Cookbooks for beginners and/or college students?

Bookworm

My brother intends to move out of his dorm and into an apartment. He's never really cooked before (stuck with the microwave and toaster.) I see a variety of beginner/college student cookbooks, but I was wondering if people had suggestions.

He's not vegetarian/vegan and he doesn't have any dietary needs/allergies at this time. (Maybe he will depending on his roommates, but that's not set yet.)

What do you suggest?

Answer
There are some really good "3 ingredient" and "4 ingredient" cookbooks for sale (I think I saw the 4 ingredient one at Costco)

These are a great starting point & not very intimidating. And, of course, you can totally spice things up to taste!

(I'm not much of a cook either! LOL - please check out my meatloaf recipe question!)

Is there such thing as "vegetarian" meatloaf? Can you help provide a recipe?

Terry 81

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Answer
Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beefâflavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

⢠Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
⢠Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
⢠Meanwhile, mix together the ingredients for the coating and set aside.
⢠Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

What do you eat when your money is tight?

Milkbone

Thanksgiving is around a corner, but my money is tight lol. What does people eat when their money is tight? I cook some ground beefs like meatloaf, spagettie, sloppy joe or humberger helper, but getting bored. Any other ideas?

Answer
Meat is expensive. I eat a lot of beans to get my protein with only enough meat for flavoring. These can all be cooked in a slow cooker while you are at work.
dry Navy beans cooked with a ham hock. cornbread
dry Butter beans cooked with chicken backs. slice of hot home made bread.
dry Pinto beans with beef ribs. toasted garlic bread.
Kidney bean salad. (1 can kidney beans, 1 hard boiled egg, pickles, & onion chopped, mayo)
Pork & beans made into baked beans with chunks of ham. and scalloped potatoes.
Refried beans and rice. add some shredded pork and you have a meal.

The beans are about $1. for a 1lb. bag which will easily make two meals for 2 people-----$.50 per meal....plus another $1.00 for the meat that is $2.50 for the beans, .50 for the bread and a .35 to add a potato...for a total of $3.35 for a meal for two of beans cooked in meat broth, bread, and a potato.
________________________________________
Eat potatoes...mashed, fried, hash browns, boiled, baked, potato cakes, scalloped, oven fried, creamed with peas or carrots....
A 10 lb. bag of potatoes is $4. on sale for less. You get at least 25 potatoes in that for two people that would be a veggie for each meal for 12 days. (.35 per meal for 2)

Refried Beans Recipe
2 1/2 cups of dry pinto beans (about 1 lb or 450gm)
3 quarts of water
1/2 cup chopped onion (optional)
2 Tbsp (or more to taste) pork lard, bacon fat, or olive oil (for vegetarian option)
1/4 cup water
Salt to taste
Cheddar cheese (optional)
1 Rinse the beans in water and remove any small stones, pieces of dirt, or bad beans.
2 Cook the beans in water.
Regular method Put beans into a pot and cover beans with at least 3 inches of water - about 3 quarts for 2 1/2 cups of dry beans. Bring to a boil and then lower heat to simmer, covered, for about 2 1/2 hours. The cooking time will vary depending on the batch of beans you have. The beans are done when they are soft and the skin is just beginning to break open.
Strain the beans from the cooking water.
3 Add the onions and lard/fat/oil to a wide, sturdy (not with a flimsy stick-free lining) frying pan on medium high heat. Cook onions until translucent. (Note the onions are optional, you can skip them if you want.) Add the strained beans and about a 1/4 cup of water to the pan. Using a potato masher, mash the beans in the pan, while you are cooking them, until they are a rough purée. Add more water if necessary to keep the fried beans from getting too dried out. Add salt to taste. Add a few slices of cheddar cheese, or some (1/2 cup) grated cheddar cheese if you want. When beans are heated through (and optional cheese melted) the beans are ready to serve.

Looking for some hearty, filling vegetarian recipes?

Vada Grace

I am looking for some good, hearty vegetarian recipies. I am mainly looking for lunch items. I try to stay away from soy, I have reactions to it. I am breastfeeding and I have trouble finding food that fills me up.
Thanks!

I can absolutely help you out here. Here are some of my favorite recipes:

Vegetarian Meatloaf: http://www.recipezaar.com/Really-Good-Vegetarian-Meatloaf-really-33921

Tamale Pie: http://www.recipezaar.com/vegetarian-tamale-pie-392881

I use Morningstar Farms crumbles in 2 of the recipes, but you can easily sub them out for another soy-free brand (like Quorn), use beans instead, or just omit them.

