How can I make cheese using rennin?

Q. I teach a middle school biotechnology class and we are talking about agriculture biotechnology. I really want to demonstrate how to make cheese with rennin in class but can't seem to find a recipe I used a while ago. I know it was a mozzarella cheese that we made last time but any would be fine.

Do you have a recipe for homemade meatloaf?
Q. I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

A. First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.


What Vegetarian Meat substitutes actually taste like meat?
Q. My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

A. Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

Tips on a vegetarian diet for a week?

A. Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

A. Ingredients

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.






Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.
Yield 10 servings
Time an hour
Tools

* large frying pan
* wooden spoon
* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.







Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.

What should I make for dinner?
Q. I'm in my early 20's and am slowly teaching myself how to cook. I've decided recently to master a new recipe each week. So far I have done: baked ziti with sausage, baked macaroni and cheese from scratch, Italian meatloaf stuffed with cheddar cheese, and cheesy whipped mashed potatoes.(As you can tell I'm not on a diet) lol. All of these have turned out amazing thanks to all of the research/prep I do ahead of time.

Now here's my problem: I need ideas of new recipes to try. It doesn't matter how much time or money it takes to make the recipe. If it sounds good enough I will try my hardest, as I am very serious about learning to cook.

Please suggest any food you love to eat/cook. Especially comfort food.
Although, I will tell you I am not a vegetarian and love meat, generally do not like soups/ stews, and am not big on recipes with a ton of veggies. No salad recipes please =) Thanks.
Also, in addition to any recipe that tastes good, I am also looking for a good steak recipe. I like my steak to be cooked medium/medium well. I've tried to make it in the oven under the broiler because I really love the charred taste, but it ALWAYS turns out over cooked. Any suggestions? Also, what cut of steak would you recommend?

A. If you are fond of Chinese cuisine then try your hands on chicken dumplings ( also popularly known as Chicken Jiaozi). They are easy to make and deliciously mouth watering.

How do I tell my mom, I want to become a...?

Q. Vegetarian.
I love animals, and I don't want to see them get hurt, and know that I'm eating it.
I have eaten meat all of my life, and I just don't want to anymore.
Please help me because, all we eat in my house is meat.
And I know this will be a healthier lifestyle.

A. First, you must do some research.

Your mother's primary concern will likely be your health, so be sure you can answer her questions. Have sources that demonstrate that it is perfectly possible for you to grow up strong and healthy without eating meat (or having a gallon of milk and 6 eggs a day to "make up for it").

Know the nutritional requirements for a fe/male your age and size (taking into account level of physical activity) and come up with examples of good vegetarian sources of the various nutrients. She will probably be mostly concerned about protein and iron. She might ask about B vitamins. Look it up, know how much you need and where you'll get it from.

Do some additional research so you can point out the health benefits of vegetarianism. (Not only do you want to demonstrate that it isn't dangerous to be a vegetarian, you want to show that it's actually beneficial.)

Get some recipes and cookbooks and learn how to make some stuff. You will be cooking for yourself a lot more these days. It is unfair and immature to expect your mom to start making a separate meal for you every night, so get ready for some Emeril action. (Note: yelling BAM! randomly might make your parents think you've gone off the deep end, so keep it down to a dull roar.)

If you are old enough to work, get a part-time job so you can purchase cookbooks and any special ingredients you may want (tofu, seitan, nut milk, etc). If you get an allowance or have money from birthday or holiday gifts, use some of it to invest in literature and/or exotic food. Heck, see if Mom and Dad will pay you to wash the car or mow the lawn. Use that money to buy stuff. (Being willing to invest your own time and money in a venture shows people that you're serious.)

Offer to help cook dinner once in awhile. Say everyone is having meatloaf for dinner. Say that you'll do the mashed potatoes and veggie. Make the salad as well. Make a rich mushroom gravy for everyone to use (if you make your own stock for it, it'll be extra-good). Heat yourself up a Boca burger (or whatever "central protein piece" you want) and help Mom serve. If everyone is having spaghetti with meatballs, ask Mom to buy the chunky extra-veggie sauce and set some aside for you before she adds the meatballs. Make the garlic bread and chop the onions, garlic, mushrooms, etc for her. In other words, you need to demonstrate that this is not going to create a lot of extra work for her.

Does anyone have any ideas of what I could bring to lunch?
Q. I'm going to a public school from a Catholic school, and there is a student at this school who has a severe peanut allergy. Normally I would just say, "Screw other people's needs," but no nuts are allowed in the building at all. So my problem is, what will I bring for lunch? Easy Vegan Meatloaf Recipe?

