Anyone have any great vegetarian/vegan recipes?

I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Tastespotting.com is a round-up of many food blogs from around the world. They have a search term, eg veggie burger, and frequently feature vegetarian/vegan menu items for when you're looking for something new.

Seitan vs tofu "turkeys"?

So last year for Thanksgiving I made a stuffed tofu loaf ("tofurkey" if you will.) I really enjoyed it, but I've been eating a lot of soy lately, so I'm thinking tofu may not be the greatest thing to have for Thanksgiving dinner (and lunch the next few days.) My little sister, though, insists on having a fake turkey that night. So I was wondering if anyone has ever tried making a stuffed seitan loaf/turkey? I've never had seitan, but I've heard great things about it. Anyone have any reviews or tried and true recipes? I'm not really interested in premade products if there are any, but tips on making just plain seitan would be welcomed as well. Thanks in advance! :)

Seitan roasts are quite easy to make and a delicious alternative to soy turkey roasts. This recipe I have made and is quite delicious http://www.youtube.com/watch?v=npw2LKpag5o&feature=channel. The exact recipe with measurements can be found at everydaydish.tv. I halved the recipe since there are only a couple vegetarians in my family. You can make this seitan roast fancy by adding a glaze to it and by using the puff pastry (most puff pastry is vegan, just check the ingredients) crust.

Another suggestion I have is this vegetarian meatloaf. http://www.vegnews.com/web/articles/page.do?pageId=1489&catId=11 I've made this too and it's really tasty. I usually like to add extra sauteed onions, garlic and mushroom for more flavor. I like that this recipe contains less processed foods. However, it doesn't taste anything like turkey, but it is another option that goes great with traditional Thanksgiving side dishes.

Q. Any tips? AND I dont want the simple "stop eating all meat in your diet" because I have been a vegetarian for 2 days and want to keep going.

Eat a lot of legumes to replace meat in your diet. In case you don't know legumes are beans, nut, and barley. If you crave meat here are easy substitutes:

Beef Stock>>>Mushroom Stock

Chicken stock>>>Veggie stock

Beef Tacos>>>Bean Burritos

Steak>>>Suted Mushrooms


Recpies:

Banana Muffins
These moist and delicious muffins will please even the pickiest of eaters.

3 ripe bananas
1/4 cup oil or melted margarine
1 cup sugar
2 cups flour
1 tsp. salt
1 tsp. baking soda
1 cup chopped walnuts (optionalâsee other options listed below)
⢠Mash bananas (overripe ones make the best bread). Add oil/margarine and sugar. Mix well.
⢠Sift the flour, salt, and baking soda together and add to the banana mixture. Mix until the flour is blended (do not beat).
Pour into muffin pans or a bread pan and bake at 360°F until a toothpick comes out clean.

Optional: Add a handful of walnuts, oatmeal, raisins, chocolate chips, currants, coconut, or all of the above!

Makes 1 Dozen Muffins



Avocado Reuben
Give beef the boot and try our take on the classic reuben sandwichâmade with creamy avocado and a tangy, easy-to-make Thousand Island dressing.

2 slices rye or pumpernickel bread
Mustard
Thousand Island dressing (recipe follows)
1/2 avocado, pitted, peeled, and mashed
1/4 cup sauerkraut

⢠Spread one slice of bread with some mustard, the other slice with Thousand Island dressing.
⢠Place the bread slices, dry side down, in a lightly oiled skillet. Top one slice with avocado, and the other with sauerkraut.
⢠Over medium heat, grill the sandwich until lightly browned and hot, about 5 minutes. Put the sandwich halves together and enjoy!

Makes 1 sandwich




Sumptuous Spinach Salad With Orange Sesame Dressing

1 bunch fresh spinach (about 6 cups of leaves)
1 red or yellow bell pepper, cut into strips
1/4 to 1/2 cup thinly sliced red onion
1 orange, peeled and sliced into thin rounds
1 Tbsp. sesame seeds
2 Tbsp. seasoned rice vinegar
1 Tbsp. orange juice concentrate
1 Tbsp. water
⢠Trim the spinach stems and carefully wash the leaves. Dry, then tear any large leaves into bite-size pieces. Place in a salad bowl along with the pepper, onion, and orange slices.
⢠Toast the sesame seeds in a 400°F toaster oven or regular oven for 10 minutes. Transfer to a blender and grind into a powder. Add the vinegar, orange juice concentrate, and water. Blend to mix. Pour over salad and toss just before serving.

