Does anyone know a really good vegetarian meatloaf recipe?

i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

When I was an omnivore I *hated* meatloaf. I tried this and I love it (go figure!). It's the perfect comfort food dish. I prepare it with a baked sweet potato and fresh steamed broccoli. Excellent combo! (and pretty colors on the plate)

1/2 cup carrot, peeled and grated
1/2 cup celery, diced
1 package Yves Veggie Ground Round
1 1/4 cup dry whole wheat bread crumbs (lightly toasted or slightly stale)
1/4 cup oatmeal, cooked with 1/2 cup water
1 tsp ground cumin
1/2 tsp paprika
2 tbsp ketchup
2-3 tsp vegetarian Worcestershire sauce
Black pepper, to taste
1 tsp salt

Preheat the oven to 350F. Cover a baking sheet with aluminum foil.
Saute onion, garlic, carrots and celery in a large pan until tender, about 10 minutes on medium-high heat.
Combine vegetables, veggie meat, breadcrumbs, oatmeal and all spices in a large bowl and mix together. If it doesn't stick together easily, add a extra tbsp or two of dry breadcrumbs.
Turn mixture onto foil-covered pan and pat into a rectangular loaf about 2-in. high.
Bake for 1 hour to 1 hour 15 minutes until loaf is slightly firm to the touch.
Let cool for 15 minutes before slicing.
Serves 3-4.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beefâflavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

⢠Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
⢠Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
⢠Meanwhile, mix together the ingredients for the coating and set aside.
⢠Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

anyone knows the kinds of vegetarian meat?? i only know is the gluten, and my family don't like it when i used it in my recipe. can you please give me some other kind?? tnx

The gluten you refer to is called seitan, it is basically wheat gluten.

You can use tofu or tempeh in it's place. It's not "meat", but it is a meat stand-in in a lot of recipes. I've even had really good vegan stroganoff with tempeh before!

Tempeh is fermented soybeans, it tastes sort of nutty and odd, it's an acquired taste, but it is wonderful if you use it with sauces, marinades, or fry it (when breaded and fried, it is almost chicken-like).

Tofu comes in many varieties. You can have very soft silken tofu, which is good for deserts, baking, smoothies and dips. There are firmer varieties of tofu that you can use in the place of eggs in many recipes (look up tofu eggless egg salad recipes, or tofu eggless scrambled eggs). It is wonderfully versatile and a staple in my home.

I would also suggest cooking more with beans. They are very flexible. You can make a vegan meatloaf-like dish with black beans, veggies, pine nuts and some ketchup and spices.

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.

What Vegetarian Meat substitutes actually taste like meat?

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

I do have my very own recipe of meatloaf. Which I call it ''Garden Meatloaf''. But that's the only recipe I have so far. I wish to have more meatloaf recipes. Soak a piece of bread in milk till soft in big bowl. Add an egg, equal parts ground beef and ground pork, salt, pepper, minced onion, minced garlic, chopped fresh parsley, chopped fresh basil, freshly grated parmesan cheese, hot pepper if you likr spice, minced roasted sweet red pepper, and Worstershire sauce. Mix it all together. Press half of mixture into loaf pan. Press in a layer if fresh mozerella cheese, then the rest of the loaf mixture. Bake about an hour @ 350. I make meatballs using same recipe- I just wrap mix around cubes of fresh mozerella. So good with spaghetti. I make this using venison instead of beef- I don't use a loaf pan, I use a baking sheet and wrap raw bacon around the loaf. I didn't provide measurements because I never measure but compare to other meatloaf recipes and undoubtably you'll figure it out. This and some whole grain pasta tossed with fresh herbs, olice oil/butter mix and fresh grated parm is a big satisfying meal when you add a big salad or steamed veggies.

How do you plan a vegetarian meal if you are a reformed carnivore?

I am transitioning my family to a more vegetarian diet and without meat as a centerpiece of dinner, I'm a little stumped. I can do the one pot stuff, and we love it, but how do you do everyday meal planning?


Answer
Vegetable Lasagna and salad (Cut leftovers into individual portion sizes and freeze for another meal). I like to use roasted vegetables like butternut squash, mushrooms, tomatoes and eggplant, layered with the lasagna noodles and a mixture of ricotta, mozzarella and parmagiano cheese. We are not vegetarians, but do try to eat meatless several days a week. For a less fattening version, use a sauce made with low fat cream cheese or other low fat cheese instead of the 3 cheeses.

Portobello Mushroom Burgers: Marinate the whole portobellos in minced garlic, chopped fresh parsley, olive oil, and salt & pepper for a couple of hours. Grill, pan fry or broil the mushroom until nice and soft. Serve on a bun with usual fixings or as that centerpiece of your dinner with Oven Baked French fries and a salad or vegetable.

