Going vegetarian, school lunch ideas?

My veggie-friendly friends have finally talked me, a meat-loving carnivore into going "green". Unfortunately I'm still in eighth grade, and restricted to a school menu. Any help with food ideas?

BTW, about the whole "Your still growing" thing, I haven't grown at all since the sixth grade..;(

I have been there! I went vegan when I was 12 and it was tough for me, but I managed to eat well at school.

Some ideas:
-bean salads (good beans to use are garbanzos/chickpeas, black beans, and black-eyed beans)
-mock "sloppy joe" sandwiches (use Morningstar brand crumbles in place of beef in any recipe or use on of these recipes: http://vegweb.com/index.php?topic=9635.0 and http://vegweb.com/index.php?topic=15762.0)
-pasta salad
-sandwiches with marinated roasted tofu (available pre-made from Whole Foods and Trader Joes, or look for recipes online)
-vegetarian "meatloaf" (lots of recipes are available online
-baked potato with fixin's or "potato angels" (http://vegweb.com/index.php?topic=32280.0)
-fruit, yogurt, and granola combo with a hearty muffin (e.g. banana or carrot or bran muffin...there are loads of recipes online)
-hummus with tortilla chips, veggies, or pita chips
-sandwiches with vegetarian "lunchmeat"
-vegetarian chili (with cornbread if you want)
-calzones
-waldorf salad

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

I am a former chef and have been because of my diabetic condition a Lacto-Ovo-pescaterain vegetarian for a few year now and use a good amount of TVP, it is essentialy a ground meat substitute, I make chil, stuffed peppers, cabbage rolls, spaghetti sauces, mix it with other veg for veggie meatloafs, burgers or patties, it is very versitile.

I make the dishes exactly like using ground beef/chicken or turkey, just slightly cook it with the base like when sauting onions, add it toast it and then add the liquid ingredients and spices. for cabbage rolls and stuffed pepper/zucchini, I just mix it with the rice and veg dry and moisten it, then make them up and place them in the sauce.

I have read were it has more concentrated protein then meat, and no cholesterol, and is a complex fiber meaning it does not break down into sugars or fat.

i need help makin vegetarian foods and snacks with the non-vegetarian stuff i already have any help?

I do have my very own recipe of meatloaf. Which I call it ''Garden Meatloaf''. But that's the only recipe I have so far. I wish to have more meatloaf recipes. Do you guys have some good recipes to share with me?? Also, for those of you who are Vegetarian or Vegan, do you have a ''meatloaf'' recipe you can share with me please? I have family members that are Vegetarian. I have my own recipe book and wish to expand it some more:)

Answer
Soak a piece of bread in milk till soft in big bowl. Add an egg, equal parts ground beef and ground pork, salt, pepper, minced onion, minced garlic, chopped fresh parsley, chopped fresh basil, freshly grated parmesan cheese, hot pepper if you likr spice, minced roasted sweet red pepper, and Worstershire sauce. Mix it all together. Press half of mixture into loaf pan. Press in a layer if fresh mozerella cheese, then the rest of the loaf mixture. Bake about an hour @ 350. I make meatballs using same recipe- I just wrap mix around cubes of fresh mozerella. So good with spaghetti. I make this using venison instead of beef- I don't use a loaf pan, I use a baking sheet and wrap raw bacon around the loaf. I didn't provide measurements because I never measure but compare to other meatloaf recipes and undoubtably you'll figure it out. This and some whole grain pasta tossed with fresh herbs, olice oil/butter mix and fresh grated parm is a big satisfying meal when you add a big salad or steamed veggies.

Bucking Horse #6 from the Marlboro Country cookbook
4 cloves garlic, minced
1 large onion, finely chopped
1 each, celery rib and carrot, finely chopped
2 Tbsp. butter or margarine
2 tsp. salt
1 1/2 tsp. black pepper
1 Tbsp. Worcestershire sauce
2 lbs. lean ground beef
1 lb. each, lean ground pork and veal
1 cup fresh bread crumbs
1/2 cup milk
3 eggs
1/3 to 1/2 cup chopped parsly
1/2 cup Ketchup
In a heavy skillet cook first 4 ingredents till soft
stir in next 3 ingredents, remove from heat and cool.
In large bowl combine meats, cooked veggies, bread crumbs soaked in milk, eggs and parsley. Mix well. In shallow pan shape into 2 loaves. Bake 350 for 1 hour, spoon ketchup over loaves and bake 30 mins. or until meat thermometer reads 155. 10-12 servings. (I have cooked this with only pork and burger, I subbed more pork for the veal, someday I will try it with the veal)