Makes 4 to 6 servings



Mama's Mock Meatloaf
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beefâflavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

⢠Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
⢠Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
⢠Meanwhile, mix together the ingredients for the coating and set aside.
⢠Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings



Creamy Chive Mashed Potatoes
Rich mashed potatoes are the perfect side dish for most meals.

5 large potatoes, diced
1 cup liquid nondairy creamer (try Silk brand)
2 Tbsp. margarine
1/4 cup fresh chives, chopped
Salt and pepper, to taste

⢠Place the potatoes in a large pot and cover with water. Bring to a boil and cook for 20 minutes.
⢠Drain the potatoes, place in a bowl with the remaining ingredients, and mix until smooth.
⢠Serve hot.



Brown Gravy
Tired of plain potatoes? Whip up a batch of this creamy gravy, and serve it with your mashed potatoes and biscuits.

2 Tbsp. (1/4 stick) margarine
1 medium-sized onion, diced
2 Tbsp. unbleached all-purpose flour
1 tsp. garlic salt
2 Tbsp. cornstarch
1 1/2 cups water or vegetable broth
1 tsp. yeast extract
1-2 Tbsp. soy sauce or tamari
Pepper, to taste

⢠Heat the margarine in a medium saucepan over medium heat.
⢠Sauté the onion for a few minutes, then add the flour and garlic salt and sauté for another 8 to 9 minutes.
Dissolve the cornstarch in the water or broth.
Gradually add the cornstarch mixture to the onion mixture, bring to a boil, then simmer for 10 minutes.
⢠Strain the gravy into a separate saucepan and add the yeast extract, soy sauce or tamari, and pepper. Simmer for another minute or 2, stirring constantly. Keep warm.

Preparation time: 45 minutes
Baking time: 40 minutes

Makes 6 servings

Hi, great choice to become a vegan. I totally understand what you are going through.

I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 50+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.

-microwave a medly of frozen fruit until warm
-place it in a bowl
-top it off with crumbled cinnamon toast crunch
It tastes like a cobbler YUM!!!

Classic Ranch BLT

-Ranch on 1 slice of bread
-Butter on the other

-tomato
-vegan bacon
(If you do not have veggie bacon do the following)
-Cut bacon sized strips of cheese(vegan kind)
-Place it on parchment paper in microwave
-Season it with BBQ sauce(just a bit)
-Microwave until crispy and peel off the cookie sheet

Dinner

Mock meatloaf
-onions
-bbq sauce
-crumbled nuts(a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well and put it in the oven and bake until you like it best

Desert
Jamaican me crazy tropical banana
-fry banana slices in a pan
-add some cinnamon and honey
-top with whipped cream

-Carrots, Zucchini, eggplant, water chestnuts, (you can get a frozen mix)
-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)

-BBQ sauce
-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella

Easy Vegan Meatloaf Recipe?

Does anyone have a recipe for vegan meatloaf that does not call for tofu?

Buy some TVP (textured vegetable protein) most large grochery stores carry it. You can also get it at a health food store.

2 cups TVP
1 cup water
1 cup bbq sauce
1 table spoon corn starch
Wheat flour as needed

Mix water and bbq sauce and heat till almost boiling. Add TVP. Let stand for a few minutes. Add corn starch then a little flour until it make a nice ball. Put into a loaf pan and cook the same way you would a true meat loaf.

Please don't quote me websites, I want to see your Mother or Grandmother's recipes or even one you made up of this meaty dish! (I've even heard there's recipes for vegetarian meatloaf!)

When I was an omnivore I *hated* meatloaf. I tried this and I love it (go figure!). It's the perfect comfort food dish. I prepare it with a baked sweet potato and fresh steamed broccoli. Excellent combo! (and pretty colors on the plate)

My favorite:

Thanksgiving "Meat" Loaf
(Egg substitute) Mix together 1 T arrowroot powder, 1 T corn starch, and 4 T water
1 tablespoon soy sauce
1 box medium firm silken tofu
3/4 cup chopped walnuts
1 packet vegan dried onion soup mix
1 teaspoon oil
1 1/2 cups chopped onion
2/4 cup chopped celery
2 cups chopped mushrooms
1 1/2 teaspoon each of oregano and basil
1/2 teaspoon sage
3/4 cup bread crumbs
1 cup of instant mashed potato flakes

Directions:

Mix egg substitute, soy sauce, tofu & onion soup mix together in blender. Add walnuts & blend until smooth.
Saute vegetables until onions are transparent. Add herbs/spices while vegetables are frying.
Mix blender ingredients, cooked vegetables, bread crumbs and potato flakes together in a large bowl.
Press into a greased loaf pan.
Bake at 350 degrees F. for 1 hour and 15 minutes. Let cool slightly. Turn loaf out and slice.

