Easy Dinner recipes?

I'm looking for easy, cheap, tasty recipes that can be doubled ans frozen, so we can eat half fresh and save half for lazy days. Anyone have any ideas? We are a small family of 4.

chicken and rice, pasta and turkey sauce, meatloaf and mashed potatoes or cheesy egg noodles with veggies. spinach or corn... or broccoli

Chicken and rice:(chicken breast you flatten it with a any type of meat hammer..bigger pieces haha)
season chicken with season all or salt and pepper
or any poultry seasoning. garlic powder add chicken to egg wash and then bread crumbs.
After all that put olive oil in saucepan, then add flattend chicken.when saucepan gets hot
RiCE- NO brainer.. read the box!

Pasta - You can use any type my fav is linguine, or bowtie, we dont eat alot of meat so I use ground turkey meat. Season it with thyme, pepper, chili powder, 1 1/2 tblspoon of garlice power, salt and pepper, and chopped onions. Add your fav tomatoe sauce and ther you have it !

Meatloaf:
Add chopped onion, celery,thyme,basil,garlic,bbq sauce or ketchup mix it into egg, the meat and cover with bread crumbs bake it for a bout half an hour depends on size.
Grab some butter. milk, heavy cream, basil, salt, and mozzarella cheese and american mix it and add cooked pasta.

GOOD LUCK THEY ARE ALL REALLY GOOD. TO BE HEALTHIER ADD A SALAD TO EAT.
Also the pasta meat you can use as tacos, or taco salad, also use the meatloaf for meatloaf sandwiches, and the chicken can be saved for at least 3 days.. as sandwich meat also.. Hope you enjoy

There are a lot of meatloaf recipes out there but basically it is meat with a binder (egg &/or breadcrumbs &/or crackers &/or cheese), some seasonings and maybe some veggies (celery, carrots) - then you bake it in the oven.
One hit I will give you is that you should lower fat meat so you don't have it sitting in a pool of grease.


Meatloaf Recipe
1 lb. hamburger
1 egg
1 pkg. saltines (crushed) ½ tsp. salt & pepper
1 clove of garlic (minced) 1 rib of celery (chopped)
dash of Worcestershire sauce ½ cup ketchup
Mix all ingredients and shape into a loaf.
Bake at 350 for 1 hour.
Drain out fat and put back in for 10 minutes.
Remove from oven and let stand for 15 minutes
before slicing,then serve.
You can make a brown gravy to pour on it
or you can have ketchup instead.

Here is something a bit different:
Turkey Meatloaf Muffins with Mushroom Sauce
by Michael Bonacini
An entree for the discriminating palette
3 cups ground turkey breast
2 cloves garlic, finely minced
1 medium Spanish onion, finely diced
1 tbsp Dijon mustard
1/4 tsp freshly chopped thyme
1 whole egg, lightly beaten
1/4 cup milk
1/2 cup bread crumbs
1 tbsp Worcestershire sauce
Splash of vegetable oil
Salt and pepper to taste

1. In a small frying pan over medium high heat, gently cook the diced onion and garlic in a splash of vegetable oil until soft and tender, about four or five minutes. Once cooked remove from heat and allow to cool.
2. In a large mixing bowl, place the ground turkey, egg, milk and breadcrumbs. Season well with salt and pepper.
3. Add the cooked and cooled onion and garlic, followed by the Dijon mustard, Worcestershire sauce and mix thoroughly. You may wish to fry a little of the mixture up in the pan to taste and check for seasoning.
4. Once satisfied that the seasoning is correct, divide the mixture into six or eight muffin piece sizes and place into a lightly oiled muffin pan. Bake in a pre-heated oven at 350F to 375F degrees for approximately 35 to 40 minutes.
5. Serves 6 to 8.

Mushroom Sauce
2 cups mushrooms of your choice, sliced and diced
1/2 cup chicken broth
1/4 cup Madera (a type of wine)
1 tbsp butter
Splash of olive oil
Salt and pepper to taste

1. In a frying pan over medium-high heat, begin to sauté the mushrooms in a splash of olive oil, stirring and seasoning with salt and pepper.
2. Once the mushrooms begin to soften, add Madera and reduce by half.
3. Add the chicken broth and reduce by half.
4. Remove from heat, add the butter to enrich your sauce and serve.

Cooking for One EASY Recipes or EASY Cookbooks for 1?

Q. I'm looking for recipes for one person. Do you have a cookbook cooking for 1? If so, please write.

If you do not, please do NOT reply. I can do my own research on the internet but am hoping
someone out there has great ideas to share. The internet is filled with cookbooks none of which I am interested in buying unless there is an opinion/ recommendation/ experience attached.

Specifically I would like rice or beef or chicken and veggies casseroles recipes for 1.

I find that a lot of the recipe cookbooks called, cooking for one, actually tell you how to make dishes which you can freeze and reheat later. I am currently working on putting my own cookbook together of practical meals to prepare for one...with no leftovers involved. Here are a couple of my recipes which have worked really well for me.
TUNA CASSEROLE (1)
1/2 cup elbow macaroni...cook
1 T. butter
1 T. flour
1/2 cup milk
1/2 tsp. instant chicken boullion, dissolved (optional)
1 slice cheddar cheese cut up in small pieces.
1 small pkt. tuna (3 oz.)
Heat above until cheese is melted. Add to the cooked macaroni. Pour in casserole dish
and crush 1 saltine cracker, crumbled, over the top. Dot with butter and put in 400 degree
oven for about 20 min.

MEATLOAF (1)
1/4 lb. ground chuck
1/4 tsp. onion powder
1 tsp mayonnaise
1 Tbs. bread crumbs
1/2 tsp. A-1 steak sauce
2 T. ketchup
Mix gently with hands so as not to mush the ground beef.
Put in baking pan and bake for 20 min. then add the glaze and bake another 5 -10 min.
Glaze
1 tsp. dark Karo syrup
1 tsp. ketchup
1 tsp. brown sugar
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered until coating is cooked. Slice and serve.


SCALLOPED CORN
1 small can creamed corn (8.s5 oz.)
1 Tbs. mayo
1/2 tsp. onion powder
1 tsp. sugar
salt, pepper to taste.
Top with:
1 Tbs. cracker crumbs
dotted with butter (1 tsp.)
Bake at 375 degrees for about 25 min.

SCALLOPED POTATOES
1 med. potato (partially cooked)
Cook in microwave for 1 min. Cool, to handle.
Peel and slice.
Mix:
1 T. butter
1 T. flour
1/2 cup milk
add to potato slices, stir being careful not to mash the potato slices. add salt & pepper to taste.
Pour in casserole dish. Bake at 375 degrees for about 25 min.