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

startyourmornign with yougurt and granola like a parfait you make it layer yogurt granola and berries in a disposable cup ... hell eat it in your way to work if your on the bus or train but wait if you are in the car.
Buy some morningstarfarms brand bacon( vegetarian) and make some veggie BLTS... toast 2 slices of bread and spread mayo or mustardmix and add lettuce tomato and morningstar veggie bacon( cooked iin micro or stovetop) on topof sandwich,,,add some applceslices with caramel dip or veggie chips from the WHole foods store... for dinner try morningstarfarms crumbles with your fave pAsta sauce and spaghetti noodlesyou can add olives or bell peppers or anything really and have a vegan dinner ORyou can make meatloaf from morningstarfarms go to their website or ask for my email and i would be glad to email you the recipe and soups and you can even make a chicken potpie from morningstar farms soy chicken strips and i have my recipe if yoou would like to email me

I want to eat healthy all the time now, but i want to know some good but healthy foods I can eat, instead of junk food. I love sweets and I need something healthy to replace that. I'm only giving up junk food and I'm also going to try to drink at least 8 glasses of water a day. Thank you! <3

*Fish of any kind...broiled or baked (any way but fried), especially salmon, tuna, etc...My personal favorite is tilapia. Season with something like Ms.Dash, cayenne pepper, etc.

* I personally don't eat beef (I don't like the taste), and it's also an added benefit that in general turkey is healthier. To add, it's not that you should never eat beef, it's that you should try to cut back on it if you do eat it and replace with ground turkey. So when I do eat things that normally use beef like burgers, meatloaf, chili, etc, I just replace it with ground turkey. But in general, I probably eat more Morningstar Farm Grillers & Boca Burgers.(vegetarian burgers). You can buy them in bulk BJ's or Sam's Club or you can look up an easy recipe for black bean burgers online. The good thing about the mock veggie burgers, you not only get your protein, but you get some of your vegetable needs too.

*Eat lots of vegetables like kale, collards, swiss chard, spinach, carrots, cabbage, baked potatoes(to a minimum), cucumbers, cauliflower (cauliflower mock mashed potatoes are really easy & taste exactly like mashed potatoes to me) broccoli, peas, onions, sweet potatoes, etc...It really just depends on what you like.

The same goes for fruit, whatever you like...Apples, bananas, strawberries, plums, grapes, mangoes, peaches, etc.

*Salads-Add things like beans, chicken, eggs, avocado, or canned tuna, for protein; & sprouts, tomatoes, carrots, cucumbers, corn, mandarin oranges, pineapple, apples, nuts, etc...Basically, you can add any fruit or vegetable you like. Just remember to keep your salad dressing healthy & try to make it a well-rounded salad/meal. Just google 'how to make a healthy salad' or 'what vegetables to add to salad', or something similar. I also love spinach salads & fruit salads. You can look up recipes online & tweak them to fit your own personal preference. Watch out for the heavy dressings. For instance, when I'm tired, I just make a spinach salad with walnuts, spinach, and strawberries & my dressing of choice instead of following a recipe.

It goes without saying to eat whole grains such as brown rice & wheat bread. I also eat low-fat cottage cheese (I don't dislike it, but for some reason, I can't just eat it plain, I have to mix it with peanut butter and honey, but you can eat it however you prefer). & I also drink lots of herbal teas, only sweetened with honey, but you can also use any type of natural sweetener you like.

To be honest, I have no problem eating really healthy, but I have a really bad sweet tooth, especially for chocolate, and nothing really combats that, not even dark chocolate, & the only thing I can recommend are granola bars, 100 calorie snack packs, skinny cow desserts, & lean cuisine desserts, all of which are still processed, but at the end of the day are still better than eating a 500 calorie dessert. Plus, you can look up a ton of low-fat, low-carb, low-calorie dessert recipes online...Basically, there's a ton of information you can find just browsing/researching online. Good luck.

