternate ingredient will best serve the function of the egg in the recipe.

Flat foods such as pancakes and cookies don't rely on eggs for lift. In fact, in many cases, you can eliminate the egg without noticeably affecting the final product. That's especially true if the recipe calls for only one egg. If you do omit the egg, however, it's a good idea to add a tablespoon or two of additional liquid â soymilk, fruit juice, or water, for example â for each egg omitted to restore the recipe to its original moisture content.

When a recipe calls for three or more eggs â as many cakes do â the eggs perform a vital function and need to be replaced with an ingredient that can deliver a similar effect.


In recipes for baked goods that have a light, airy texture, replace eggs with an ingredient that provides lift. Any of the following ingredients can replace one whole egg in a recipe:

Half a small, ripe, mashed banana. This substitution gives the food a mild banana flavor, which can be nice in recipes for muffins, cookies, pancakes, and quick breads.
1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, mixed with 2 tablespoons of water. This product is a combination of vegetable starches and works wonderfully in virtually any recipe that calls for eggs. Natural foods stores sell it in 1-pound boxes.
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder, because using fruit purees to replace eggs can make the finished product somewhat denser than the original recipe.
A heaping tablespoon of soy flour or bean flour mixed with a tablespoon of water. This mixture works similarly to vegetarian egg replacer.
2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.
1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.
Replacing eggs in casseroles, loaves, burger patties, and main dishes
Some recipes need an ingredient that binds all the other ingredients together. Eggs are famous for acting as the glue that holds meatballs, meatloaf, and casseroles together. Lacto vegetarian and vegan versions of these traditional foods need something to serve the same purpose. Fortunately, you have many options.

As you might suspect, your choice of ingredients to replace eggs in these types of foods depends on the degree of "stick" you need, as well as how the ingredient will blend with the other flavors in the recipe. Cooked oatmeal may work fine as a binder in a veggie burger patty, for example, but may not be a welcome addition to a vegetable casserole if you don't care for the flavor or texture that it brings to the dish.

If you're altering a traditional recipe, you have to experiment a bit to determine just the right amount of an ingredient to serve the purpose. A good starting point with most recipes in which egg acts as a binder is to use 2 to 3 tablespoons of any of the following ingredients (or a combination of them) to replace one whole egg. If the original recipe calls for two eggs, start with 4 to 6 tablespoons of egg substitute.

Whole-wheat, unbleached, oat, or bean flour

Replacing eggs in sandwich fillings, salads, and scrambled eggs
Finding substitutes for eggs that are hidden in recipes is one thing; finding suitable substitutes for eggs that are more visible in foods is quite another. Fortunately, tofu looks remarkably like cooked egg whites and functions in much the same way in several popular recipes.

You can use chopped firm or extra-firm tofu in place of egg whites in egg salad. Use your favorite egg salad recipe, but substitute tofu for the hard-boiled eggs. You can even replace regular mayonnaise with soy mayonnaise for a vegan version.
Cubes of chopped firm tofu are a nice addition to a mixed green salad or spinach salad, standing in for the customary chopped hard-boiled eggs. You can also add chopped or minced tofu to a bowl of Chinese hot and sour soup.
Try scrambled tofu instead of scrambled eggs at breakfast. Natural foods stores stock "tofu scrambler" seasoning packets, which you may also find in the produce section of your regular supermarket, near the tofu. Many vegetarian cookbooks give recipes for scrambled tofu. The recipes usually include turmeric to give the tofu a yellow color similar to that of scrambled eggs. You can also use scrambled tofu to fill pita pockets or as a sandwich filling on hoagie rolls.

My mom is not supportive of my vegetarianism, so most of the time I'll have to cook my own meals. I need recipes for some simple meals with EVERYDAY INGREDIENTS.

I can handle breakfast on my own, but I'm desperate for lunch and dinner recipes. Lunch would have to be something pre-made and packable.

I'm an ovo-lacto vegetarian, so there's no need to substitute dairy or eggs.

Hi, great choice to become a vegetarian. I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 100+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Does anyone have a recipe for vegan meatloaf that does not call for tofu?

Buy some TVP (textured vegetable protein) most large grochery stores carry it. You can also get it at a health food store.

2 cups TVP
1 cup water
1 cup bbq sauce
1 table spoon corn starch
Wheat flour as needed

Mix water and bbq sauce and heat till almost boiling. Add TVP. Let stand for a few minutes. Add corn starch then a little flour until it make a nice ball. Put into a loaf pan and cook the same way you would a true meat loaf.

What I do is Veganize regular recipes. I do not know what you are tired of eating frequently so it is difficult for me to suggest something new for you. So I can suggest a few good recipe sites for you that I use. You can also purchase a new Vegan cookbook and try the recipes. There is also a new line of Vegan products I can suggest because those are very yummy and easy and quick to prepare. You can make most any recipe Vegan. I have yet to come across a meal or recipe that I have not been able to veganize. You can make Vegan Italian Sausage subs, Vegan "Chicken" Fettucini Alfredo, Vegan Salsbury Steak, Vegan Meatloaf, or Vegan Ruben Sandwiches with Lentil Soup. Some nights when I am in a hurry I make the Gardein Tuscan Breasts, Steamed Broccoli, and baked Sweet Potatoes for Dinner. You can also make Tacos out of Boca Soy Crumbles. You can also make Sloppy Joes out of Manwich Sauce (Which is Vegan) and Boca Soy Crumbles. You can serve the Sloppy Joes with Sweet Potato Fries. Publix and Whole Foods Markets sell Frozen Sweet Potato Fries which are very good. Gardein makes a Vegan BBQ 'Por" substitute that you can just heat up and make BBQ sandwiches out of which also goes great with the Sweet Potato Fries that I mentioned. I also make Vegan chili in the crock pot with Boca soy crumbles. Since you did not specify what you are tired of eating I hope that I did not suggest things that you are tired of eating since I have no idea what your weekly menu already consists of. Hopefully, I have helped give you some easy but new ideas.