There are so many other recipes on Recipezaar, that is definitely my favorite recipe site. You can use the recipe filter to only include vegetarian meals. If you're a fan of meat substitutes, Quorn is my absolutely favorite and it's soy free. I use the tenders and naked cutlets in place of chicken in all of my favorite classic recipes.

You think i should be a vegetarian?

Q. I have done i before but i lasted 2 weeks,
But i really want to be one because i love animals :( and i have just recently quit smoking so i wanna put my goal on something else,

could some one please write me out a guide to be one,

Or give me the url for a guide to take me through step by step,?

Giving best answer!

Answer
To me Loving animals is a Great Reason to be a vegetarian. It is not hard to be one and keep being one. First you must make a commitment to yourself that you not going to eat their bodies anymore even if you like how they taste. You are going to put their lives before your taste buds. I think loving animals and remembering that will keep you going. The first month is the hardest and only because you are used to eating animals. It is habit like anything else. Every day decide what you are having for breakfast . That is easy, Breakfast:cereal, oatmeal, toast,waffles, pancakes, english muffins, donuts, also mock breakfast meats as veggie bacon , veggie patties etc.
Lunch: make a sandwich ( no meat), a bean burrito, bean taco, veggie wrap, humus, falafel on pita, salads, soups, use mock meats as veggie burgers, veggie dogs with beans, veggie sausage etc
Dinner: Pasta a zillion ways, marinara, with pesto, alfredo,prima vera, with beans, veggie lasagna, or have sauteed or roasted veggies over rice, a curry dish, use mock meats to make almost any "meat dish", stews, soups,casseroles, potatoes( fried, roasted, mashed, boiled), tamales, veggie meatballs, veggie meatloaf with mashed potatoes, Tofurkey with pecan cranberry,salads, and even veggie sloppy joes.
These are just a few ideas... eat fresh fruits as apples , bananas, berries and drink fruit juice as OJ fortified with calcium
snack on nuts as almonds, peanuts, cashews, ect
snack on raw veggies as baby carrots or celery ( and use salad dressing as a dip) , I eat lots of raw veggies as well as cooked ones
If you can begin to change to soy or almond milks(they all taste different so it will be trial and error) I like Regular unflavored Silk ( refrigerator section) and Almond breeze chocolate (not refrigerated)

Things to avoid anything with Gelatin, anything with L-Cysteine, Carmine, and Confectioners glaze( the last 2 are bug guts found in lots of candies), avoid any beef, chicken or animal broths in soups and many times in rice dishes, and in cheese make sure it says non animal rennet ( otherwise the cow is killed as animal rennet comes from their 4th stomach).
I would say start here and everyday think to yourself I will not eat an animal today. Soon you will not even think of ever eating one again because your heart is in it and the more you know, the more commited you will be. Do not panic if you make a mistake , just fix it for the next time and keep going.

Good luck and stick with it ( I read some of your other questions and I would say do not try to be a vegan yet, yes you can begin to buy non leather shoes and bags as what you have wears out, and use products not tested on animals, but do not put that much pressure on yourself all at once)

Please email me if I can help or answer questions about any products.
I also suggest you look over PETA's website and read all as well as
check out vegweb.com for recipes

One last thing Vegetarians do not eat any type of Fish ever including shellfish. Fish are living animals until they are killed and gutted for someone to eat them and absolutely not vegetarian. You probably know that, but some people are confused.

Egg substitutes?

FabulousIn

I'm a vegetarian and I've decided I would like to give up eating eggs as well...what substitutes do you use in baking, cooking, etc. for eggs?

Also...what are some foods that I need to look out for and avoid that include eggs but maybe aren't as obvious?

Thanks for the help =)

Answer
Discovering Egg Substitutes for Vegetarian Cooking
Adapted From: Vegetarian Cooking For Dummies
Printer-ready version
Recipes that call for eggs often can work just as well with substitute ingredients. You probably have many egg replacement possibilities in your refrigerator or kitchen cabinet.

Eggs serve a variety of functions in recipes. They often work as binders, holding the other ingredients together, as in a casserole or cake. Eggs also can act as leavening agents, providing lift and affecting texture. The purpose of the egg in a recipe determines what you can use as a substitute. In some cases, you can omit the egg altogether, and the recipe isn't noticeably affected.

Ousting eggs from baked goods
Eggs are used in baked goods for leavening, or lightness. They also may serve as a binder. The purpose the egg serves in the original recipe â as well as the amount of egg the recipe calls for â determines whether you need a substitute and, if so, which alternate ingredient will best serve the function of the egg in the recipe.

