Does anyone have a recipe for turkey meatloaf that does not call for eggs?

I'm on a special diet and cannot eat dairy (including eggs), tomatoes, or really any processed food. I have a hankering for some veggie turkey meatloaf and am looking for a recipe with no eggs. Will oil work?

Turkey Meatloaf

1 medium onion, quartered
2 carrots, each cut in 2 or 3 pieces
2 stalks celery, each cut in 2 or 3 pieces
1 handful spinach, washed
3/4 pound ground turkey breast
3/4 pound ground turkey thigh meat
1 cup cooked quinoa
2 teaspoons dried thyme
2 tablespoons chopped fresh parsley
1/2 teaspoon ground sage
1 teaspoon sea salt
4 tablespoons organic ketchup, plus more for brushing


1. Combine onion, carrots, and celery in a food processor and pulse until roughly chopped (do not purée).
Transfer to a large bowl.

2. Preheat oven to 375°.
Place spinach in food processor and pulse until finely chopped.
Add to onion mixture.
Add remaining ingredients to bowl and mix with your fingers.
Form into a large loaf and transfer to a 9x5-inch loaf pan.
Brush with additional ketchup.

Bake for about 1 hour, until a meat thermometer reads 165°.
Cool 5 minutes before slicing.

Meatloaf is one of those things you can add to...so be creative (if you want)! This is my favorite recipe:

Ingredients
2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic, minced
1 package Ground Turkey
1/2 cup fresh breadcrumbs
1 egg
3/4 cup ketchup, divided
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper


Directions
Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

Add turkey, breadcrumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8- x 4-inch loaf pan. Spread remaining 1/2 cup ketchup over top. 2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper


Directions

Any recipes for ground turkey besides... ?

Turkey Marsala Casserole

â¢2 medium onions, chopped
â¢3 cloves garlic, minced
â¢20 ounce package of ground turkey breast
â¢1 T olive oil
â¢Salt and pepper (donât be shy here)

â¢16 ounce box elbow macaroni

â¢14 ounce can beef broth
â¢Â¾ cup Marsala wine
â¢Â½ cup flour
â¢Â½ cup water

â¢4 ounce jar of roasted red peppers, chopped

â¢2 cups shredded mozzarella cheese, divided


Preheat the oven to 375

Boil the macaroni in plenty of boiling water, to package instructions, but leaving a little on the âal denteâ firm side. Drain.

Meanwhile, brown the meat, onions and garlic in oil, with salt and pepper, until meat is cooked and onion is tender. Drain.

Bring beef broth and Marsala wine to a boil. Mix flour and water together and add slowly to liquid, whisking and returning to a boil after each time you add some. You want to thicken the mixture to a consistency of gravy.

Mix the meat mixture, the broth, the macaroni, the peppers, ½ cup of the cheese together. Load into a sprayed 9x13 baking dish, cover with aluminum foil, and put into the preheated oven for an hour.

Remove cover, sprinkle with remaining cheese, and heat for 5-10 minutes until cheese is melted. Let stand for 10 minutes before serving.



Turkey Noodle Casserole

1/2 pound extra wide egg noodles
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices bacon or turkey bacon, chopped
1 1/3 pound, the average weight of 1 package, ground turkey breast
1 medium onion, chopped
Black pepper
2 teaspoons dried thyme or poultry seasoning
1/2 cup dry white wine
1 cup chicken stock, available on soup aisle, eyeball it
1/2 cup heavy cream, 3 turns of the pan
1/4 teaspoon freshly grated nutmeg
2 tablespoons softened butter
2 cups grated Gruyere, about an 8-ounce brick
1 cup plain bread crumbs
2 to 3 tablespoons chopped parsley leaves

Bring a large pot of water to a boil for your egg noodles. When it boils, salt the water and cook noodles to al dente.

Preheat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan, and bacon or turkey bacon. Render the bacon fat 2 to 3 minutes, until bacon begins to brown at edges. Add meat and brown it, crumbling it with a wooden spoon. Move the meat over to 1 side of the pan and add mushrooms and onions to the opposite side. Cook mushrooms and onions 3 to 5 minutes, then combine the meat with veggies and season the mixture liberally with salt and pepper, then sprinkle in the ground thyme or poultry seasoning. Cook another 5 minutes then add wine. Deglaze the pan, lifting up pan drippings and bits. Stir in stock and bring to a bubble, then stir in cream and reduce the heat to low. Add nutmeg to sauce and stir. Taste to adjust seasonings.
Preheat broiler to high. Combine noodles with turkey and sauce. Grease a casserole dish with a little softened butter nested in a piece of paper towel then transfer the turkey noodle mixture to the dish. Top the casserole with Gruyere then bread crumbs. Place the casserole 8 to 10 inches from the broiler and brown 2 to 3 minutes until cheese is melted and the crumbs are brown. Remove from oven and garnish the casserole with parsley.