OVEN GREEN BEANS
1 small can green beans (8oz.)
garlic salt, to taste
pepper, to taste
1/2 Tbs. butter
1/2 Tbs. brown sugar
1 strip bacon
Lightly spray/grease a flat baking pan. Lay green beans to cover the bottom of your pan. Sprinkle your beans with a little garlic salt and pepper (however much you like). If you really love garlic, you might consider mixing some fresh mashed garlic or minced canned garlic into the sauce... but you don't have to because this has such a lovely flavor - even without added garlic! Melt your butter in a glass measuring cup and stir your brown sugar into it until well-blended. Pour mixture over your beans evenly. Layer bacon strip over the top of the beans. Cook in the oven on about 350 for about 30 minutes (or until bacon is to desired crispness).

CHICKEN AND DRESSING
1/8 tsp. each: ground sage, dried savory and poultry seasoning.
1/4 tsp. instant chicken bouillon granules
2 tsp. dried chopped celery
1/2 tsp. dried minced onion
1/2 tsp. dried parsley leaves, crushed
dash pepper
in a saucepan, add:
1/3 cup water
1 Tbs. butter or margarine
the seasonings from above
Bring to a boil over mediium high heat.
Reduce the heat to medium, simmer for about 5 minutes. Stir in:
1/2 cup partially dried 1/2 inch bread cubes. Cook for 1 to 2 minutes until the liquid is absorbed, stirring constantly.
Add 1/3 cup cubed chicken and 1/2 cup steamed peas. Mix. Put in casserole dish and top with bread crumbs, dotted with butter.
Bake at 350 degrees for 20 minutes.

How to make meatloaf?

Easy and tasty Meatloaf recipes pls...?

for 4 people.. but i m kind a lazy so I m looking for easy ones :)


Answer
First is to determine how many folks you are cooking for.
If it is a typical family of four deal, I can recommend the following as a "base" recipe, which will also give you some leftovers, or good for roughly 6;

2.5 lbs. of good ground beef (not leanest ground)
1.5 lbs. of good ground pork
2 medium onions, diced or processed finely
3 good stalks of celery, diced, processed finely (with above)
2 med. carrots-diced/minced (with above)
1 green pepper-diced/minced (with above)
2 eggs
1/2 cup half and half
1.5 cups Italian bread crumbs
quick seasonings mix-use Italian blend-2-3 tablespoons
2 tablespoons minced garlic
1 jar/can of good spaghetti sauce or make scratch same qty.

Saute minced veggies in bacon fat or vegetable oil until soft and lightly browned. Add to meat, mix with all other ingredients, (reserve the half of the sauce for topping while cooking)-WELL. You may want to add some breadcrumbs if mixture is TOO mushy-remember it will cook down and firm up. Cook at 350 for about 1 hour in a loaf pan-halfway through top with the rest of the tomato sauce.

Quick and Easy Dinners?

Hi! I need a quick and easy dinner for tonight. It it 8:00 pm Eastern Time. I don't want to run to the market.. literally. I can't drive and I run to the market. Its like 2 miles away.. so not far at all! But, like I don't feel like it cause I had a workout practice today for track. Any ways.. Im 13 years old, and what can I eat? We have pasta at home, pita rolls, tortilla rolls, bread, eggs, soup, ravioli, bagel bites, the basics. Haha, what can I make? Thats kid friendly. Im starved so it can't be like Meatloaf or something! HELP?

Here are a few E-Z recipes you might want to try. Good Luck & enjoy.

COLA CHICKEN (And more variations of recipe)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!

You can double the recipe and use more pieces of
chicken....wings...would be ideal...add some hot sauce....presto "Hot Wings"!

I have used Ribs, just as good.

I tried this recipe with 'meatballs'....was equally
as good...served over rice.

I found another variation.....omit the catsup and add a small jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup....not).
You'd think a recipe with only '3' ingredients couldn't be messed up....wouldn't you??
Well...while I was preparing to fix the 'Cola Chicken' recipe
using Salsa.....I was also trying to carry on a conversation with my
husband...(just proves...I can't do two things at once)....mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola........still turned out really tasty (to me)...might be a little sweeter than some of you like.

I fixed chicken wings, (using the above recipe)
but...I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).

Finally....!! I fixed the 'SALSA' chicken......that's good , too.

Another (bright)idea.....I thought of trying......replace the
catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!
Fixed the shrimp with cocktail sauce......eh...wasn't all that
great...was OK...probably won't be fixing it again.

Also tried beef stew cuts......that was pretty good.....I can see
myself making this again.
Served both over rice.....think the stew cuts would have been just as
good over noodles.

Try little cocktail weiners/sausagesâ¦for appetizers.





CRUNCHY ONION CHICKEN

1 1/3 cups Frenchâs Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten

LIGHTLY CRUSH:

Onions in a plastic bag.

DIP:
Chicken in egg

COVER:
With onion crumbs, press firmly to adhere to chicken.

BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.




CHILLI DOG CASSEROLE
1 pkg. (8) hot dog buns
1 pkg. (8) hot dogs (use more if you like)
1 can Chilli (15 oz. without beans, use more if you want)
1 small onion (chopped)
2 cups shredded cheese
mustard


DIRECTIONS: Pre-heat oven 350 degrees
In a 9" x 13" baking pan, break up hot dog buns (bite size) and spread in pan.
Cut up hot dogs (about 1/2" size) spread over buns.
Spoon/spred chilli over hot dog/buns.
Sprinkle onions over all.
Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)
Cover with shredded cheese.
Bake until cheese is melted and bubbly.
(Hint: If using extra hot dogs & chilli, don't add extra buns.)

"Canned Soup".
(My Way!)
Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.
Cook on stove top or Crock pot.
Enjoy!

Canned:
corn
peas
carrots
gr.beans (any variety)
lima beans
wax beans
tomato (any variety)
potatoes (whole or sliced...or both whatever you like)

You get the idea....lol.

Also add a package of shredded cabbage (cole slaw mix).

You can even add a package of onion soup mix.

If it gets to dry and needs more liquids....add tomato juice...V-8...etc.


(Iâve not made this one yet)
EASY BEEF STROGANOFF

Ingredients:

3/4 lb lean ground beef
1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)
1 can mushrooms, drained (7 oz can)
1/2 cup sour cream
4-6 cups hot cooked noodles
salt & pepper, to taste

Instructions:

In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.

Preparation Time: 1-15 minutes
Cook Time: 25+ minutes


(Iâve not made this yet, eitherâ¦.just received it.)
"Corny Beanie Weenies."
(from a country preacher in Mississippiâ¦wife & 2 teenage sons)

Mix one can of good baked beans
We use a good sized can of beans (14-16 ounces, I think) and
get a kind that we like (maybe with brown sugar, onion, and bacon).
There are several kinds of good baked beans.

and a package of Oscar Meier Weiners (all sliced up).

with a can of whole kernel corn (drained)

Any way, heat up these three ingredients, and serve with brown bread
(maybe toasted ?) and a glass of milk.

It doesn't get any easier than this, and is suprisingly good!

P.Sâ¦..Might put ingredients ina casserole dish and top with corn muffin mix.