Q. Does anyone have a recipe for vegan meatloaf that does not call for tofu?
Thanks Matt. Not exactly simple, haha, but it's vegan and it doesn't have tofu. :)

A. Buy some TVP (textured vegetable protein) most large grochery stores carry it. You can also get it at a health food store.

2 cups TVP
1 cup water
1 cup bbq sauce
1 table spoon corn starch
Wheat flour as needed

Mix water and bbq sauce and heat till almost boiling. Add TVP. Let stand for a few minutes. Add corn starch then a little flour until it make a nice ball. Put into a loaf pan and cook the same way you would a true meat loaf.

Q. I have recently turned vegetarian. I'm not sure what to eat and my parents are annoyed with me because i don't get enough protein.

What are simple meals that are healthy and that i can do everyday and still get full nutrition?

A. Food, silly.

Fruits, vegetables, nuts, grains, and beans--that covers quite a bit of ground, wouldn't you say?

As for protein, even vegans get more protein than they really need. You don't want too much protein because it strips calcium from your bones (animal protein is especially acidic, causing calcium loss) and taxes your kidneys.

If you're parents think you aren't getting enough protein there are three possible reasons: 1) they've fallen for the protein myth like most people; 2) you don't get enough calories; or 3) you eat mostly junk food.

Some simple meals: A bean and rice burrito with salsa or grilled veggies.

Pasta witih marinara sauce. If you saute some kale/collards/greens and pour the marinara over it, it's really healthy.

A stir fry with cubed tofu or tempeh instead of meat. Many grocery stores also carry vegetarian meal-starter strips that are designed for stir-fries or fajitas. Lightlife makes "beef" and "chicken" varieties.

A veggie burger with oven-baked fries.

If you like meatloaf, you can make veggie versions. Google Vegetarian Loaf Studio, and there's a website where you can customize your own veggie loaf.

Anyone have any great vegetarian/vegan recipes?
Q. I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

A. It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Good recipes?
Q. So recently my husband and I have been sort of frightened at some of the things that are unnecessarily put in our food (in the name of preservation, etc.), and have decided that they are no better than poison for our bodies. For this reason, we have made the decision to become vegan, simply because veganism cuts out the things that we find most disturbing--meats, dairy, eggs--and other things that are exposed to horrible environments and processing. I have been a vegetarian in the past (I stopped when we got married because I honestly wasn't doing it very healthfully, and my husband didn't understand back then why I was a vegetarian). Now we are older and wiser and ready to make the jump, but I'm afraid he's going to miss meat, so I'm trying to explore meat substitute products (which I have never explored before). My other concern was that being vegan may be too expensive for our budget.
Any recipe suggestions (esp. with meat subs.), or cost control ideas?
Also, if anyone has any good info pages on the different kinds of meat substitutes and their culinary uses, I would really appreciate it if you sent them my way :)

Tips on a vegetarian diet for a week?

A. Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

What are some good recipes for use with textured vegetable protein (tvp)?

A. I am a former chef and have been because of my diabetic condition a Lacto-Ovo-pescaterain vegetarian for a few year now and use a good amount of TVP, it is essentialy a ground meat substitute, I make chil, stuffed peppers, cabbage rolls, spaghetti sauces, mix it with other veg for veggie meatloafs, burgers or patties, it is very versitile.

I make the dishes exactly like using ground beef/chicken or turkey, just slightly cook it with the base like when sauting onions, add it toast it and then add the liquid ingredients and spices. for cabbage rolls and stuffed pepper/zucchini, I just mix it with the rice and veg dry and moisten it, then make them up and place them in the sauce.

I have read were it has more concentrated protein then meat, and no cholesterol, and is a complex fiber meaning it does not break down into sugars or fat.


i need help makin vegetarian foods and snacks with the non-vegetarian stuff i already have any help?

how do you make stuffed bell peppers?
Q. how do you make stuffed bell peppers? and what goes good with them?

A. Sheesh all you have to do is Google the question you typed here!!

A friend made stuffed green bell peppers and I gave it the nickname "Meatloaf in a House." cause it looks and tastes pretty much like meatloaf. Another time she also made it with red and orange bell peppers and I liked it with those a lot better cause red, yellow and orange peppers have a sweet taste to them. Whereas green peppers are more of an earthy taste, which isn't bad, but I like the sweet peppers better. Make one with each of the different bell peppers and see which one you like best.

As for what to make with the peppers. You don't have to make anything else to go with them if you don't want to. They have the meat and veggies all together. If you don't have another side dish make sure you have plenty of peppers for people to fill up on. If you really want to make another dish a pasta with a white sauce would be good companion. The peppers have the stronger flavor and the pasta with white sauce won't over power it, but be more mellow.