In or out of the turkey? Is there a good veggie recipe? My Aunt thinks I am some kinda "answers expert" so I apologize she isn't on here asking herself she made me! LOL So any help you can give.

i like it out,....safer.. i just made this great vegatarian stuffing...I added all the 'optionals' and it was fantastic. I didnt shape it into a meatloaf like shape tho, just put it in a casserole dish

1 (1 pound) loaf day-old bread, torn into small pieces
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can vegetable broth
2 tablespoons water
1 teaspoon poultry seasoning
salt to taste
ground black pepper to taste
1/2 cup wild rice, cooked (optional)
1/4 cup dried cranberries (optional)
1/2 cup fresh mushrooms (optional)
1/2 cup chopped pecans (optional)
1/4 cup cubed apples (optional)


DIRECTIONS
Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.

My hubby and I are alone this week and on a budget. Any ideas for cheap recipes that you can maybe get a different meal out of the following night. Use leftovers to make something new? Or, any cheap meal ideas?

You could make roast chicken one night and then the next night use the leftovers to make enchiladas. Meatloaf is an inexpensive meal with mashed potatoes and a veggie - it is good the next night with gravy. Chili is another meal that does not cost much and the next night you can have chili mac or make a pot of pasta sauce and one night have spaghetti and the next night ravioli.

Cheesy Chicken Enchiladas
Leftover chicken? Here's a tasty way to use it!

Prep Time:25 min
Start to Finish:55 min
Makes:5 servings (2 enchiladas each)

1 can (18.5 oz) Progresso® Carb Monitor⢠chicken cheese enchilada-style soup
1 can (10 oz) Old El Paso® hot or mild enchilada sauce
2 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese (8 oz)
10 corn tortillas (6 inches)
2 medium green onions, thinly sliced

1. Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.
2. In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.
3. Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.

Turkey-Green Chile Enchiladas
Leftover turkey? Mix it with cheese, chiles and cumin for delicious hot and spicy enchiladas.

Sauce
2 tablespoons vegetable oil
1 large onion, finely chopped (1 cup)
2 cloves garlic, finely chopped
1 cup chicken broth
2 tablespoons semisweet chocolate chips
1 tablespoon ground ancho chiles
1 teaspoon ground cumin
1/2 teaspoon salt
1 can (28 oz) Muir Glen® organic fire roasted crushed tomatoes, undrained
Enchiladas
2 cups shredded cooked turkey
1 cup sour cream
1 1/2 cups shredded Cheddar cheese (6 oz)
2 cans (4.5 oz each) Old El Paso® chopped green chiles, undrained
1 package (11.5 oz) Old El Paso® flour tortillas (8-inch; 8 tortillas)
1 cup shredded pepper Jack cheese (4 oz)

1. Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.
3. In medium bowl, mix all enchilada ingredients except tortillas and pepper Jack cheese. Spread about 1/2 cup turkey mixture over each tortilla; top with 2 tablespoons sauce. Roll up tortillas; arrange seam sides down in baking dish. Pour remaining sauce over tortillas. Top with pepper Jack cheese.
4. Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 30 to 45 minutes or until thoroughly heated.

Beef Stew for Two
Prep: 25 min.
Cook: 11 to 12 hrs. (low) or 5-1/2 to 6 hrs. (high) or 9 to 10 hrs. (no heat setting) Slow Cooker

Ingredients
8 ounces beef chuck roast, cut into 1-inch cubes
1 cup no-salt-added tomato juice
1/2 cup canned reduced-sodium chicken broth
1/2 cup chopped potato
1/2 cup chopped carrot
1/2 cup frozen cut green beans
1/2 cup chopped celery
2 teaspoons quick-cooking tapioca
1/2 teaspoon dried thyme, crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced

Directions
1. Combine beef, tomato juice, broth, potato, carrot, frozen green beans, celery, tapioca, thyme, salt, pepper, and garlic in a 1-1/2-quart slow cooker.

2. Cover; cook on low-heat setting for 11 to 12 hours or on high-heat setting for 5-1/2 to 6 hours. If no heat setting is available, cook for 9 to 10 hours.

Need some easy ground turkey recipes....?

recently switched from beef to turkey out of curiosity for taste and now i can't get enough!
i need ideas now for how to cook the ground turkey... i've taken my favorite ground beef recipes and already made those...
stuffed peppers, meatloaf, meatballs, burgers, "hamburger helper" type casseroles (noodles, veggies, sauce or cheese...)

anyone have any other quick turkey recipes? i say quick because i have done alot of web browsing but seem to find recipes that either require over an hour to prepare (sorry, no time for that on weekdays after work) or more than 20 ingredients/rare ingredients...

anyone?

