Looking for some hearty, filling vegetarian recipes?

I am looking for some good, hearty vegetarian recipies. I am mainly looking for lunch items. I try to stay away from soy, I have reactions to it. I am breastfeeding and I have trouble finding food that fills me up.

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

Anyone have any tasty, HEALTHY vegan/vegetarian recipes? ?

Only thing is I hate zucchini and cucumber and peas (beans are fine, I don't know why)

What Vegetarian Meat substitutes actually taste like meat?

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

Please help with a menu for my party!?

I'm having some people over for my birthday next Friday night and one is a vegetarian, and it falls during lent too of course so I have to probably have some stuff for some people who won't bend for a night. What is a good range of things to have? I was all set in making sliders on the grill....lol

Nobody ever finishes potato chips and they end up goin in the garbage. I already spoke to a few lent followers and they said they would slip for the night, but for some other ppl who won't I have to make sure there is food for them too.

I'm thinking of making some Deviled eggs....thats as far as I've gotten!

This healthy and hearty vegetarian meatloaf freezes well after it's baked. Just wrap well, label, and freeze. Let meatloaf thawe in the fridge overnight, then reheat at 350 degrees For 20-30 minutes until hot.
Prep Time: 35 minutes
Cook Time: 1 hour, 50 minutes
Total Time: 1 hour, 85 minutes
Ingredients:

* 1 cup dried lentils
* 1/4 cup wheat germ
* 1 cup whole wheat bread crumbs
* 1/2 cup cooked brown rice
* 1 onion, minced
* 3 cloves garlic, minced
* 3 eggs OR 3/4 cup egg substitute
* 1 tsp. dried oregano leaves
* 1 tsp. dried thyme leaves
* 1 Tbsp. soy sauce
* 1/4 cup ketchup
* 1 Tbsp. olive oil
* 1/2 tsp. Tabasco sauce
* 1/2 tsp. salt
* 1/8 tsp. white pepper

Preparation:
Preheat oven to 350 degrees F. Place lentils in a small saucepan and cover with water. Cook over low heat for 60 to 90 minutes, or until tender. Drain lentils, if necessary, and coarsely mash lentils. Combine with remaining ingredients. Pour mixture into a 9 x 5" loaf pan sprayed with nonstick cooking spray.

Cover with foil and bake at 350 degrees for 30-40 minutes. Remove foil and bake for another 10-15 minutes or until loaf is firm to the touch. 6 servings

Okay so i am trying to eat healthy. but all i can ever think of thats healthy to make for dinner is grilled chicken brown rice and some veggy of some sort. ok. i dont even know any thing to change the flavor of the chicken. i just grill it normal and thats it. but that meal can get super boring. any one have any good receipes that are healthy?? it can still be chicken but made into a different meal. Im so bad at cooking and coming up with ideas. any ideas would be very helpful! thank you!!

You can buy lean ground turkey, and make meatballs, meatloaf, chili, burgers...any way you use ground beef..and it's low fat and low cholesterol.

My other suggestion is to start stir frying. You need minimal oil, and you can change up the veggies. Snow peas, broccoli, bok choy, peppers, and bean sprouts are all delicious. Just add some fresh ginger, garic, and soy sauce and you'll have a healthy, low fat meal.

Don't forget that there are cuts of beef that are low fat as well. A serving (4 oz) of sliced london broil or flank steak is very lean, and can be wrapped in a multi grain tortilla with some salsa and reduced fat sour cream.

Pork tenderloin is actually leaner than turkey. So try it with apples, or stir fried cabbage.

Then there are meatless meals...portobello burgers, whole wheat pasta with roasted veggies like zucchini, eggplant and tomatoes...yum.

Shrimp made into skewers and broiled with some lemon juice, lemon zest and garlic tastes amazing. Shrimp are generally low in calories.

The possibilities are endless. Here are a couple of recipes I make, and everyone really enjoys...

***Black Bean Chili***

4 large poblano peppers
2 tablespoons extra virgin olive oil (EVOO)
1 jalapeño pepper, seeded and finely chopped
1 large onion, chopped
4 garlic cloves, finely chopped or grated
Salt and freshly ground black pepper
2 cans black beans (15 ounces), drained of half their liquid
2 tablespoons chili powder (a large palmful)
2 teaspoons ground cumin (about half a palmful)
1/2 teaspoon allspice (eyeball it)
2 cans crushed fire-roasted tomatoes (15 ounce can or half a 28o ounce can)
2 cups beef or vegetable stock (use vegetable to make it vegetarian)
Hot sauce, to taste
1/2 cup sour cream, for garnish
1/2 cup chopped cilantro, for garnish
PreparationHeat broiler to high.