POT ROAST
Your choice of beef (to fit crock-pot)
1 pkg. dry Ranch dressing mix
1 pkg. dry Italian dressing mix
1 pkg. dry Brown Gravy mix
1 cup water
Put beef in pot.
Mix together all the dry mixesâ¦.then add water â¦pour over meat and cover & cook on high 4-6 hours.
Until meat is tender.
The first time I mad it I didnât have the Italian Dressing mixâ¦.so I added a pkg. of Onion Soup Mixâ¦.I have to say I liked that better.
If you use more water you might want to add more Brown Gravy mixâ¦.to make a thicker sauce. Was gonna add
potatoes and carrotsâ¦but never got around to it.


HASH BROWN CASSEROLE

2 lbs. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red â green â yellow â orange â or a mixture of all)
1 lb. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 â 8oz. packages of shredded cheese
½ cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)

Grease a 9 x 13 baking pan, wipe excess with paper towel.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoesâ¦then
Peppersâ¦
Mushroomsâ¦
Ham..
Onions (reserve about ¼ cup)
Mix eggs & milk togetherâ¦â¦.I added about 2 TBLS. Tabascoâ¦more to your taste⦠pour slowly over all.
Cover with shredded cheeseâ¦.then sprinkle over all
Remaining onionsâ¦
Olivesâ¦
Baconâ¦
Cover and refrigerate overnight.
Uncover and bake at 375 degrees for 35 â 45 minutesâ¦until browned and cheese is melted.
Serve with sour cream and/or salsa.




OLD SETTLERâS BEANS
INGREDIENTS:
1/2 lb. ground beef
1/2 lb. bacon
1 chopped onion
Brown in skillet and drain excess grease.

ADD:
16 oz. can Red Kidney Beans (drained)
24 oz. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup Catsup
2 TBLS. Molasses
1/2 tsp. dry mustard

Mix Thoroughly !
Cook in a crock pot until...hot...hot...hot!


MARINATED VEGGIE SALAD
1 lb. can French style green beans
1 lb. can small peas
1 lb. can white corn
1 - 4oz. jar pimento (chopped)
1 cup shopped onion
1 cup chopped celery
1 cup chopped green pepper
1 cup sugar (I used artificial sweetener)
2/3 cup vinegar (I used red wine vinegar)
1/2 cup cooking oil
1 tsp. salt
1 tsp. pepper

1.)Pour green beans, peas, corn & pimento in a colander to drain over a
large bowl. Discard 1 1/2 cups of liquid.
2.)Put veggies in a large bowl and fold in onions, celery and green
peppers.
3.)Mix together thoroughly the remaining ingredients and toss with
veggies.
4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)

Desserts/Snacks


POUND CAKE

Combine:
2 sticks butter
1 2/3 cup sugar

Beat in:
5 eggs (1 at a time)

Add:
2 cups sifted flour
1 teaspoon vanilla
1 teaspoon rum extract

Mix thoroughly and bake 1 hour at 325 degrees.



E-Z Candy
(All recipes are mixed the same.)

Melt ingredients, seperately in microwave until runny.
Mix together and pour into serving dish.
Chill until firm, cut & serve.

Chocolate Fudge:
16 oz. container of Fudge Frosting
1 bag of Chocolate Chips (any flavor you like)

Peanut Butter Fudge #1:
1 small jar Peanut Butter (18 oz.)
2 bags of Peanut Butter Chips

Peanut Butter Fudge #2:
1 small jar Peanut Butter (18oz.)
16 oz. container of White Frosting

Marshmallow Nougat:
1 small jr Marshmallow Creme
1 bag White Chocolate Chips
1 tsp. Almond Flavoring
1 small bag Chopped Nuts

(I've made this without the flavoring & nuts....I want to try
rolling
into balls and dipping in a chocolate coating....sounds good to
me.)

I've doubled all the above recipes. The Marshmallow Nougat
recipe...doubled and added a container of white frosting (had an
extra one....so thought....why not!)

I use a double boiler..(prefer the double
boiler)...add chips in first ...then rest of
ingredients.....saving
nuts and flavorings for last.


Kreamy Kool-Aid Pie

1-(6 g) package un sweetened Kool-Aid powdered drink mix
1-(14 oz.)can sweetened condensed milk
1-(8 oz)container Cool Whip frozen whipped topping, thawed.

I find that a lot of the recipe cookbooks called, cooking for one, actually tell you how to make dishes which you can freeze and reheat later. I am currently working on putting my own cookbook together of practical meals to prepare for one...with no leftovers involved. Here are a couple of my recipes which have worked really well for me.
TUNA CASSEROLE (1)
1/2 cup elbow macaroni...cook
1 T. butter
1 T. flour
1/2 cup milk
1/2 tsp. instant chicken boullion, dissolved (optional)
1 slice cheddar cheese cut up in small pieces.
1 small pkt. tuna (3 oz.)
Heat above until cheese is melted. Add to the cooked macaroni. Pour in casserole dish
and crush 1 saltine cracker, crumbled, over the top. Dot with butter and put in 400 degree
oven for about 20 min.

MEATLOAF (1)
1/4 lb. ground chuck
1/4 tsp. onion powder
1 tsp mayonnaise
1 Tbs. bread crumbs
1/2 tsp. A-1 steak sauce
2 T. ketchup
Mix gently with hands so as not to mush the ground beef.
Put in baking pan and bake for 20 min. then add the glaze and bake another 5 -10 min.
Glaze
1 tsp. dark Karo syrup
1 tsp. ketchup
1 tsp. brown sugar
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered until coating is cooked. Slice and serve.


SCALLOPED CORN
1 small can creamed corn (8.s5 oz.)
1 Tbs. mayo
1/2 tsp. onion powder
1 tsp. sugar
salt, pepper to taste.
Top with:
1 Tbs. cracker crumbs
dotted with butter (1 tsp.)
Bake at 375 degrees for about 25 min.

SCALLOPED POTATOES
1 med. potato (partially cooked)
Cook in microwave for 1 min. Cool, to handle.
Peel and slice.
Mix:
1 T. butter
1 T. flour
1/2 cup milk
add to potato slices, stir being careful not to mash the potato slices. add salt & pepper to taste.
Pour in casserole dish. Bake at 375 degrees for about 25 min.

OVEN GREEN BEANS
1 small can green beans (8oz.)
garlic salt, to taste
pepper, to taste
1/2 Tbs. butter
1/2 Tbs. brown sugar
1 strip bacon
Lightly spray/grease a flat baking pan. Lay green beans to cover the bottom of your pan. Sprinkle your beans with a little garlic salt and pepper (however much you like). If you really love garlic, you might consider mixing some fresh mashed garlic or minced canned garlic into the sauce... but you don't have to because this has such a lovely flavor - even without added garlic! Melt your butter in a glass measuring cup and stir your brown sugar into it until well-blended. Pour mixture over your beans evenly. Layer bacon strip over the top of the beans. Cook in the oven on about 350 for about 30 minutes (or until bacon is to desired crispness).