Soups: I often make soup as our main meal serving a salad before or after the soup. To low sodium vegetables add canned or cooked beans or lentils and pasta. Allow to simmer about 20 minutes, then add any vegetables you like. One of my favorites is Barilla 3 cheese tortellini simmered in the low sodium vegetable broth until done, Remove the tortellini, add some cooked lentils and a can of drained chopped tomatoes and heat. Add back the torellini. Serve over raw julienned baby spinach.

You can find recipes for burgers and meatloaf made with lentils or other beans. Check the frozen food section of your market for more ideas or google recipes. .

Have you ever been to a vegetarian potluck?

Did you just love it? Was it at an SDA church?

Yes, I've been to an Adventist potluck and they are almost always with very very few exception vegetarian! SDA ladies know how to cook really good! Yes, I love vegetarian potlucks! Although I am not a vegetarian, I sure love vegetarian potlucks over the ones that serve meat!

I am an SDA also and have enjoyed / cooked for many vegetarian potlucks. Unlike traditional potlucks and family reunions where fried chicken, sloppy joes and meatloaf are the staples. I know there are many veggie cooks that use meat substitutes but I don't recall seeing many at our potlucks. However, the one exception is Special K loaf with carmelized onion gravy - yum yum.

One of the ladies makes the absolute best stuffed shells with tofu, fresh chopped spinach and homemade tomato sauce. Most of the ladies at my church are excellent cooks and I always look forward to the next potluck. It also gives me an excuse to try new recipes.

I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

I do have my very own recipe of meatloaf. Which I call it ''Garden Meatloaf''. But that's the only recipe I have so far. I wish to have more meatloaf recipes. Answer
Soak a piece of bread in milk till soft in big bowl. Add an egg, equal parts ground beef and ground pork, salt, pepper, minced onion, minced garlic, chopped fresh parsley, chopped fresh basil, freshly grated parmesan cheese, hot pepper if you likr spice, minced roasted sweet red pepper, and Worstershire sauce. Mix it all together. Press half of mixture into loaf pan. Press in a layer if fresh mozerella cheese, then the rest of the loaf mixture. Bake about an hour @ 350. I make meatballs using same recipe- I just wrap mix around cubes of fresh mozerella. So good with spaghetti. I make this using venison instead of beef- I don't use a loaf pan, I use a baking sheet and wrap raw bacon around the loaf. I didn't provide measurements because I never measure but compare to other meatloaf recipes and undoubtably you'll figure it out. This and some whole grain pasta tossed with fresh herbs, olice oil/butter mix and fresh grated parm is a big satisfying meal when you add a big salad or steamed veggies.

Did you just love it? Was it at an SDA church?

Yes, I've been to an Adventist potluck and they are almost always with very very few exception vegetarian! SDA ladies know how to cook really good! Yes, I love vegetarian potlucks! Although I am not a vegetarian, I sure love vegetarian potlucks over the ones that serve meat!

I am an SDA also and have enjoyed / cooked for many vegetarian potlucks. Unlike traditional potlucks and family reunions where fried chicken, sloppy joes and meatloaf are the staples. I know there are many veggie cooks that use meat substitutes but I don't recall seeing many at our potlucks. However, the one exception is Special K loaf with carmelized onion gravy - yum yum.

One of the ladies makes the absolute best stuffed shells with tofu, fresh chopped spinach and homemade tomato sauce. Most of the ladies at my church are excellent cooks and I always look forward to the next potluck. It also gives me an excuse to try new recipes.

What Vegetarian Meat substitutes actually taste like meat?

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

Thanksgiving is around a corner, but my money is tight lol. What does people eat when their money is tight? I cook some ground beefs like meatloaf, spagettie, sloppy joe or humberger helper, but getting bored. Any other ideas?

Meat is expensive. I eat a lot of beans to get my protein with only enough meat for flavoring. These can all be cooked in a slow cooker while you are at work.
dry Navy beans cooked with a ham hock. cornbread
dry Butter beans cooked with chicken backs. slice of hot home made bread.
dry Pinto beans with beef ribs. toasted garlic bread.
Kidney bean salad. (1 can kidney beans, 1 hard boiled egg, pickles, & onion chopped, mayo)
Pork & beans made into baked beans with chunks of ham. and scalloped potatoes.
Refried beans and rice. add some shredded pork and you have a meal.

The beans are about $1. for a 1lb. bag which will easily make two meals for 2 people-----$.50 per meal....plus another $1.00 for the meat that is $2.50 for the beans, .50 for the bread and a .35 to add a potato...for a total of $3.35 for a meal for two of beans cooked in meat broth, bread, and a potato.