Flat foods such as pancakes and cookies don't rely on eggs for lift. In fact, in many cases, you can eliminate the egg without noticeably affecting the final product. That's especially true if the recipe calls for only one egg. If you do omit the egg, however, it's a good idea to add a tablespoon or two of additional liquid â soymilk, fruit juice, or water, for example â for each egg omitted to restore the recipe to its original moisture content.

When a recipe calls for three or more eggs â as many cakes do â the eggs perform a vital function and need to be replaced with an ingredient that can deliver a similar effect.

In recipes for baked goods that have a light, airy texture, replace eggs with an ingredient that provides lift. Any of the following ingredients can replace one whole egg in a recipe:

Half a small, ripe, mashed banana. This substitution gives the food a mild banana flavor, which can be nice in recipes for muffins, cookies, pancakes, and quick breads.
1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, mixed with 2 tablespoons of water. This product is a combination of vegetable starches and works wonderfully in virtually any recipe that calls for eggs. Natural foods stores sell it in 1-pound boxes.
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder, because using fruit purees to replace eggs can make the finished product somewhat denser than the original recipe.
A heaping tablespoon of soy flour or bean flour mixed with a tablespoon of water. This mixture works similarly to vegetarian egg replacer.
2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.
1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.
Replacing eggs in casseroles, loaves, burger patties, and main dishes
Some recipes need an ingredient that binds all the other ingredients together. Eggs are famous for acting as the glue that holds meatballs, meatloaf, and casseroles together. Lacto vegetarian and vegan versions of these traditional foods need something to serve the same purpose. Fortunately, you have many options.

As you might suspect, your choice of ingredients to replace eggs in these types of foods depends on the degree of "stick" you need, as well as how the ingredient will blend with the other flavors in the recipe. Cooked oatmeal may work fine as a binder in a veggie burger patty, for example, but may not be a welcome addition to a vegetable casserole if you don't care for the flavor or texture that it brings to the dish.

If you're altering a traditional recipe, you have to experiment a bit to determine just the right amount of an ingredient to serve the purpose. A good starting point with most recipes in which egg acts as a binder is to use 2 to 3 tablespoons of any of the following ingredients (or a combination of them) to replace one whole egg. If the original recipe calls for two eggs, start with 4 to 6 tablespoons of egg substitute.

Tomato paste
Arrowroot starch
Potato starch
Cornstarch
Whole-wheat, unbleached, oat, or bean flour
Finely crushed breadcrumbs, cracker meal, or matzo meal
Quick-cooking rolled oats or cooked oatmeal
Mashed potatoes, mashed sweet potatoes, or instant potato flakes
You can also try 1/4 cup of any kind of tofu blended with 1 tablespoon of flour or 1-1/2 teaspoons vegetarian egg replacer mixed with 2 tablespoons of water.

Replacing eggs in sandwich fillings, salads, and scrambled eggs
Finding substitutes for eggs that are hidden in recipes is one thing; finding suitable substitutes for eggs that are more visible in foods is quite another. Fortunately, tofu looks remarkably like cooked egg whites and functions in much the same way in several popular recipes.

You can use chopped firm or extra-firm tofu in place of egg whites in egg salad. Use your favorite egg salad recipe, but substitute tofu for the hard-boiled eggs. You can even replace regular mayonnaise with soy mayonnaise for a vegan version.
Cubes of chopped firm tofu are a nice addition to a mixed green salad or spinach salad, standing in for the customary chopped hard-boiled eggs. You can also add chopped or minced tofu to a bowl of Chinese hot and sour soup.
Try scrambled tofu instead of scrambled eggs at breakfast. Natural foods stores stock "tofu scrambler" seasoning packets, which you may also find in the produce section of your regular supermarket, near the tofu. Many vegetarian cookbooks give recipes for scrambled tofu. The recipes usually include turmeric to give the tofu a yellow color similar to that of scrambled eggs. You can also use scrambled tofu to fill pita pockets or as a sandwich filling on hoagie rolls.

Do you have any other neat ideas for ground chicken? It was on sale and I bought some and not sure what all I can do with it, thanks! :)

Yes ground turkey is amazing as meatloaf. here's an awsome recipe from Rachel Ray for ground turkey meatloaf. It's healthy and even my husband loves it.