CHICKEN AND DRESSING
1/8 tsp. each: ground sage, dried savory and poultry seasoning.
1/4 tsp. instant chicken bouillon granules
2 tsp. dried chopped celery
1/2 tsp. dried minced onion
1/2 tsp. dried parsley leaves, crushed
dash pepper
in a saucepan, add:
1/3 cup water
1 Tbs. butter or margarine
the seasonings from above
Bring to a boil over mediium high heat.
Reduce the heat to medium, simmer for about 5 minutes. Stir in:
1/2 cup partially dried 1/2 inch bread cubes. Cook for 1 to 2 minutes until the liquid is absorbed, stirring constantly.
Add 1/3 cup cubed chicken and 1/2 cup steamed peas. Mix. Put in casserole dish and top with bread crumbs, dotted with butter.
Bake at 350 degrees for 20 minutes.

Quick and easy meals?

Q. I need some ideas for meals. My problem is my boyfriend is sooo picky he won't eat anything with onions or peppers or basically any kind of vegetables.

My hubby is the same way... you can make any recipe and just leave out the onions and peppers. Also, with the vegetable thing I "sneak" them into the meal. Examples:

-- Make a meatloaf and stuff the middle of it with broccoli, mushrooms, carrots, cauliflower, spinach (any that he'll eat!) and a little cheese
-- Try a Tuna Helper and add in some frozen peas, broccoli, or green beans
-- Hamburger Helper with some tomato chunks
-- Spaghetti with meatsauce -- use a jar/can of sauce and add some spices (garlic salt, garlic, rosemary, parsley, etc) to make it tastier. For some veggies use the sauce with veggies in it!
-- Grilled Ham, Tomato, and Cheese with some sort of soup or chowder


Here is another way to deal with a "picky" eater: Tell him you are going to be experimenting with cooking and you both will have to test things out and be open to trying them after you've put all the effort in. He'll eat it because he has to and it will help him open his palate to different flavors... and you'll learn a lot about cooking!! Meatloaf is inexpensive and easy to make- served with mashed potatoes and whole green beans or steamed baby carrots and have the leftovers as meatloaf sandwiches or heated up with gravy.

You can add or delete any ingredients that you want as long as the basics remain the same - the meat, eggs, bread crumbs and onion soup mix:

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Baked Chicken #1 or Pork Chops

Marinate your chicken in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with roasted potatoes, a veggie or salad.

Baked Chicken #2 or Pork Chops

1 box of stuffing mix like Stove Top
4-6 boneless, skinless chicken breasts
1 can condensed Cream of Mushroom or Cream of Chicken soup - I like Campbell's but any brand will work
1/2 soup can of milk
1/4 cup bread crumbs - I like Italian style
1 cup shredded cheddar cheese

Preheat oven to 375 degrees F. In a small bowl, mix the can of soup and milk; set aside. Make stuffing mix according to package directions and spread into a greased 13x9 in baking pan. Place chicken pieces over the stuffing. Cover with the soup mixture. Sprinkle the shredded cheese and bread crumbs over the top of the chicken and bake for 45 minutes to one hour depending upon how thick you chicken pieces are. Serve with a green salad.

Prepared macaroni and cheese can be substituted for the stuffing.

Stove Top BBQ'd Pork Chops or Chicken Breasts

Melt a little butter in a big heavy frying pan, add some slice onion and cook until tender. Put you pork chops in the frying pan and brown on both sides. Cover with your favorite BBQ sauce, cover the pan and simmer until the chops are tender. Serve with rice, potato salad or mashed potatoes and a veggie.

Classic Potato Salad

Ingredients
2 pounds potatoes (6 medium) - Use red or Yukon Gold potatoes
1/4 teaspoon salt
1-1/4 cups Miracle Whip or mayonnaise - I prefer Miracle Whip, it gives the potato salad a bit more of a zing
1 tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup thinly sliced celery (2 stalks)
1/3 cup chopped onion (1 small)
6 Hard-Cooked Eggs, coarsely chopped

Directions
In a medium saucepan place potatoes, the 1/4 teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain well; cool slightly. Cube the potatoes.

Meanwhile, for dressing, in a large bowl combine Miracle Whip, mustard, the 1/2 teaspoon salt, and the pepper.

Stir in the celery and onion. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.

Macaroni and Cheese - add a pound diced ham, a pound of browned hamburger or a package of sliced hot dogs and a package of frozen mixed veggies, peas or corn to the mac and cheese before pouring it into the baking dish to make a hearty meal.

Ingredients
8 ounces dried elbow macaroni (2 cups)
1/2 cup chopped onion (1 medium)
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon dry mustard - I like Coleman's English
1/8 teaspoon black pepper
2-1/2 cups milk
1-1/2 cups shredded cheddar cheese (6 ounces)
1-1/2 cups shredded American cheese (6 ounces) - I like to use Veleeta

Directions
Cook macaroni according to package directions. Drain; set aside.

Meanwhile, for cheese sauce, in a medium saucepan cook onion in hot butter until tender but not brown. Stir in flour, dry mustard and pepper. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Add cheeses, stirring until melted. Stir in cooked macaroni. Transfer mixture to a 2-quart casserole.

Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until bubbly and heated through. Let stand for 10 minutes before serving. Makes 4 servings.

Saucepan Macaroni and Cheese: Prepare as above, except reduce milk to 2 cups. After draining macaroni, immediately return macaroni to the saucepan. Pour cheese sauce over macaroni; stir to coat macaroni with sauce. Cook over low heat for 2 to 3 minutes or until heated through, stirring frequently. Let stand for 10 minutes before serving.

Beer Brats

Boil your Brats in the beer that you have add some sliced onions and garlic to and use a good dark beer like Guinness. I actually like to use both Guinness and either Bass Ale or Harps Ale because I like the taste of Black and Tans. Remove the Brats and onions from the beer, keeping the onions. After removing your Brats from the beer, continue to boil the beer until you reduce it by at least half and then brush it on the sausages while grilling. Take the leftover onions and saute them in a pan or on the grill with a bit of butter and serve over the grilled Brats with spicy mustard and maybe some sauerkraut.

Quick and Easy Dinners?

Hi! I need a quick and easy dinner for tonight. It it 8:00 pm Eastern Time. I don't want to run to the market.. literally. I can't drive and I run to the market. Its like 2 miles away.. so not far at all! But, like I don't feel like it cause I had a workout practice today for track. Any ways.. Im 13 years old, and what can I eat? We have pasta at home, pita rolls, tortilla rolls, bread, eggs, soup, ravioli, bagel bites, the basics. Haha, what can I make? Thats kid friendly. Im starved so it can't be like Meatloaf or something! HELP?

Here are a few E-Z recipes you might want to try. Good Luck & enjoy.

COLA CHICKEN (And more variations of recipe)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!

You can double the recipe and use more pieces of
chicken....wings...would be ideal...add some hot sauce....presto "Hot Wings"!

I have used Ribs, just as good.

I tried this recipe with 'meatballs'....was equally
as good...served over rice.

I found another variation.....omit the catsup and add a small jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup....not).
You'd think a recipe with only '3' ingredients couldn't be messed up....wouldn't you??
Well...while I was preparing to fix the 'Cola Chicken' recipe
using Salsa.....I was also trying to carry on a conversation with my
husband...(just proves...I can't do two things at once)....mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola........still turned out really tasty (to me)...might be a little sweeter than some of you like.

