Anyone have any great vegetarian/vegan recipes?

Q. I am going vegetarian. I am not yet sure what kind of vegetarian. I attempted this before and I lasted two weeks. I am trying again. I am starting out by cutting out red meat, which I rarely eat anyway. Then I will continue by cutting out white meat, and whatever else I decide to live without. Any great recipes for me anyone? :)

It's important not to just cut out meat. You have to be thinking about beans, nuts, seeds, soy, eggs/dairy (if not going vegan) and ways to make those.

Try substituting beans for meat in your favourite recipes, eg black beans, partly mashed into a packet of the taco seasoning and water you'd add to ground beef for taco night. Try grating a portobello mushroom into tomato sauce instead of ground beef. I like tofu in stirfries instead of chicken (takes practice to have tofu taste other than bland - experiment!). I like making meatloaf with a can of white beans instead of meat - mash them and use your favourite meatloaf recipe from there...

Many meals can naturally be made vegetarian... load a pizza crust with tomato sauce and tons of veggies before baking, make a frittata for dinner, pasta with tomato sauce and vegetarian parmesan cheese (look for one with bacterial culture, not rennet)...

Lunch and breakfast are easy... most of my friends don't know I'm veg when they see me eating pj or cheese sandwiches for lunch! Many breakfast cereals are higher in protein, eg. kashi/Vector.

Things such as hummus and peanut butter are tasty and convenient solutions for a lunch on the go. Look into buying vegetarian canned soups to pack into a thermo. Most grocers now carry lunch meat alternatives such as veggie hot dogs and tofurky slices- so you may want to consider trying some of those.

fresh fruit or fruit cups
granola
hummus
peanut butter
veggie dip
carrot sticks
celery sticks
cereal

salads
veggie soups

soy milk

Another good idea is to see if your local grocers sell vegetarian-friendly MRE's to the public. MRE's are specially packed foods that can be heated without the use of a microwave or fire. There is a heating pad that is activated with water. Soldiers have and still do use them abroad when at war out in the rugged terrain. Quick and easy meals?

Q. I need some ideas for meals. My problem is my boyfriend is sooo picky he won't eat anything with onions or peppers or basically any kind of vegetables.

My hubby is the same way... you can make any recipe and just leave out the onions and peppers. Also, with the vegetable thing I "sneak" them into the meal. Examples:

-- Make a meatloaf and stuff the middle of it with broccoli, mushrooms, carrots, cauliflower, spinach (any that he'll eat!) and a little cheese
-- Try a Tuna Helper and add in some frozen peas, broccoli, or green beans
-- Hamburger Helper with some tomato chunks
-- Spaghetti with meatsauce -- use a jar/can of sauce and add some spices (garlic salt, garlic, rosemary, parsley, etc) to make it tastier. For some veggies use the sauce with veggies in it!
-- Grilled Ham, Tomato, and Cheese with some sort of soup or chowder


Here is another way to deal with a "picky" eater: Tell him you are going to be experimenting with cooking and you both will have to test things out and be open to trying them after you've put all the effort in. He'll eat it because he has to and it will help him open his palate to different flavors... and you'll learn a lot about cooking!! Meatloaf is inexpensive and easy to make- served with mashed potatoes and whole green beans or steamed baby carrots and have the leftovers as meatloaf sandwiches or heated up with gravy.

You can add or delete any ingredients that you want as long as the basics remain the same - the meat, eggs, bread crumbs and onion soup mix:

Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Baked Chicken #1 or Pork Chops

Marinate your chicken in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with roasted potatoes, a veggie or salad.

Baked Chicken #2 or Pork Chops

1 box of stuffing mix like Stove Top
4-6 boneless, skinless chicken breasts
1 can condensed Cream of Mushroom or Cream of Chicken soup - I like Campbell's but any brand will work
1/2 soup can of milk
1/4 cup bread crumbs - I like Italian style
1 cup shredded cheddar cheese

Preheat oven to 375 degrees F. In a small bowl, mix the can of soup and milk; set aside. Make stuffing mix according to package directions and spread into a greased 13x9 in baking pan. Place chicken pieces over the stuffing. Cover with the soup mixture. Sprinkle the shredded cheese and bread crumbs over the top of the chicken and bake for 45 minutes to one hour depending upon how thick you chicken pieces are. Serve with a green salad.

