no eggs please!!!!!!!!!!!!!!!!!!!!!!!!

Answer
I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

vegan?????

I am already a vegetarian. I am, the only one in my family. I am 14

I want to become vegan but still be healthy. The rest of my family are big meat eaters. Can you give me some simple recipes and some advice on being vegan?

Also, do you know anything about the Hallelujah Diet?
Actually, vegan is one of the most healthiest diets. It cuts down on bone problems and cancer. Also, obesity, diabetes, and other serious illnesses.

Answer
Hi, great choice to become a vegan. I totally understand what you are going through.

I am also a teen and have been a vegan for almost four years now. I am still the only one in the whole entire family of 50+ meat lovers, so as you can imagine I had to be extremely focused, determined and self motivated to pull it off. I remember my first days as a vegan asking around on-line and I never got any satisfactory answers, so I had to learn it the hard way. Through that experience I decided to help others and share my knowledge with you.
FYI WITH THE FOLLOWING RECIPIES YOU WILL GET ALL THE VITAMINS YOU NEED. HOWEVER YOU MIGHT WANT TO TAKE SOME VITAMINS AND PROTIEN POWDER ON THE SIDE! Donât forget to regularly see the doctor.

The Hallelujah Diet is being used by hundreds and thousands of people around the world to accomplish what our present day medical system cannot. People are getting well from a wide array of disorders. In fact the Hallelujah Diet has been so successful that is was recently adopted by the successful Oasis of Hope hospital. Why? You've probably heard the saying "God chose the simple things to confound the wise". You can't get any simpler than the Hallelujah Diet. God didn't create our bodies to run on drugs or artificial, over processed and over cooked foods. Look at what God created us to eat, feed it to your body for several months, get a little exercise and you will be amazed at the difference. It is time to stop fighting the symptoms and change what we eat! There recently was a news report on TV on a large study that proved that folks in the 60's and older benefit more from fresh fruits and vegetables than they do from vitamins. Amazing, perhaps they'll prove that God was right after all....

I think that being vegan is quite similar to this diet in that you are leading a healthy lifestyle.

Meatloaf is one of those things you can add to...so be creative (if you want)! This is my favorite recipe:

Ingredients
2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic, minced
1 package Ground Turkey
1/2 cup fresh breadcrumbs
1 egg
3/4 cup ketchup, divided
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions
Heat oven to 350ºF. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes.

Add turkey, breadcrumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8- x 4-inch loaf pan. Spread remaining 1/2 cup ketchup over top. Bake for 50 to 55 minutes or until no longer pink in center and internal temperature of loaf reaches 165ºF. Let stand at room temperature 5 minutes before slicing.

My hubby and I are alone this week and on a budget. Any ideas for cheap recipes that you can maybe get a different meal out of the following night. Use leftovers to make something new? Or, any cheap meal ideas?

Answer
You could make roast chicken one night and then the next night use the leftovers to make enchiladas. Meatloaf is an inexpensive meal with mashed potatoes and a veggie - it is good the next night with gravy. Chili is another meal that does not cost much and the next night you can have chili mac or make a pot of pasta sauce and one night have spaghetti and the next night ravioli.

Cheesy Chicken Enchiladas
Leftover chicken? Here's a tasty way to use it!

Prep Time:25 min
Start to Finish:55 min
Makes:5 servings (2 enchiladas each)

1 can (18.5 oz) Progresso® Carb Monitor⢠chicken cheese enchilada-style soup
1 can (10 oz) Old El Paso® hot or mild enchilada sauce
2 cups shredded cooked chicken
2 cups shredded Monterey Jack cheese (8 oz)
10 corn tortillas (6 inches)
2 medium green onions, thinly sliced

1. Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.
2. In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.
3. Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.

1 large onion, finely chopped (1 cup)
2 cloves garlic, finely chopped

Really good Vegetarian recipes?

FallenANGE

I've been a Veggiebite ever since May of 2008. And since then, I've always eaten the side veggies that my parents cooked. They're EXTREMELY huge meat eaters. Every day, their supper consists of either, Hamburgers, Meatloaf, Porkchops, Steak, etc etc. And They would always fix something on the side like Corn, or other times, French fries. Anddd.. I'd really like to try something different.