Pre-heat oven to 350 degrees Farenhiet
Mix turkey stuffing according to box let set and fluff with fork. Let cool. Take your ground turkey mix with eggs, a cup or so of bread crumbs, stuffing, garlic powder and onion powder to taste (don't actually taste the meat though) Bake at 250 for 40-45 minutes or untill done and slightly grounden brown.

Serve with Mashed Potatoes, a Veggie and Gravy (recipe below)

Chicken Broth (med.-lrg. box)
Canola oil
Flour

Pour Chicken Broth into heavy saucepan and heat on high
Pour canola oil(about 1/4 -1/3 cup) into cup and mix with1/4-1/2 cup of flour and stir till smooth once chicken broth is heated pour flour mix into broth, bring to a boil, turn burner down to low-med heat and stir till begins to thicken

I teach a middle school biotechnology class and we are talking about agriculture biotechnology. I really want to demonstrate how to make cheese with rennin in class but can't seem to find a recipe I used a while ago. I know it was a mozzarella cheese that we made last time but any would be fine.

Does anyone have a recipe for vegetarian stuffing?

Heather

I'm looking for something easy and without too many ingredients. Thanks.

Answer
Ingredients

* 1 (1 pound) loaf day-old bread, torn into small pieces
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (10.5 ounce) can vegetable broth
* 2 tablespoons water
* 1 teaspoon poultry seasoning
* salt to taste
* ground black pepper to taste
* 1/2 cup wild rice, cooked (optional)
* 1/4 cup dried cranberries (optional)
* 1/2 cup fresh mushrooms (optional)
* 1/2 cup chopped pecans (optional)
* 1/4 cup cubed apples (optional)

Directions

1. Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
2. Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.

Stuffing doesn't have to be cooked inside a turkey - this vegetarian bread stuffing with apples and walnuts is delicious baked as a casserole.
Yield 10 servings
Time an hour
Tools

* large frying pan
* wooden spoon
* large mixing bowl
* two medium or one very large casserole(s), with lids

Ingredients

* ¾ c butter
* 2 c onion, chopped
* 2 c celery, chopped
* 1-2 t salt
* pepper
* 3 t sage
* 3 t thyme
* 1 t marjoram
* 1 t rosemary
* ½ c fresh parsley, chopped
* 2-3 T apple cider vinegar
* 16 c bread cubes*
* 4 c green apples, chopped
* 1½ c raisins (optional)
* 1½ c lightly toasted walnuts, minced
* 2 c vegetable stock

Directions Melt butter or olive oil over medium high heat and sauté onion and celery until soft and starting to turn golden. Add salt, pepper, herb, and vinegar. Mix well and remove from heat.

Preheat oven to 350.

In the bowl, combine bread, apples, raisins, and walnuts. Stir in onion mixture until well combined.

Toss with half of the stock and check consistency - you want the stuffing to be moist but not soggy. Add more stock as needed, then taste and adjust seasonings.

Butter the casseroles, add stuffing, cover, and bake for 45 minutes.

Vegetarian Stuffing
3/4 cup onion, diced
1/2 cup celery, diced
1/2 cup apple, peeled and diced
2 tsp dried or 3 tbsp. minced fresh parsley
1/2 tsp dried sage
1/4 tsp salt
pinch cayenne pepper
4 cups bread cubes (white or whole grain)
1/2 cup dried cranberries
1/4 cup chopped pecans (optional)
10-12 tbsp strong vegetable broth* (up to 3/4 cup)

Preheat the oven to 350F and lightly grease a 1.5-quart baking dish.
In a small frying pan, sautee the onion, celery and apple until tender with the parsley, sage, salt, cayenne (or regular pepper, if you prefer). This should take about 5 minutes. Remove from heat.
In a large bowl, combine the bread cubes with onion mixture, cranberries, pecans, vegetable broth, adding slightly more if the bread is very absorbant (some need more liquids), and mix well. Taste one of the cubes and, if necessary, add additional salt or pepper.
Pour into prepared casserole dish and cover with aluminum foil. Bake for 20 minutes. Remove foil and bake for an additional 20 minutes, until top is crisp and golden.
Serve immediately.

Really good vegetarian cookbooks/recipe websites?

best vegan meatloaf recipe ever image

Jack

It seems that all of the recipes I've found so far online are disgusting and try to make meat-like dishes with meat substitutes (tofu meatloaf, etc.) Any recipes like that 1.) sound repulsive, and 2.) don't taste too great either.
Can anyone suggest any vegetarian cookbooks and/or websites with recipes? Preferably not vegan, just vegetarian. Thank you!
By vegan, I mean [preferably] not recipes that exclude dairy. And no meat-substitute dishes, like meatloaf made out of tofu or something, for example.