Prepared macaroni and cheese can be substituted for the stuffing.

Stove Top BBQ'd Pork Chops or Chicken Breasts

Melt a little butter in a big heavy frying pan, add some slice onion and cook until tender. Put you pork chops in the frying pan and brown on both sides. Cover with your favorite BBQ sauce, cover the pan and simmer until the chops are tender. Serve with rice, potato salad or mashed potatoes and a veggie.

Classic Potato Salad

Ingredients
2 pounds potatoes (6 medium) - Use red or Yukon Gold potatoes
1/4 teaspoon salt
1-1/4 cups Miracle Whip or mayonnaise - I prefer Miracle Whip, it gives the potato salad a bit more of a zing
1 tablespoon yellow mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup thinly sliced celery (2 stalks)
1/3 cup chopped onion (1 small)
6 Hard-Cooked Eggs, coarsely chopped

Directions
In a medium saucepan place potatoes, the 1/4 teaspoon salt, and enough water to cover. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until just tender. Drain well; cool slightly. Cube the potatoes.

Meanwhile, for dressing, in a large bowl combine Miracle Whip, mustard, the 1/2 teaspoon salt, and the pepper.

Stir in the celery and onion. Add the potatoes and eggs. Toss lightly to coat. Cover and chill for 6 to 24 hours.

Macaroni and Cheese - add a pound diced ham, a pound of browned hamburger or a package of sliced hot dogs and a package of frozen mixed veggies, peas or corn to the mac and cheese before pouring it into the baking dish to make a hearty meal.

Ingredients
8 ounces dried elbow macaroni (2 cups)
1/2 cup chopped onion (1 medium)
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon dry mustard - I like Coleman's English
1/8 teaspoon black pepper
2-1/2 cups milk
1-1/2 cups shredded cheddar cheese (6 ounces)
1-1/2 cups shredded American cheese (6 ounces) - I like to use Veleeta

Directions
Cook macaroni according to package directions. Drain; set aside.

Meanwhile, for cheese sauce, in a medium saucepan cook onion in hot butter until tender but not brown. Stir in flour, dry mustard and pepper. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Add cheeses, stirring until melted. Stir in cooked macaroni. Transfer mixture to a 2-quart casserole.

Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until bubbly and heated through. Let stand for 10 minutes before serving. Makes 4 servings.

Saucepan Macaroni and Cheese: Prepare as above, except reduce milk to 2 cups. After draining macaroni, immediately return macaroni to the saucepan. Pour cheese sauce over macaroni; stir to coat macaroni with sauce. Cook over low heat for 2 to 3 minutes or until heated through, stirring frequently. Let stand for 10 minutes before serving.

Beer Brats

Boil your Brats in the beer that you have add some sliced onions and garlic to and use a good dark beer like Guinness. I actually like to use both Guinness and either Bass Ale or Harps Ale because I like the taste of Black and Tans. Remove the Brats and onions from the beer, keeping the onions. After removing your Brats from the beer, continue to boil the beer until you reduce it by at least half and then brush it on the sausages while grilling. Take the leftover onions and saute them in a pan or on the grill with a bit of butter and serve over the grilled Brats with spicy mustard and maybe some sauerkraut.

I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

Do you know any simple recipes for a vegetarian meal or snack?
i have a hard time thinking of things to make quickly, that are actually somewhat healthy. i don't eat meat, fish, or geletin. But i do eat eggs sometimes. any ideas? :)

Get some baby carrots. You could also slice some cucumber, cut bell peppers into strips, get some grape tomatoes, and dip them in ranch dressing or hummus.