I fixed chicken wings, (using the above recipe)
but...I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).

Finally....!! I fixed the 'SALSA' chicken......that's good , too.

Another (bright)idea.....I thought of trying......replace the
catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!
Fixed the shrimp with cocktail sauce......eh...wasn't all that
great...was OK...probably won't be fixing it again.

Also tried beef stew cuts......that was pretty good.....I can see
myself making this again.
Served both over rice.....think the stew cuts would have been just as
good over noodles.

Try little cocktail weiners/sausagesâ¦for appetizers.





CRUNCHY ONION CHICKEN

1 1/3 cups Frenchâs Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten

LIGHTLY CRUSH:

Onions in a plastic bag.

DIP:
Chicken in egg

COVER:
With onion crumbs, press firmly to adhere to chicken.

BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.




CHILLI DOG CASSEROLE
1 pkg. (8) hot dog buns
1 pkg. (8) hot dogs (use more if you like)
1 can Chilli (15 oz. without beans, use more if you want)
1 small onion (chopped)
2 cups shredded cheese
mustard


DIRECTIONS: Pre-heat oven 350 degrees
In a 9" x 13" baking pan, break up hot dog buns (bite size) and spread in pan.
Cut up hot dogs (about 1/2" size) spread over buns.
Spoon/spred chilli over hot dog/buns.
Sprinkle onions over all.
Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)
Cover with shredded cheese.
Bake until cheese is melted and bubbly.
(Hint: If using extra hot dogs & chilli, don't add extra buns.)

"Canned Soup".
(My Way!)
Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.
Cook on stove top or Crock pot.
Enjoy!

Canned:
corn
peas
carrots
gr.beans (any variety)
lima beans
wax beans
tomato (any variety)
potatoes (whole or sliced...or both whatever you like)

You get the idea....lol.

Also add a package of shredded cabbage (cole slaw mix).

You can even add a package of onion soup mix.

If it gets to dry and needs more liquids....add tomato juice...V-8...etc.

EASY BEEF STROGANOFF

Ingredients:

3/4 lb lean ground beef
1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)
1 can mushrooms, drained (7 oz can)
1/2 cup sour cream
4-6 cups hot cooked noodles
salt & pepper, to taste

Instructions:

In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.

Preparation Time: 1-15 minutes
Cook Time: 25+ minutes


(Iâve not made this yet, eitherâ¦.just received it.)
"Corny Beanie Weenies."
(from a country preacher in Mississippiâ¦wife & 2 teenage sons)

Mix one can of good baked beans
We use a good sized can of beans (14-16 ounces, I think) and
get a kind that we like (maybe with brown sugar, onion, and bacon).
There are several kinds of good baked beans.

and a package of Oscar Meier Weiners (all sliced up).

with a can of whole kernel corn (drained)

Any way, heat up these three ingredients, and serve with brown bread
(maybe toasted ?) and a glass of milk.

It doesn't get any easier than this, and is suprisingly good!

P.Sâ¦..Might put ingredients ina casserole dish and top with corn muffin mix.



POT ROAST
Your choice of beef (to fit crock-pot)
1 pkg. dry Ranch dressing mix
1 pkg. dry Italian dressing mix
1 pkg. dry Brown Gravy mix
1 cup water
Put beef in pot.
Mix together all the dry mixesâ¦.then add water â¦pour over meat and cover & cook on high 4-6 hours.
Until meat is tender.
The first time I mad it I didnât have the Italian Dressing mixâ¦.so I added a pkg. of Onion Soup Mixâ¦.I have to say I liked that better.
If you use more water you might want to add more Brown Gravy mixâ¦.to make a thicker sauce. Was gonna add
potatoes and carrotsâ¦but never got around to it.


HASH BROWN CASSEROLE

2 lbs. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red â green â yellow â orange â or a mixture of all)
1 lb. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 â 8oz. packages of shredded cheese
½ cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)

Grease a 9 x 13 baking pan, wipe excess with paper towel.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoesâ¦then
Peppersâ¦
Mushroomsâ¦
Ham..
Onions (reserve about ¼ cup)
Mix eggs & milk togetherâ¦â¦.I added about 2 TBLS. Tabascoâ¦more to your taste⦠pour slowly over all.
Cover with shredded cheeseâ¦.then sprinkle over all
Remaining onionsâ¦
Olivesâ¦
Baconâ¦
Cover and refrigerate overnight.
Uncover and bake at 375 degrees for 35 â 45 minutesâ¦until browned and cheese is melted.
Serve with sour cream and/or salsa.




OLD SETTLERâS BEANS
INGREDIENTS:
1/2 lb. ground beef
1/2 lb. bacon
1 chopped onion
Brown in skillet and drain excess grease.

ADD:
16 oz. can Red Kidney Beans (drained)
24 oz. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup Catsup
2 TBLS. Molasses
1/2 tsp. dry mustard

Mix Thoroughly !
Cook in a crock pot until...hot...hot...hot!


MARINATED VEGGIE SALAD
1 lb. can French style green beans
1 lb. can small peas
1 lb. can white corn
1 - 4oz. jar pimento (chopped)
1 cup shopped onion
1 cup chopped celery
1 cup chopped green pepper
1 cup sugar (I used artificial sweetener)
2/3 cup vinegar (I used red wine vinegar)
1/2 cup cooking oil
1 tsp. salt
1 tsp. pepper

1.)Pour green beans, peas, corn & pimento in a colander to drain over a
large bowl. Discard 1 1/2 cups of liquid.
2.)Put veggies in a large bowl and fold in onions, celery and green
peppers.
3.)Mix together thoroughly the remaining ingredients and toss with
veggies.
4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)

Desserts/Snacks


POUND CAKE

Combine:
2 sticks butter
1 2/3 cup sugar

Beat in:
5 eggs (1 at a time)

Add:
2 cups sifted flour
1 teaspoon vanilla
1 teaspoon rum extract

Mix thoroughly and bake 1 hour at 325 degrees.



E-Z Candy
(All recipes are mixed the same.)

Melt ingredients, seperately in microwave until runny.
Mix together and pour into serving dish.
Chill until firm, cut & serve.

Chocolate Fudge:
16 oz. container of Fudge Frosting
1 bag of Chocolate Chips (any flavor you like)

Peanut Butter Fudge #1:
1 small jar Peanut Butter (18 oz.)
2 bags of Peanut Butter Chips

Peanut Butter Fudge #2:
1 small jar Peanut Butter (18oz.)
16 oz. container of White Frosting

Marshmallow Nougat:
1 small jr Marshmallow Creme
1 bag White Chocolate Chips
1 tsp. Almond Flavoring
1 small bag Chopped Nuts

(I've made this without the flavoring & nuts....I want to try
rolling
into balls and dipping in a chocolate coating....sounds good to
me.)

I've doubled all the above recipes. The Marshmallow Nougat
recipe...doubled and added a container of white frosting (had an
extra one....so thought....why not!)