What are good simple recipes for lunch, dinner, or dessert?

Q. I have been cooking alot lately, using recipes from a cookbook I got as a Christmas gift a few years ago. I want to make something that is a typical food dish (i.e. spaghetti, grilled cheese, soup, etc) but I want to add new spices in it that would change it up a bit and something I could serve to my family. I've already tried putting different spices in spaghetti that I made one night for dinner, but the spaghetti sauce was a little bit too strong, so I assume I added too many spices...
Anyways, if anyone has recipes for a simple dish to change it up a bit for my family and I that would be greatly appreciated. Desserts aren't really needed as much as main dishes, but I'd like to make some desserts sometime too. I apologize for the long description. Thanks in advance!
(By the way, I'm just a 15 year old kid so anything I make, my mom has to take me to the grocery store to buy it. Please nothing to bizarre or something that isn't normally in a home. I can go to the store if I really need to.)

A. pick your favs:
meatballs:
MEAT:
-2 lb meat
-1 onion
-2 cloves garlic
-2 eggs
-1 cup breadcrumbs
SAUCE:
-10 oz grape jelly
-3 cups marinara sauce
-1/2 cup tomato juice
-4 tbsp lemon juice
-1/2 cup brown sugar
combine sauce ingredients & cook on low flame. combine meat ingredients & ball meat. cook for 45 min-1 hr

onion rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 5 tbsp onion soup mix
boil water. add onion soup mix & oil. add rice. cover & let cook. fluff with fork.

stringbeans & mushrooms:
- stringbeans
- mushrooms
- 2 cloves garlic
- 1/4 cup oil
- 1/2 cup soy sauce
- 1/2 cup honey
cook string beans. strain. sautee mushrooms & garlic. add oil, honey & soy sauce. let simmer. pour over string beans.

honey mustard chicken:
- 1 cup honey
- 2 tbsp mustard
mix & pour or spread on chicken. bake for 2 hrs

BBQ chicken:
- 1 cup ketchup
- 1 cup soy sauce
- 1/2 cup honey
- 1/4 cup oil
mix & pour or spread on chicken. bake for 2 hrs

apricot chicken:
- 1/2 cup apricot jam
- 1/4 cup oil
- 1/4 cup honey
mix & pour or spread on chicken. bake for 2 hrs

lemon chicken:
- 1 cup lemon juice
- 1/2 cup oil
- 1/2 cup honey
mix & pour or spread on chicken. bake for 2 hrs

breaded chicken:
- 1 egg
- 2 cups breadcrumbs (optional: season breadcrumbs with garlic & onion powder)
coat chicken in egg. roll in breadcrumbs. bake for 2 hrs until crunchy & golden brown.

grilled cheese 1:
- bread
- sliced cheese
put cheese on bread. grill/fry/toast until cheese is melted.

grilled cheese 2:
- bread
- pesto sauce
- sliced cheese
- mushrooms
sautee mushrooms. spread pesto on both pieces of bread. put cheese & mushrooms on. grill/fry/toast until cheese is melted.

grilled cheese 3:
- bread
- sliced cheese
- tomato slices
put cheese, tomatos, & mushrooms on. grill/fry/toast until cheese is melted

mushroom rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1 lb sauteed mushrooms
boil water. add oil. add rice. cover & let cook. sautee mushrooms. add mushrooms to pot of rice. fluff with fork & recover to let simmer.

mac & cheese:
-noodles (any shape, any size)
-mozerella cheese
cook pasta. drain & put cooking pan. sprinkle mozerella cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown

mac & cheese with a twist:
-noodles
-cheese
-1/2 onion
-1 lb mushrooms
-2 cloves garlic
sautee veggies in oil. cook pasta. drain & put into frying pan with veggies. let noodles soak up all flavors. put all noodles & veggies in cooking pan. sprinkle cheese all over noodles. (optional: breadcrumbs & parmesean cheese on top as a crust) bake until cheese is bubbly & brown.

easy no bake mac & cheese with a twist:
-noodles
-cheese
-mushrooms, cut up
-cherry tomatoes, cut up
cook noodles. strain & put in a bowl/on a plate. sprinkle cheese onto noodles. put in microwave for 40-45 seconds. mix. sprinkle mushrooms & tomatoes. mix around. put in microwave for 40-45 seconds.