Answer
The best one I have ever owned is called "The vegan family cookbook." The recipes are delicious, and easy to make.

Vegans: Were you surprised that vegan food taste better than animal based foods?

Since the world/media (meat/dairy companies) we live in leads us to believe a meal does/can not taste good unless it contains some form of animal product, vegans were you surprised that vegan food taste better than animal based foods, and that there is way more variety?
Some of you did not read my question statements, vegan food: food free of animal products. You do not have to be a vegan to eat them, but you are definitely more aware of the foods and variety of vegan foods being vegan.

Fez: Those are the basics, vegan foods consists way much more than that.

tahunajcw: Look up the word arrogant. And techinally vegan food is *normal food*, it is just a description. Yes please look at our dental structure, if you think that is proof we need meat, then you need help or have some weird ass teeth, considering it is further proof we are more of herbivores! Wow you are ignorant, pick up a book, go to school, search the net, learn!

Answer
YES!
Talk about being pleasantly surprised!! :-D
I made some vegan blueberry-banana muffins last weekend and they were SO good!
Blueberry muffins have always been a fave of mine, but ever since I stopped eating eggs, I didn't eat them anymore. I found the recipe and they were actually tastier than their egg-laden counterparts.
When I actually ate meat, I hated meatloaf. But I recently made a homemade mock meatloaf that tasted delicious!!
Surprised. Impressed. Excited.
YEAH!! Vegan food kicks butt on SO many levels. And it's so much better for us!

Have you ever been to a vegetarian potluck?

Did you just love it? Was it at an SDA church?

Yes, I've been to an Adventist potluck and they are almost always with very very few exception vegetarian! SDA ladies know how to cook really good! Yes, I love vegetarian potlucks! Although I am not a vegetarian, I sure love vegetarian potlucks over the ones that serve meat!

Answer
I am an SDA also and have enjoyed / cooked for many vegetarian potlucks. Unlike traditional potlucks and family reunions where fried chicken, sloppy joes and meatloaf are the staples. I know there are many veggie cooks that use meat substitutes but I don't recall seeing many at our potlucks. However, the one exception is Special K loaf with carmelized onion gravy - yum yum.

One of the ladies makes the absolute best stuffed shells with tofu, fresh chopped spinach and homemade tomato sauce. Most of the ladies at my church are excellent cooks and I always look forward to the next potluck. It also gives me an excuse to try new recipes.

Do you have a recipe for homemade meatloaf?

Roxas of O

I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

Answer
First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.

Vegans: Do you ever crave for foods that you have blocked from your diet?

vegan meatloaf recipes
 on Vegan Meatloaf Recipe
vegan meatloaf recipes image

 LAUR3N

You know, like the usual craving for something that you haven't had in a while, or when you see something really tasty at the store or in an ad and you look at it and it looks really good..?
Examples:
Ice cream, cake, candy, chips, any canned or boxed foods, meat...

*From someone who craves everything.
If so, how do you work your way through the craving?

Answer
Let's see,if I want ice cream,I eat soy or rice ice cream. Candy,I hate,but there's so many kinds of vegan candies. Goto-http://veganessentials.com/ or https://www.veganstore.com/index.html?action=myaccount if you want to order things or just go to your local health food store. READ LABELS EVEN IN A HEALTH FOOD STORE!! Chocolate I eat whenever I want,just the dark chocolate kinds,there's so many types and flavors of vegan chocolates to try. Chips,If I really want it I eat it. Chips are only not vegan if cooked in animal fats or coated in cheese or sour cream. Boxed foods are disgusting,I only like to eat healthy foods.For these,once again check out the websites I gave you or hit your health food stores. Meat,is even more disgusting. If I ever want something with a meaty texture then I just make some seitan.Also,I will sometimes eat tempeh,or tofu. If you really "need" something even more meat like try vegan sausages,burgers or "hot dogs". Cheese,I either use nutritional yeast or soy,nut or rice cheeses.
The only things I may crave are dishes from my childhood. If I feel sad or homesick and I want something homey,I may make something like vegan stuffed peppers or mashed potatoes with really great side dishes.Those are both things my mom would make,only the mashed potatoes dish was usually with chicken. I've learned to make everything my mom would make when I was growing up,but vegan style. Even meatloaf,or spaghetti and "meat" balls.
There's no reason to have an unfulfilled craving as a vegan. I think I have a recipe for everything including vegan marshmallows for S'mores.
Here's some great cookbooks that have a lot of those great "childhood" recipes but veganized. They are all by Sarah Kramer and only some call for vegan substitute foods-"How it all Vegan", In the Garden of Vegan" and "La Dolce Vegan". They're lots of fun. Give them a go. Have fun with your diet and be creative.