Char the poblanos under the broiler so their skins blacken, 7-8 minutes. Place in a bowl, cover with plastic wrap, and let stand 10 minutes. Once the peppers have cooled enough to handle, peel and seed them, then roughly chop them up and set them aside.

Place a medium-size pot over medium-high heat with 2 tablespoons EVOO, about two turns of the pan. Add the jalapeño, onion and garlic to the pan, and cook 6-7 minutes, until the veggies are tender. Season with salt and freshly ground black pepper, then add in the beer, scraping up any brown bits from the bottom of the pan. Cook a few minutes to reduce the liquid by half, then add the black beans and their liquid, the chopped poblanos, spices, crushed tomatoes and stock. Bring up to a bubble, then reduce the heat and simmer to thicken slightly, about 5 minutes. Adjust the seasoning with salt and freshly ground pepper as needed.

Serve the chili up and pass around hot sauce, sour cream, and cilantro at the table to top it with.

****chicken Stir-Fry Wraps****

1 1/2 pounds boneless, skinless chicken breasts, halved horizontally and thinly sliced
Coarse salt and ground pepper
2 tablespoons olive oil
1 large onion, halved and thinly sliced
1 large red bell pepper, ribs and seeds removed, thinly sliced
3 cloves garlic, minced
1 1/2 teaspoons grated peeled fresh ginger
1/4 to 1/2 teaspoon red-pepper flakes
3 tablespoons soy sauce
3 tablespoons rice vinegar
1 1/2 teaspoons cornstarch, mixed with 1 tablespoon water
12 to 16 Boston lettuce leaves (about 2 heads)

Directions
Season chicken with salt and pepper. In a large nonstick skillet, heat 1 tablespoon oil over high heat. Add half the chicken; cook, stirring constantly, until opaque throughout, 2 to 4 minutes. Transfer to a plate. Repeat with remaining chicken.
Add remaining tablespoon oil to pan, along with the onion and bell pepper. Cook, stirring constantly, until onion is tender and golden, about 4 minutes (reduce heat if browning too quickly).
Reduce heat to medium; add garlic, ginger, and red-pepper flakes; cook, stirring, until fragrant, 30 to 60 seconds.
Stir in soy sauce, vinegar, and cornstarch mixture; remove from heat. Add chicken and any accumulated juices; toss to coat. Serve in lettuce cups.

***Pork Tenderloin with Sauteed Apples and Leeks***
2 pork tenderloins (1 1/2 to 2 pounds total), trimmed of excess fat and silver skin
2 tablespoons olive oil
Coarse salt and ground pepper
2 leeks, white and light-green parts only, halved lengthwise, and cut crosswise into 1-inch pieces
1/2 teaspoon fennel seeds
3 Gala apples, cored and cut into 1/4-inch-thick slices and halved crosswise
1 tablespoon honey
1 teaspoon sherry vinegar or red-wine vinegar
Directions
Heat broiler, with rack set 4 inches from heat. On a broilerproof rimmed baking sheet, rub pork with 1 tablespoon oil; generously season with salt and pepper. Broil, until pork registers 145 degrees on an instant-read thermometer, 12 to 14 minutes. Transfer to a plate, cover loosely with aluminum foil, and let rest, 10 minutes (temperature will rise about 5 degrees as it sits).
Meanwhile, in a large skillet, heat remaining tablespoon oil over medium. Add leeks and fennel seeds; cook, stirring occaionally, until leeks are tender, about 6 minutes. Add apples, and cook, tossing, until just beginning to soften, 3 to 4 minutes. Remove from heat; stir in honey and vinegar, and season with salt and pepper. Thinly slice pork, and serve with apples and leeks.

Looking for vegan food options that aren't soy substitutes.?

Alright, due to medical recommendations, I'm removing animal products from my diet. I'm not going the unhealthy meat substitute route where you eat a bunch of gross processed mock-meat foods. I've been eating mostly fruit and veggies (variety of deep leafy greens, etc), making sure to get in B12, taking a vitamin supplement and tofu for protein. What cookbooks and recipes would you recommend for a vegan? Also, any opinions on raw foods?