Tofu Special K Meatloaf

2 16-oz. packages of tofu - mashed.
6 packages George Washington Broth or MBT vegetable broth
1 stick melted margarine
1 cup walnuts, chopped
12 oz box of Special K cereal

Mix all ingredients in a large bowl, adding cereal last, and spread in 13"X9"X2" baking pan slightly sprayed with Pam. Mixture will be quite thick.
Bake at 350 for one hour.

a veggie seasoning cube
frozen broccoli and cauliflower mix
dry pasta
nonstick spray
water

Spray the bottom of a deep saute pan, then layer the ingredients with the pasta on the bottom, the beans next, the veggies, then the veggie cube crumbled over the top. Add some water so that the pasta doesn't boil dry in the bottom. Cook it on medium or medium-high until the pasta is done. Sometimes you have to add a little water to keep the pasta cooking.

Soymilk, cooked oatmeal,half a banana and peanuts altogether. freeze it overnight or blend with ice.

My favorite:

Thanksgiving "Meat" Loaf
(Egg substitute) Mix together 1 T arrowroot powder, 1 T corn starch, and 4 T water
1 tablespoon soy sauce
1 box medium firm silken tofu
3/4 cup chopped walnuts
1 packet vegan dried onion soup mix
1 teaspoon oil
1 1/2 cups chopped onion
2/4 cup chopped celery
2 cups chopped mushrooms
1 1/2 teaspoon each of oregano and basil
1/2 teaspoon sage
3/4 cup bread crumbs
1 cup of instant mashed potato flakes

Directions:

Mix egg substitute, soy sauce, tofu & onion soup mix together in blender. Add walnuts & blend until smooth.
Saute vegetables until onions are transparent. Add herbs/spices while vegetables are frying.
Mix blender ingredients, cooked vegetables, bread crumbs and potato flakes together in a large bowl.
Press into a greased loaf pan.
Bake at 350 degrees F. for 1 hour and 15 minutes. Let cool slightly. Turn loaf out and slice.

I generally serve this with mashed potatoes, brown gravy, and rolls.

I made a vegetarian meatloaf, but before I became vegetarian, I never really had meatloaf. Much less I don't know what it supposed to taste like. I followed the recipe and the top was done but the inside was somewhat mushy. It's good though, but I'm not sure if this is what supposed to happen? Do I need to put it in the oven longer? I'm not sure. Thanks!

Yeah, meatloaf is quite mushy by nature. That's part of what makes it so delicious, actually.

Whether I use meat (for husband) or lentils (for both of us), I try to let the loaf 'stand' for about 5 minutes or so once I take it out of the oven. This helps the juices redistribute and that helps firm it up.

Here's my recipe:

1 19oz can red lentils, drained and rinsed, then shaken dry in the colander (eliminating a lot of extra moisture)
salt and pepper to taste
1/2 cup finely diced onion
1/2 cup finely diced pepper (green pepper looks pretty, but use what's on hand)
1 egg, lightly beaten (or egg replacer if going for something vegan)
8 oz canned tomatoes with juice
1/2 cup quick oats.

Combine it all and press into a loaf pan.

Glaze:

1/3 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon mustard (use your favourite... grainy dijon is awesome, but use yellow or regular dijon if that's what you have).

Bake at 375 for an hour, and let stand for 5-10 mins afterwards.

This loaf will firm as it cools to the point where you can make 'meat'loaf sandwiches out of it for lunch the next day (awesome on soft bread with mayo....)!

Only thing is I hate zucchini and cucumber and peas (beans are fine, I don't know why)


I'm not looking for websites (unless you've got a really good one) just want to shake it up a bit, I love to cook. Nothing with too much cheese or fat thanks, I don't like that yuck feeling I get after something fatty or oily.

Trying to make quick, healthy, mostly vegan food for College (vegetarian is ok too)?

So, this is going to be my second semester in College. Only thing is that last semester I had enough time to run home to my appt and eat lunch. This time I added more classes, meaning no running home for lunch (home is a mile away, but my school/appt is on a very busy road and it takes about 30 mins to get home. I only have 10 mins between most classes now. Can't do!)

I'm vegetarian with mostly vegan tendancies. So more of the vegan recipies I get, the better! (Of course vegetarian too.)