I absolutely love animals and am debating about whether or not I should become a vegetarian. The reason I want to become a vegetarian is more so of a control issue. With all of the wars, issues with the government etc. I feel like my lifestyle is one of the few things that I have some control over. I like meat but I don't like the fact that meat without growth hormones and junk doesn't taste good as opposed to meat that does include the harmful chemicals. Also I don't like that unless I personally start my own farm that I can't know for sure how the animals are treated and if they are killed humanely. I'm worried about becoming a vegetarian because I like meat (corn beef, steak, ribs, bacon, hot dogs, meatloaf, pork chops etc.) but at the sametime I don't want to contribute to the inhuman murder of animals. Another thing is that when I brought it up to my parents they are fine with me becoming a vegetarian but they said they aren't planning on fixing any special meals for me and that if we're having meat that I will have to fix something myself for dinner. The second thing I'm worried about is staying healthy. A couple of months ago I was anemic and had to take iron supplements and I'm worried about being anemic again as most sources of iron come from meat. If I do decide to become a vegetarian how far should I take it. Should I just rule out all meat (including like chicken stock etc.?). What are the pros and cons of becoming a vegetarian? Also a friend of mine told me that eating meat puts you at higher risk for cancer...is that true? That kinda freaked me out. Then again there are always talks about people claiming almost anything is linked to cancer.

LIFE puts you at a higher risk for cancer. But some things are associated with cancer.
My sister was a vegetarian for decades, and relied on soy for her protein source (soy and quinoa are the only complete proteins .. otherwise you are eating legumes and grains together). She got thyroid cancer, and had to have her thyroid killed, and now she has to mess with adusting the level of synthroid medication (artifical thyroid hormone).
She found out a couple years after her thyroid cancer that too much soy in the diet is associated with thyroid cancer.

Pro's of vegetarianism:
1. It's cheaper
2. You get to feel proud about yourself as long as it's not arrogance)

Con's:
1. You have to understand protein sources and how to get complete protein in your diet. AND Iron sources too. This means you have to preplan all your meals, checking out the nutritional content ahead of time .. until you have it all in your head.
2. You have to like legumes (beans, lentils, etc) and be prepared for more flatulence. Cheese and eggs have protein but are not healthy to eat on a daily basis. Nuts are fattening. Soy is okay but not every day. Quinoa .. we don't know yet. Best not to rely on it every day.
Most of your protein will be legumes eaten with grains (beans and rice, peanut butter on whole wheat bread, lentils and rice, etc).
3. It takes a lot more complicated recipes to make the food tasty. It's not like you can slap a bunch of garbanzo beans on the barbecue and cook then up in 10 minutes for supper. In the case of your parents, its the difference between having to cook at all and having to do complicated meals.

But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

I'm not very creative at cooking so I need a tried and tested recipe. Any help is MUCH appreciated!

This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.


Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.

What should I do when inlaws have taboo conversations?

Every time we have a family dinner it's the same conversations. MIL always starts these debates that we all clearly have different opinions about.

Examples:

my fiancé is vegan and I rarely eat meat or animal products and his family doesn't agree with it. They always try to make us eat meat at dinner and ask us why we have those diets and when we try to explain our reasons they won't hear it and make us feel like we are bad for not eating meat.

Then the dreaded CANCER conversation. They always bring it up. It has been proven that eating lots of fast food and junk food is linked to cancer and other diseases. They always put me on the spot and when I reply they shut me up and basically say all those facts are bogus and getting a disease is like Russian roulette you can get it no matter what you eat or what kind of lifestyle you have.

Politics, faith and religion..it's really just table manners and I don't think anyone should ever talk about those topics while having family dinners! But like usual each person has their personal views and things always get heated with everyone because its MIL favorite topic of conversation.

His family thinks they know everything and try to debunk everything and think their opinions are the only correct way of thinking. I hate going to dinners because they always push me into the conversations. We always just leave right after eating because we don't want to deal with it. They never have any facts to back up what they are trying to prove, but they always think they are right and know everything.

Mermaids and aliens..wtf?? MIL and BIL always argue about their existence. Mermaids! Are you kidding me?? MIL thinks they are real. That's fine with me but BIL thinks she's nuts and they always argue about it. Then they try to drag me and my fiancé into it. MIL ends up upset.