Congratulations on your healthy new diet! Don't worry. You will have endless options for wonderful meals without needing to rely on overly-processed foods and fake meats. Often if you wish to make something similar to a burger, hot dog, meatloaf, or meatball - it can be made out of beans, chickpeas, lentils, walnuts, etc.

Also, for B-12, you might want to check out nutritional yeast flakes that you sprinkle on top of your food. It tastes a little like cheese, and you will notice it in numerous recipes for vegans. Red Star is probably the most common brand. You can get it in the bulk food bins at Whole Foods or order it online.

Answer
I don't know about recipies necessarilly, but the smartlife sausage tubes are really low in points. My boyfriend used a tube of that and a tube of the smartlife ground beef along with a block of vegan cheddar cheese (the brand name escapes me right now, but they sell it at whole foods) and some ketchup to make a pan of vegan meatloaf that was 15 points for the entire thing.

How can i be a vegetarian and survive in the south?

As an African American in south Louisiana, soul food is life! I decided to become a vegetarian in order to lower my blood pressure and my weight permanently. I'm also hoping that i can help with my depression.

How can i get through the holidays and family gatherings without fried chicken, barbecued ribs, meatballs, gumbo, spicy chili and even my sister's meatloaf? And what about seafood??? Fried catfish, trout, craw fish, shrimp...need i go on?

Please help. I've never even gone one meal in my life without some form of meat. I don't know where to start. Wait. I can't eat turkey either! Or rice dressing. :(


And what about spicy?? I love spicy chicken, chili, beef and everything!

With lots of help, and fortunately for you there's lots available!

I have been vegetarian for over 11 years now, and let me tell you, you won't actually be missing much. I will explain. :) There are "meat replacements" for pretty much everything these days, and there are usually vegetarian recipes to fill in the blanks where there are not.

Barbecued ribs, meatballs, chili, hot dogs, chicken, spicy chicken nuggets, bologna, burgers... all of these have vegetarian versions that are delicious! What makes spicy chili spicy isn't the beef, it's the spices... replace 1 lb. ground beef with 1 lb. TVP in your favorite recipe and voila you have your chili you love! I LOVE spicy food -- trust me I know. :) Tacos and Sloppy Joes - same thing. :)

I don't know a lot about seafood options, other than tuna salad, because I never was a seafood fan, but they are out there as well.

Just relax and go about it the same way all great things are accomplished in this world... one step at a time. You can do this. :) It's a great choice for your health, as I am sure your doctor has told you!!

My advice... don't overwhelm yourself. Start this week by cutting meat out of one meal per day... next week, two meals per day. Build yourself a repertoire of options so that you do not feel that you are being deprived. You won't be deprived, in fact, chances are your options will increase exponentially as you enter this new adventure with an open mind.

Anybody have a good recipe for meatless "meatloaf"?

Someone posted this recipe recently and I made it last week. It was DELICIOUS! My husband also loved it and he is not vegetarian. I have sent the recipe out to everyone in my family because we loved it so much. It was easy to make. Just be sure to give it plenty of time to cook in the oven. We cooked it a little longer than the recipe called for.

Really Good Vegetarian Meatloaf (really!)

High in fiber and protein, low in fat, easy and really yummy! I've always think meatloaf looks and smells so delicious and savory so, as a vegetarian, I decided to make a no-meat version! This is basically our favorite meatloaf recipe but with cooked mashed lentils instead of ground meat. The result is a very tasty dinner!
SERVES 4 -6 (change servings and units)

Ingredients
2 cups water
1 teaspoon salt
1 cup lentils
1 small onion, diced
1 cup quick-cooking oat
3/4 cup grated cheese (cheddar, swiss, jack or american)
1 egg, beaten
4 1/2 ounces spaghetti sauce or tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper
Directions
1Add salt to water and boil in a saucepan.
2Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
3Remove from fire.
4Drain and partially mash lentils.
5Scrape into mixing bowl and allow to cool slightly.
6Stir in onion, oats and cheese until mixed.
7Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper.
8Mix well.
9Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
10Smooth top with back of spoon.
11Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown.
12Cool in pan on rack for about 10 minutes.
13Run a sharp knife around edges of pan then turn out loaf onto serving platter.

