Looking for some hearty, filling vegetarian recipes?

Vada Grace

I am looking for some good, hearty vegetarian recipies. I am mainly looking for lunch items. I try to stay away from soy, I have reactions to it. I am breastfeeding and I have trouble finding food that fills me up.
Thanks!

Answer
I can absolutely help you out here. Here are some of my favorite recipes:

Vegetarian Meatloaf: http://www.recipezaar.com/Really-Good-Vegetarian-Meatloaf-really-33921

Tamale Pie: http://www.recipezaar.com/vegetarian-tamale-pie-392881

Shepherds Pie: http://www.recipezaar.com/Vegetarian-Shepherds-Pie-269553

Weight Watchers Barley With Butternut Squash, Apples and Onions:

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

Anyone have any tasty, HEALTHY vegan/vegetarian recipes? ?

I want to use more lentils and beans too!

Only thing is I hate zucchini and cucumber and peas (beans are fine, I don't know why)

I'm not looking for websites (unless you've got a really good one) just want to shake it up a bit, I love to cook. Nothing with too much cheese or fat thanks, I don't like that yuck feeling I get after something fatty or oily.

Really good vegetarian cookbooks/recipe websites?

Jack

It seems that all of the recipes I've found so far online are disgusting and try to make meat-like dishes with meat substitutes (tofu meatloaf, etc.) Any recipes like that 1.) sound repulsive, and 2.) don't taste too great either.
Can anyone suggest any vegetarian cookbooks and/or websites with recipes? Preferably not vegan, just vegetarian. Thank you!
By vegan, I mean [preferably] not recipes that exclude dairy. And no meat-substitute dishes, like meatloaf made out of tofu or something, for example.

Answer
The best one I have ever owned is called "The vegan family cookbook." The recipes are delicious, and easy to make.

http://www.food.com/recipe/really-good-vegetarian-meatloaf-really-33921

I made a vegetarian meatloaf, but before I became vegetarian, I never really had meatloaf. Much less I don't know what it supposed to taste like. I followed the recipe and the top was done but the inside was somewhat mushy. It's good though, but I'm not sure if this is what supposed to happen? Do I need to put it in the oven longer? I'm not sure. Thanks!

Answer
Yeah, meatloaf is quite mushy by nature. That's part of what makes it so delicious, actually.

Whether I use meat (for husband) or lentils (for both of us), I try to let the loaf 'stand' for about 5 minutes or so once I take it out of the oven. This helps the juices redistribute and that helps firm it up.

Here's my recipe:

1 19oz can red lentils, drained and rinsed, then shaken dry in the colander (eliminating a lot of extra moisture)
salt and pepper to taste
1/2 cup finely diced onion
1/2 cup finely diced pepper (green pepper looks pretty, but use what's on hand)
1 egg, lightly beaten (or egg replacer if going for something vegan)
8 oz canned tomatoes with juice
1/2 cup quick oats.

Combine it all and press into a loaf pan.

Glaze:

1/3 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon mustard (use your favourite... grainy dijon is awesome, but use yellow or regular dijon if that's what you have).

Bake at 375 for an hour, and let stand for 5-10 mins afterwards.

This loaf will firm as it cools to the point where you can make 'meat'loaf sandwiches out of it for lunch the next day (awesome on soft bread with mayo....)!

VEGAN food? anyone? :)?

Cassie

hi, just wondering if you vegans would like to suggest some good vegan food to me, that are nutritous and maybe have calcium, iron, and/or protein in it. I started to be vegan for like 3-4ish weeks and dont have many recipes. (also is there any good replacements that you have tried...cause i am never going to eat a sad, dead, animal?) :(
thank you.

Answer
Lots of foods have protein or amino acids in them. Getting enough protein should not be an issue if you eat a well balanced diet. Protein rich foods include legumes (beans & lentils), nuts, seeds, tempeh (a soy product). You can see some basic protein info at http://www.vegsoc.org/info/protein.html

Calcium shouldn't be a concern either if you are eating healthy and well balanced. Greens, broccoli, and soy products (though you should avoid most un-fermented soy products like tofu, soy beans, and soy milk) are high in calcium.

Iron is a bit more difficult to obtain in a vegan diet, but still not a huge problem. For a couple articles about iron you can see http://www.groovyvegetarian.com/2008/08/23/iron-rich-foods-for-vegetarians/ and http://www.vegfamily.com/health/boost-iron-intake.htm

Vegan recipes can be found at numerous places online including:

http://vegweb.com/

http://allrecipes.com/Recipes/Everyday-Cooking/Vegetarian/Main.aspx

http://vegkitchen.com/index.htm

http://www.101cookbooks.com/vegan_recipes/

http://www.recipestar.com/recipes

http://www.recipezaar.com/recipes.php?categ=169%2C141%2C12%2C299

You can also modify many of your favorite recipes by eliminating the meat. Not all recipes can be modified (eg, meatloaf) but many such as pastas, salads, stir-fries, casseroles can be made vegan by leaving out the meat and adding additional vegetables or even meat substitutes.

Morningstarfarms.com , click on recipes. They have a "meatless loaf" that uses their veggie crumblers. It's very good, if you're trying to mimic real meatloaf.

Any good vegetarian recipes? Suggestions?

Jessica

I was vegetarian (ovo-lacto) for about a year in high school. While I loved the diet and had no issues leaving meat behind, I was not exactly the healthiest eater and did not have a family to feed. I am considering making this lifestyle change again. Do anyone have any suggestions for meat replacement? We already eat tons of veggies and I always offer variety. Any good recipes with tofu/other meat replacements? For now, we would still consume dairy/eggs, with a goal of going totally vegan slowly.

Answer
This dish made all my meat-eating family members go gaga.

Vegetarian Meatloaf:

Ingredients
1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
1/3 cup minced onion
1 clove garlic, minced
1/2 cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon parsley flakes
salt and pepper to taste
Directions
1.Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
2.In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
3.Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

I usually have to cook it about an hour for it to set and I also mixed barbeque sauce and ketchup instead of just BBQ. Hope this helps! :)

Answer
What I do is Veganize regular recipes. I do not know what you are tired of eating frequently so it is difficult for me to suggest something new for you. So I can suggest a few good recipe sites for you that I use. You can also purchase a new Vegan cookbook and try the recipes. There is also a new line of Vegan products I can suggest because those are very yummy and easy and quick to prepare. You can make most any recipe Vegan. I have yet to come across a meal or recipe that I have not been able to veganize. You can make Vegan Italian Sausage subs, Vegan "Chicken" Fettucini Alfredo, Vegan Salsbury Steak, Vegan Meatloaf, or Vegan Ruben Sandwiches with Lentil Soup. Some nights when I am in a hurry I make the Gardein Tuscan Breasts, Steamed Broccoli, and baked Sweet Potatoes for Dinner. You can also make Tacos out of Boca Soy Crumbles. You can also make Sloppy Joes out of Manwich Sauce (Which is Vegan) and Boca Soy Crumbles. You can serve the Sloppy Joes with Sweet Potato Fries. Publix and Whole Foods Markets sell Frozen Sweet Potato Fries which are very good. Gardein makes a Vegan BBQ 'Por" substitute that you can just heat up and make BBQ sandwiches out of which also goes great with the Sweet Potato Fries that I mentioned. I also make Vegan chili in the crock pot with Boca soy crumbles. Since you did not specify what you are tired of eating I hope that I did not suggest things that you are tired of eating since I have no idea what your weekly menu already consists of. Hopefully, I have helped give you some easy but new ideas.

Tips on a vegetarian diet for a week?

icurious

My doc said this would be good for me. I just wanna know the food that i should eat. Thanks.

Answer
Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

Good Luck, and when in doubt, check out some v&v recipe boards or vegetariantimes.com

What foods are really good for you?

Kelly

I want to eat healthy all the time now, but i want to know some good but healthy foods I can eat, instead of junk food. I love sweets and I need something healthy to replace that. I'm only giving up junk food and I'm also going to try to drink at least 8 glasses of water a day. Thank you! <3

Answer
*Fish of any kind...broiled or baked (any way but fried), especially salmon, tuna, etc...My personal favorite is tilapia. Season with something like Ms.Dash, cayenne pepper, etc.

* I personally don't eat beef (I don't like the taste), and it's also an added benefit that in general turkey is healthier. To add, it's not that you should never eat beef, it's that you should try to cut back on it if you do eat it and replace with ground turkey. So when I do eat things that normally use beef like burgers, meatloaf, chili, etc, I just replace it with ground turkey. But in general, I probably eat more Morningstar Farm Grillers & Boca Burgers.(vegetarian burgers). You can buy them in bulk BJ's or Sam's Club or you can look up an easy recipe for black bean burgers online. The good thing about the mock veggie burgers, you not only get your protein, but you get some of your vegetable needs too.

*Eat lots of vegetables like kale, collards, swiss chard, spinach, carrots, cabbage, baked potatoes(to a minimum), cucumbers, cauliflower (cauliflower mock mashed potatoes are really easy & taste exactly like mashed potatoes to me) broccoli, peas, onions, sweet potatoes, etc...It really just depends on what you like.

The same goes for fruit, whatever you like...Apples, bananas, strawberries, plums, grapes, mangoes, peaches, etc.

*Salads-Add things like beans, chicken, eggs, avocado, or canned tuna, for protein; & sprouts, tomatoes, carrots, cucumbers, corn, mandarin oranges, pineapple, apples, nuts, etc...Basically, you can add any fruit or vegetable you like. Just remember to keep your salad dressing healthy & try to make it a well-rounded salad/meal. Just google 'how to make a healthy salad' or 'what vegetables to add to salad', or something similar. I also love spinach salads & fruit salads. You can look up recipes online & tweak them to fit your own personal preference. Watch out for the heavy dressings. For instance, when I'm tired, I just make a spinach salad with walnuts, spinach, and strawberries & my dressing of choice instead of following a recipe.

It goes without saying to eat whole grains such as brown rice & wheat bread. I also eat low-fat cottage cheese (I don't dislike it, but for some reason, I can't just eat it plain, I have to mix it with peanut butter and honey, but you can eat it however you prefer). & I also drink lots of herbal teas, only sweetened with honey, but you can also use any type of natural sweetener you like.

To be honest, I have no problem eating really healthy, but I have a really bad sweet tooth, especially for chocolate, and nothing really combats that, not even dark chocolate, & the only thing I can recommend are granola bars, 100 calorie snack packs, skinny cow desserts, & lean cuisine desserts, all of which are still processed, but at the end of the day are still better than eating a 500 calorie dessert. Plus, you can look up a ton of low-fat, low-carb, low-calorie dessert recipes online...Basically, there's a ton of information you can find just browsing/researching online. Good luck.

she wont eat fruits or veggies!?

Justsmile

my sister is very picky with food. she wont eat fruits or veggies. she only eats apples and bananas but very rarely. and she'll only eat them if she cant taste them, like in meatloaf or fried rice. but im getting worried because i dont think she's had a fruit or vegetable in a long time and from what she's telling me, i think she's anemic! so can you give me recipes or advice or sumthin cuz i love her to death and i dont want her to get sick. thx a lot and plz no rude/stupid answers

Answer
- If your sister is a non-vegetarian, I would not worry about Iron. Iron in meats is ample and more bio-available than in fruits and vegetables

-Let us examine all the food groups
Grains - Does she eat enough whole-grains? about 6 oz per day
Dairy - Does she drink at least 2 cups of milk per day
Proteins - Does she eat good quality 5 to 6 oz of proteins every day
Eggs, skinless poultry, trimmed meats and nuts
Fats - Does she eat good fats high in omega 3
Walnuts Salmon Tuna

If al the other foods are plenty, your sister is not in such a big trouble. Fruits and vegetables provide vitamins and minerals. The basic vitamin she would have problem is in getting Vitamin C. If she drinks enough milk and eats whole eggs, B vitamins should not be problem. II am not saying that fruits and vegetables are not important, they are because her diet will wind up high in Cholesterol and triglycerides.

Your sister should be glad that you care.
I hope it was not a rude or stupid answer.

I'm a vegetarian. What are some simple recipes?

Yaz

I recently bought tofu and a few broths from whole foods. I didn't even know what I was doing when I was grocery shopping. Anyway, please let me in on some good recipes and/or vegetarian cookbooks.
Excluding the obvious of course. i.e. SALAD! Haha. I need some real meals. Also, I don't eat fish or shellfish because I am allergic. Keep in mind I am 16 (going on 17) so simplicity is key.

Answer
What about a tofu scramble. You can use it the same way that you would use eggs. I go on tofu binges often so I cook it so many different ways. There are so many different types too, silk or firm are my favorites.
For a tofu scramble it is simple I will give you 2 recipes. One I make is a soy scramble, use soy or tamari. I saute some minced garlic, onions, carrots until tender then add the tofu and scramble it like it was an egg, then top with soy, salt, pepper, and for me always some hot asian chili paste or sauce and green scallion If you have black bean add it with the veg. Another one is to use Balsamic, oregano or basil and the some peppers if you like. More italian or greek influence. So now you have the basic try your hand on a scramble. Another thing I make is chili, I use the tofu like ground turkey or beef. I cook the onions, garlic, spice then add tofu and beans and more spice. You can even make a burrito scramble and put it in some whole wheat tortillas for breakfast or lunch. Tofu curry is always good, tofu with ginger, scallions, peanut oil and soy cold is good. It is good in noodles. I always make tofu curry with eggplant, longbeans, garlic, and thai green curry with a little kabocha pumpkin. The skies the limit with what you can do, make a tofu and veggie meatloaf or a loaf with chickpeas and veggie or lentils and veg. Good luck!

How do you plan a vegetarian meal if you are a reformed carnivore?

Sharon M

I am transitioning my family to a more vegetarian diet and without meat as a centerpiece of dinner, I'm a little stumped. I can do the one pot stuff, and we love it, but how do you do everyday meal planning?

Answer
Vegetable Lasagna and salad (Cut leftovers into individual portion sizes and freeze for another meal). I like to use roasted vegetables like butternut squash, mushrooms, tomatoes and eggplant, layered with the lasagna noodles and a mixture of ricotta, mozzarella and parmagiano cheese. We are not vegetarians, but do try to eat meatless several days a week. For a less fattening version, use a sauce made with low fat cream cheese or other low fat cheese instead of the 3 cheeses.

Portobello Mushroom Burgers: Marinate the whole portobellos in minced garlic, chopped fresh parsley, olive oil, and salt & pepper for a couple of hours. Grill, pan fry or broil the mushroom until nice and soft. Serve on a bun with usual fixings or as that centerpiece of your dinner with Oven Baked French fries and a salad or vegetable.

Soups: I often make soup as our main meal serving a salad before or after the soup. To low sodium vegetables add canned or cooked beans or lentils and pasta. Allow to simmer about 20 minutes, then add any vegetables you like. One of my favorites is Barilla 3 cheese tortellini simmered in the low sodium vegetable broth until done, Remove the tortellini, add some cooked lentils and a can of drained chopped tomatoes and heat. Add back the torellini. Serve over raw julienned baby spinach.

You can find recipes for burgers and meatloaf made with lentils or other beans. Check the frozen food section of your market for more ideas or google recipes. .

Saveur is one of my favorite cooking magazines, Here is a link to vegetarian recipes from Saveur. Click on "next" box to see the recipes. The picture at the bottom are not vegetarian.

Vegetarian meals made by (and for) a teen?

26242.

My mom is not supportive of my vegetarianism, so most of the time I'll have to cook my own meals. I need recipes for some simple meals with EVERYDAY INGREDIENTS.

I can handle breakfast on my own, but I'm desperate for lunch and dinner recipes. Lunch would have to be something pre-made and packable.

I'm an ovo-lacto vegetarian, so there's no need to substitute dairy or eggs.

Thank you so much!!

Answer
Hi, great choice to become a vegetarian. I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 100+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Donât forget to regularly see the doctor.

Good Luck, and when in doubt, check out some v&v recipe boards or vegetariantimes.com

list.......?

<<<h

all the vegan foods you like to eat...raw or not doesn't matter..just list no recipies though. like if u say a salad just list the contens not cut the carrot and put them in last kinda thing.

Does anyone have a favourite veggie recipe with fake meat?

Stephanie

My husband will happily eat vegetarian, but only if he can't tell it's not real meat

I already make with fake ground beef:

Lasagna
Cottage Pie
Bolegnese

With fake sausage:

A tomato sauce to serve over pasta

Answer
Vegetarian chili is great with fake ground beef. You can also make fake meat meatloaf - here's one recipe but there are others online http://frank.harvard.edu/~howard/recipes/veggieloaf.html
And you can follow the same type of recipe for fake meatloaf and make meatless balls that you can serve with pasta

With the fake sausage you can do Italian style sausage, peppers and onions and serve that either on a bun or over polenta, pasta, rice or even mashed potatoes - just use veggie sausages instead of meat
