What Vegetarian Meat substitutes actually taste like meat?

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

I am looking for a good veggie loaf recipe...?

But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

I'm not very creative at cooking so I need a tried and tested recipe. Any help is MUCH appreciated!

RECIPE BY: Prose
This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.


Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.

Well, I'm 14 and I love to cook. My favorite is baking! I really would love to cook more often. I am never aloud to cook dinner. My mom always does.(hamburger helper, meatloaf, spaghetti, chicken, hotdogs, etc. and a store bought loaf of bread and canned or frozen veggies and sometimes a salad.) I'm definitely not complaining, because I'm very grateful she cooks almost every night. I'm not allowed to cook meat. I cook myself lunch almost everyday.(pasta with fresh kale, tomatoes, bell pepper, mushrooms, and drizzled with lemon juice is one of my favorites!) I love to make homemade yeast rolls.(with cinnamon butter is amazing!) I do make most of my recipes. For cooking and baking. I do all of my family's birthday cakes.(mine is coming soon and I might make my own! lol) I was wondering if there is anything I could do? Is cooking a good career to eventually go into? Any way to go into baking? Is there anything I could do now? I do draw and sculpt too, so I love to do cakes with fondant and stuff like that.

You're pretty good for a 14 yo girl Caitin. My Mom wouldn't teach me anything about cooking either. My first year in high school, I enrolled in Home Economics and learned how to follow a recipe. And I began baking cakes, brownies and bread. We moved away and I went into another school district and this teacher was lazy, she never taught us students anything. It was a total waste of time. So finally, I began to learn how to cook meat from older girl friends. Finally, I enrolled into Culinary Arts or Chef School and I learned lots more.

If you want to teach yourself to cook meat, roast meat, chicken, etc. grill steaks, then get yourself a couple of thermometers. You'll need two of them. Plus an oven thermometer. The deep fryer or candy thermometer looks like this...

It only cost $9.99. That's a good price. And it will last you a long time if you take care of it. You need it to fry fish, shrimp, chicken, do nuts, anything that is fryed. It's also a candy thermometer but I use mine mostly to fry foods.

I use my instant-read digital thermometer every time I cook almost. It is to check the temperature of roasts, steaks, casseroles, baked potatoes, custards, etc. The temperature range only goes up to 299 degrees, so it can't be used for frying foods. ( Most fryed foods need a temperature of 350 to 370 or 400 degrees). The instant-read digital thermometer looks like this...

It is $19.00 and you can check the temperature of the roast, meatloaf, roast chicken, etc. or a casserole and once the food has reached a certain temperature, it is done and ready to remove from the oven. Allow it to rest about 15 or 20 minutes and serve.
An oven thermometer will cost you about $5-6. It looks like this.

If your oven is not so new, you may need to check the temperature to see if it is accurate or if it is inacurate. Some oven are off as much as 50 degrees.

Understanding how to use cooking thermometers will prevent you from burning a roast or over cooking a meat loaf or most any kind of food. A roast turkey, etc. I included a web page of temperature cooking charts for you to go by. The only place you can find these easily is online. All professional chefs and cooks use these thermometers and rely on the temperature charts.

at college i get so bored, i bring the sam old lunches: sandwiches, crisps, a drink, and a chocolate bar. Anyone got any ideas of stuff i could bring to eat at college?


Answer
I would carefully consider your containers and get some insulated pieces. They will help you expand your food choices to keep hot and cold foods safe and yummy. Get double the amount you would carry so that you can have one set in use, and keep one set at home getting cleaned and chilled. Make sure everything is easy to clean and get a baby bottle brush and some white vinegar to help you keep everything fresh. To keep things clean run a sink of hot soapy water, add 2 cups of white vinegar and let your items soak. Then scrub them clean, rinse, and let them air dry.

You can start with 4-6 reusable drink bottles. 2-3 drinks packed per day will keep you away from the vending machines and coffee shops, saving money and allow you to choose healthier options. Add to that 2 insulated soup thermos, and some reusable disposable plastic containers with lids, some zipper bags, and 2 flexible, reusable ice packs...and 2 insulated lunch totes that fit half your gear in each. You can also get a stash of handi-wipes. These are a washable/reusable very sturdy paper towels, meant for household cleaning, but they work great for this, pack damp in a zipper bag to wipe your face. They can be discarded after a few uses. And tuck in a small bottle of hand sanitizer, and some washable plastic silverware.