I made a vegetarian meatloaf, but before I became vegetarian, I never really had meatloaf. Much less I don't know what it supposed to taste like. I followed the recipe and the top was done but the inside was somewhat mushy. It's good though, but I'm not sure if this is what supposed to happen? Do I need to put it in the oven longer? I'm not sure. Thanks!

Yeah, meatloaf is quite mushy by nature. That's part of what makes it so delicious, actually.

Whether I use meat (for husband) or lentils (for both of us), I try to let the loaf 'stand' for about 5 minutes or so once I take it out of the oven. This helps the juices redistribute and that helps firm it up.

Here's my recipe:

1 19oz can red lentils, drained and rinsed, then shaken dry in the colander (eliminating a lot of extra moisture)
salt and pepper to taste
1/2 cup finely diced onion
1/2 cup finely diced pepper (green pepper looks pretty, but use what's on hand)
1 egg, lightly beaten (or egg replacer if going for something vegan)
8 oz canned tomatoes with juice
1/2 cup quick oats.

Combine it all and press into a loaf pan.

Glaze:

1/3 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon mustard (use your favourite... grainy dijon is awesome, but use yellow or regular dijon if that's what you have).

Bake at 375 for an hour, and let stand for 5-10 mins afterwards.

This loaf will firm as it cools to the point where you can make 'meat'loaf sandwiches out of it for lunch the next day (awesome on soft bread with mayo....)!

So recently my husband and I have been sort of frightened at some of the things that are unnecessarily put in our food (in the name of preservation, etc.), and have decided that they are no better than poison for our bodies. For this reason, we have made the decision to become vegan, simply because veganism cuts out the things that we find most disturbing--meats, dairy, eggs--and other things that are exposed to horrible environments and processing. I have been a vegetarian in the past (I stopped when we got married because I honestly wasn't doing it very healthfully, and my husband didn't understand back then why I was a vegetarian). Now we are older and wiser and ready to make the jump, but I'm afraid he's going to miss meat, so I'm trying to explore meat substitute products (which I have never explored before). My other concern was that being vegan may be too expensive for our budget.
Any recipe suggestions (esp. with meat subs.), or cost control ideas?
Also, if anyone has any good info pages on the different kinds of meat substitutes and their culinary uses, I would really appreciate it if you sent them my way :)

Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

Good Luck, and when in doubt, check out some v&v recipe boards or vegetariantimes.com

Favorite recipe for vegan meatloaf?

i've been vegetarian for about 12 years.. i'm not very creative about it, just really strict.. everytime i smell meatloaf it just smells so delicious.. mostly from the ketchup i think :)
sooooo anyone have some good recipes for some veggie"meat"loaf?

I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

Have you tried that recipe? I've seen it online and the reviews suggest it falls apart and does not form because there is no binding agent.
I ended up finding one with Gimme Lean and made it last night. My omnivore hubby said it tasted like meatloaf LOL

I tried this and LOVED it:

Best Ever Vegan Mini Meatloaf
INGREDIENTS
Makes 10 mini meatloaves. Cut in half if you aren't feeding 3 growing boys.
- 2 8.5 oz pkgs tempeh, simmered in boiling water for 10 mins, cooled, then coarsely grated
- 1 large onion, coarsely grated
- 4 cloves garlic, finely grated
- 1 cup instant oatmeal
- 2/3 cup vital wheat gluten
- 2 tsp ground fennel seed
- 1 tsp sage
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp marjoram
- 3 tbsp soy sauce
- 2 tbsp HP sauce
- 2 tbsp BBQ sauce
- 2 tbsp olive oil
- 1/2 tsp browning sauce (optional)
- 1/4 cup (or more) water
Glaze
- generous 2/3 cup ketchup
- 1/2 cup brown sugar
- 1 tsp mustard
METHOD
Preheat oven to 350 degrees. Oil a 9 x 13 baking pan.
1. Mix grated tempeh, onion, garlic, oatmeal, flour, and spices in a large bowl. The spices are really up to you. I like a well spiced and complex flavour.
2. Add in sauces and oil, and enough water so you are able to mash everything up with your fingers. Knead/mush/mash for a few mins to mix everything well.
3. Divide dough into 10 pieces and shape into small loaves. Actually, they end up looking like lumps/rocks, not really laoves. Place into oiled pan.
4. Mix together ingredients for the glaze and spoon evenly on top of each loaf. Make sure the whole loaf is covered.
5. Bake, uncovered, for 50-60 mins, until glaze darkens.

cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

jazzed up grilled cheese 1:
- bread
- pesto sauce
- sliced mozerella cheese
- mushrooms
sautee mushrooms. spread pesto on both pieces of bread. put mozerella & mushrooms on. grill/fry/toast until cheese is melted.

- bread

put all ingredients in a bowl & use an immersion blender OR put in food processor or blender. Blend/puree until creamy & smooth. put in container. put in fridge until ready to serve.

lemon rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1/2 cup lemon juice
- 1 tbsp lemon zest
boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

vegan Meatloaf

1 medium onion, diced
1 large garlic clove, minced
1/2 cup carrot, peeled and grated
1/2 cup celery, diced
1 package Yves Veggie Ground Round
1 1/4 cup dry whole wheat bread crumbs (lightly toasted or slightly stale)
1/4 cup oatmeal, cooked with 1/2 cup water
1 tsp ground cumin
1/2 tsp paprika
2 tbsp ketchup
2-3 tsp vegetarian Worcestershire sauce
Black pepper, to taste
1 tsp salt

Preheat the oven to 350F. Cover a baking sheet with aluminum foil.
Saute onion, garlic, carrots and celery in a large pan until tender, about 10 minutes on medium-high heat.
Combine vegetables, veggie meat, breadcrumbs, oatmeal and all spices in a large bowl and mix together. If it doesn't stick together easily, add a extra tbsp or two of dry breadcrumbs.
Turn mixture onto foil-covered pan and pat into a rectangular loaf about 2-in. high.
Bake for 1 hour to 1 hour 15 minutes until loaf is slightly firm to the touch.
Let cool for 15 minutes before slicing.
Serves 3-4.

Does anyone have a recipe for vegetarian "meatballs"?

My mom has this recipe for AWESOME meatballs and sauce. I recently stopped eating meat, but I do really miss that dish! It's even been christened "Molly Meatballs" after me, LOL. :)

So I was wondering, is there a recipe for "veg-balls" or something? (I was figuring I would just use the same sauce to coat them like in the original recipe.)

Read the reviews for pointers. Here's what one reviewer said:

This is easily the best meat substitute recipe I've found. I altered the recipe a bit to make it more like an actual meatball recipe. The most helpful thing you can do is to grind up the walnuts in a food processor. Otherwise, your meatballs have a little too much crunch in them to pass for meat. Once you do that, take out a 1/4 cup of the cheddar cheese, and replace it with parmesan cheese. It also helps to add basil, oregano, parsley, garlic, and a little salt and pepper. Make you sure you keep turning the meatballs every few minutes as you brown them in the oven, or they will burn. Then, when finished browning, instead of pouring vegetable broth over them, throw them right into your pot of pasta sauce to finish cooking. These will look and taste like real meatballs. I've already had three meat-eaters tell me they could not tell the difference!! Highly recommended.

So many glowing reviews and so many people saying they couldn't tell the difference between this and meatballs.

Update: I have since made these for potluck dinners and NO ONE believes me when I tell them that they have no beef in them. My brother in law is a meat and potatoes kind of guy and declared to my sister that they were "the best meatballs he had ever had!" I decided to experiment a little and tried the mixture in a meatloaf...very tasty. My next experiment is to see if it can replace ground meat in tacos or chili

So recently my husband and I have been sort of frightened at some of the things that are unnecessarily put in our food (in the name of preservation, etc.), and have decided that they are no better than poison for our bodies. For this reason, we have made the decision to become vegan, simply because veganism cuts out the things that we find most disturbing--meats, dairy, eggs--and other things that are exposed to horrible environments and processing. I have been a vegetarian in the past (I stopped when we got married because I honestly wasn't doing it very healthfully, and my husband didn't understand back then why I was a vegetarian). Now we are older and wiser and ready to make the jump, but I'm afraid he's going to miss meat, so I'm trying to explore meat substitute products (which I have never explored before). My other concern was that being vegan may be too expensive for our budget.
Any recipe suggestions (esp. with meat subs.), or cost control ideas?
Also, if anyone has any good info pages on the different kinds of meat substitutes and their culinary uses, I would really appreciate it if you sent them my way :)

Anyone have any great vegetarian/vegan recipes?

I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Tastespotting.com is a round-up of many food blogs from around the world. They have a search term, eg veggie burger, and frequently feature vegetarian/vegan menu items for when you're looking for something new.