It's always MIL who starts it all. When I tried to explain that I feel uncomfortable with certain topics, they basically say I am too sensitive and family debates are good to have. Please help be we don't want to cut them off but my fiancé and I are sick if it. When he tries to talk to them about not having these conversations anymore then another argument comes up because they are just kind of closed minded and don't care about anyone else's opinions. Are we handling this wrong?
I usually sit there quietly! And I'm not a vegan, I just don't really like meat. What's so wrong with that?
My fiancé does take my side. He doesn't want to go to family dinners any more. Especially because the try to tell us how to raise our child..

LOL Are you living my life?! Seriously...this is what happens in my family as well, only it's my mother who always trying to get my husband into conversations or debates that she knows will get him going. It can be a big problem, and for a long time, my husband didn't even want to go over to my parents house because it was always a big, stressful situation or confrontation.

So, my husband and I started therapy about a year ago, and this is one of the issues that we have been working on. Our therapist has given us some great advice, and I am happy to say that after employing the suggestions and practices that she has given to us, we enjoy lots of nice dinners with my parents now.

First things first...because they are my parents, it is MY job to be my husband's advocate. My loyalties must be with my husband at all times. This was tough for me, because I am an only child and very close to my parents, but I realized that my husband is really my immediate family now, and my parents are secondary to my marriage, so I cannot allow them to do things that will purposely drive a wedge into my marriage. I had a sit down talk with my parents, explaining the situation, how it makes me feel and how it makes my husband feel, and as afraid as I was to have the conversation, in the end, it went very well, because my parents love me enough to realize that they were hurting me by creating turmoil with my husband.

Secondly, my husband had to practice not getting roped into these debates and conversations. This was tough for him, but he learned to either be quiet or to change the subject in a really slick way...the therapist helped him with that. The trick is when these debates first start, you have to diffuse them by turning the attention to something else, like asking your mother in law where she got the recipe for the fabulous meatloaf you just ate, or if she has any advice on what you can do to keep your house a little cleaner...things that will work to her own feelings of greatness and make her feel as though she has something to teach that you want to learn. If she attempts to avoid this type of distraction, then you just have to be as agreeable as possible, because she is looking for a fight...you have to say things like "you know, I can understand your point" or "you have a really good arguement, there"...this will diffuse the situation because people like this thrive and feed off of the dramatic confrontation, and if you don't allow the confrontation to happen, then they will get bored and move on.

Lastly, if none of this works, then it will be your husband's job to stand up for you and sit down with his family and let them know that you will not be spending as much time together unless they can "behave". When he comes out on your side and basically says that if things don't change you guys won't be around, then it's likely his parents/family will rethink thier behaviour.

On a final note, I would suggest that maybe you and your husband see a therapist that can help you with this. I only say this because a good family/couples therapist will have more in depth suggestions for you that will help a lot more than what I can give to you in this short space. You'll be amazed at what you can learn from a good therapist, and if you don't get these things under control now, then it will only get worse and start to harm your marriage. Good luck!!!

I'll just give you some pointers.

I take three slices of fresh bread and pull them into chunks before kneading them into the meat, this step would be especially beneficial for the buffalo because they absorb fat and create a marbling effect in the meatloaf (fat adds flavor)

I also use crunched up crackers and sometimes a handful of oats.

I season the meat with fresh minced garlic, salt, pepper and lots of old bay seasoning (this is a big tip, it makes the meatloaf taste spicy and homemade, like a warm hug). You could add sauteed peppers and onions if you wanted something more traditional.

Sometimes I'll flatten the loaf, lay spinach leaves on top and fold it around a block of swiss cheese, so it cooks in the middle.

My topping is the best part of my meatloaf and the reason why I have to constantly make it for my family even though I'm vegan now LoL.

Take fresh thinly sliced (not too thin) tomatoes and line them over the top of the roast, letting them overlap just a bit. Bake the loaf for 45 minutes and then take it out. The tomatoes should have caramelized on top of the meatloaf and turned rich and gooey. Now spread a good layer of ketchup over the top and put back in the oven for 15 minutes until the ketchup thickens and starts to brown a little. The topping will be thick, complex and tomato-y. It's addictive.

Easy Shepherd's Pie Recipe

Ingredients
1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
Method
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.