Eating at the college cafeteria isnt an option. It's a community college, and it's in the south. Everything is deep fried and most likely chicken on a biscuit. Im not an amature cook, either, but Im in school now with a tight schedule. Simple yet healthy/low cal/low fat would be awsome. When I get home I normally have a decently fattening/calorie laden meal, Ala' Amy's Organic something-or-other for dinner.

Snack ideas, or even breakfast ideas, would help alot too.

I am also a student and have been a vegan for almost four years now. -Place it on parchment paper in microwave
-Season it with BBQ sauce(just a bit)
-Microwave until crispy and peel off the cookie sheet

Mock meatloaf
-onions
-bbq sauce
-crumbled nuts(a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well and put it in the oven and bake until you like it best

Jamaican me crazy tropical banana
-fry banana slices in a pan
-add some cinnamon and honey

-Gorbanxo beans(from a can)
-put in pita bread and take it to go!

-melt the following in the microwave
-1/4 cup cream cheese
-1/4 cup of Velveeta
-1 slice of swiss cheese
-After all has melted, mix well
-cut up your fave veggies and dip into cheese like a fondue
(put cheese mix in a thermos when going to school)

Desert
Try some fruit with lemon juice and splenda


DAY 6

Breakfast
Breakfast burrito
-egg(scrambeled)

-flour tortilla
-wrap it up and enjoy with a piece of fruit

Pre prepared âvegkabobâ
- diced and micro waved/cooked tomatoes
-chunks of tofu, veggie burger or mushroom micro waved/cooked
-diced zucchini micro waved/cooked
-put it in a pattern form on spears
-if you donât have a meat alternative put on chunks of cheddar cheese
-for the final touch add your fave bbq sauce

Dinner

Mac and cheeseâMY WAYâ
-Ready macaroni noodles(cooked)
-add a bit of seasoning and softened crème cheese
-cheddar cheese
-veggies
-tomato sauce

Desert
Candied Walnuts (see recipe above)



DAY 7

Breakfast
-oatmeal
-micro waved/warm frozen berry medley
-granola

Lunch
Chinese Steamed veggies
-Teriyaki and peanut sauce mixed
( for cheap peanut sauce microwave peanut butter with a bit of oil and sour cream and stir)
-Carrots, Zucchini, eggplant, water chestnuts, (you can get a frozen mix)
-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Dinner
Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)
-onions
-BBQ sauce
-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well
-roll it into balls and coat with flour
-place on a cookie sheet and put it in the oven to bake until brown hot and ready

What Vegetarian Meat substitutes actually taste like meat?

My girlfriend is trying to eat less meat and I found a recipie for vegetarian lasagna, but it calls for meat substitute. Does this actually taste like meat?

Umm no, she does mean girlfriend. I don't know if you've heard, but some girls like girls. =P

I've never found a meat substitute that tasted exactly like meat, but I have had some that are so good that you don't miss the meat. I crumble tempeh into my vegan chili and it provides the meaty texture and comes out delicious. I fill lasagna with mushrooms and eggplant. I maake meatloaf with a blend of blak beans, lentils, and rye. I've heard that seitan also works very well in meat-centered recipes, such as vegan cheese steaks. I've never tried it because I am sensitive to gluten, but I've heard it's very good and meaty.

My mother used to make meatloaf all the time and the store has freshly ground ready mix that you can buy cheaply. wtf do I do?


Answer
1 lb of ground beef
1 pkg of dry onion soup mix
1 egg
1 or 2 slices of bread torn into small pieces (you can use bread crumbs or oatmeal if you prefer, but don't add too much or your loaf will be dry)
ketchup-as much as needed to get the right consistancy. (again, you can use bbq, A1, heinz 57...whatever you like)
Mix it with your hands and form into a loaf shape in a roasting pan, or put into a loaf/bread pan. Top with more ketchup and cook for about 1hr at 350 or until internal temp is 160.

Later you can try adding minced fresh veggies and other spices or different glazes on the top. The possibilities are endless!

can you PLEASE give me some good, fast, easy, INEXPENSIVE recipe ideas for a soon to be mom of 2!!!!?