Do you like soups? Here are some recommendations form a friend's recipe box...


You could try this chili:

* 2 cans of condensed tomato soup
* 1 can of tomato paste
* 1 packet of chili mix
* about ½ cup of water
* 1 tsp. of beef bullion
* 1 can light red kidney beans
* however much ground meat was leftover from last night
* 1 tsp. cumin
* 1 tsp. black pepper
* a dash of cayenne pepper
* a dash of paprika
* a dash of garlic

...and I slapped it into the crock pot on low for 8 hours.


9 Can vegetable soup:

Nine Can Vegetable Soup

* 2 cans Hormel chili, any variety
* 1 can vegetable soup
* 1 can green beans
* 1 can sliced new potatoes
* 1 can mixed vegetables
* 1 can corn
* 2 cans diced tomatoes (for extra kick, use a can of tomatoes with green chilies in place of one can of diced tomatoes).



Optional: 1lb ground meat*

Dump the entire contents of every can into the crockpot - liquid and all.

*Brown turkey or beef and drain and add to veggies in crockpot. Heat on low all day, or on high for less than 2 hours.

I think I make this different every time. I usually only use 1 can of diced tomatoes... and substitute a can of beans or whatever looks good, or maybe an extra can of vegetable soup. This time I used Beef with Barley & Vegetables as the soup, and the diced tomatoes with roasted garlic. Also, I usually get the Hormel chili, one can with beans, one can without.

cooking for lunch... recipes?

Q. Anyone have any recipes for an easy lunch. I find that I can make dinners but for some reason lunch is a challenge. I don't want to make a two hour lunch and I have 5 children to cook for, when there is no school. I can't even seem to grocery shop well to accommodate lunch!

Sandwiches i.e. ham & cheese, tuna/chicken salad, chicken or turkey breast, lettuce & tomatoes. Have a little side of cold potato or mac salad. Keep lots of fresh fruit around to go with - apples, bananas, oranges, raisins, grapes, yogurt or little pudding cups, fruit salad or a few chips. Kid ideas - mac n cheese, sloppy joes, kabobs (fruit w a yogurt dipping sauce or chicken nuggets). If you make meatloaf or meatballs the night before, make a meatloaf or meatball sanwich. Cold pasta salads are healthy, and you can add in any veggies, cherry tomatoes, and dressing (i.e. Italian etc.). Make the sandwiches interesting - roll em up in a flour tortilla or use a star shaped cookie cutter for the bread. Or little min pizzas on a flour tortilla - lay out the toppings & let the kids have fun making their own. Eggs/frittatas are easy - add in mushrooms, onions, shredded cheese.

what is your best classic meatloaf recipe?

Hello Everyone. So I am craving meatloaf tonight. I've never made it, but I have eaten it and love it. I will be using turkey, turkey because I don't like red meat, and every recipe I find for Turkey meatloaf is all healthy eating stuff. I simply just want a classic DELICIOUS meatloaf recipe.I will be cooking for my nieces and nephew, so I will be sneaking in some veggies. thanks all. ; )

ps. I am serving this with mashed potatoes and spinach. yummmmmm.

Meatloaf is one of those things you can add to...so be creative (if you want)! This is my favorite recipe:

Ingredients
2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic, minced
1 package Ground Turkey
1/2 cup fresh breadcrumbs
1 egg
3/4 cup ketchup, divided
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper


Directions
Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

Add turkey, breadcrumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8- x 4-inch loaf pan. Spread remaining 1/2 cup ketchup over top. Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165ºF. Let stand at room temperature 5 minutes before slicing.

Cheesy Chicken Enchiladas

Prep Time:25 min
Start to Finish:55 min
Makes:5 servings (2 enchiladas each)

1 can (18.5 oz) Progresso® Carb Monitor⢠chicken cheese enchilada-style soup
1 can (10 oz) Old El Paso® hot or mild enchilada sauce
2 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese (8 oz)
10 corn tortillas (6 inches)
2 medium green onions, thinly sliced

1. Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.
2. In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.

1/2 teaspoon salt
1 can (28 oz) Muir Glen® organic fire roasted crushed tomatoes, undrained
Enchiladas
2 cups shredded cooked turkey
1 cup sour cream
1 1/2 cups shredded Cheddar cheese (6 oz)
2 cans (4.5 oz each) Old El Paso® chopped green chiles, undrained
1 package (11.5 oz) Old El Paso® flour tortillas (8-inch; 8 tortillas)
1 cup shredded pepper Jack cheese (4 oz)

1. Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
2. In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.