With better containers you can make use of leftovers, take hot soup or pasta, etc, even a slice of meatloaf or a hunk of roast and mashed potatoes.

As for typical lunch food choices, you can pack fresh veggies...if you like to dip, slice your peppers, scallions, celery, carrots, in sticks and stick them straight up in a container (cut your food to fit that container) that has dip or hummus in the bottom...pull each piece out to find it pre dipped.

If you prefer a salad you eat with a fork, pack some chunked up salad veggies, some chilled pasta, some bottled salad dressing (or herbs and olive oil). Then when you sit down to eat, add a packet of tuna, chicken, a string cheese, or pepperoni, and toss it all together...packing your salad in an oversized container will allow you to add and stir easily.

You could swap out the pasta in the above recipe for chilled barley, rice, lentils, potatoes...or swap out the dressing for chilled marinara sauce.

Instead of chips/crisps you can try pita chips, crackers. They also make veggie poofs that are similar to cheetos. I wonder if you are from UK do you have these or know what I mean. You can also pack plain tortilla chips (instead of the spray painted flavored kind) and carry your own fresh bean dip or salsa. These are healthier and you get better flavor and variety.

For different sandwich options, switch our your bread for bagel, pita, tortilla, flatbread, or skip the bread altogether and pack all your sandwich fillings as a salad.

For drink options, you can buy juice box type containers of lots of things: milk, yoo-hoo chocolate drink, or buy drinkable yogurt or smoothies. You can also use your reusable containers to prepare yourself an iced tea or coffee, a lemonade, or powdered drink.

For dessert...fresh fruits! Grapes, apples, oranges, bananas, pear, peach can all be packed whole...or you can cut and bowl up some berries, melon, kiwi, papaya, mango, pineapple, mandarin oranges.

Other dessert...you can use purchased snack cakes, homemade cookies, make cheesecake cups, make caramel popcorn, make marshmallow treats with cereal, make a chocolate ganache and stuff to dip in it.

You can also freeze certain things. You can freeze pudding cups, yogurt cups, jello cups, and applesauce cups. Pack them frozen, they are cold and refreshing when you sit down to eat. They will help keep everything else cold. You can freeze drink bottles if they aren't all the way full.

There are 3 couples taking a weekend trip. 2 of them are riding their Harleys there, we are trailering ours due to no saddle bags. One of the women is a vegetarian, and I would like to get a few ideas for snacks or easy dishes.
We have a rented cabin with a kitchen, but one never knows what kind of utensils or dishes will be available and we really don't know what we will find to shop for. I will be taking a cooler and I thought about taking ingredients for stuffed mushrooms or stuffed cherry tomatoes. I would mix the (stuffings) before I leave then it would be easy to get them ready upon arrival.

Some good snacks for the road are dried fruit, trail mix, primal strips (vegan jerky), and/or granola...plus I found some ideas for dinner. A vegan meat loaf can be mixed ahead of time...the recipe is below:

Vegan Meatloaf
Adapted from a recipe in The Joy of Cooking, 1997 Edition
1 14oz. package GimmeLean
3/4 cup finely chopped onions
1/2 cup quick-cooking rolled oats
1/3 cup ketchup
1/3 cup finely chopped parsley
1/2 tsp. thyme
1/2 tsp. salt
1/4 tsp. black pepper
3 tbsp applesauce
1 tbsp vegetable oil
1 tbsp all-purpose white flour

Mix all ingredients together in a big bowl with your hands until they just come together. Joy of Cooking warns you not to overmix, though I can't imagine anything too terrible could happen if you did.

Put in a lightly oiled loaf pan and bake at 350 degrees Fahrenheit for 45 minutes.

Veggie Meatloaf

You won't miss the meat in this flavorful dish! Serve with mashed potatoes for a great meal! You can also substitute diced eggplant for the mushrooms.

INGREDIENTS:
1 cup uncooked white rice
2 tablespoons vegetable oil
1 onion, finely chopped
1 cup cooked lentils
1 cup chopped fresh mushrooms
1 tablespoon vegetarian Worcestershire sauce
salt and pepper to taste
1 egg, beaten
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried parsley
1/2 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Meanwhile, heat oil in a small skillet over medium heat. Saute onions until tender. Set aside.
In a large bowl combine cooked rice, lentils, mushrooms, Worcestershire sauce, salt, pepper, egg, garlic powder, Italian seasoning, parsley and cooked onions; mix well. Press mixture into prepared pan; spread ketchup on top of loaf.
Bake in preheated oven for 45 minutes.