4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.



6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.


You can make this even easier using instant potatoes and frozen veggies but I think fresh is best!

combine sauce ingredients & cook on low flame. combine meat ingredients & ball meat. cook for 45 min-1 hr

- 4 cups rice
- 3 cups water

boil water. add onion soup mix & oil. add rice. cover & let cook. fluff with fork.

stringbeans & mushrooms:
- stringbeans
- mushrooms
- 2 cloves garlic
- 1/4 cup oil
- 1/2 cup soy sauce
- 1/2 cup honey
cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

grilled cheese 1:
- bread
- sliced cheese
put cheese on bread. grill/fry/toast until cheese is melted.

boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

Okay so i am trying to eat healthy. but all i can ever think of thats healthy to make for dinner is grilled chicken brown rice and some veggy of some sort. ok. i dont even know any thing to change the flavor of the chicken. i just grill it normal and thats it. but that meal can get super boring. any one have any good receipes that are healthy?? it can still be chicken but made into a different meal. Im so bad at cooking and coming up with ideas. any ideas would be very helpful! thank you!!

You can buy lean ground turkey, and make meatballs, meatloaf, chili, burgers...any way you use ground beef..and it's low fat and low cholesterol.

My other suggestion is to start stir frying. You need minimal oil, and you can change up the veggies. Snow peas, broccoli, bok choy, peppers, and bean sprouts are all delicious. Just add some fresh ginger, garic, and soy sauce and you'll have a healthy, low fat meal.

Don't forget that there are cuts of beef that are low fat as well. A serving (4 oz) of sliced london broil or flank steak is very lean, and can be wrapped in a multi grain tortilla with some salsa and reduced fat sour cream.

Pork tenderloin is actually leaner than turkey. So try it with apples, or stir fried cabbage.

Then there are meatless meals...portobello burgers, whole wheat pasta with roasted veggies like zucchini, eggplant and tomatoes...yum.

Shrimp made into skewers and broiled with some lemon juice, lemon zest and garlic tastes amazing. Shrimp are generally low in calories.

The possibilities are endless. Here are a couple of recipes I make, and everyone really enjoys...

***Black Bean Chili***

4 large poblano peppers
2 tablespoons extra virgin olive oil (EVOO)
1 jalapeño pepper, seeded and finely chopped
1 large onion, chopped
4 garlic cloves, finely chopped or grated
Salt and freshly ground black pepper
2 cans black beans (15 ounces), drained of half their liquid
2 tablespoons chili powder (a large palmful)
2 teaspoons ground cumin (about half a palmful)
1/2 teaspoon allspice (eyeball it)
2 cans crushed fire-roasted tomatoes (15 ounce can or half a 28o ounce can)
2 cups beef or vegetable stock (use vegetable to make it vegetarian)
Hot sauce, to taste
1/2 cup sour cream, for garnish
1/2 cup chopped cilantro, for garnish
PreparationHeat broiler to high.

Char the poblanos under the broiler so their skins blacken, 7-8 minutes. Place in a bowl, cover with plastic wrap, and let stand 10 minutes. Once the peppers have cooled enough to handle, peel and seed them, then roughly chop them up and set them aside.

Place a medium-size pot over medium-high heat with 2 tablespoons EVOO, about two turns of the pan. Add the jalapeño, onion and garlic to the pan, and cook 6-7 minutes, until the veggies are tender. Season with salt and freshly ground black pepper, then add in the beer, scraping up any brown bits from the bottom of the pan. Cook a few minutes to reduce the liquid by half, then add the black beans and their liquid, the chopped poblanos, spices, crushed tomatoes and stock. Bring up to a bubble, then reduce the heat and simmer to thicken slightly, about 5 minutes. Adjust the seasoning with salt and freshly ground pepper as needed.

Serve the chili up and pass around hot sauce, sour cream, and cilantro at the table to top it with.