Soo... Is there any really delicious Vegetarian recipes that are filling, healthy, and doesn't cost a lot of money?

I still eat sea food, btw.

Thanks in advance! :D

Answer
Go to www.vegcooking.com.

Search for a recipe called "Mama's Mock Meatloaf". It's superb!

When I was an omnivore I *hated* meatloaf. I tried this and I love it (go figure!). It's the perfect comfort food dish. I prepare it with a baked sweet potato and fresh steamed broccoli. Excellent combo! (and pretty colors on the plate)

What meals could I make using lentils apart from soups?

hannah

Answer
I have found two really good lentil recipes that I like a lot. One is for a vegetarian 'meatloaf' and the other is a broccoli lentil and rice casserole. There are many other recipes for lentil casseroles you can find on the internet. Indian dishes also often use lentils in curries, you can find these recipes by searching for Indian Daal recipes.
Lentils are also good for making veggie burgers or vegetarian sloppy joes.

Here is the link for the lentil loaf recipe:

http://www.food.com/recipe/really-good-vegetarian-meatloaf-really-33921

I usually add more tomato sauce than the recipe says. Sometimes I also sub the egg out with flaxseed (1TBS of ground flaxseed + 3 TBS of lukewarm water + mix until gooey= egg substitute for just about any recipe, including baking).
Also I like to spread ketchup over the top before I put it in the oven.

Here is the link for the casserole:

http://theliberalvegan.wordpress.com/2008/10/23/veganmofo-broccoli-lentil-casserole/

I am not vegan so I sometimes substitute parmesan or other cheese for the nutritional yeast and just use real butter. I've also made this recipe with asparagus instead of broccoli, or both together and it is very good. There are similar recipes on the internet but this is my favorite so far because it only takes one dish and is so easy to make, you don't have to precook anything, you just mix it all together and stick it in the oven.

I'm a vegetarian. What are some simple recipes?

Yaz

I recently bought tofu and a few broths from whole foods. I didn't even know what I was doing when I was grocery shopping. Anyway, please let me in on some good recipes and/or vegetarian cookbooks.
Excluding the obvious of course. i.e. SALAD! Haha. I need some real meals. Also, I don't eat fish or shellfish because I am allergic. Keep in mind I am 16 (going on 17) so simplicity is key.

Answer
What about a tofu scramble. You can use it the same way that you would use eggs. I go on tofu binges often so I cook it so many different ways. There are so many different types too, silk or firm are my favorites.
For a tofu scramble it is simple I will give you 2 recipes. One I make is a soy scramble, use soy or tamari. I saute some minced garlic, onions, carrots until tender then add the tofu and scramble it like it was an egg, then top with soy, salt, pepper, and for me always some hot asian chili paste or sauce and green scallion If you have black bean add it with the veg. Another one is to use Balsamic, oregano or basil and the some peppers if you like. More italian or greek influence. So now you have the basic try your hand on a scramble. Another thing I make is chili, I use the tofu like ground turkey or beef. I cook the onions, garlic, spice then add tofu and beans and more spice. You can even make a burrito scramble and put it in some whole wheat tortillas for breakfast or lunch. Tofu curry is always good, tofu with ginger, scallions, peanut oil and soy cold is good. It is good in noodles. I always make tofu curry with eggplant, longbeans, garlic, and thai green curry with a little kabocha pumpkin. The skies the limit with what you can do, make a tofu and veggie meatloaf or a loaf with chickpeas and veggie or lentils and veg. Good luck!

What are the benifits of becoming a vegetarian???

theraptor

I am interested in becoming a vegetarian. It is health driven as well as cruelty toward animals driven. Are the health benifits worth giving up meat? Also any advice to giving up meat would be appreciated and how to handle family situations when the rest of family and friends eat meat would be appreciated!!!!