Does anyone have the recipe from Omega Institute for their vegetarian meatloaf? It is outstanding. thanks?

cmasvt

I was there recently and this dish was outstanding. Also they offered a vegan gravy to go with it. That recipe would be appreciated as well.

Vegetarians and or Vegans, what's your lunch?

I'm stuck for ideas for lunches.
I go to school everyday, so it's gotta be an easy one. And unless I can make it and put it in a thermos, no hot foods either.

What do you usually pack?

Answer
Things such as hummus and peanut butter are tasty and convenient solutions for a lunch on the go. Look into buying vegetarian canned soups to pack into a thermo. Most grocers now carry lunch meat alternatives such as veggie hot dogs and tofurky slices- so you may want to consider trying some of those.

gelatin-free yogurt (dairy or nondairy)
fresh fruit or fruit cups
granola
hummus
peanut butter
veggie dip
carrot sticks
celery sticks
cereal
crackers
pretzels
salads
veggie soups
chips
soy milk

Another good idea is to see if your local grocers sell vegetarian-friendly MRE's to the public. MRE's are specially packed foods that can be heated without the use of a microwave or fire. There is a heating pad that is activated with water. Soldiers have and still do use them abroad when at war out in the rugged terrain. These foods include spaghetti, macaroni, veggie meatloaf, and more. http://mreinfo.com/

If you don't mind taking a little time to prepare some of your meals in advance, I have included a link to help you discover and try out vegetarian lunch recipes from a vegan mother's blog. http://veganlunchbox.blogspot.com/

Vegetarian "Meat Loaf"?

One of my staff is a vegetarian but remembers loving meatloaf! Since her last day at work is coming up on the 28th, I wanted to try to make something that would satisfy her craving while sticking with the vegetarian diet she prefers. Help!

Answer
Go to the Morningstar Farms website (www.morningstarfarms.com). They have a recipe for "meatless loaf" using their meatless crumbles. It's really good if you follow the recipe exactly. I've tried adding things and it doesn't come out as firm - but then again, I always had a hard time with "real" meatloaf too. LOL Don't forget to add ketchup on top during the last few minutes of baking... makes it taste much more like meatloaf than if you leave it plain. :)

Vegetarian snacks easily portable in a cooler. Need ideas please! I am going on a trip this weekend.?

vegetarian meatloaf recipes easy
 on This is a easy to make very healthy recipe for vegetarian meatloaf .
vegetarian meatloaf recipes easy image

lissabeth

There are 3 couples taking a weekend trip. 2 of them are riding their Harleys there, we are trailering ours due to no saddle bags. One of the women is a vegetarian, and I would like to get a few ideas for snacks or easy dishes.
We have a rented cabin with a kitchen, but one never knows what kind of utensils or dishes will be available and we really don't know what we will find to shop for. I will be taking a cooler and I thought about taking ingredients for stuffed mushrooms or stuffed cherry tomatoes. I would mix the (stuffings) before I leave then it would be easy to get them ready upon arrival.

Answer
Some good snacks for the road are dried fruit, trail mix, primal strips (vegan jerky), and/or granola...plus I found some ideas for dinner. A vegan meat loaf can be mixed ahead of time...the recipe is below:

Vegan Meatloaf
Adapted from a recipe in The Joy of Cooking, 1997 Edition
1 14oz. package GimmeLean
3/4 cup finely chopped onions
1/2 cup quick-cooking rolled oats
1/3 cup ketchup
1/3 cup finely chopped parsley
1/2 tsp. thyme
1/2 tsp. salt
1/4 tsp. black pepper
3 tbsp applesauce
1 tbsp vegetable oil
1 tbsp all-purpose white flour

Mix all ingredients together in a big bowl with your hands until they just come together. Joy of Cooking warns you not to overmix, though I can't imagine anything too terrible could happen if you did.

Put in a lightly oiled loaf pan and bake at 350 degrees Fahrenheit for 45 minutes.

The site where the recipe came from also has some assorted recipes that may be helpful in sparking some ideas that you can run past your vegetarian friend who will be traveling with you.

How should I convince my dad that I want to be a vegetarian?