Hariton's 'Famous' Vegetarian Casserole

This is a very tasty dish consisting of all kinds of fresh vegetables and herbs baked in the oven. This will tantalize your taste buds. It has been a sell-out at our Greek Church at every function for five years now. We serve this on toasted, warm pita bread.

Original recipe yield: 36 servings.

INGREDIENTS:
8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic, cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 (15 ounce) can tomato sauce
3/4 cup olive oil
salt and pepper to taste

DIRECTIONS:
Prepare the eggplant before assembling ingredients, by cutting them into 2 inch chunks and putting them into an extra large bowl with salted water to cover. This will draw out the bitterness from the eggplant. Let this sit for about 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Cut the potatoes, green bell peppers, onion, squash and tomatoes into 2-inch chunks. Cut the green beans and mushrooms in half and peel the garlic cloves.
Drain and rinse the eggplant, then combine it with all the other chopped vegetables, the dill, oregano and basil and place all into a 3x13x18 inch roasting pan. Pour the tomato sauce and olive oil over all.
Bake at 375 degrees F (190 degrees C) for 2 1/2 hours, adding a little water about halfway through cooking time to keep moist.


Easy Peach Cobbler
This is a great peach cobbler--so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

INGREDIENTS:
1 cup white sugar
1/2 cup butter, room temperature
1 cup self-rising flour
1 cup milk
1 (15 ounce) can peaches

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a one-quart baking dish or 9 inch square pan, cream together sugar and butter. Mix in flour and milk until smooth. Pour peaches and their juice over the top.
Bake 25 to 30 minutes in the preheated oven, until golden brown.

Note: I didn't have self rising flour, so I used (according to a "substitutions" website I found) 1 cup of flour (minus 2 tsp), 1/2 tsp salt and 1 1/2 tsp baking powder for every cup of self rising flour.

I've been a Veggiebite ever since May of 2008. And since then, I've always eaten the side veggies that my parents cooked. They're EXTREMELY huge meat eaters. Every day, their supper consists of either, Hamburgers, Meatloaf, Porkchops, Steak, etc etc. And They would always fix something on the side like Corn, or other times, French fries. Anddd.. I'd really like to try something different.

Soo... Is there any really delicious Vegetarian recipes that are filling, healthy, and doesn't cost a lot of money?

I still eat sea food, btw.

It seems that all of the recipes I've found so far online are disgusting and try to make meat-like dishes with meat substitutes (tofu meatloaf, etc.) Any recipes like that 1.) sound repulsive, and 2.) don't taste too great either.
Can anyone suggest any vegetarian cookbooks and/or websites with recipes? Preferably not vegan, just vegetarian. Thank you!
By vegan, I mean [preferably] not recipes that exclude dairy. And no meat-substitute dishes, like meatloaf made out of tofu or something, for example.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

I am transitioning my family to a more vegetarian diet and without meat as a centerpiece of dinner, I'm a little stumped. I can do the one pot stuff, and we love it, but how do you do everyday meal planning?


Answer
Vegetable Lasagna and salad (Cut leftovers into individual portion sizes and freeze for another meal). I like to use roasted vegetables like butternut squash, mushrooms, tomatoes and eggplant, layered with the lasagna noodles and a mixture of ricotta, mozzarella and parmagiano cheese. We are not vegetarians, but do try to eat meatless several days a week. For a less fattening version, use a sauce made with low fat cream cheese or other low fat cheese instead of the 3 cheeses.

Portobello Mushroom Burgers: Marinate the whole portobellos in minced garlic, chopped fresh parsley, olive oil, and salt & pepper for a couple of hours. Grill, pan fry or broil the mushroom until nice and soft. Serve on a bun with usual fixings or as that centerpiece of your dinner with Oven Baked French fries and a salad or vegetable.

Soups: I often make soup as our main meal serving a salad before or after the soup. To low sodium vegetables add canned or cooked beans or lentils and pasta. Allow to simmer about 20 minutes, then add any vegetables you like. One of my favorites is Barilla 3 cheese tortellini simmered in the low sodium vegetable broth until done, Remove the tortellini, add some cooked lentils and a can of drained chopped tomatoes and heat. Add back the torellini. Serve over raw julienned baby spinach.