Answer
Oh my gosh, some people are so silly. You can have a healthy diet as a vegetarian just like you can have one as a meat eater. I'm not a vegetarian but I do have a few vegetarian recipes that I use and my meat eating family loves them.

Stay away from the processed "fake meats" though, those aren't healthy by any stretch of the imagination. You can do wonders with tofu, and I even make a meatloaf with cottage cheese that is suprisingly good. Here's a few I use if you'd like to try them.
http://allrecipes.com/Recipe/Cottage-Cheese-Roast/Detail.aspx
http://allrecipes.com/Recipe/Orange-Beef-Style-Tofu-Stir-Fry/Detail.aspx
http://allrecipes.com/Recipe/Tofu-Parmigiana/Detail.aspx

As for your family and friends, they'll get used to it eventually. My family freaked a bit when my sister went vegetarian but now everyone's used to it. Good luck to you!

Fun & Unique Ground Beef Recipes?

Shamaii

Okay, let me start off by saying I love to cook.
But things like Spaghetti and Meatballs, Meatloaf, Chili, we have that all the time.
That bores me.
I have 1 basic package of ground beef. (I'm not exactly sure how many pounds that is)
I'm basically open to anything, but since it's about 3:30 where I am now, it has to be done by 7:30 at the latest.
I'd appreciate recipes with basic ingredients, but if I have to run out to the grocery store, I will.
It has to be able to feed 3 adults and 2 teenagers.
So if you could find something like that, it would be very helpful.
No one is allergic to anything, or has any vegetarian/vegan rules.
Myself, I'm 13.
So I need something that's not too hard, but not too easy either.
I've been cooking for a long while, so I know the basics.
Plus I like a challenge.
You can post the recipe down below, just be sure to post the ingredients and process too, or else I can't really use it.
Or you could give me a website(s) with recipes.
Just make sure it's something unique and fun, not something basic.
When I cook, I like to make it special and different.
Well, thanks for all your help. xx

Answer
MANICOTTI :
(This is incredibly easy....)

-- Saute' onions and garlic in oil until translucent. Add about a pound of ground beef and ground pepper. Cook till meat is done. Drain. Allow to cool.
-- Mix with ricotta cheese (or half ricotta and half cottage cheese). Stuff into the shells. Place the shells in a greased baking dish.
-- Cover with Spaghetti Sauce (home-made or canned). Cover with Parmesan and/or Mozzerella. Can use romano cheese as well.
-- Bake at 350 F until the cheese is browned and the sauce is bubbling --- probably 30-45 minutes.

~~
ALSO, the recipes on this page all look interesting and i suppose taste equally good!!.... (tried a couple myself... ;)))

Answer
apple sauce
some butter
Ousting eggs from baked goods
Eggs are used in baked goods for leavening, or lightness. They also may serve as a binder. The purpose the egg serves in the original recipe â as well as the amount of egg the recipe calls for â determines whether you need a substitute and, if so, which alternate ingredient will best serve the function of the egg in the recipe.

Flat foods such as pancakes and cookies don't rely on eggs for lift. In fact, in many cases, you can eliminate the egg without noticeably affecting the final product. That's especially true if the recipe calls for only one egg. If you do omit the egg, however, it's a good idea to add a tablespoon or two of additional liquid â soymilk, fruit juice, or water, for example â for each egg omitted to restore the recipe to its original moisture content.

When a recipe calls for three or more eggs â as many cakes do â the eggs perform a vital function and need to be replaced with an ingredient that can deliver a similar effect.

In recipes for baked goods that have a light, airy texture, replace eggs with an ingredient that provides lift. Any of the following ingredients can replace one whole egg in a recipe:

Half a small, ripe, mashed banana. This substitution gives the food a mild banana flavor, which can be nice in recipes for muffins, cookies, pancakes, and quick breads.
1/4 cup of any kind of tofu blended with the liquid ingredients in the recipe. Light or reduced-fat tofu cuts down on the fat and calories in the finished product.
1-1/2 teaspoons of a commercial vegetarian egg substitute, such as Ener-G Egg Replacer, mixed with 2 tablespoons of water. This product is a combination of vegetable starches and works wonderfully in virtually any recipe that calls for eggs. Natural foods stores sell it in 1-pound boxes.
1/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. If you use these foods, know that, depending on the recipe, they may add a hint of flavor. If you want to give the food a lighter texture, add an extra 1/2 teaspoon of baking powder, because using fruit purees to replace eggs can make the finished product somewhat denser than the original recipe.
A heaping tablespoon of soy flour or bean flour mixed with a tablespoon of water. This mixture works similarly to vegetarian egg replacer.
2 tablespoons of cornstarch beaten with 2 tablespoons of water. This, too, works much like vegetarian egg replacer.
1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.
Replacing eggs in casseroles, loaves, burger patties, and main dishes
Some recipes need an ingredient that binds all the other ingredients together. Eggs are famous for acting as the glue that holds meatballs, meatloaf, and casseroles together. Lacto vegetarian and vegan versions of these traditional foods need something to serve the same purpose. Fortunately, you have many options.

As you might suspect, your choice of ingredients to replace eggs in these types of foods depends on the degree of "stick" you need, as well as how the ingredient will blend with the other flavors in the recipe. Cooked oatmeal may work fine as a binder in a veggie burger patty, for example, but may not be a welcome addition to a vegetable casserole if you don't care for the flavor or texture that it brings to the dish.

If you're altering a traditional recipe, you have to experiment a bit to determine just the right amount of an ingredient to serve the purpose. A good starting point with most recipes in which egg acts as a binder is to use 2 to 3 tablespoons of any of the following ingredients (or a combination of them) to replace one whole egg. If the original recipe calls for two eggs, start with 4 to 6 tablespoons of egg substitute.

Tomato paste
Arrowroot starch
Potato starch
Cornstarch
Whole-wheat, unbleached, oat, or bean flour
Finely crushed breadcrumbs, cracker meal, or matzo meal
Quick-cooking rolled oats or cooked oatmeal
Mashed potatoes, mashed sweet potatoes, or instant potato flakes
You can also try 1/4 cup of any kind of tofu blended with 1 tablespoon of flour or 1-1/2 teaspoons vegetarian egg replacer mixed with 2 tablespoons of water.

Replacing eggs in sandwich fillings, salads, and scrambled eggs
Finding substitutes for eggs that are hidden in recipes is one thing; finding suitable substitutes for eggs that are more visible in foods is quite another. Fortunately, tofu looks remarkably like cooked egg whites and functions in much the same way in several popular recipes.

You can use chopped firm or extra-firm tofu in place of egg whites in egg salad. Use your favorite egg salad recipe, but substitute tofu for the hard-boiled eggs. You can even replace regular mayonnaise with soy mayonnaise for a vegan version.
Cubes of chopped firm tofu are a nice addition to a mixed green salad or spinach salad, standing in for the customary chopped hard-boiled eggs. You can also add chopped or minced tofu to a bowl of Chinese hot and sour soup.
Try scrambled tofu instead of scrambled eggs at breakfast. Natural foods stores stock "tofu scrambler" seasoning packets, which you may also find in the produce section of your regular supermarket, near the tofu. Many vegetarian cookbooks give recipes for scrambled tofu. The recipes usually include turmeric to give the tofu a yellow color similar to that of scrambled eggs. You can also use scrambled tofu to fill pita pockets or as a sandwich filling on hoagie rolls.

Some typical american dishes?

Snow

Hi everybody,
I'm italian but I have many american friends who study in my city so I would like to organize an american dinner for them (they've been here for a while and sometimes they complain about how much they miss their food :)), and for my italian friends as well.
When I came to the US my boyfriend made me try a lot of american food (he's american), and I really likes grilled cheese sandwich, sweet potatoes with cinnamon butter, green beans with nuts, macaroni and cheese, corn, coleslaw, garlic bread, onion rings (no meat and no fish, I'm vegetarian), cupcakes, cheescake, muffins and donuts.
What do you guys think I should make? Do you have some more recipes? :)
I don't mind having meat, I just don't know how to cook it cause I've became a vegetarian before I learned how to cook, but maybe my roommates would help me with that :)
(By "having meat" I mean having it at the dinner, for my friends, not myself of course)

What is the best stuffing recipe?

h T

In or out of the turkey? Is there a good veggie recipe? My Aunt thinks I am some kinda "answers expert" so I apologize she isn't on here asking herself she made me! LOL So any help you can give.