I generally serve this with mashed potatoes, brown gravy, and rolls.

Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

Recipe for mock meatloaf?

I want to try to make a mock meatloaf out of soy crumbles. Does anyone have a recipe that you have actually tried? I already know there are countless recipes on line but I'm looking for an already tried recipe that's tasty : )

Have you tried that recipe? I've seen it online and the reviews suggest it falls apart and does not form because there is no binding agent.
I ended up finding one with Gimme Lean and made it last night. My omnivore hubby said it tasted like meatloaf LOL

Best Ever Vegan Mini Meatloaf
INGREDIENTS
Makes 10 mini meatloaves. Cut in half if you aren't feeding 3 growing boys.
- 2 8.5 oz pkgs tempeh, simmered in boiling water for 10 mins, cooled, then coarsely grated
- 1 large onion, coarsely grated
- 4 cloves garlic, finely grated
- 1 cup instant oatmeal
- 2/3 cup vital wheat gluten
- 2 tsp ground fennel seed
- 1 tsp sage
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp marjoram
- 3 tbsp soy sauce
- 2 tbsp HP sauce
- 2 tbsp BBQ sauce
- 2 tbsp olive oil
- 1/2 tsp browning sauce (optional)
- 1/4 cup (or more) water
Glaze
- generous 2/3 cup ketchup
- 1/2 cup brown sugar
- 1 tsp mustard
METHOD
Preheat oven to 350 degrees. Oil a 9 x 13 baking pan.
1. Mix grated tempeh, onion, garlic, oatmeal, flour, and spices in a large bowl. The spices are really up to you. I like a well spiced and complex flavour.
2. Add in sauces and oil, and enough water so you are able to mash everything up with your fingers. Knead/mush/mash for a few mins to mix everything well.
3. Divide dough into 10 pieces and shape into small loaves. Actually, they end up looking like lumps/rocks, not really laoves. Place into oiled pan.
4. Mix together ingredients for the glaze and spoon evenly on top of each loaf. Make sure the whole loaf is covered.
5. Bake, uncovered, for 50-60 mins, until glaze darkens.

1 medium onion, diced
1 large garlic clove, minced
1/2 cup carrot, peeled and grated
1/2 cup celery, diced
1 package Yves Veggie Ground Round
1 1/4 cup dry whole wheat bread crumbs (lightly toasted or slightly stale)
1/4 cup oatmeal, cooked with 1/2 cup water
1 tsp ground cumin
1/2 tsp paprika
2 tbsp ketchup
2-3 tsp vegetarian Worcestershire sauce
Black pepper, to taste
1 tsp salt

Preheat the oven to 350F. Cover a baking sheet with aluminum foil.
Saute onion, garlic, carrots and celery in a large pan until tender, about 10 minutes on medium-high heat.
Combine vegetables, veggie meat, breadcrumbs, oatmeal and all spices in a large bowl and mix together. If it doesn't stick together easily, add a extra tbsp or two of dry breadcrumbs.
Turn mixture onto foil-covered pan and pat into a rectangular loaf about 2-in. high.
Bake for 1 hour to 1 hour 15 minutes until loaf is slightly firm to the touch.
Let cool for 15 minutes before slicing.
Serves 3-4.

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beefâflavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

⢠Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
⢠Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
⢠Meanwhile, mix together the ingredients for the coating and set aside.
⢠Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

The gluten you refer to is called seitan, it is basically wheat gluten.

You can use tofu or tempeh in it's place. It's not "meat", but it is a meat stand-in in a lot of recipes. I've even had really good vegan stroganoff with tempeh before!

Tempeh is fermented soybeans, it tastes sort of nutty and odd, it's an acquired taste, but it is wonderful if you use it with sauces, marinades, or fry it (when breaded and fried, it is almost chicken-like).

Tofu comes in many varieties. You can have very soft silken tofu, which is good for deserts, baking, smoothies and dips. There are firmer varieties of tofu that you can use in the place of eggs in many recipes (look up tofu eggless egg salad recipes, or tofu eggless scrambled eggs). It is wonderfully versatile and a staple in my home.