meatloaf:
- 2 lb chopped meat
- 2 eggs
- 1 1/2 cup bread crumbs
- 1 onion diced & sauteed
- 2 cloves garlic diced & sauteed with onion
- 1 1/2 cups marinara sauce
mix altogether in a bowl. put in loaf tin. cook at 350 for 2-2/12 hours

noodle mushroom dish:
- 1 onion
- 2 cloves garlic
- 1 box mushrooms
- 1 box of noodles (any shape & size you want)
sautee onion, garlic, & mushrooms in same pot until cooked. cook noodles in separate pot. strain noodles & put into pot with veggies. mix so noodles soak up all the flavors.

beef noodle dish:
- 1 onion
- 2 cloves garlic
- beef cut into cubes or slices
- 1 box of noodles (any shape & size you want)

put all ingredients in a bowl & use an immersion blender OR put in food processor or blender. Blend/puree until creamy & smooth. put in container. put in fridge until ready to serve.

lemon rice:
- 4 cups rice
- 3 cups water
- 1/2 cup oil
- 1/2 cup lemon juice
boil water. add lemon juice & oil. add rice. cover & let cook. fluff with fork & recover to let simmer. add lemon zest for garnish.

What's the easiest way to start meal planning for the week for a busy hard-working couple?
Q. I'm 29, and I am having trouble organizing my recipes (and staying motivated enough to do it), to plan my meals for the week. I usually get home around 7pm, so planning for a 2 hour preparation is too late. I've tried many things, but they turn out too fatty, or have too much sodium. We are healthy people, and don't want to have this make us fat. We tend to, currently, eat a lot of frozen stuff or take out. I am a good cook, I'm just lacking time to make a pot roast in the evening.

A. Slowcooker is a good idea for meals like that roast.

I love talking about freezer cooking too. You can cook double recipes when you ARE in the kitchen, serve one and freeze one. Slowly you are building a bank of meals in the freezer that can feed you well within a half hour from walking in the door. This is homemade convenience food exactly the way YOU want it.

You can also streamline tasks in the kitchen other ways. It might sound contradictory if you are trying to just get one meal on the table, how can you do more if this is already overwhelming?

Try this: Everytime you are preparing food, in addition to the tasks needed to serve the upcoming meal, do at least ONE extra thing that will speed up a meal later in the week, and at least ONE extra thing that will help you beyond that.

So for example. You come home and your dinner plan is meatloaf with carrots and mashed potatos.

First advance plan is to make TWO meatloafs. You can make two by spending only a couple extra minutes than it takes to make ONE. Then freeze one.

While you are preparing the meat mixture, you can do any number of other things while you are at it.

After you chop the one onion in the recipe, chop 5 more and freeze them. After you make the bread/cracker crumbs for the recipe, make 3 more cups and store them for later. When you get the eggs out, go ahead and mix up tomorrow's omelet and store in the fridge. See?

While the meatloaf is in the oven you can do any number of things too. You can prep fresh vegetables, clean, peel, slice or chop, whatever and have a snack tub going in the fridge. You can make a dessert. You can start a spaghetti sauce with the rest of the hamb from a HUGE package you bought because you were thinking ahead, and freeze all of it.

At first this sounds like a lot of time, but it is an investment of time. You are spending a little more time now to get a lot back later. You are already in a mess, you have the equipment and ingredients out. In time you will be able to serve more complicated recipes than just quick cook all the time, much of which is great but this is even more options. How? Because some complicated step in the prep is done. If you have meat sauce waiting in the freezer, it becomes a lot easier to throw together a lasagna. If you have veggies prepped, you can toss them into a 10 minute stirfry. If you have frozen some cookie dough you can make a single pan of slice and bake that are completely homemade and YOU control the ingredients that went into the recipe.

You might want to rethink the down time in the kitchen, that time when you are waiting for the food to cook. You might find this a good time to hop in the shower, or fold laundry or read mail, or watch tv. Maybe it is a good time to do those things but maybe the time could be better spent if you are focussed on kitchen tasks. You will be there to catch any problems with less attention: pots boiling over, something starts to get overdone, etc. If you are folding laundry you may not catch these kinds of things early. Try to devote that whole time in the kitchen, from gathering your supplies and ingredients to serving the meal, to kitchen tasks: cooking, prepping, organizing, cleaning the kitchen, meal planning, straightening the pantry, etc. This gives you a leg up on the amount of future work in the kitchen.

Anyone have any great vegetarian/vegan recipes?

Q. I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

A. It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Looking for vegan food options that aren't soy substitutes.?
Q. Alright, due to medical recommendations, I'm removing animal products from my diet. I'm not going the unhealthy meat substitute route where you eat a bunch of gross processed mock-meat foods. I've been eating mostly fruit and veggies (variety of deep leafy greens, etc), making sure to get in B12, taking a vitamin supplement and tofu for protein. What cookbooks and recipes would you recommend for a vegan? Also, any opinions on raw foods?