You can find recipes for burgers and meatloaf made with lentils or other beans. Check the frozen food section of your market for more ideas or google recipes. .

• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

I am transitioning my family to a more vegetarian diet and without meat as a centerpiece of dinner, I'm a little stumped. I can do the one pot stuff, and we love it, but how do you do everyday meal planning?

Vegetable Lasagna and salad (Cut leftovers into individual portion sizes and freeze for another meal). I like to use roasted vegetables like butternut squash, mushrooms, tomatoes and eggplant, layered with the lasagna noodles and a mixture of ricotta, mozzarella and parmagiano cheese. We are not vegetarians, but do try to eat meatless several days a week. For a less fattening version, use a sauce made with low fat cream cheese or other low fat cheese instead of the 3 cheeses.

Portobello Mushroom Burgers: Marinate the whole portobellos in minced garlic, chopped fresh parsley, olive oil, and salt & pepper for a couple of hours. Grill, pan fry or broil the mushroom until nice and soft. Serve on a bun with usual fixings or as that centerpiece of your dinner with Oven Baked French fries and a salad or vegetable.

Soups: I often make soup as our main meal serving a salad before or after the soup. To low sodium vegetables add canned or cooked beans or lentils and pasta. Allow to simmer about 20 minutes, then add any vegetables you like. One of my favorites is Barilla 3 cheese tortellini simmered in the low sodium vegetable broth until done, Remove the tortellini, add some cooked lentils and a can of drained chopped tomatoes and heat. Add back the torellini. Serve over raw julienned baby spinach.

You can find recipes for burgers and meatloaf made with lentils or other beans. Check the frozen food section of your market for more ideas or google recipes. .

So last year for Thanksgiving I made a stuffed tofu loaf ("tofurkey" if you will.) I really enjoyed it, but I've been eating a lot of soy lately, so I'm thinking tofu may not be the greatest thing to have for Thanksgiving dinner (and lunch the next few days.) My little sister, though, insists on having a fake turkey that night. So I was wondering if anyone has ever tried making a stuffed seitan loaf/turkey? I've never had seitan, but I've heard great things about it. Anyone have any reviews or tried and true recipes? I'm not really interested in premade products if there are any, but tips on making just plain seitan would be welcomed as well. Thanks in advance! :)

Seitan roasts are quite easy to make and a delicious alternative to soy turkey roasts. This recipe I have made and is quite delicious http://www.youtube.com/watch?v=npw2LKpag5o&feature=channel. The exact recipe with measurements can be found at everydaydish.tv. I halved the recipe since there are only a couple vegetarians in my family. You can make this seitan roast fancy by adding a glaze to it and by using the puff pastry (most puff pastry is vegan, just check the ingredients) crust.

Another suggestion I have is this vegetarian meatloaf. http://www.vegnews.com/web/articles/page.do?pageId=1489&catId=11 I've made this too and it's really tasty. I usually like to add extra sauteed onions, garlic and mushroom for more flavor. I like that this recipe contains less processed foods. However, it doesn't taste anything like turkey, but it is another option that goes great with traditional Thanksgiving side dishes.

I do have my very own recipe of meatloaf. Which I call it ''Garden Meatloaf''. But that's the only recipe I have so far. I wish to have more meatloaf recipes. Soak a piece of bread in milk till soft in big bowl. Add an egg, equal parts ground beef and ground pork, salt, pepper, minced onion, minced garlic, chopped fresh parsley, chopped fresh basil, freshly grated parmesan cheese, hot pepper if you likr spice, minced roasted sweet red pepper, and Worstershire sauce. Mix it all together. Press half of mixture into loaf pan. Press in a layer if fresh mozerella cheese, then the rest of the loaf mixture. Bake about an hour @ 350. I make meatballs using same recipe- I just wrap mix around cubes of fresh mozerella. So good with spaghetti. I make this using venison instead of beef- I don't use a loaf pan, I use a baking sheet and wrap raw bacon around the loaf. I didn't provide measurements because I never measure but compare to other meatloaf recipes and undoubtably you'll figure it out. This and some whole grain pasta tossed with fresh herbs, olice oil/butter mix and fresh grated parm is a big satisfying meal when you add a big salad or steamed veggies.