****chicken Stir-Fry Wraps****

1 1/2 pounds boneless, skinless chicken breasts, halved horizontally and thinly sliced
Coarse salt and ground pepper
2 tablespoons olive oil
1 large onion, halved and thinly sliced
1 large red bell pepper, ribs and seeds removed, thinly sliced
3 cloves garlic, minced
1 1/2 teaspoons grated peeled fresh ginger
1/4 to 1/2 teaspoon red-pepper flakes
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 1/2 teaspoons cornstarch, mixed with 1 tablespoon water
12 to 16 Boston lettuce leaves (about 2 heads)

Directions
Season chicken with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over high heat. Add half the chicken; cook, stirring constantly, until opaque throughout, 2 to 4 minutes. Transfer to a plate. Repeat with remaining chicken.
Add remaining tablespoon oil to pan, along with the onion and bell pepper. Cook, stirring constantly, until onion is tender and golden, about 4 minutes (reduce heat if browning too quickly).
Reduce heat to medium; add garlic, ginger, and red-pepper flakes; cook, stirring, until fragrant, 30 to 60 seconds.
Stir in soy sauce, vinegar, and cornstarch mixture; remove from heat. Add chicken and any accumulated juices; toss to coat. Serve in lettuce cups.

***Pork Tenderloin with Sauteed Apples and Leeks***
2 pork tenderloins (1 1/2 to 2 pounds total), trimmed of excess fat and silver skin
2 tablespoons olive oil
Coarse salt and ground pepper
2 leeks, white and light-green parts only, halved lengthwise, and cut crosswise into 1-inch pieces
1/2 teaspoon fennel seeds
3 Gala apples, cored and cut into 1/4-inch-thick slices and halved crosswise
1 tablespoon honey
1 teaspoon sherry vinegar or red-wine vinegar
Directions
Heat broiler, with rack set 4 inches from heat. On a broilerproof rimmed baking sheet, rub pork with 1 tablespoon oil; generously season with salt and pepper. Broil, until pork registers 145 degrees on an instant-read thermometer, 12 to 14 minutes. Transfer to a plate, cover loosely with aluminum foil, and let rest, 10 minutes (temperature will rise about 5 degrees as it sits).
Meanwhile, in a large skillet, heat remaining tablespoon oil over medium. Add leeks and fennel seeds; cook, stirring occaionally, until leeks are tender, about 6 minutes. Add apples, and cook, tossing, until just beginning to soften, 3 to 4 minutes. Remove from heat; stir in honey and vinegar, and season with salt and pepper. Thinly slice pork, and serve with apples and leeks.

I've been a Veggiebite ever since May of 2008. And since then, I've always eaten the side veggies that my parents cooked. They're EXTREMELY huge meat eaters. Every day, their supper consists of either, Hamburgers, Meatloaf, Porkchops, Steak, etc etc. And They would always fix something on the side like Corn, or other times, French fries. Anddd.. I'd really like to try something different.

Soo... Is there any really delicious Vegetarian recipes that are filling, healthy, and doesn't cost a lot of money?

I still eat sea food, btw.

Q. I have done i before but i lasted 2 weeks,
But i really want to be one because i love animals :( and i have just recently quit smoking so i wanna put my goal on something else,

To me Loving animals is a Great Reason to be a vegetarian. It is not hard to be one and keep being one. First you must make a commitment to yourself that you not going to eat their bodies anymore even if you like how they taste. You are going to put their lives before your taste buds. I think loving animals and remembering that will keep you going. The first month is the hardest and only because you are used to eating animals. It is habit like anything else. Every day decide what you are having for breakfast . That is easy, Breakfast:cereal, oatmeal, toast,waffles, pancakes, english muffins, donuts, also mock breakfast meats as veggie bacon , veggie patties etc.
Lunch: make a sandwich ( no meat), a bean burrito, bean taco, veggie wrap, humus, falafel on pita, salads, soups, use mock meats as veggie burgers, veggie dogs with beans, veggie sausage etc
Dinner: Pasta a zillion ways, marinara, with pesto, alfredo,prima vera, with beans, veggie lasagna, or have sauteed or roasted veggies over rice, a curry dish, use mock meats to make almost any "meat dish", stews, soups,casseroles, potatoes( fried, roasted, mashed, boiled), tamales, veggie meatballs, veggie meatloaf with mashed potatoes, Tofurkey with pecan cranberry,salads, and even veggie sloppy joes.
These are just a few ideas... eat fresh fruits as apples , bananas, berries and drink fruit juice as OJ fortified with calcium
snack on nuts as almonds, peanuts, cashews, ect
snack on raw veggies as baby carrots or celery ( and use salad dressing as a dip) , I eat lots of raw veggies as well as cooked ones
If you can begin to change to soy or almond milks(they all taste different so it will be trial and error) I like Regular unflavored Silk ( refrigerator section) and Almond breeze chocolate (not refrigerated)