A. Congratulations on your healthy new diet! Don't worry. You will have endless options for wonderful meals without needing to rely on overly-processed foods and fake meats. Often if you wish to make something similar to a burger, hot dog, meatloaf, or meatball - it can be made out of beans, chickpeas, lentils, walnuts, etc.

Also, for B-12, you might want to check out nutritional yeast flakes that you sprinkle on top of your food. It tastes a little like cheese, and you will notice it in numerous recipes for vegans. Red Star is probably the most common brand. You can get it in the bulk food bins at Whole Foods or order it online.

Any good vegetarian recipes? Suggestions?
Q. I was vegetarian (ovo-lacto) for about a year in high school. While I loved the diet and had no issues leaving meat behind, I was not exactly the healthiest eater and did not have a family to feed. I am considering making this lifestyle change again. Do anyone have any suggestions for meat replacement? We already eat tons of veggies and I always offer variety. Any good recipes with tofu/other meat replacements? Vegetarian Meatloaf:

Ingredients
1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
1/3 cup minced onion
1 clove garlic, minced
1/2 cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon parsley flakes
salt and pepper to taste
Directions
1.Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
2.In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
3.Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

I usually have to cook it about an hour for it to set and I also mixed barbeque sauce and ketchup instead of just BBQ. Hope this helps! :)

I am looking for a good veggie loaf recipe...?
Q. But let me clarify. I don't want something made out of a bunch of meat substitutes like Boca. I'm okay if there's a bit of that in there for binder or texture but the majority of them I'm finding just use that instead of meat.

I actually wan a veggie loaf with rice and maybe some spinach or onion or any other combination of actual veggies!

I'm not very creative at cooking so I need a tried and tested recipe. Any help is MUCH appreciated!

A. Veggie Loaf
RECIPE BY: Prose
This is from a book called The Great American Detox Diet by Alex Jamieson (of Supersize Me fame). All of her recipes are super healthy and this is the tastiest vegan loaf I've tried. Like other vegan loaves, this is more fragile than meatloaf. Be sure to let it cool about 15 minutes before slicing, and even then expect some crumbling.


Ingredients
1 cup cooked brown rice
1 cup cooked lentils
1 cup uncooked instant oats
1 cup finely chopped mushroom
1 medium yellow onion, finely chopped
1 medium carrot, grated
1/2 red bell pepper, chopped
1/2 cup finely chopped walnut
1/4 cup tomato paste
1/4 cup olives, any variety, pitted and chopped fine
3 tablespoons finely chopped fresh parsley
2 tablespoons Braggs liquid aminos or soy sauce
2 tablespoons mustard
1 teaspoon dried thyme
1 teaspoon dried marjoram
1 teaspoon dried sage
Directions
1Preheat oven to 350 degrees Fahrenheit.
2In a large mixing bowl, combine the rice (or other leftover whole grain), lentils, oats, mushrooms, onion, carrot, pepper, walnuts, tomato paste, olives, parsley, soy sauce, mustard, thyme, marjoram, and sage. Mix well.
3Lightly oil an 8" x 4" loaf pan.
4Fill the loaf pan with the mixture and pack well to press out any air pockets.
5Bake for 40 minutes, covered. Uncover and bake for another 20 minutes, until lightly browned. (Be sure to check it after 10 minutes uncovered as I found it was already done). Allow to stand at room temperature for 15 minutes before slicing. Use a serrated knife to carefully slice.


What meals could I make using lentils apart from soups?
Q.

A. I have found two really good lentil recipes that I like a lot. One is for a vegetarian 'meatloaf' and the other is a broccoli lentil and rice casserole. There are many other recipes for lentil casseroles you can find on the internet. Indian dishes also often use lentils in curries, you can find these recipes by searching for Indian Daal recipes.
Lentils are also good for making veggie burgers or vegetarian sloppy joes.

I usually add more tomato sauce than the recipe says. Sometimes I also sub the egg out with flaxseed (1TBS of ground flaxseed + 3 TBS of lukewarm water + mix until gooey= egg substitute for just about any recipe, including baking).
Also I like to spread ketchup over the top before I put it in the oven.

I am not vegan so I sometimes substitute parmesan or other cheese for the nutritional yeast and just use real butter. I've also made this recipe with asparagus instead of broccoli, or both together and it is very good. There are similar recipes on the internet but this is my favorite so far because it only takes one dish and is so easy to make, you don't have to precook anything, you just mix it all together and stick it in the oven.