Q. good stuff w/ veggies! toddler friendly!! maybe recipes that are good for leftovers (casseroles) THANK YOU!! :)

2 medium onions, very finely chopped
2 cloves garlic, peeled
3 heaped tablespoons chopped fresh parsley
1 level dessertspoon chopped fresh thyme
1 large egg
3 oz (75 g) white bread, sliced and crusts removed, cut into 1 inch (2.5 cm) cubes
3 tablespoons milk
1½ rounded teaspoons mustard powder
2 tablespoons Worcestershire sauce
4 fl oz (110 ml) dry white wine
about 8 slices (6 oz/175 g) traditional smoked streaky bacon
salt and freshly milled black pepper

Pre-heat the oven to gas mark 2, 300°F (150°C).

The best way to make a meatloaf is in a large food processor, if you've got one. In which case you can begin by chopping the onions, garlic, parsley and thyme all together until the onion is very finely chopped, then add the meats and break in the egg. Place the bread in a little bowl, spoon the milk over, then mix it with your hands or a fork until the bread has broken down to fine crumbs. Add these to the processor along with the mustard powder, Worcestershire sauce, wine and a really good seasoning of salt and pepper. Now, switching on and off, or using the pulse button, mix the whole lot together until thoroughly blended. If you don't have a food processor, grate or mince the onion, chop the garlic finely then mix everything thoroughly in a large bowl.

When the mixture is ready, pack it into the loaf tin and smooth the top with the back of a spoon, then snip the rinds off the bacon and lay the slices all along the top of the meat, slightly overlapping, and press them down firmly. Now place a piece of foil over the top and twist or pleat the corners. Stand the tin in a shallow baking tin, pour about 1½ inches (4 cm) boiling water into the tin straight from the kettle and place the whole thing on the middle shelf of the oven. Let it cook slowly for 2 hours. After that remove the foil and dig a skewer into the meatloaf; press it down to make sure that the juices are running clear. Now, if it's cooked, remove it from the oven then let it cool for about 30 minutes and after that, if you're serving it cold, replace the foil and place something heavy on top to weight it down. Leave it weighted like this until it's completely cold. This makes the meatloaf easier to slice. If you're serving the meatloaf hot, just allow it to rest for 30 minutes in the tin, covered with foil, then turn it out on to a board and serve cut in slices.


MILDRED'S EASY CHEAP CASSEROLE

1 (8 oz.) cheese whiz
1/2 c. milk
7 oz. spaghetti, break in thirds cook and drain
2 tbsp.butter
10 oz. cooked broccoli
1 c. chopped chicken or turkey
1 (4 oz.) can mushrooms, drained
2 tbsp. chopped pimento
1/4 tsp. salt
1/4 tsp. sage

Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving. This is easy cheap and good.

Let it cook slowly for 2 hours. After that remove the foil and dig a skewer into the meatloaf; press it down to make sure that the juices are running clear. Now, if it's cooked, remove it from the oven then let it cool for about 30 minutes and after that, if you're serving it cold, replace the foil and place something heavy on top to weight it down. Leave it weighted like this until it's completely cold. This makes the meatloaf easier to slice. If you're serving the meatloaf hot, just allow it to rest for 30 minutes in the tin, covered with foil, then turn it out on to a board and serve cut in slices.


MILDRED'S EASY CHEAP CASSEROLE

1 (8 oz.) cheese whiz
1/2 c. milk
7 oz. spaghetti, break in thirds cook and drain
2 tbsp.butter
10 oz. cooked broccoli
1 c. chopped chicken or turkey
1 (4 oz.) can mushrooms, drained
2 tbsp. chopped pimento
1/4 tsp. salt
1/4 tsp. sage

Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving. This is easy cheap and good.

Sauces for Meatballs

See Meatballs recipe for using with these sauces. Vegetarians see Vegetarian Meatloaf to accompany these sauces, substituting vegetable broth for chicken or beef broth.