1 cup no-salt-added tomato juice
1/2 cup canned reduced-sodium chicken broth
1/2 cup chopped potato
1/2 cup chopped carrot
1/2 cup frozen cut green beans
1/2 cup chopped celery
2 teaspoons quick-cooking tapioca
1/2 teaspoon dried thyme, crushed
1/8 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced

Directions
1. Combine beef, tomato juice, broth, potato, carrot, frozen green beans, celery, tapioca, thyme, salt, pepper, and garlic in a 1-1/2-quart slow cooker.

What is the best stuffing recipe?

In or out of the turkey? Is there a good veggie recipe? My Aunt thinks I am some kinda "answers expert" so I apologize she isn't on here asking herself she made me! LOL So any help you can give.

i like it out,....safer.. i just made this great vegatarian stuffing...I added all the 'optionals' and it was fantastic. I didnt shape it into a meatloaf like shape tho, just put it in a casserole dish

1 (1 pound) loaf day-old bread, torn into small pieces
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can vegetable broth
2 tablespoons water
1 teaspoon poultry seasoning
salt to taste
ground black pepper to taste
1/2 cup wild rice, cooked (optional)
1/4 cup dried cranberries (optional)
1/2 cup fresh mushrooms (optional)
1/2 cup chopped pecans (optional)
1/4 cup cubed apples (optional)


DIRECTIONS
Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.

2 stalks celery, each cut in 2 or 3 pieces
1 handful spinach, washed
3/4 pound ground turkey breast
3/4 pound ground turkey thigh meat
1 cup cooked quinoa
2 teaspoons dried thyme
2 tablespoons chopped fresh parsley
1/2 teaspoon ground sage
1 teaspoon sea salt
4 tablespoons organic ketchup, plus more for brushing


1. Combine onion, carrots, and celery in a food processor and pulse until roughly chopped (do not purée).
Transfer to a large bowl.

2. Preheat oven to 375°.
Place spinach in food processor and pulse until finely chopped.
Add to onion mixture.
Add remaining ingredients to bowl and mix with your fingers.
Form into a large loaf and transfer to a 9x5-inch loaf pan.
Brush with additional ketchup.

Bake for about 1 hour, until a meat thermometer reads 165°.
Cool 5 minutes before slicing.

2 garlic gloves
half a yellow onion, diced
1/2 red bell pepper diced
1/2 green bell pepper diced
1 cup celery diced
1 pound ground beef or turkey
1/2 cop ground bread crumbs (like progresso)
2 tablespoons worstichere
1 egg
1/4 cup milk

saute all veggies till tender, preheat oven to 375, mixed sauteed veggies with remaining ingredients, salt and pepper to taste. put in loaf pan and cook for 30 minutes, drain off fat, cover with sauce and return to oven for 15-20 minutes, serve with extra sauce

Sauce:
1/2 cup brewed coffee (i use what was left over form the morning)
1/2 ketchup
1/4 brown sugar
Garlic powder to taste

measurements are rough i always eyeball, combine all in saucepan and bring to a simmer till sugar dissolves and slightly thickened.

Answer
Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream

Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.



Mom's Potato Soup
8-10 large potatoes, peeled and diced
1 large onion, diced
4 stalks celery sliced
Water
6 cups milk
Salt and pepper to taste

In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.



Cheeseburger Macaroni
1lb. Hamburger
1 box macaroni and cheese
¼ cup milk
2 tbsp. Butter
1½ cups shredded cheese (your choice)
(Optional) Mushrooms, onion, green peppers, chopped

Prepare macaroni and cheese according to box directions. Brown hamburger in a separate skillet, drain grease. Combine macaroni mixture and hamburger, add milk and butter, macaroni cheese packet and shredded cheese. Mix well to combine.


Mom's American Goulash
1 lb. Hamburger
2 small cans tomato sauce
1 can diced tomatoes with juice
1 lb. Large elbow macaroni
2 tbsp. Butter
Salt and Pepper to taste

Brown hamburger until no longer pink, drain any grease. Prepare macaroni according to package directions. Combine hamburger and macaroni in a large bowl or pot, add sauce, tomatoes with juice and butter. Allow to sit 15 minutes on warm so that macaroni absorbs some of the sauce. Add salt and pepper to taste.

Bubble Pizza
2 tubes biscuits
1 lb hamburger, browned
2 cup shredded cheese, can use 1c moz and 1c cheddar
1 jar pizza sauce
Preferred pizza toppings

cut biscuits into quarters and place in a 9x13 baking pan, stir in all other ingredients and bake according to biscuit tube directions


Mom's Broccoli cheese soup
1/2 onion, chopped
1 bag frozen chopped broccoli
2 1/2 cups parmesan cheese
1 cup cheddar cheese, shredded
1 can evaporated milk

Saute onion until tender. Place in crockpot with broccoli. Just barely cover with water, cook 1 hour on high. Stir in milk and cheeses. Cover and allow to melt, then cook for one hour on low. Serve.