I use a double boiler..(prefer the double
boiler)...add chips in first ...then rest of
ingredients.....saving
nuts and flavorings for last.


Kreamy Kool-Aid Pie

1-(6 g) package un sweetened Kool-Aid powdered drink mix
1-(14 oz.)can sweetened condensed milk
1-(8 oz)container Cool Whip frozen whipped topping, thawed.

Lightly spray/grease a flat baking pan. Lay green beans to cover the bottom of your pan. Sprinkle your beans with a little garlic salt and pepper (however much you like). If you really love garlic, you might consider mixing some fresh mashed garlic or minced canned garlic into the sauce... but you don't have to because this has such a lovely flavor - even without added garlic! Melt your butter in a glass measuring cup and stir your brown sugar into it until well-blended. Pour mixture over your beans evenly. Layer bacon strip over the top of the beans. Cook in the oven on about 350 for about 30 minutes (or until bacon is to desired crispness).

1/8 tsp. each: ground sage, dried savory and poultry seasoning.
1/4 tsp. instant chicken bouillon granules
2 tsp. dried chopped celery
1/2 tsp. dried minced onion

dash pepper
in a saucepan, add:
1/3 cup water
1 Tbs. butter or margarine
the seasonings from above
Bring to a boil over mediium high heat.
Reduce the heat to medium, simmer for about 5 minutes. Stir in:
1/2 cup partially dried 1/2 inch bread cubes. Cook for 1 to 2 minutes until the liquid is absorbed, stirring constantly.
Add 1/3 cup cubed chicken and 1/2 cup steamed peas. Mix. Put in casserole dish and top with bread crumbs, dotted with butter.
Bake at 350 degrees for 20 minutes.

Quick and Easy Dinners?

Hi! I need a quick and easy dinner for tonight. It it 8:00 pm Eastern Time. I don't want to run to the market.. literally. I can't drive and I run to the market. Its like 2 miles away.. so not far at all! But, like I don't feel like it cause I had a workout practice today for track. Any ways.. Im 13 years old, and what can I eat? We have pasta at home, pita rolls, tortilla rolls, bread, eggs, soup, ravioli, bagel bites, the basics. Haha, what can I make? Thats kid friendly. Im starved so it can't be like Meatloaf or something! HELP?

Here are a few E-Z recipes you might want to try. Good Luck & enjoy.

COLA CHICKEN (And more variations of recipe)
4 skinless, boneless chicken breasts
1 cup catsup
1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan.
Mix together catsup and cola, pour over chicken.
Bring to a boil. Cover, reduce heat and cook 45 minutes.
(turning chicken a few times, while cooking...to prevent from sticking to pan)
Uncover, turn up the heat and continue to cook until the sauce
becomes thick and adheres to the chicken.
It turns into the most incredible BBQ sauce. Yummmm!

You can double the recipe and use more pieces of
chicken....wings...would be ideal...add some hot sauce....presto "Hot Wings"!

I have used Ribs, just as good.

I tried this recipe with 'meatballs'....was equally
as good...served over rice.

I found another variation.....omit the catsup and add a small jar of Salsa (any variety).
I have tried using Salsa (omitting the catsup....not).
You'd think a recipe with only '3' ingredients couldn't be messed up....wouldn't you??
Well...while I was preparing to fix the 'Cola Chicken' recipe
using Salsa.....I was also trying to carry on a conversation with my
husband...(just proves...I can't do two things at once)....mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola........still turned out really tasty (to me)...might be a little sweeter than some of you like.

I fixed chicken wings, (using the above recipe)
but...I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).

Finally....!! I fixed the 'SALSA' chicken......that's good , too.

Another (bright)idea.....I thought of trying......replace the
catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!
Fixed the shrimp with cocktail sauce......eh...wasn't all that
great...was OK...probably won't be fixing it again.

Also tried beef stew cuts......that was pretty good.....I can see
myself making this again.
Served both over rice.....think the stew cuts would have been just as
good over noodles.

Try little cocktail weiners/sausagesâ¦for appetizers.





CRUNCHY ONION CHICKEN

1 1/3 cups Frenchâs Original French Fried Onions
4 boneless skinless chicken breast halves
1 egg, beaten

LIGHTLY CRUSH:

Onions in a plastic bag.

DIP:
Chicken in egg

COVER:
With onion crumbs, press firmly to adhere to chicken.

BAKE:
Preheat oven to 400 degrees.
Place chicken on lightly greased baking pan.
Sprinkle with additional onion crumbs, if desired.
Bake for 20 minutes or until no longer pink in center.




CHILLI DOG CASSEROLE
1 pkg. (8) hot dog buns
1 pkg. (8) hot dogs (use more if you like)
1 can Chilli (15 oz. without beans, use more if you want)
1 small onion (chopped)
2 cups shredded cheese
mustard


DIRECTIONS: Pre-heat oven 350 degrees
In a 9" x 13" baking pan, break up hot dog buns (bite size) and spread in pan.
Cut up hot dogs (about 1/2" size) spread over buns.
Spoon/spred chilli over hot dog/buns.
Sprinkle onions over all.
Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)
Cover with shredded cheese.
Bake until cheese is melted and bubbly.
(Hint: If using extra hot dogs & chilli, don't add extra buns.)

"Canned Soup".
(My Way!)
Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.
Cook on stove top or Crock pot.
Enjoy!

Canned:
corn
peas
carrots
gr.beans (any variety)
lima beans
wax beans
tomato (any variety)
potatoes (whole or sliced...or both whatever you like)

You get the idea....lol.

Also add a package of shredded cabbage (cole slaw mix).

You can even add a package of onion soup mix.

If it gets to dry and needs more liquids....add tomato juice...V-8...etc.

EASY BEEF STROGANOFF

Ingredients:

3/4 lb lean ground beef
1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)
1 can mushrooms, drained (7 oz can)
1/2 cup sour cream
4-6 cups hot cooked noodles
salt & pepper, to taste

Instructions:

In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.

Preparation Time: 1-15 minutes
Cook Time: 25+ minutes


(Iâve not made this yet, eitherâ¦.just received it.)

Mix one can of good baked beans
We use a good sized can of beans (14-16 ounces, I think) and
get a kind that we like (maybe with brown sugar, onion, and bacon).
There are several kinds of good baked beans.

and a package of Oscar Meier Weiners (all sliced up).

with a can of whole kernel corn (drained)

Any way, heat up these three ingredients, and serve with brown bread
(maybe toasted ?) and a glass of milk.

It doesn't get any easier than this, and is suprisingly good!

P.Sâ¦..Might put ingredients ina casserole dish and top with corn muffin mix.



POT ROAST
Your choice of beef (to fit crock-pot)
1 pkg. dry Ranch dressing mix
1 pkg. dry Italian dressing mix
1 pkg. dry Brown Gravy mix
1 cup water
Put beef in pot.
Mix together all the dry mixesâ¦.then add water â¦pour over meat and cover & cook on high 4-6 hours.
Until meat is tender.
The first time I mad it I didnât have the Italian Dressing mixâ¦.so I added a pkg. of Onion Soup Mixâ¦.I have to say I liked that better.
If you use more water you might want to add more Brown Gravy mixâ¦.to make a thicker sauce. Was gonna add
potatoes and carrotsâ¦but never got around to it.