Eat potatoes...mashed, fried, hash browns, boiled, baked, potato cakes, scalloped, oven fried, creamed with peas or carrots....
A 10 lb. bag of potatoes is $4. on sale for less. You get at least 25 potatoes in that for two people that would be a veggie for each meal for 12 days. (.35 per meal for 2)

Refried Beans Recipe
2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
3 quarts of water
1/2 cup chopped onion (optional)
2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
1/4 cup water
Salt to taste
Cheddar cheese (optional)
1 Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
2 Cook the beans in water.
Regular method Put beans into a pot and cover beans with at least 3 inches of water - about 3 quarts for 2 1/2 cups of dry beans. Bring to a boil and then lower heat to simmer, covered, for about 2 1/2 hours. The cooking time will vary depending on the batch of beans you have. The beans are done when they are soft and the skin is just beginning to break open.
Strain the beans from the cooking water.
3 Add the onions and lard/fat/oil to a wide, sturdy (not with a flimsy stick-free lining) frying pan on medium high heat. Cook onions until translucent. (Note the onions are optional, you can skip them if you want.) Add the strained beans and about a 1/4 cup of water to the pan. Using a potato masher, mash the beans in the pan, while you are cooking them, until they are a rough purée. Add more water if necessary to keep the fried beans from getting too dried out. Add salt to taste. Add a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese if you want. When beans are heated through (and optional cheese melted) the beans are ready to serve.

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

dry Navy beans cooked with a ham hock. cornbread
dry Butter beans cooked with chicken backs. slice of hot home made bread.
dry Pinto beans with beef ribs. toasted garlic bread.
Kidney bean salad. (1 can kidney beans, 1 hard boiled egg, pickles, & onion chopped, mayo)
Pork & beans made into baked beans with chunks of ham. and scalloped potatoes.
Refried beans and rice. add some shredded pork and you have a meal.

The beans are about $1. for a 1lb. bag which will easily make two meals for 2 people-----$.50 per meal....plus another $1.00 for the meat that is $2.50 for the beans, .50 for the bread and a .35 to add a potato...for a total of $3.35 for a meal for two of beans cooked in meat broth, bread, and a potato.

Eat potatoes...mashed, fried, hash browns, boiled, baked, potato cakes, scalloped, oven fried, creamed with peas or carrots....
A 10 lb. bag of potatoes is $4. on sale for less. You get at least 25 potatoes in that for two people that would be a veggie for each meal for 12 days. (.35 per meal for 2)

Refried Beans Recipe
2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
3 quarts of water
1/2 cup chopped onion (optional)
2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
1/4 cup water
Salt to taste
Cheddar cheese (optional)
1 Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
2 Cook the beans in water.
Regular method Put beans into a pot and cover beans with at least 3 inches of water - about 3 quarts for 2 1/2 cups of dry beans. Bring to a boil and then lower heat to simmer, covered, for about 2 1/2 hours. The cooking time will vary depending on the batch of beans you have. The beans are done when they are soft and the skin is just beginning to break open.
Strain the beans from the cooking water.
3 Add the onions and lard/fat/oil to a wide, sturdy (not with a flimsy stick-free lining) frying pan on medium high heat. Cook onions until translucent. (Note the onions are optional, you can skip them if you want.) Add the strained beans and about a 1/4 cup of water to the pan. Using a potato masher, mash the beans in the pan, while you are cooking them, until they are a rough purée. Add more water if necessary to keep the fried beans from getting too dried out. Add salt to taste. Add a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese if you want. When beans are heated through (and optional cheese melted) the beans are ready to serve.

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.


Cookbooks for beginners and/or college students?
Q. My brother intends to move out of his dorm and into an apartment. He's never really cooked before (stuck with the microwave and toaster.) I see a variety of beginner/college student cookbooks, but I was wondering if people had suggestions.

He's not vegetarian/vegan and he doesn't have any dietary needs/allergies at this time. (Maybe he will depending on his roommates, but that's not set yet.)

What do you suggest?

A. There are some really good "3 ingredient" and "4 ingredient" cookbooks for sale (I think I saw the 4 ingredient one at Costco)

These are a great starting point & not very intimidating. And, of course, you can totally spice things up to taste!

Does anyone know a really good vegetarian meatloaf recipe?

Q. i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

A. If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!


Is there such thing as "vegetarian" meatloaf? Can you help provide a recipe?
Q. By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

A. Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

Have you ever been to a vegetarian potluck?

Do you have a recipe for homemade meatloaf?
Q. I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

A. First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.


How can I make cheese using rennin?