I would also suggest cooking more with beans. They are very flexible. You can make a vegan meatloaf-like dish with black beans, veggies, pine nuts and some ketchup and spices.

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

Vegetarian meatloaf recipe?

I love meatloaf but I became a vegetarian a few months ago (I know this sounds backwards). Does anyone know any good recipes? Something with lots of veggies but a similar texture? Thank you!

But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

RECIPE BY: Prose
This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.


Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.

What I do is Veganize regular recipes. I do not know what you are tired of eating frequently so it is difficult for me to suggest something new for you. So I can suggest a few good recipe sites for you that I use. You can also purchase a new Vegan cookbook and try the recipes. There is also a new line of Vegan products I can suggest because those are very yummy and easy and quick to prepare. You can make most any recipe Vegan. I have yet to come across a meal or recipe that I have not been able to veganize. You can make Vegan Italian Sausage subs, Vegan "Chicken" Fettucini Alfredo, Vegan Salsbury Steak, Vegan Meatloaf, or Vegan Ruben Sandwiches with Lentil Soup. Some nights when I am in a hurry I make the Gardein Tuscan Breasts, Steamed Broccoli, and baked Sweet Potatoes for Dinner. You can also make Tacos out of Boca Soy Crumbles. You can also make Sloppy Joes out of Manwich Sauce (Which is Vegan) and Boca Soy Crumbles. You can serve the Sloppy Joes with Sweet Potato Fries. Publix and Whole Foods Markets sell Frozen Sweet Potato Fries which are very good. Gardein makes a Vegan BBQ 'Por" substitute that you can just heat up and make BBQ sandwiches out of which also goes great with the Sweet Potato Fries that I mentioned. I also make Vegan chili in the crock pot with Boca soy crumbles. Since you did not specify what you are tired of eating I hope that I did not suggest things that you are tired of eating since I have no idea what your weekly menu already consists of. Hopefully, I have helped give you some easy but new ideas.

PIZZA:
Buy small frozen "individual" pizza's by health brand's such as: Kashi, Amy's, Weight Watcher's Smart One's, Lean Cuisine, Healthy Choice, etc.
Or ..
Order a pizza (consume 1/2 small pizza, 2-3 slices medium and 2 slices large/ extra large). Order thin crust or wholewheat crust with basic tomato sauce and "light ammount of cheese". Order with a variaty of vegetables/ fruits (pineapple/ tomato/ peppers/ onion/ spinach/ zuchinni/ broccoli/ etc) with optional lean meat on pizza (ham/ sliced chicken breast/ anchovies- fish or extra lean ground beef- lean ground turkey).
Dip crust/ pizza in a marinara sauce or light creamy salad dressing (light ranch salad dressing)

BURGERS:
- Try ordering "veggie" burger's at fast- food joints or a kid's single patty burger (no cheese).
Also try turkey burger's/ grilled chicken burgers (no mayonaise).
Or .. Make you're own with extra lean ground meat/ lean ground turkey or purchase a Boca Burger and consume on a wholewheat bun/ pocket with ketchup/ mustard/ relish and vegetable toppings with optional slice of light cheese- light shredded cheese and optional avacado/ guacamolie/ light creamy salad dressing- vinagrette (eg: light ranch salad dressing)
Consume with crunchy vegetables and hummus- cottage cheese, cooked vegetables in olive oil or side salad with light dressing/ vinagrete with optional baked potato wedges/ baked yam wedges.

MEATLOAF (Make with extra lean ground beef- lean ground turkey, basic tomato soup, diced vegetables, ground bran cereal and a egg. Check "google" for hearty meatloaf recipes).
Use tomato sauce as a gravy or onion soup.

Baked potato with a small ammount of either; 1% cottage cheese or light sour cream with chives and herbs/ spice's. Add TBSP ketchup/ tomato sauce/ chili sauce for added flavour.

Pastas (use a wholewheat pasta and with a tomato sauce or drizzeled with olive oil, diced vegetables and herbs. Add optional light laughing cow wedge in pasta or 1-2TBSP grated cheese. Add optional lean protein- turkey meatballs/ meatless meatballs, sliced chicken breast, lean ground beef- lean ground turkey- ground soy crumbs, diced tofu, shrimp, scallops, salmon, tuna, prawns, etc)

Burrito (use a wholewheat flour tortilla, ~ two 6' tortillas), use salsa instead of sour cream, lightly shredded cheese, variaty of cubed vegetables (peppers/ onion/ tomato/ lettuce/ etc) with spices/ herbs and either baked beans in tomato sauce- spices, lowfat refried beans, fajita steak sliced, fajita chicken sliced or salmon/ trout sliced or sliced tofu)
Consume with side salad and light dressing/ vinagrette or cooked vegetables in olive oil with optional brown- long grain rice.