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)

I'm vegan and I normally cook only vegan food but I'm getting married soon and my boyfriend eats poultry, fish and drinks milk and I want to make him a full homemade meal just for him but I don't know what to make because I don't cook with those things. I've never cooked for him before so I want it to be really special. He loves chicken, beans, and rice so I need a really good recipe with these. I also want to make him a really good dessert. Something you've made before and everyone loved. Thank you!

You can use ground chicken or turkey or even crumbled tofu with soy sauce-- and he may never know that there was no meat with tofu-- just use ample BBQ sauce to mix

Shepard's Pie:
-Brown 1 pound beef/ ground turkey
-Add 1-2 cloves of garlic, 1 1/2 tsp Worcestershire sauce, and 3/4 cup ketchup
-Cover and simmer 20 minutes
-Coat casserole dish w/ nonstick cooking spray

1st Layer - meat sauce
2nd Layer - Green beans and corn
3rd Layer - mashed potatoes
Top with cheddar cheese (as much as you want)

350 degrees (preheated oven) for 30 minutes - bake uncovered


Meatloaf
1 1/2 pounds ground meat
1 slice of bread
1 egg
1 package of Lipton's Onion Soup Mix
pepper to taste
4 TBSP ketchup
1/2 cup half and half

*SAUCE*
4 TBSP apple cider vinegar
2 TBSP packed brown sugar
1/2 cup ketchup

preheat oven to 350 degrees

Mix sauce together until smooth and set aside

Add all ingredients together. Put in a loaf pan. Pour suace over and cook for 1 hour 15 minutes. Do this whether you use the sauce or not

Try Zatarain's Dirty Rice or Jambalaya Mix. With the dirty rice mix you have to use ground beef. With the Jambalaya Mix you can use chicken or smoked sausage.( *It taste best with sausage).

My version of ghoulash:

Ground Beef with vegetarain beans(pork and beans without the pork) with chopped onions, picante sauce, and tomato sauce. Serve over white rice.

Pasta Salad with veggies: Tri-colored rotini pasta with chopped onions, tomatoes, cucumbers and green olives. Mix with Robusto Italian Dressing. Add a little seasoned salt and black pepper. Chill in the frig.

Chicken Pettazini:

Spaghetti with chopped, grilled, boneless chicken breast, Four Cheese white sauce or the Roasted Garlic and Parmesan cheese white sauce. You can also add green pepper if you like.

Dessert

Chocolate stuffed french toast

French bread
chocolate chips or chunks/morsels/etc
5 eggs
1 C milk
1 ts each cinnamon & vanilla

The night before you want to serve this:


Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.
Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

Preheat oven to 400F. Bake 20-25 minutes uncovered.

Yes ground turkey is amazing as meatloaf. here's an awsome recipe from Rachel Ray for ground turkey meatloaf. It's healthy and even my husband loves it.

1lb Ground Turkey
1 box Turkey Stuffing
water
butter
Italian Style Bread Crumbs
1-2 eggs
Garlic and onion powder

Pre-heat oven to 350 degrees Farenhiet
Mix turkey stuffing according to box let set and fluff with fork. Let cool. Take your ground turkey mix with eggs, a cup or so of bread crumbs, stuffing, garlic powder and onion powder to taste (don't actually taste the meat though) Bake at 250 for 40-45 minutes or untill done and slightly grounden brown.

Serve with Mashed Potatoes, a Veggie and Gravy (recipe below)

Chicken Broth (med.-lrg. box)
Canola oil
Flour

Pour Chicken Broth into heavy saucepan and heat on high
Pour canola oil(about 1/4 -1/3 cup) into cup and mix with1/4-1/2 cup of flour and stir till smooth once chicken broth is heated pour flour mix into broth, bring to a boil, turn burner down to low-med heat and stir till begins to thicken

1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream

Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.



Mom's Potato Soup
8-10 large potatoes, peeled and diced
1 large onion, diced
4 stalks celery sliced
Water
6 cups milk
Salt and pepper to taste

In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.



Cheeseburger Macaroni
1lb. Hamburger
1 box macaroni and cheese
¼ cup milk
2 tbsp. Butter
1½ cups shredded cheese (your choice)
(Optional) Mushrooms, onion, green peppers, chopped

Prepare macaroni and cheese according to box directions. Brown hamburger in a separate skillet, drain grease. Combine macaroni mixture and hamburger, add milk and butter, macaroni cheese packet and shredded cheese. Mix well to combine.


Mom's American Goulash
1 lb. Hamburger
2 small cans tomato sauce
1 can diced tomatoes with juice
1 lb. Large elbow macaroni
2 tbsp. Butter
Salt and Pepper to taste

Brown hamburger until no longer pink, drain any grease. Prepare macaroni according to package directions. Combine hamburger and macaroni in a large bowl or pot, add sauce, tomatoes with juice and butter. Allow to sit 15 minutes on warm so that macaroni absorbs some of the sauce. Add salt and pepper to taste.

Bubble Pizza
2 tubes biscuits
1 lb hamburger, browned
2 cup shredded cheese, can use 1c moz and 1c cheddar
1 jar pizza sauce
Preferred pizza toppings

cut biscuits into quarters and place in a 9x13 baking pan, stir in all other ingredients and bake according to biscuit tube directions


Mom's Broccoli cheese soup
1/2 onion, chopped
1 bag frozen chopped broccoli
2 1/2 cups parmesan cheese
1 cup cheddar cheese, shredded
1 can evaporated milk

Saute onion until tender. Place in crockpot with broccoli. Just barely cover with water, cook 1 hour on high. Stir in milk and cheeses. Cover and allow to melt, then cook for one hour on low. Serve.

Chops and Potato Dinner
boneless porkchops
1 pkg. Scallopped or au gratin potatoes
non-dairy creamer to replace milk in potatoes

Prepare potatoes according to directions using nondairy creamer in place of milk. Place potatoes in crock pot. Place chops on top of potatoes. Turn slow cooker on high for 1-2 hours or until potatoes have absorbed excess liquid and chops are cooked through.

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.






Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.

* large frying pan
* wooden spoon
* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.







Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.

My mom is not supportive of my vegetarianism, so most of the time I'll have to cook my own meals. I need recipes for some simple meals with EVERYDAY INGREDIENTS.

I can handle breakfast on my own, but I'm desperate for lunch and dinner recipes. Lunch would have to be something pre-made and packable.

I'm an ovo-lacto vegetarian, so there's no need to substitute dairy or eggs.

Hi, great choice to become a vegetarian. I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 100+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Don’t forget to regularly see the doctor.

Breakfast

A protein shake

-Milk or soy milk
-peanut or cashew butter
-splenda or sugar
-banana
-strawberries
You could top it off with whipped cream
(If you do not have a blender do the following)
-microwave a medly of frozen fruit until warm
-place it in a bowl
-top it off with crumbled cinnamon toast crunch
It tastes like a cobbler YUM!!!

Classic Ranch BLT

-Ranch on 1 slice of bread
-Butter on the other
-lettuce
-tomato
-vegan bacon
(If you do not have veggie bacon do the following)
-Cut bacon sized strips of cheese
-Place it on parchment paper in microwave
-Season it with BBQ sauce(just a bit)
-Microwave until crispy and peel off the cookie sheet

Dinner

Mock meatloaf
-onions
-bbq sauce
-crumbled nuts(a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well and put it in the oven and bake until you like it best

Desert
Jamaican me crazy tropical banana
-fry banana slices in a pan
-add some cinnamon and honey
-top with whipped cream

-Dip stal bread in mix of sugar cinnamon and egg

Greek Feast
-Feta cheese
-romaine lettuce

-Gorbanxo beans(from a can)

-melt the following in the microwave
-1/4 cup cream cheese
-1/4 cup of Velveeta
-1 slice of swiss cheese
-After all has melted, mix well
-cut up your fave veggies and dip into cheese like a fondue
(put cheese mix in a thermos when going to school)

Try some fruit with lemon juice and splenda

Breakfast

-egg(scrambeled)
-spinach and onion cooked
-fave cheese
-flour tortilla
-wrap it up and enjoy with a piece of fruit

Pre prepared “vegkabob”
- diced and micro waved/cooked tomatoes
-chunks of tofu, veggie burger or mushroom micro waved/cooked
-diced zucchini micro waved/cooked
-put it in a pattern form on spears
-if you don’t have a meat alternative put on chunks of cheddar cheese
-for the final touch add your fave bbq sauce

Dinner

Mac and cheese”MY WAY”
-Ready macaroni noodles(cooked)
-add a bit of seasoning and softened crème cheese
-cheddar cheese
-veggies
-tomato sauce

DAY 7

Breakfast

-micro waved/warm frozen berry medley
-granola

Chinese Steamed veggies
-Teriyaki and peanut sauce mixed
( for cheap peanut sauce microwave peanut butter with a bit of oil and sour cream and stir)
-Carrots, Zucchini, eggplant, water chestnuts, (you can get a frozen mix)
-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Dinner
Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)
-onions
-BBQ sauce
-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well
-roll it into balls and coat with flour
-place on a cookie sheet and put it in the oven to bake until brown hot and ready

Does anyone have a recipe for vegan meatloaf that does not call for tofu?