Chops and Potato Dinner
boneless porkchops
1 pkg. Scallopped or au gratin potatoes
non-dairy creamer to replace milk in potatoes

Prepare potatoes according to directions using nondairy creamer in place of milk. Place potatoes in crock pot. Place chops on top of potatoes. Turn slow cooker on high for 1-2 hours or until potatoes have absorbed excess liquid and chops are cooked through.

What to eat on a low carb diet such as Atkins?

I am trying to do a low carb diet and I was wondering what should I eat in order to make the diet most effective and efficient? I know cut out all breads, pastas, sweets, etc...but what veggies are okay and what isn't? the obvious potatoes and other starchy vegetables I know. Can someone please fill me in or give me a website to refer to. thanks!

During the first 2 weeks, you can have several cups of salads. Jicama, cucumber, celery & radish marinated in sesame oil & hot pepper flakes with rice wine vinegar & artificial sweetener. Make a stir fry with Bok Choy, bean sprouts, bamboo shoots, celery, mushrooms, shirataki noodles & your fav meats. I love eggs and could eat deviled eggs every day. You can smother omelets & meats with mushrooms & peppers & cheese. Meatzza - Meatloaf with pizza toppings (pepperoni, mushrooms, peppers, mozzarella) I prefer very thin sausage patties fried crispy with pizza toppings. Pork rinds & celery sticks are great crunch and can be eaten with dips (avocado/mayo/cayenne is my fav) & tuna/chicken/turkey/egg salads. I love love love my rotisserie and it makes the meats extra tasty. I cook a turkey every couple of months and make soup with the bones (add vinegar to leach minerals) and turkey salads. I'll cube up some turkey meat mix in a couple of raw eggs add cheese (and broccoli after induction) with cayenne powder & nuke a couple of minutes for nearly instant meal. Flax seed should be eaten 2T daily even in induction.

Ground flax seed (2-3 Tbsp) 1/4 cup of water, cinnamon, artificial sweetener, mix in a raw egg - let sit 10 min to absorb liquid, put some cream cheese in the middle and nuke for 1.5 min. for hot cereal or 2 min. for more of a muffin type thing. Great low carb, high fiber treat.

After the 2 week induction, you add 5 grams of carbs per day every week and add a much greater variety of non starchy vegetables. Change your mindset - eat what you like to eat, just adapt it to low carb -
replace bread with lettuce
replace pasta with cabbage
replace rice with cauliflower
replace potatoes with brocolli
I eat all my favorite Chinese, Italian, even Mexican foods with low carb foods. Cabbage makes an excellent pasta substitute (for me) Make a lasagna with blanched cabbage leaves & thinly fried eggplant instead of noodles. Sugar free pasta sauce over fried cabbage. My fav is chicken cacciatore, I add greens & flaxseed or chia seed for body and also add pizza toppings - pepperoni, mushrooms, lots of mozzarrella. Alfredo sauce is also low carb.

I don't cook often. I usually make huge batches of food & freeze most of it. I cook meats 20-30# at a time (for just me) I have gone into the forums for recipes (especially when I first started low carb) I was shocked that fried "rice" made with grated cauliflower tasted just like it's name sake. Shirataki noodles are traditional in Japanese sukiyaki and low carb. I've heard faux mashed "taters" made with cauliflower & cream cheese can fool non low carbers. "potato" salad using cauliflower instead.

Hope I've given you a start, I just don't cook much but many recipes abound. Adapt what you've always eaten first (I bet someone has a recipe for it or low carb version) and then start exploring.

Faux tapioca - 2 cups of water, 5 scoops of low carb whey protein powder, stir together & add cup of chia seeds, after they have started to absorb the water, add in 2 cans of coconut milk (or cream and added water during induction) & artificial sweetener if you like and mix it all in. Can be eaten after an hour but will be better tomorrow. Cream a pkg. of cream cheese into a can of pumpkin and add to the faux tapioca for an even more nutritious pumpkin pie pudding.

* 1 (12 ounce) package Jimmy Dean sausage
* 1/2 cup onion, minced
* 1 garlic clove, minced
* 1 tablespoon italian seasoning
* 1-2 cup fresh mushrooms, chopped

* 4 cups chicken broth
* 1/2 cup heavy cream
* 1/2 cup water

Directions
1.Brown sausage, drain, then add the onion, garlic, Italian seasoning and mushrooms and sauté until done.
2. Add pumpkin to this mixture and mix well.
3.Then stir in the broth and mix well.
4. Simmer 20-30 minutes.
5. Stir in the heavy cream and water and simmer on low another 10-15 minute Taste and add salt& pepper as needed.