HASH BROWN CASSEROLE

2 lbs. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red â green â yellow â orange â or a mixture of all)
1 lb. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 â 8oz. packages of shredded cheese
½ cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)

Grease a 9 x 13 baking pan, wipe excess with paper towel.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoesâ¦then
Peppersâ¦
Mushroomsâ¦
Ham..
Onions (reserve about ¼ cup)
Mix eggs & milk togetherâ¦â¦.I added about 2 TBLS. Tabascoâ¦more to your taste⦠pour slowly over all.
Cover with shredded cheeseâ¦.then sprinkle over all
Remaining onionsâ¦
Olivesâ¦
Baconâ¦
Cover and refrigerate overnight.
Uncover and bake at 375 degrees for 35 â 45 minutesâ¦until browned and cheese is melted.
Serve with sour cream and/or salsa.




OLD SETTLERâS BEANS
INGREDIENTS:
1/2 lb. ground beef
1/2 lb. bacon
1 chopped onion
Brown in skillet and drain excess grease.

ADD:
16 oz. can Red Kidney Beans (drained)
24 oz. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup Catsup
2 TBLS. Molasses
1/2 tsp. dry mustard

Mix Thoroughly !
Cook in a crock pot until...hot...hot...hot!


MARINATED VEGGIE SALAD
1 lb. can French style green beans
1 lb. can small peas
1 lb. can white corn
1 - 4oz. jar pimento (chopped)
1 cup shopped onion
1 cup chopped celery
1 cup chopped green pepper
1 cup sugar (I used artificial sweetener)
2/3 cup vinegar (I used red wine vinegar)
1/2 cup cooking oil
1 tsp. salt
1 tsp. pepper

1.)Pour green beans, peas, corn & pimento in a colander to drain over a
large bowl. Discard 1 1/2 cups of liquid.
2.)Put veggies in a large bowl and fold in onions, celery and green
peppers.
3.)Mix together thoroughly the remaining ingredients and toss with
veggies.
4.)Cover and let sit over night in refrigerator. (The longer it marinates the better.)

Desserts/Snacks


POUND CAKE

Combine:
2 sticks butter
1 2/3 cup sugar

Beat in:
5 eggs (1 at a time)

Add:
2 cups sifted flour
1 teaspoon vanilla
1 teaspoon rum extract

Mix thoroughly and bake 1 hour at 325 degrees.



E-Z Candy
(All recipes are mixed the same.)

Melt ingredients, seperately in microwave until runny.
Mix together and pour into serving dish.
Chill until firm, cut & serve.

Chocolate Fudge:
16 oz. container of Fudge Frosting
1 bag of Chocolate Chips (any flavor you like)

Peanut Butter Fudge #1:
1 small jar Peanut Butter (18 oz.)
2 bags of Peanut Butter Chips

Peanut Butter Fudge #2:
1 small jar Peanut Butter (18oz.)
16 oz. container of White Frosting

Marshmallow Nougat:
1 small jr Marshmallow Creme
1 bag White Chocolate Chips
1 tsp. Almond Flavoring
1 small bag Chopped Nuts

(I've made this without the flavoring & nuts....I want to try
rolling
into balls and dipping in a chocolate coating....sounds good to
me.)

I've doubled all the above recipes. The Marshmallow Nougat
recipe...doubled and added a container of white frosting (had an
extra one....so thought....why not!)

I use a double boiler..(prefer the double
boiler)...add chips in first ...then rest of
ingredients.....saving
nuts and flavorings for last.

Q. I'm looking for recipes for one person. Do you have a cookbook cooking for 1? If so, please write.

If you do not, please do NOT reply. I can do my own research on the internet but am hoping
someone out there has great ideas to share. The internet is filled with cookbooks none of which I am interested in buying unless there is an opinion/ recommendation/ experience attached.

Specifically I would like rice or beef or chicken and veggies casseroles recipes for 1.

I find that a lot of the recipe cookbooks called, cooking for one, actually tell you how to make dishes which you can freeze and reheat later. I am currently working on putting my own cookbook together of practical meals to prepare for one...with no leftovers involved. Here are a couple of my recipes which have worked really well for me.
TUNA CASSEROLE (1)
1/2 cup elbow macaroni...cook
1 T. butter
1 T. flour
1/2 cup milk
1/2 tsp. instant chicken boullion, dissolved (optional)
1 slice cheddar cheese cut up in small pieces.
1 small pkt. tuna (3 oz.)
Heat above until cheese is melted. Add to the cooked macaroni. Pour in casserole dish
and crush 1 saltine cracker, crumbled, over the top. Dot with butter and put in 400 degree
oven for about 20 min.

MEATLOAF (1)
1/4 lb. ground chuck
1/4 tsp. onion powder
1 tsp mayonnaise
1 Tbs. bread crumbs
1/2 tsp. A-1 steak sauce
2 T. ketchup
Mix gently with hands so as not to mush the ground beef.
Put in baking pan and bake for 20 min. then add the glaze and bake another 5 -10 min.
Glaze
1 tsp. dark Karo syrup
1 tsp. ketchup
1 tsp. brown sugar
Mix glaze ingredients in equal parts or to taste and cover meatloaf with it.
Bake uncovered until coating is cooked. Slice and serve.


SCALLOPED CORN
1 small can creamed corn (8.s5 oz.)
1 Tbs. mayo
1/2 tsp. onion powder
1 tsp. sugar
salt, pepper to taste.
Top with:
1 Tbs. cracker crumbs
dotted with butter (1 tsp.)
Bake at 375 degrees for about 25 min.

SCALLOPED POTATOES
1 med. potato (partially cooked)
Cook in microwave for 1 min. Cool, to handle.
Peel and slice.
Mix:
1 T. butter
1 T. flour
1/2 cup milk
add to potato slices, stir being careful not to mash the potato slices. add salt & pepper to taste.
Pour in casserole dish. Bake at 375 degrees for about 25 min.

Easy Shepherd's Pie Recipe

Ingredients
1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
Method
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.



4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.



6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.


You can make this even easier using instant potatoes and frozen veggies but I think fresh is best!