1. Sauce for Spaghetti

Note: The source of this recipe is unknown. It is an evolution of recipes tried over the past 3 decades. If pork neck bones are available, they impart a nice sweet taste to the sauce, but must be kept separate, because the bones are extremely small and can remain undetected in the sauce. (Steamers are effective, if not clumsy, in that they allow the bones to cook in sauce while keeping them separated.)

1/2-1 lb hamburger or meatballs
2-3 Italian sausages, sweet or hot, cut in thirds

1 medium onion, chopped
2 cloves garlic, finely minced
3-4 mushrooms, chopped
1-2 carrots, peeled, cut lengthwise in half, then in thirds (opt)

2 28-oz cans whole tomatoes, chopped, liquid reserved
2 8-oz cans tomato sauce
2 small cans tomato paste
1/2 cp red wine

1 t crushed dried basil
1 t crushed dried oregano
2 bay leaves, crumbled
dash salt and pepper

1. Saute onion and garlic. Add mushrooms and saute another minute or two.
2. Add hamburger and chop up well.
3. Add tomato ingredients and spices and mix well, then add sausages.
4. Cook over low heat about 60 minutes, stirring occasionally

2. Beer Sauce for Meatballs

Source: American Heart Association Cookbook recipe for Meatballs in Beer Sauce

1 light margarine
1/2 cp chopped onion
1 T flour
8 oz beer
2 T brown sugar
2 T cider vinegar
2 T beef broth

1. Melt margarine in skillet; saute onions till translucent.
2. Add flour and cook 1-2 minutes, stirring constantly.
3. Stir in remaining ingredients. Reduce heat and simmer 10 minutes.
4. Add meatballs to sauce and simmer 20 minutes.

One serving=2 meatballs calories: 72 cholesterol: 12 mg saturated fat: 1 g

3. Spicy Sweet & Sour Sauce for Meatballs

Source: Somthing Good, Beta Omega Chapter 1081 of Blythe CA, 1970. Used for Can be stretched by adding water or more tomato sauce and juice. Sauce tends to cook down, so it's good to keep a pot of hot water available for thinning.

1-16 oz canned tomato sauce
1 cp tomato juice
1/4 cp onions, finely chopped

4 T brown sugar
1-2 t Worcestershire sauce
1 t soy sauce
1 t chili powder
1/2-1 t cayenne or other hot pepper powder, to taste
1 t dry mustard
1/2 t ground allspice
1 T minced parsley
fresh pepper to taste (substitute powdered, if necessary)
1/3 cp raisins(opt.)
1/3 cp white or cider vinegar
Add to taste jalapeno, serrano, or other chili pepper

1. Prepare meatballs, place on cookie sheet, preheat oven to 375°, and set aside.
2. Brown onions in butter or oil if desired.
3. Add remaining ingredients to sauce and simmer for about 20 minutes.
4. While sauce is simmering, bake meatballs at about 375° about 20 minutes, till browned on all sides.
5. Drain on a paper towel to remove grease, then add to sauce and simmer another 20-30 minutes.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

I am already a vegetarian. I am, the only one in my family. I am 14

I want to become vegan but still be healthy. The rest of my family are big meat eaters. Can you give me some simple recipes and some advice on being vegan?

Also, do you know anything about the Hallelujah Diet?
Actually, vegan is one of the most healthiest diets. It cuts down on bone problems and cancer. Also, obesity, diabetes, and other serious illnesses.

Hi, great choice to become a vegan. I totally understand what you are going through.

I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 50+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Donât forget to regularly see the doctor.

Make your own snow-cone with blended ice and juice


DAY 2

Breakfast

A protein shake

-Milk or soy milk
-peanut or cashew butter
-splenda or sugar
-banana
-strawberries
You could top it off with whipped cream(vegan kind or non dairy)
(If you do not have a blender do the following)
-microwave a medly of frozen fruit until warm
-place it in a bowl
-top it off with crumbled cinnamon toast crunch
It tastes like a cobbler YUM!!!