Turkey Meatloaf

1 medium onion, quartered
2 carrots, each cut in 2 or 3 pieces
2 stalks celery, each cut in 2 or 3 pieces
1 handful spinach, washed
3/4 pound ground turkey breast
3/4 pound ground turkey thigh meat
1 cup cooked quinoa
2 teaspoons dried thyme
2 tablespoons chopped fresh parsley
1/2 teaspoon ground sage
1 teaspoon sea salt
4 tablespoons organic ketchup, plus more for brushing


1. Combine onion, carrots, and celery in a food processor and pulse until roughly chopped (do not purée).
Transfer to a large bowl.

2. Preheat oven to 375°.
Place spinach in food processor and pulse until finely chopped.
Add to onion mixture.
Add remaining ingredients to bowl and mix with your fingers.
Form into a large loaf and transfer to a 9x5-inch loaf pan.
Brush with additional ketchup.

Bake for about 1 hour, until a meat thermometer reads 165°.
Cool 5 minutes before slicing.

Why does healthy food have to taste so bad?

when i look up healthy recipes, it's always some plain tasting bullshit that i would never eat. it's always something like "roast chicken with rosemary" or "bread crumb baked chicken fingers". they never have other types of foods besides stereotypical american food that my family never eats. my mom is from the philippines, so she makes a lot of filipino food. and my dad is black, so we also eat southern style food too sometimes. does anyone know any healthy recipies that aren't boring and dull?

It depends on what you are talking about when you say "healthy food".
I eat a very low fat, good carb, high protein diet and I'm sorry but it tastes a million times better than the nasty fatty traditional American diet. I cannot stand fat and grease in everything. In fact my digestive system physically cannot handle it after a while anymore. I've been eating healthy too long.
So no, healthy food does not taste bad.

I think what you are complaining about is the fact that it doesn't taste like what you want it to taste like (fatty food). Sorry but it's not going to taste anything like nasty unhealthy food.
That's the biggest issue that American's have. They are too used to eating disgusting and nasty food that anything "healthy" isn't good enough.
It's like why an alcoholic will complain if all you are giving them is light beer vs. hard liquor.

You will not be able to knock off unhealthy food and make it taste good healthy. When you make non-fat mac and cheese it isn't going to have the same flavor and texture you are looking for.
However those foods like mac and cheese should be consumed in moderation. Eat the unhealthy kind every now and then to get your fix. But if you are looking for unhealthy replacements because that is all you eat, it's time to re-evaulate your whole diet.

It does take time to get used to healthy food. Your body is addicted to fat, sodium, and cholesterol.

To answer the question I know plenty of healthy recipes.
Most of the recipes you use now can be made healthy when you only prepare them with non-fat or low fat diary products, lean meat (sirloin steak, NO less than 93/7 ground beef, and boneless skinless chicken breasts (thighs are NOT healthy skinless or not.)), and you replace carbs with the whole wheat or high fiber options. Plus add more veggies. Each meal should have a fruit or veggie (1-3 servings).

Yes ground turkey is amazing as meatloaf. here's an awsome recipe from Rachel Ray for ground turkey meatloaf. It's healthy and even my husband loves it.

1lb Ground Turkey
1 box Turkey Stuffing
water
butter
Italian Style Bread Crumbs
1-2 eggs
Garlic and onion powder

Pre-heat oven to 350 degrees Farenhiet
Mix turkey stuffing according to box let set and fluff with fork. Let cool. Take your ground turkey mix with eggs, a cup or so of bread crumbs, stuffing, garlic powder and onion powder to taste (don't actually taste the meat though) Bake at 250 for 40-45 minutes or untill done and slightly grounden brown.

Serve with Mashed Potatoes, a Veggie and Gravy (recipe below)

Chicken Broth (med.-lrg. box)
Canola oil
Flour

Pour Chicken Broth into heavy saucepan and heat on high
Pour canola oil(about 1/4 -1/3 cup) into cup and mix with1/4-1/2 cup of flour and stir till smooth once chicken broth is heated pour flour mix into broth, bring to a boil, turn burner down to low-med heat and stir till begins to thicken

1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


TUNA NOODLE CASSEROLE
1 1lb. bag egg noodles
2 tbsp. butter
2 cans water packed tuna, do not drain
1 can cream of mushroom or cream of celery soup
1/2 cup sour cream

Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.



Mom's Potato Soup
8-10 large potatoes, peeled and diced
1 large onion, diced
4 stalks celery sliced
Water
6 cups milk
Salt and pepper to taste

In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.