SAUCE:
-10 oz grape jelly
-3 cups marinara sauce

-4 tbsp lemon juice
-1/2 cup brown sugar
combine sauce ingredients & cook on low flame. combine meat ingredients & ball meat. cook for 45 min-1 hr

onion rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 5 tbsp onion soup mix
boil water. add onion soup mix & oil. add rice. cover & let cook. fluff with fork.

stringbeans & mushrooms:
- stringbeans
- mushrooms
- 2 cloves garlic
- 1/4 cup oil
- 1/2 cup soy sauce
- 1/2 cup honey
cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

grilled cheese 1:
- bread
- sliced cheese
put cheese on bread. grill/fry/toast until cheese is melted.

grilled cheese 2:
- bread
- pesto sauce
- sliced cheese
- mushrooms
sautee mushrooms. spread pesto on both pieces of bread. put cheese & mushrooms on. grill/fry/toast until cheese is melted.

grilled cheese 3:
- bread
- sliced cheese
- tomato slices
put cheese, tomatos, & mushrooms on. grill/fry/toast until cheese is melted

mushroom rice:
- 4 cups rice

-noodles
-cheese
-1/2 onion
-1 lb mushrooms
-2 cloves garlic
sautee veggies in oil. cook pasta. drain & put into frying pan with veggies. let noodles soak up all flavors. put all noodles & veggies in cooking pan. sprinkle cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown.

easy no bake mac & cheese with a twist:
-noodles
-cheese
-mushrooms, cut up
-cherry tomatoes, cut up
cook noodles. strain & put in a bowl/on a plate. sprinkle cheese onto noodles. put in microwave for 40-45 seconds. mix. sprinkle mushrooms & tomatoes. mix around. put in microwave for 40-45 seconds.

meatloaf:
- 2 lb chopped meat
- 2 eggs
- 1 1/2 cup bread crumbs
- 1 onion diced & sauteed
- 2 cloves garlic diced & sauteed with onion
- 1 1/2 cups marinara sauce
mix altogether in a bowl. put in loaf tin. cook at 350 for 2-2/12 hours

noodle mushroom dish:
- 1 onion
- 2 cloves garlic
- 1 box mushrooms
- 1 box of noodles (any shape & size you want)
sautee onion, garlic, & mushrooms in same pot until cooked. cook noodles in separate pot. strain noodles & put into pot with veggies. mix so noodles soak up all the flavors.

lemon rice:
- 4 cups rice

- 1/2 cup lemon juice
boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.



4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.



6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.


You can make this even easier using instant potatoes and frozen veggies but I think fresh is best!

-10 oz grape jelly
-3 cups marinara sauce

combine sauce ingredients & cook on low flame. combine meat ingredients & ball meat. cook for 45 min-1 hr

onion rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 5 tbsp onion soup mix
boil water. add onion soup mix & oil. add rice. cover & let cook. fluff with fork.

stringbeans & mushrooms:
- stringbeans
- mushrooms
- 2 cloves garlic
- 1/4 cup oil
- 1/2 cup soy sauce
- 1/2 cup honey
cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

grilled cheese 1:
- bread
- sliced cheese
put cheese on bread. grill/fry/toast until cheese is melted.

- pesto sauce

sautee veggies in oil. cook pasta. drain & put into frying pan with veggies. let noodles soak up all flavors. put all noodles & veggies in cooking pan. sprinkle cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown.

easy no bake mac & cheese with a twist:
-noodles
-cheese
-mushrooms, cut up
-cherry tomatoes, cut up
cook noodles. strain & put in a bowl/on a plate. sprinkle cheese onto noodles. put in microwave for 40-45 seconds. mix. sprinkle mushrooms & tomatoes. mix around. put in microwave for 40-45 seconds.

meatloaf:
- 2 lb chopped meat
- 2 eggs
- 1 1/2 cup bread crumbs
- 1 onion diced & sauteed
- 2 cloves garlic diced & sauteed with onion
- 1 1/2 cups marinara sauce
mix altogether in a bowl. put in loaf tin. cook at 350 for 2-2/12 hours

noodle mushroom dish:
- 1 onion
- 2 cloves garlic
- 1 box mushrooms
- 1 box of noodles (any shape & size you want)
sautee onion, garlic, & mushrooms in same pot until cooked. cook noodles in separate pot. strain noodles & put into pot with veggies. mix so noodles soak up all the flavors.

beef noodle dish:
- 1 onion

- beef cut into cubes or slices
- 1 box of noodles (any shape & size you want)

put all ingredients in a bowl & use an immersion blender OR put in food processor or blender. Blend/puree until creamy & smooth. put in container. put in fridge until ready to serve.

lemon rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1/2 cup lemon juice
boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

I'm 29, and I am having trouble organizing my recipes (and staying motivated enough to do it), to plan my meals for the week. I usually get home around 7pm, so planning for a 2 hour preparation is too late. I've tried many things, but they turn out too fatty, or have too much sodium. We are healthy people, and don't want to have this make us fat. We tend to, currently, eat a lot of frozen stuff or take out. I am a good cook, I'm just lacking time to make a pot roast in the evening.

Slowcooker is a good idea for meals like that roast.

I love talking about freezer cooking too. You can cook double recipes when you ARE in the kitchen, serve one and freeze one. Slowly you are building a bank of meals in the freezer that can feed you well within a half hour from walking in the door. This is homemade convenience food exactly the way YOU want it.

You can also streamline tasks in the kitchen other ways. It might sound contradictory if you are trying to just get one meal on the table, how can you do more if this is already overwhelming?

Try this: Everytime you are preparing food, in addition to the tasks needed to serve the upcoming meal, do at least ONE extra thing that will speed up a meal later in the week, and at least ONE extra thing that will help you beyond that.

So for example. You come home and your dinner plan is meatloaf with carrots and mashed potatos.

First advance plan is to make TWO meatloafs. You can make two by spending only a couple extra minutes than it takes to make ONE. Then freeze one.

While you are preparing the meat mixture, you can do any number of other things while you are at it.

After you chop the one onion in the recipe, chop 5 more and freeze them. After you make the bread/cracker crumbs for the recipe, make 3 more cups and store them for later. When you get the eggs out, go ahead and mix up tomorrow's omelet and store in the fridge. See?

While the meatloaf is in the oven you can do any number of things too. You can prep fresh vegetables, clean, peel, slice or chop, whatever and have a snack tub going in the fridge. You can make a dessert. You can start a spaghetti sauce with the rest of the hamb from a HUGE package you bought because you were thinking ahead, and freeze all of it.

At first this sounds like a lot of time, but it is an investment of time. You are spending a little more time now to get a lot back later. You are already in a mess, you have the equipment and ingredients out. In time you will be able to serve more complicated recipes than just quick cook all the time, much of which is great but this is even more options. How? Because some complicated step in the prep is done. If you have meat sauce waiting in the freezer, it becomes a lot easier to throw together a lasagna. If you have veggies prepped, you can toss them into a 10 minute stirfry. If you have frozen some cookie dough you can make a single pan of slice and bake that are completely homemade and YOU control the ingredients that went into the recipe.

You might want to rethink the down time in the kitchen, that time when you are waiting for the food to cook. You might find this a good time to hop in the shower, or fold laundry or read mail, or watch tv. Maybe it is a good time to do those things but maybe the time could be better spent if you are focussed on kitchen tasks. You will be there to catch any problems with less attention: pots boiling over, something starts to get overdone, etc. If you are folding laundry you may not catch these kinds of things early. Try to devote that whole time in the kitchen, from gathering your supplies and ingredients to serving the meal, to kitchen tasks: cooking, prepping, organizing, cleaning the kitchen, meal planning, straightening the pantry, etc. This gives you a leg up on the amount of future work in the kitchen.