Chili (buy canned vegetarian/ turkey chili).

Parents- I need ideas for make ahead food?

I will be having a c-section in a few weeks and my husband will not be able to stay home and help as long as he did last time. He will only be able to take off work maybe 3-4 days. So I plan to make some casseroles and what not to put in the freezer so I don't have to worry about cooking. I would like recipes for things I can make ahead. I found a couple recipes I plan to use and I was thinking of making a big pot of veggie soup and putting it in multiple bowls in the freezer. What are some other things I can do so we're not eating the same thing every day and I don't have much to do other than heating the food? Thanks in advance!

I highly recommend a crock pot. You can make a beef roast with carrots, potatoes in the crock pot one morning, you won't have to do anything but put it in the crock pot, and then eat a freshly prepared meal later that evening. Keep your leftovers for roast beef sandwiches, hash and making beef vegetable soup.

You can do a lot of different meats and even vegetarian meals in the crock pot.

Baked spaghetti: make it now, layer it, freeze it and then reheat. The best thing is you can add extra veggies in the sauce or you can even make it meatless if that is your thing.

Lasagna: Buy the Stouffers frozen lasagna it is really a lot cheaper than making your own and it is really pretty good.

Broccoli casserole with ham: make your broccoli casserole as you normally would, add ham for a complete meal... freeze and reheat

frozen pizza-- or delivery!

I don't make a lot of stuff ahead of time, but here are some easy ideas:

baked potatoes (have the stuff for topping it on hand) and you can make bacon to top if your husband has to have a meat

meatloaf-- you can freeze a meatloaf, you mix the ingredients form the loaf, but do not cook it.. then freeze and you can bake when you are ready. look up the basic meatloaf by paula deen super easy and about the best meatloaf I have had

chili (can be frozen too): have chili tonight, and chili dogs tomorrow night

potato soup ( yep it can be frozen too)

cook a small ham (yep it can be frozen!). I prefer to buy a small boneless ham from the Honeybaked Ham shoppe... separate into meal servings and freeze. use the ham as toppings for salads, additions to soups, potatoes, to make sandwiches, or fry up and have ham and eggs for a meal.

I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

Get some baby carrots. You could also slice some cucumber, cut bell peppers into strips, get some grape tomatoes, and dip them in ranch dressing or hummus.

Tofu Special K Meatloaf

2 16-oz. packages of tofu - mashed.
6 packages George Washington Broth or MBT vegetable broth
1 stick melted margarine
1 cup walnuts, chopped
12 oz box of Special K cereal

Mix all ingredients in a large bowl, adding cereal last, and spread in 13"X9"X2" baking pan slightly sprayed with Pam. Mixture will be quite thick.
Bake at 350 for one hour.

a veggie seasoning cube
frozen broccoli and cauliflower mix
dry pasta
nonstick spray
water

Spray the bottom of a deep saute pan, then layer the ingredients with the pasta on the bottom, the beans next, the veggies, then the veggie cube crumbled over the top. Add some water so that the pasta doesn't boil dry in the bottom. Cook it on medium or medium-high until the pasta is done. Sometimes you have to add a little water to keep the pasta cooking.

Soymilk, cooked oatmeal,half a banana and peanuts altogether. freeze it overnight or blend with ice.

I don't know about recipies necessarilly, but the smartlife sausage tubes are really low in points. My boyfriend used a tube of that and a tube of the smartlife ground beef along with a block of vegan cheddar cheese (the brand name escapes me right now, but they sell it at whole foods) and some ketchup to make a pan of vegan meatloaf that was 15 points for the entire thing.

What is a good egg replacement when cooking vegan TVP burger patties? any recipes?

I am a former chef and when I make mine with TVP, I generally puree some of the veg in the food processor add some chickpeas and chickpea flour, even a bit of tahini sesame paste, available at Health food stores or any Indian market, even some whole wheat flour.

Also, at the health food store there is a protien powder made from veggies, it is a good binder for burger, veggie meatballs for spaghetti sauce and a meatloaf made with TVP, I use it at least once a week, and it is great in a veg chili too.