What can you substitute for milk in this recipe?

I'm trying to make a meatloaf this evening, but we have no milk. Can I just substitute the milk with water? I have coffee creamer, if that would work. I don't have condensed milk or anything like that. Thank you for your help!

I looked at the recipe. I think you could add 1 cup of any liquid. Water will be very neutral. If you have chicken, veggie or beef broth that would probably give you a richer flavor. You could probably use tomato soup, V-8 juice or another kind of soup like cream of mushroom (but if it's condensed you'll want to thin it out with water to a total volume of 1 cup). I would definitely not use coffee creamer. I think that will just taste weird. Good luck!

I have been cooking alot lately, using recipes from a cookbook I got as a Christmas gift a few years ago. I want to make something that is a typical food dish (i.e. spaghetti, grilled cheese, soup, etc) but I want to add new spices in it that would change it up a bit and something I could serve to my family. I've already tried putting different spices in spaghetti that I made one night for dinner, but the spaghetti sauce was a little bit too strong, so I assume I added too many spices...
Anyways, if anyone has recipes for a simple dish to change it up a bit for my family and I that would be greatly appreciated. Desserts aren't really needed as much as main dishes, but I'd like to make some desserts sometime too. I apologize for the long description. Thanks in advance!
(By the way, I'm just a 15 year old kid so anything I make, my mom has to take me to the grocery store to buy it. Please nothing to bizarre or something that isn't normally in a home. I can go to the store if I really need to.)

MEAT:
-2 lb meat
-1 onion
-2 cloves garlic
-2 eggs
-1 cup breadcrumbs
SAUCE:
-10 oz grape jelly
-3 cups marinara sauce
-1/2 cup tomato juice
-4 tbsp lemon juice
-1/2 cup brown sugar
combine sauce ingredients & cook on low flame. combine meat ingredients & ball meat. cook for 45 min-1 hr

onion rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 5 tbsp onion soup mix
boil water. add onion soup mix & oil. add rice. cover & let cook. fluff with fork.

stringbeans & mushrooms:
- stringbeans
- mushrooms
- 2 cloves garlic
- 1/4 cup oil
- 1/2 cup soy sauce
- 1/2 cup honey
cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

grilled cheese 1:
- bread
- sliced cheese
put cheese on bread. grill/fry/toast until cheese is melted.

grilled cheese 2:
- bread
- pesto sauce
- sliced cheese
- mushrooms
sautee mushrooms. spread pesto on both pieces of bread. put cheese & mushrooms on. grill/fry/toast until cheese is melted.

grilled cheese 3:
- bread
- sliced cheese
- tomato slices
put cheese, tomatos, & mushrooms on. grill/fry/toast until cheese is melted

mushroom rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1 lb sauteed mushrooms
boil water. add oil. add rice. cover & let cook. sautee mushrooms. add mushrooms to pot of rice. fluff with fork & recover to let simmer.

mac & cheese:
-noodles (any shape, any size)
-mozerella cheese
cook pasta. drain & put cooking pan. sprinkle mozerella cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown

mac & cheese with a twist:
-noodles
-cheese

-1 lb mushrooms

sautee veggies in oil. cook pasta. drain & put into frying pan with veggies. let noodles soak up all flavors. put all noodles & veggies in cooking pan. sprinkle cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown.

easy no bake mac & cheese with a twist:
-noodles
-cheese
-mushrooms, cut up
-cherry tomatoes, cut up
cook noodles. strain & put in a bowl/on a plate. sprinkle cheese onto noodles. put in microwave for 40-45 seconds. mix. sprinkle mushrooms & tomatoes. mix around. put in microwave for 40-45 seconds.

meatloaf:

Do you know any simple recipes for a vegetarian meal or snack?
i have a hard time thinking of things to make quickly, that are actually somewhat healthy. i don't eat meat, fish, or geletin. But i do eat eggs sometimes. any ideas? :)

Get some baby carrots. You could also slice some cucumber, cut bell peppers into strips, get some grape tomatoes, and dip them in ranch dressing or hummus.

Tofu Special K Meatloaf

2 16-oz. packages of tofu - mashed.
6 packages George Washington Broth or MBT vegetable broth
1 stick melted margarine
1 cup walnuts, chopped
12 oz box of Special K cereal

Mix all ingredients in a large bowl, adding cereal last, and spread in 13"X9"X2" baking pan slightly sprayed with Pam. Mixture will be quite thick.
Bake at 350 for one hour.

Trying to make quick, healthy, mostly vegan food for College (vegetarian is ok too)?

So, this is going to be my second semester in College. Only thing is that last semester I had enough time to run home to my appt and eat lunch. This time I added more classes, meaning no running home for lunch (home is a mile away, but my school/appt is on a very busy road and it takes about 30 mins to get home. I only have 10 mins between most classes now. Can't do!)

I'm vegetarian with mostly vegan tendancies. So more of the vegan recipies I get, the better! (Of course vegetarian too.)

Eating at the college cafeteria isnt an option. It's a community college, and it's in the south. Everything is deep fried and most likely chicken on a biscuit. Im not an amature cook, either, but Im in school now with a tight schedule. Simple yet healthy/low cal/low fat would be awsome. When I get home I normally have a decently fattening/calorie laden meal, Ala' Amy's Organic something-or-other for dinner.

Snack ideas, or even breakfast ideas, would help alot too.

I am also a student and have been a vegan for almost four years now. Ingredients

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.






Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.
Yield 10 servings
Time an hour
Tools

* large frying pan
* wooden spoon
* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.







Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.