Cheeseburger Macaroni
1lb. Hamburger
1 box macaroni and cheese
¼ cup milk
2 tbsp. Butter
1½ cups shredded cheese (your choice)
(Optional) Mushrooms, onion, green peppers, chopped

Prepare macaroni and cheese according to box directions. Brown hamburger in a separate skillet, drain grease. Combine macaroni mixture and hamburger, add milk and butter, macaroni cheese packet and shredded cheese. Mix well to combine.


Mom's American Goulash
1 lb. Hamburger
2 small cans tomato sauce
1 can diced tomatoes with juice
1 lb. Large elbow macaroni
2 tbsp. Butter
Salt and Pepper to taste

What to eat on a low carb diet such as Atkins?

I am trying to do a low carb diet and I was wondering what should I eat in order to make the diet most effective and efficient? I know cut out all breads, pastas, sweets, etc...but what veggies are okay and what isn't? the obvious potatoes and other starchy vegetables I know. Can someone please fill me in or give me a website to refer to. thanks!

During the first 2 weeks, you can have several cups of salads. Jicama, cucumber, celery & radish marinated in sesame oil & hot pepper flakes with rice wine vinegar & artificial sweetener. Make a stir fry with Bok Choy, bean sprouts, bamboo shoots, celery, mushrooms, shirataki noodles & your fav meats. I love eggs and could eat deviled eggs every day. You can smother omelets & meats with mushrooms & peppers & cheese. Meatzza - Meatloaf with pizza toppings (pepperoni, mushrooms, peppers, mozzarella) I prefer very thin sausage patties fried crispy with pizza toppings. Pork rinds & celery sticks are great crunch and can be eaten with dips (avocado/mayo/cayenne is my fav) & tuna/chicken/turkey/egg salads. I love love love my rotisserie and it makes the meats extra tasty. I cook a turkey every couple of months and make soup with the bones (add vinegar to leach minerals) and turkey salads. I'll cube up some turkey meat mix in a couple of raw eggs add cheese (and broccoli after induction) with cayenne powder & nuke a couple of minutes for nearly instant meal. Flax seed should be eaten 2T daily even in induction.

Ground flax seed (2-3 Tbsp) 1/4 cup of water, cinnamon, artificial sweetener, mix in a raw egg - let sit 10 min to absorb liquid, put some cream cheese in the middle and nuke for 1.5 min. for hot cereal or 2 min. for more of a muffin type thing. Great low carb, high fiber treat.

After the 2 week induction, you add 5 grams of carbs per day every week and add a much greater variety of non starchy vegetables. Change your mindset - eat what you like to eat, just adapt it to low carb -
replace bread with lettuce
replace pasta with cabbage
replace rice with cauliflower
replace potatoes with brocolli
I eat all my favorite Chinese, Italian, even Mexican foods with low carb foods. Cabbage makes an excellent pasta substitute (for me) Make a lasagna with blanched cabbage leaves & thinly fried eggplant instead of noodles. Sugar free pasta sauce over fried cabbage. My fav is chicken cacciatore, I add greens & flaxseed or chia seed for body and also add pizza toppings - pepperoni, mushrooms, lots of mozzarrella. Alfredo sauce is also low carb.

I don't cook often. I usually make huge batches of food & freeze most of it. I cook meats 20-30# at a time (for just me) I have gone into the forums for recipes (especially when I first started low carb) I was shocked that fried "rice" made with grated cauliflower tasted just like it's name sake. Shirataki noodles are traditional in Japanese sukiyaki and low carb. I've heard faux mashed "taters" made with cauliflower & cream cheese can fool non low carbers. "potato" salad using cauliflower instead.

Hope I've given you a start, I just don't cook much but many recipes abound. Adapt what you've always eaten first (I bet someone has a recipe for it or low carb version) and then start exploring.

I'm vegan and I normally cook only vegan food but I'm getting married soon and my boyfriend eats poultry, fish and drinks milk and I want to make him a full homemade meal just for him but I don't know what to make because I don't cook with those things. I've never cooked for him before so I want it to be really special. He loves chicken, beans, and rice so I need a really good recipe with these. I also want to make him a really good dessert. Something you've made before and everyone loved. Thank you!

You can use ground chicken or turkey or even crumbled tofu with soy sauce-- and he may never know that there was no meat with tofu-- just use ample BBQ sauce to mix

Shepard's Pie:
-Brown 1 pound beef/ ground turkey
-Add 1-2 cloves of garlic, 1 1/2 tsp Worcestershire sauce, and 3/4 cup ketchup
-Cover and simmer 20 minutes
-Coat casserole dish w/ nonstick cooking spray

1st Layer - meat sauce
2nd Layer - Green beans and corn
3rd Layer - mashed potatoes
Top with cheddar cheese (as much as you want)

350 degrees (preheated oven) for 30 minutes - bake uncovered


Meatloaf
1 1/2 pounds ground meat
1 slice of bread
1 egg
1 package of Lipton's Onion Soup Mix
pepper to taste
4 TBSP ketchup
1/2 cup half and half

*SAUCE*
4 TBSP apple cider vinegar
2 TBSP packed brown sugar
1/2 cup ketchup

preheat oven to 350 degrees

Mix sauce together until smooth and set aside

Add all ingredients together. Put in a loaf pan. Pour suace over and cook for 1 hour 15 minutes. Do this whether you use the sauce or not

Try Zatarain's Dirty Rice or Jambalaya Mix. With the dirty rice mix you have to use ground beef. With the Jambalaya Mix you can use chicken or smoked sausage.( *It taste best with sausage).

My version of ghoulash:

Ground Beef with vegetarain beans(pork and beans without the pork) with chopped onions, picante sauce, and tomato sauce. Serve over white rice.

Pasta Salad with veggies: Tri-colored rotini pasta with chopped onions, tomatoes, cucumbers and green olives. Mix with Robusto Italian Dressing. Add a little seasoned salt and black pepper. Chill in the frig.

Chicken Pettazini:

Spaghetti with chopped, grilled, boneless chicken breast, Four Cheese white sauce or the Roasted Garlic and Parmesan cheese white sauce. You can also add green pepper if you like.

Chocolate stuffed french toast

French bread
chocolate chips or chunks/morsels/etc
5 eggs
1 C milk
1 ts each cinnamon & vanilla

The night before you want to serve this:


Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.
Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

Preheat oven to 400F. Bake 20-25 minutes uncovered.

I been on a health kick lately. And I did some research and found out that a lot of the foods I eat are not only high in fat, but high in calories. OUCH. My favorite Chinese food is nearly 1300 calories alone!

I was wondering if any of you had some healthy recipes for your favorite foods. Or how to make your favorite food (such as pizza, noodles, etc) be a bit more healthy (if you cook it at home).

Chicken Chow Mein
1 cooking spray
1 1/2 cup fresh chopped onion
1 cup fresh chopped celery , sliced
1/2 cup sliced green bell peppers , chopped
2 cup cooked chicken breast, diced
14 oz Vegetables, canned, drained (Chinese-style)
4 oz canned mushroom slices, drained
1/4 tsp ground cumin
1 Bouillon, chicken, sodium free, instant packet (1 tbsp)
1 tbsp cornstarch
3 cup water

1 Coat a large skillet with cooking spray and heat it over medium heat until hot.
2 Stirring constantly, add the onion, celery, and green pepper and cook it for 3 minutes, or until the vegetables are tender.
3 Stir in the chicken, Chinese vegetables, mushrooms, and cumin. Continue to cook over medium heat for 1 minute.
4 After dissolving the bouillon granules and cornstarch in water, add it to the chicken and vegetable mixture. Continue to cook over medium heat, stirring constantly, until bubbly and thickened.

Chili Meatloaf
1 cooking spray
1 cup Tomato Sauce, unsalted, canned , divided
3 tbsp sweetener (sugar substitute) , divided
2 tsp Mustard, yellow, prepared
1 1/2 tsp chili powder , divided
1 tbsp onion flakes
1 tbsp parsley, dried
1/2 g salt
1 lb Turkey, ground, 99% fat free, raw (or ground beef)
1/4 cup Bread Crumbs, Italian style

1 Preheat oven to 350 degrees F. Coat a 9 x 5 inch nonstick loaf pan with cooking spray.
2 In a large bowl, combine 1/3 cup tomato sauce, 2 tablespoons sweetener, mustard, 1 teaspoon chili powder, onion flakes, parsley flakes and salt; mix well. Add in ground meat and bread crumbs and mix well. Pat into prepared loaf pan.
3 In a small bowl, combine and mix the remaining tomato sauce, chili powder and sweetener. Spoon mixture over top of meatloaf.
4 Bake 55 to 60 minutes. Remove meatloaf from oven and let cool for 5 minutes before slicing.

To help make food a bit more healthy you can use wheat and whole grain pasta's, rice, and bread. Use fresh or frozen veggies. Lean meats. Eat ground turkey instead of ground beef. Do not fry your foods. Bake, steam, grill or broil. Chose a healthy oil if you must use oil. Do not add sugar and salt to foods. Try herbs and spices instead. And above all else use portion control. Read labels to find out portion sizes and go by that. If you must have seconds, make it veggies. Example, say you want low calories, well then you can just search for low calorie recipes, or if you want low salt, you can search just low salt recipes.