Things to avoid anything with Gelatin, anything with L-Cysteine, Carmine, and Confectioners glaze( the last 2 are bug guts found in lots of candies), avoid any beef, chicken or animal broths in soups and many times in rice dishes, and in cheese make sure it says non animal rennet ( otherwise the cow is killed as animal rennet comes from their 4th stomach).
I would say start here and everyday think to yourself I will not eat an animal today. Soon you will not even think of ever eating one again because your heart is in it and the more you know, the more commited you will be. Do not panic if you make a mistake , just fix it for the next time and keep going.

Good luck and stick with it ( I read some of your other questions and I would say do not try to be a vegan yet, yes you can begin to buy non leather shoes and bags as what you have wears out, and use products not tested on animals, but do not put that much pressure on yourself all at once)

One last thing Vegetarians do not eat any type of Fish ever including shellfish. Fish are living animals until they are killed and gutted for someone to eat them and absolutely not vegetarian. You probably know that, but some people are confused.

How do you jazz up your meatloaf?

I'm so looking forward to fall and filling my house with cooking smells again. Meatloaf is the classic fall dish to me. I'm curious, it seems like everybody's meatloaf recipe is unique and personal to them, what is your take on it?

I like to use fresh (not dried) bread crumbs and ritz crackers. I don't like to over egg it, or add milk. I always put in a good bit of Old Bay seasoning (it gives it a warm and spicy aroma).

For the topping I like to cut a fresh tomato into thick slices, arrange them over the top and bake them for 45 minutes until the tomatoes caramelize beautifully, then I spread a thin layer of ketchup over the top for the last 15 minutes. It makes a thick satisfying topping that stays put and tastes like tomato candy.

If I'm feeling super fancy I'll roll out the meat mixture and wrap a bar of cheddar, swiss, or muenster cheese in the middle with some roasted red peppers and spinach leaves... OM NOM NOM.

Awwwwww well I was a vegan for the last year and a half (I wasn't an ethical vegan, I was specifically targeting animal proteins for health reasons, so, for instance I couldn't eat eggs but I could jello...) until I was recently diagnosed with anemia. My doctor suggested I reintroduce meat to my diet to recover faster, and I have to say it's the perfect season for it, I'm really enjoying all of the possibilities.

Here's my basic recipe for vegan meatloaf if you'd like to try it. You can add your own spices and veggies:

I use a cup or two of textured vegetable protein, rehydrated in the microwave.

I pick apart a few slices of fresh bread and add a tablespoon or two of coconut oil (it's important for texture that you use an oil that solidifies as it cools, you can use crisco too, but it's so flavorless)

I mix those two ingredients with a handful of roughly chopped green olives (they have the exact texture of gristle) and a little olive juice

Well, darling, since the offspring's now a vegetarian and I no longer eat beef, I haven't made meatloaf in a very long time, but I used to soak dried breadcrumbs in milk and add some sauteed diced vegetables like onions, carrots, green peppers or broccoli stems, and mushrooms to the meat. I'd usually put a pretty substantial amount of sliced onion on top of the meatloaf - the offspring is very fond of onions - and I'd use generous measures of sage and thyme as my seasoning with salt and pepper, since they have a lovely autumnal fragrance. In my family, we use a minimally-seasoned tomato sauce (hot) rather than ketchup or a brown gravy, although I have used ketchup on top of the meatloaf as you describe.

My meatloaf - though good and a favorite of the offspring's - was never more than a patch on my mother's meatloaf. I pretty much follow the recipe she taught me, and I don't know what she does to it, but hers is just a whole different level of deliciousness than mine has ever achieved. On those rare occasions when he reminisces about his carnivorous days, the offspring gets nostalgic for her meatloaf, not mine.

I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Tastespotting.com is a round-up of many food blogs from around the world. They have a search term, eg veggie burger, and frequently feature vegetarian/vegan menu items for when you're looking for something new.

Does anyone know of any good meatloaf recipes? i dont eat red meat, but i was thinking ground turkey? help!?