Buy some TVP (textured vegetable protein) most large grochery stores carry it. You can also get it at a health food store.

2 cups TVP
1 cup water
1 cup bbq sauce
1 table spoon corn starch
Wheat flour as needed

Mix water and bbq sauce and heat till almost boiling. Add TVP. Let stand for a few minutes. Add corn starch then a little flour until it make a nice ball. Put into a loaf pan and cook the same way you would a true meat loaf.

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

To me Loving animals is a Great Reason to be a vegetarian. It is not hard to be one and keep being one. First you must make a commitment to yourself that you not going to eat their bodies anymore even if you like how they taste. You are going to put their lives before your taste buds. I think loving animals and remembering that will keep you going. The first month is the hardest and only because you are used to eating animals. It is habit like anything else. Every day decide what you are having for breakfast . That is easy, Breakfast:cereal, oatmeal, toast,waffles, pancakes, english muffins, donuts, also mock breakfast meats as veggie bacon , veggie patties etc.
Lunch: make a sandwich ( no meat), a bean burrito, bean taco, veggie wrap, humus, falafel on pita, salads, soups, use mock meats as veggie burgers, veggie dogs with beans, veggie sausage etc
Dinner: Pasta a zillion ways, marinara, with pesto, alfredo,prima vera, with beans, veggie lasagna, or have sauteed or roasted veggies over rice, a curry dish, use mock meats to make almost any "meat dish", stews, soups,casseroles, potatoes( fried, roasted, mashed, boiled), tamales, veggie meatballs, veggie meatloaf with mashed potatoes, Tofurkey with pecan cranberry,salads, and even veggie sloppy joes.
These are just a few ideas... eat fresh fruits as apples , bananas, berries and drink fruit juice as OJ fortified with calcium
snack on nuts as almonds, peanuts, cashews, ect
snack on raw veggies as baby carrots or celery ( and use salad dressing as a dip) , I eat lots of raw veggies as well as cooked ones
If you can begin to change to soy or almond milks(they all taste different so it will be trial and error) I like Regular unflavored Silk ( refrigerator section) and Almond breeze chocolate (not refrigerated)

Things to avoid anything with Gelatin, anything with L-Cysteine, Carmine, and Confectioners glaze( the last 2 are bug guts found in lots of candies), avoid any beef, chicken or animal broths in soups and many times in rice dishes, and in cheese make sure it says non animal rennet ( otherwise the cow is killed as animal rennet comes from their 4th stomach).
I would say start here and everyday think to yourself I will not eat an animal today. Soon you will not even think of ever eating one again because your heart is in it and the more you know, the more commited you will be. Do not panic if you make a mistake , just fix it for the next time and keep going.

Good luck and stick with it ( I read some of your other questions and I would say do not try to be a vegan yet, yes you can begin to buy non leather shoes and bags as what you have wears out, and use products not tested on animals, but do not put that much pressure on yourself all at once)

One last thing Vegetarians do not eat any type of Fish ever including shellfish. Fish are living animals until they are killed and gutted for someone to eat them and absolutely not vegetarian. You probably know that, but some people are confused.

It seems that all of the recipes I've found so far online are disgusting and try to make meat-like dishes with meat substitutes (tofu meatloaf, etc.) Any recipes like that 1.) sound repulsive, and 2.) don't taste too great either.
Can anyone suggest any vegetarian cookbooks and/or websites with recipes? Preferably not vegan, just vegetarian. Thank you!
By vegan, I mean [preferably] not recipes that exclude dairy. And no meat-substitute dishes, like meatloaf made out of tofu or something, for example.

I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.

I teach a middle school biotechnology class and we are talking about agriculture biotechnology. I really want to demonstrate how to make cheese with rennin in class but can't seem to find a recipe I used a while ago. I know it was a mozzarella cheese that we made last time but any would be fine.