Lunch
Classic Ranch BLT

-Ranch on 1 slice of bread
-Butter on the other
-lettuce
-tomato
-vegan bacon
(If you do not have veggie bacon do the following)
-Cut bacon sized strips of cheese(vegan kind)
-Place it on parchment paper in microwave
-Season it with BBQ sauce(just a bit)
-Microwave until crispy and peel off the cookie sheet

Dinner

Mock meatloaf
-onions
-bbq sauce
-crumbled nuts(a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well and put it in the oven and bake until you like it best

Desert
Jamaican me crazy tropical banana
-fry banana slices in a pan
-add some cinnamon and honey
-top with whipped cream

Breakfast
French Toast
-Dip stal bread in mix of sugar cinnamon and egg
-fry in a pan
-eat it with a piece of fruit

Lunch
Burrito
-Avocado
-diced tomato
-refried beans from can

Dinner
Easy veggie salad pizza
-Buy a Pillsbury biscuit can
-flatten out one portion of dough on a cookie sheet
-top it with sliced tomatoes and cheese
-bake at 375 until done
-top with fave lettuce and dressing

Desert
Cute coco Fondue
-melt any random chocolate over fruit

DAY FOUR

Breakfast
Omelet
-put your fave cooked veggies
-spinach
-seasoning salt or pepper
-egg
-put this all in a pan and mix then let it cook
-one minute before it is done add on cheese

Lunch
English Queen Burger
Put
-katsup
-lettuce
-tomato
-A veggie pattie
On an English muffin

Dinner
-ready or frozen Rice
-Teriyaki Sauce
-veggies
-stir fry/cook until ready

Desert
Good old Ice cream

DAY FIVE

Breakfast
-Cut Apples and peaches
-add granola
-one pack of splenda
-milk
Great for hot days

Lunch
Classic PB&J with a side of fruit
Dinner
A fun take on the southern style make three dips
-Corn off the cob with some mashed avocado
-collard greens (in the frozen isle)cooked mix with cream cheese
-Beans with melted cheese
-now arrange this on a plate with your fave seasonings
And dip in with chips or ritz cracker

Lunch
Greek Feast
-Feta cheese
-romaine lettuce
-baby tomatoes
-Gorbanxo beans(from a can)
-put in pita bread and take it to go!

Dinner
âCheese Fondueâ
-melt the following in the microwave
-1/4 cup cream cheese
-1/4 cup of Velveeta
-1 slice of swiss cheese
-After all has melted, mix well
-cut up your fave veggies and dip into cheese like a fondue
(put cheese mix in a thermos when going to school)

Desert
Try some fruit with lemon juice and splenda


DAY 6

Breakfast
Breakfast burrito
-egg(scrambeled)
-spinach and onion cooked
-fave cheese
-flour tortilla
-wrap it up and enjoy with a piece of fruit

Lunch
Pre prepared âvegkabobâ
- diced and micro waved/cooked tomatoes
-chunks of tofu, veggie burger or mushroom micro waved/cooked
-diced zucchini micro waved/cooked
-put it in a pattern form on spears
-if you donât have a meat alternative put on chunks of cheddar cheese
-for the final touch add your fave bbq sauce

Dinner

Mac and cheeseâMY WAYâ
-Ready macaroni noodles(cooked)
-add a bit of seasoning and softened crème cheese
-cheddar cheese
-veggies
-tomato sauce

Desert
Candied Walnuts (see recipe above)



DAY 7

Breakfast
-oatmeal
-micro waved/warm frozen berry medley
-granola

Lunch
Chinese Steamed veggies
-Teriyaki and peanut sauce mixed
( for cheap peanut sauce microwave peanut butter with a bit of oil and sour cream and stir)
-Carrots, Zucchini, eggplant, water chestnuts, (you can get a frozen mix)
-boil veggies in water until tender drain and mix in sauce
-top with sesame seeds and tofu (optional)

Dinner
Spaghetti for the whole family(no real meatballs for us but veggie ones can easily be made)
-onions
-BBQ sauce
-crumbled nuts (a bit)
-Splash of egg white
-some mozzarella
-crumbled stale bread
-any fave veggie
-now mix it well
-roll it into balls and coat with flour
-place on a cookie sheet and put it in the oven to bake until brown hot and ready

I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling
