I've been craving sandwich ....any good ones out there like is there such thing like vegan ham or turkey products...

You can buy fake meats in the grocery store frozen food section, like Morningstar farms, Quorn or Bocca...sometimes they use eggs I think though..read the labels. Here are some links to recipes..

I am trying out the Vegiterian life, and so far I like it, so I was wondering if Walmart has imitation meat?

Walmart has a small vegetarian section, normally by the breakfast foods for some reason, which includes Boca burgers. I personally don't care for them, the homemade version is much tastier and cheaper as well.

Homemade boca burgers:
1 cup lentils
2 cups water
1/2 cup onion
1 egg
2 - 3 tsp steak seasoning
1 cup oatmeal

Cook the lentils in the water until soft, 30 min to one hour. Smash with a potato masher, fork or a stick blender. (I like the potato masher best.) Beat the egg and add it and all other ingredients, mix well with your hands, like a meatloaf. Shape into patties and fry like a burger.

Note: If mixture seems too wet, add a little flour. Brown lentils are best but you can only buy the green ones at walmart. They will work also but don't get quite as soft when cooked so they don't mash as well. I've used them plenty of times however. You can get the brown ones at any Whole Foods. Both kinds are super cheap, yes, even the ones from Whole Paycheck.


Here's another recipe for tacos made with lentils, it's not completly veggie but I just use water instead of the chicken stock. You can also use it in burritos.

You can also use TVP as a substitute for meat but Walmart does not sell it normally. It comes in a dry form and is made by Bob's Red Mill. Amazon sells it for a good price. You soak it then use it like meat in soups, chili and spaghetti sauce.

Tips for new vegetarian?

Q. Any tips? AND I dont want the simple "stop eating all meat in your diet" because I have been a vegetarian for 2 days and want to keep going.
I might get personal trainer cooking today for the recipes and stuff
but recipes help! THX :D

Eat a lot of legumes to replace meat in your diet. In case you don't know legumes are beans, nut, and barley. If you crave meat here are easy substitutes:

Recpies:

Banana Muffins
These moist and delicious muffins will please even the pickiest of eaters.

3 ripe bananas
1/4 cup oil or melted margarine
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts (optional—see other options listed below)
• Mash bananas (overripe ones make the best bread). Add oil/margarine and sugar. Mix well.
• Sift the flour, salt, and baking soda together and add to the banana mixture. Mix until the flour is blended (do not beat).
Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

Optional: Add a handful of walnuts, oatmeal, raisins, chocolate chips, currants, coconut, or all of the above!

Makes 1 Dozen Muffins



Avocado Reuben
Give beef the boot and try our take on the classic reuben sandwich—made with creamy avocado and a tangy, easy-to-make Thousand Island dressing.

2 slices rye or pumpernickel bread
Mustard
Thousand Island dressing (recipe follows)
1/2 avocado, pitted, peeled, and mashed
1/4 cup sauerkraut

• Spread one slice of bread with some mustard, the other slice with Thousand Island dressing.
• Place the bread slices, dry side down, in a lightly oiled skillet. Top one slice with avocado, and the other with sauerkraut.
• Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together and enjoy!

Makes 1 sandwich




Sumptuous Spinach Salad With Orange Sesame Dressing

1 bunch fresh spinach (about 6 cups of leaves)
1 red or yellow bell pepper, cut into strips
1/4 to 1/2 cup thinly sliced red onion
1 orange, peeled and sliced into thin rounds
1 Tbsp. sesame seeds
2 Tbsp. seasoned rice vinegar
1 Tbsp. orange juice concentrate
1 Tbsp. water
• Trim the spinach stems and carefully wash the leaves. Dry, then tear any large leaves into bite-size pieces. Place in a salad bowl along with the pepper, onion, and orange slices.
• Toast the sesame seeds in a 400°F toaster oven or regular oven for 10 minutes. Transfer to a blender and grind into a powder. Add the vinegar, orange juice concentrate, and water. Blend to mix. Pour over salad and toss just before serving.

Makes 4 to 6 servings



Mama's Mock Meatloaf
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings



Creamy Chive Mashed Potatoes
Rich mashed potatoes are the perfect side dish for most meals.

5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup fresh chives, chopped
Salt and pepper, to taste

• Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
• Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
• Serve hot.



Brown Gravy
Tired of plain potatoes? Whip up a batch of this creamy gravy, and serve it with your mashed potatoes and biscuits.

2 Tbsp. (1/4 stick) margarine
1 medium-sized onion, diced
2 Tbsp. unbleached all-purpose flour
1 tsp. garlic salt
2 Tbsp. cornstarch
1 1/2 cups water or vegetable broth
1 tsp. yeast extract
1-2 Tbsp. soy sauce or tamari
Pepper, to taste

• Heat the margarine in a medium saucepan over medium heat.
• Sauté the onion for a few minutes, then add the flour and garlic salt and sauté for another 8 to 9 minutes.
Dissolve the cornstarch in the water or broth.
Gradually add the cornstarch mixture to the onion mixture, bring to a boil, then simmer for 10 minutes.
• Strain the gravy into a separate saucepan and add the yeast extract, soy sauce or tamari, and pepper. Simmer for another minute or 2, stirring constantly. Keep warm.

Preparation time: 45 minutes
Baking time: 40 minutes

Makes 6 servings

Also...what are some foods that I need to look out for and avoid that include eggs but maybe aren't as obvious?

Recipes that call for eggs often can work just as well with substitute ingredients. You probably have many egg replacement possibilities in your refrigerator or kitchen cabinet.

Eggs serve a variety of functions in recipes. They often work as binders, holding the other ingredients together, as in a casserole or cake. Eggs also can act as leavening agents, providing lift and affecting texture. The purpose of the egg in a recipe determines what you can use as a substitute. In some cases, you can omit the egg altogether, and the recipe isn't noticeably affected.

Ousting eggs from baked goods
Eggs are used in baked goods for leavening, or lightness. They also may serve as a binder. The purpose the egg serves in the original recipe — as well as the amount of egg the recipe calls for — determines whether you need a substitute and, if so, which alternate ingredient will best serve the function of the egg in the recipe.

Flat foods such as pancakes and cookies don't rely on eggs for lift. In fact, in many cases, you can eliminate the egg without noticeably affecting the final product. That's especially true if the recipe calls for only one egg. If you do omit the egg, however, it's a good idea to add a tablespoon or two of additional liquid — soymilk, fruit juice, or water, for example — for each egg omitted to restore the recipe to its original moisture content.

When a recipe calls for three or more eggs — as many cakes do — the eggs perform a vital function and need to be replaced with an ingredient that can deliver a similar effect.


In recipes for baked goods that have a light, airy texture, replace eggs with an ingredient that provides lift. Any of the following ingredients can replace one whole egg in a recipe:

Half a small, ripe, mashed banana. This substitution gives the food a mild banana flavor, which can be nice in recipes for muffins, cookies, pancakes, and quick breads.
1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, mixed with 2 tablespoons of water. This product is a combination of vegetable starches and works wonderfully in virtually any recipe that calls for eggs. Natural foods stores sell it in 1-pound boxes.
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder, because using fruit purees to replace eggs can make the finished product somewhat denser than the original recipe.
A heaping tablespoon of soy flour or bean flour mixed with a tablespoon of water. This mixture works similarly to vegetarian egg replacer.
2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.
1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.
Replacing eggs in casseroles, loaves, burger patties, and main dishes
Some recipes need an ingredient that binds all the other ingredients together. Eggs are famous for acting as the glue that holds meatballs, meatloaf, and casseroles together. Lacto vegetarian and vegan versions of these traditional foods need something to serve the same purpose. Fortunately, you have many options.

As you might suspect, your choice of ingredients to replace eggs in these types of foods depends on the degree of "stick" you need, as well as how the ingredient will blend with the other flavors in the recipe. Cooked oatmeal may work fine as a binder in a veggie burger patty, for example, but may not be a welcome addition to a vegetable casserole if you don't care for the flavor or texture that it brings to the dish.

If you're altering a traditional recipe, you have to experiment a bit to determine just the right amount of an ingredient to serve the purpose. A good starting point with most recipes in which egg acts as a binder is to use 2 to 3 tablespoons of any of the following ingredients (or a combination of them) to replace one whole egg. If the original recipe calls for two eggs, start with 4 to 6 tablespoons of egg substitute.

I am already a vegetarian. I am, the only one in my family. I am 14

I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 50+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)

-some mozzarella

Recipes that call for eggs often can work just as well with substitute ingredients. You probably have many egg replacement possibilities in your refrigerator or kitchen cabinet.

Eggs serve a variety of functions in recipes. They often work as binders, holding the other ingredients together, as in a casserole or cake. Eggs also can act as leavening agents, providing lift and affecting texture. The purpose of the egg in a recipe determines what you can use as a substitute. In some cases, you can omit the egg altogether, and the recipe isn't noticeably affected.

Ousting eggs from baked goods
Eggs are used in baked goods for leavening, or lightness. They also may serve as a binder. The purpose the egg serves in the original recipe — as well as the amount of egg the recipe calls for — determines whether you need a substitute and, if so, which alternate ingredient will best serve the function of the egg in the recipe.

Flat foods such as pancakes and cookies don't rely on eggs for lift. In fact, in many cases, you can eliminate the egg without noticeably affecting the final product. That's especially true if the recipe calls for only one egg. If you do omit the egg, however, it's a good idea to add a tablespoon or two of additional liquid — soymilk, fruit juice, or water, for example — for each egg omitted to restore the recipe to its original moisture content.

When a recipe calls for three or more eggs — as many cakes do — the eggs perform a vital function and need to be replaced with an ingredient that can deliver a similar effect.


In recipes for baked goods that have a light, airy texture, replace eggs with an ingredient that provides lift. Any of the following ingredients can replace one whole egg in a recipe:

Half a small, ripe, mashed banana. This substitution gives the food a mild banana flavor, which can be nice in recipes for muffins, cookies, pancakes, and quick breads.
1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, mixed with 2 tablespoons of water. This product is a combination of vegetable starches and works wonderfully in virtually any recipe that calls for eggs. Natural foods stores sell it in 1-pound boxes.
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder, because using fruit purees to replace eggs can make the finished product somewhat denser than the original recipe.
A heaping tablespoon of soy flour or bean flour mixed with a tablespoon of water. This mixture works similarly to vegetarian egg replacer.
2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.
1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.

Some recipes need an ingredient that binds all the other ingredients together. Eggs are famous for acting as the glue that holds meatballs, meatloaf, and casseroles together. Lacto vegetarian and vegan versions of these traditional foods need something to serve the same purpose. Fortunately, you have many options.

As you might suspect, your choice of ingredients to replace eggs in these types of foods depends on the degree of "stick" you need, as well as how the ingredient will blend with the other flavors in the recipe. Cooked oatmeal may work fine as a binder in a veggie burger patty, for example, but may not be a welcome addition to a vegetable casserole if you don't care for the flavor or texture that it brings to the dish.

If you're altering a traditional recipe, you have to experiment a bit to determine just the right amount of an ingredient to serve the purpose. A good starting point with most recipes in which egg acts as a binder is to use 2 to 3 tablespoons of any of the following ingredients (or a combination of them) to replace one whole egg. I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

Things such as hummus and peanut butter are tasty and convenient solutions for a lunch on the go. Look into buying vegetarian canned soups to pack into a thermo. Most grocers now carry lunch meat alternatives such as veggie hot dogs and tofurky slices- so you may want to consider trying some of those.

Ive recently tried to cut dairy and beef products out of me and my familys diet. All of the recipes i tried to substitute with soy milk or water have turned out horrible. Can anyone give me any tips this is really stressing my out!!!
The recipes I have tried to substitute are
Aunt Jemima, Vegan Beef by Morninside(to make Fajitas), Jiffy Corn Bread Mix, Yellow Cake Mix, Vegan Meatloaf(using the Mccormick meatloaf Packet). Please give me any tips to help my food taste better or at least so my family will like my new cooking

I cut meat and dairy from my diet about a year ago.

I think your approach (ie. buying vegan versions of pre-packaged meals) is what is putting you off.

In my experience, anytime a company tries to 'veganize' one of their products, they taste disgusting. What you need to do is try making vegan meals from scratch.

I know that cooking meals from scratch sounds intimidating and time-consuming, but I promise it is easier than you think, and your cooking will taste INFINITELY better than anything you buy from a shop. For example, tonight for dinner I'm doing a vegan shepherd's pie... just substitute some canned lentils instead of beef, add lots of veggies, mashed potato, and ditch the cheese - it's actually quicker and easier than a traditional shepherd's pie, and it tastes great!

So last year for Thanksgiving I made a stuffed tofu loaf ("tofurkey" if you will.) I really enjoyed it, but I've been eating a lot of soy lately, so I'm thinking tofu may not be the greatest thing to have for Thanksgiving dinner (and lunch the next few days.) My little sister, though, insists on having a fake turkey that night. So I was wondering if anyone has ever tried making a stuffed seitan loaf/turkey? I've never had seitan, but I've heard great things about it. Anyone have any reviews or tried and true recipes? I'm not really interested in premade products if there are any, but tips on making just plain seitan would be welcomed as well. Thanks in advance! :)

Seitan roasts are quite easy to make and a delicious alternative to soy turkey roasts. This recipe I have made and is quite delicious http://www.youtube.com/watch?v=npw2LKpag5o&feature=channel. The exact recipe with measurements can be found at everydaydish.tv. I halved the recipe since there are only a couple vegetarians in my family. You can make this seitan roast fancy by adding a glaze to it and by using the puff pastry (most puff pastry is vegan, just check the ingredients) crust.

Another suggestion I have is this vegetarian meatloaf. http://www.vegnews.com/web/articles/page.do?pageId=1489&catId=11 I've made this too and it's really tasty. I usually like to add extra sauteed onions, garlic and mushroom for more flavor. I like that this recipe contains less processed foods. However, it doesn't taste anything like turkey, but it is another option that goes great with traditional Thanksgiving side dishes.

I am interested in becoming a vegetarian. It is health driven as well as cruelty toward animals driven. Are the health benifits worth giving up meat? Also any advice to giving up meat would be appreciated and how to handle family situations when the rest of family and friends eat meat would be appreciated!!!!

Oh my gosh, some people are so silly. You can have a healthy diet as a vegetarian just like you can have one as a meat eater. I'm not a vegetarian but I do have a few vegetarian recipes that I use and my meat eating family loves them.

Stay away from the processed "fake meats" though, those aren't healthy by any stretch of the imagination. You can do wonders with tofu, and I even make a meatloaf with cottage cheese that is suprisingly good. Here's a few I use if you'd like to try them.

Ingredients

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.






Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.

* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.







Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.

I do have my very own recipe of meatloaf. Which I call it ''Garden Meatloaf''. But that's the only recipe I have so far. I wish to have more meatloaf recipes. Do you guys have some good recipes to share with me?? Also, for those of you who are Vegetarian or Vegan, do you have a ''meatloaf'' recipe you can share with me please? I have family members that are Vegetarian. I have my own recipe book and wish to expand it some more:)

Soak a piece of bread in milk till soft in big bowl. Add an egg, equal parts ground beef and ground pork, salt, pepper, minced onion, minced garlic, chopped fresh parsley, chopped fresh basil, freshly grated parmesan cheese, hot pepper if you likr spice, minced roasted sweet red pepper, and Worstershire sauce. Mix it all together. Press half of mixture into loaf pan. Press in a layer if fresh mozerella cheese, then the rest of the loaf mixture. Bake about an hour @ 350. I make meatballs using same recipe- I just wrap mix around cubes of fresh mozerella. So good with spaghetti. I make this using venison instead of beef- I don't use a loaf pan, I use a baking sheet and wrap raw bacon around the loaf. I didn't provide measurements because I never measure but compare to other meatloaf recipes and undoubtably you'll figure it out. This and some whole grain pasta tossed with fresh herbs, olice oil/butter mix and fresh grated parm is a big satisfying meal when you add a big salad or steamed veggies.

I teach a middle school biotechnology class and we are talking about agriculture biotechnology. I really want to demonstrate how to make cheese with rennin in class but can't seem to find a recipe I used a while ago. I know it was a mozzarella cheese that we made last time but any would be fine.

i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

I love animals, and I don't want to see them get hurt, and know that I'm eating it.
I have eaten meat all of my life, and I just don't want to anymore.
Please help me because, all we eat in my house is meat.
And I know this will be a healthier lifestyle.

First, you must do some research.

Your mother's primary concern will likely be your health, so be sure you can answer her questions. Have sources that demonstrate that it is perfectly possible for you to grow up strong and healthy without eating meat (or having a gallon of milk and 6 eggs a day to "make up for it").

Know the nutritional requirements for a fe/male your age and size (taking into account level of physical activity) and come up with examples of good vegetarian sources of the various nutrients. She will probably be mostly concerned about protein and iron. She might ask about B vitamins. Look it up, know how much you need and where you'll get it from.

Do some additional research so you can point out the health benefits of vegetarianism. (Not only do you want to demonstrate that it isn't dangerous to be a vegetarian, you want to show that it's actually beneficial.)

Get some recipes and cookbooks and learn how to make some stuff. You will be cooking for yourself a lot more these days. It is unfair and immature to expect your mom to start making a separate meal for you every night, so get ready for some Emeril action. (Note: yelling BAM! randomly might make your parents think you've gone off the deep end, so keep it down to a dull roar.)

If you are old enough to work, get a part-time job so you can purchase cookbooks and any special ingredients you may want (tofu, seitan, nut milk, etc). If you get an allowance or have money from birthday or holiday gifts, use some of it to invest in literature and/or exotic food. Heck, see if Mom and Dad will pay you to wash the car or mow the lawn. Use that money to buy stuff. (Being willing to invest your own time and money in a venture shows people that you're serious.)

Offer to help cook dinner once in awhile. Say everyone is having meatloaf for dinner. Say that you'll do the mashed potatoes and veggie. Make the salad as well. Make a rich mushroom gravy for everyone to use (if you make your own stock for it, it'll be extra-good). Heat yourself up a Boca burger (or whatever "central protein piece" you want) and help Mom serve. If everyone is having spaghetti with meatballs, ask Mom to buy the chunky extra-veggie sauce and set some aside for you before she adds the meatballs. Make the garlic bread and chop the onions, garlic, mushrooms, etc for her. In other words, you need to demonstrate that this is not going to create a lot of extra work for her.