Answer
i like it out,....safer.. i just made this great vegatarian stuffing...I added all the 'optionals' and it was fantastic. I didnt shape it into a meatloaf like shape tho, just put it in a casserole dish

1 (1 pound) loaf day-old bread, torn into small pieces
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can vegetable broth
2 tablespoons water
1 teaspoon poultry seasoning
salt to taste
ground black pepper to taste
1/2 cup wild rice, cooked (optional)
1/4 cup dried cranberries (optional)
1/2 cup fresh mushrooms (optional)
1/2 cup chopped pecans (optional)
1/4 cup cubed apples (optional)

DIRECTIONS
Mix together the bread, cream of mushroom soup, vegetable broth, water, poultry seasoning, and salt and pepper to taste. Add any or all of the optional ingredients as desired. It will be sticky. Shape into a loaf and wrap in (nonstick, sprayed) foil to bake.
Bake for about an hour at 350 degrees F (175 degrees C). You can slice it like a meatloaf and serve.

Does anyone have a recipe for turkey meatloaf that does not call for eggs?

Jo Jo

I'm on a special diet and cannot eat dairy (including eggs), tomatoes, or really any processed food. I have a hankering for some veggie turkey meatloaf and am looking for a recipe with no eggs. Will oil work?
Thanks!

Answer
Turkey Meatloaf

1 medium onion, quartered
2 carrots, each cut in 2 or 3 pieces
2 stalks celery, each cut in 2 or 3 pieces
1 handful spinach, washed
3/4 pound ground turkey breast
3/4 pound ground turkey thigh meat
1 cup cooked quinoa
2 teaspoons dried thyme
2 tablespoons chopped fresh parsley
1/2 teaspoon ground sage
1 teaspoon sea salt
4 tablespoons organic ketchup, plus more for brushing

1. Combine onion, carrots, and celery in a food processor and pulse until roughly chopped (do not purée).
Transfer to a large bowl.

2. Preheat oven to 375°.
Place spinach in food processor and pulse until finely chopped.
Add to onion mixture.
Add remaining ingredients to bowl and mix with your fingers.
Form into a large loaf and transfer to a 9x5-inch loaf pan.
Brush with additional ketchup.

Bake for about 1 hour, until a meat thermometer reads 165°.
Cool 5 minutes before slicing.

http://www.food.com/recipe/really-good-vegetarian-meatloaf-really-33921

I made a vegetarian meatloaf, but before I became vegetarian, I never really had meatloaf. Much less I don't know what it supposed to taste like. I followed the recipe and the top was done but the inside was somewhat mushy. It's good though, but I'm not sure if this is what supposed to happen? Do I need to put it in the oven longer? I'm not sure. Thanks!

Answer
Yeah, meatloaf is quite mushy by nature. That's part of what makes it so delicious, actually.

Whether I use meat (for husband) or lentils (for both of us), I try to let the loaf 'stand' for about 5 minutes or so once I take it out of the oven. This helps the juices redistribute and that helps firm it up.

Here's my recipe:

1 19oz can red lentils, drained and rinsed, then shaken dry in the colander (eliminating a lot of extra moisture)
salt and pepper to taste
1/2 cup finely diced onion
1/2 cup finely diced pepper (green pepper looks pretty, but use what's on hand)
1 egg, lightly beaten (or egg replacer if going for something vegan)
8 oz canned tomatoes with juice
1/2 cup quick oats.

Combine it all and press into a loaf pan.

Glaze:

1/3 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon mustard (use your favourite... grainy dijon is awesome, but use yellow or regular dijon if that's what you have).

Bake at 375 for an hour, and let stand for 5-10 mins afterwards.

This loaf will firm as it cools to the point where you can make 'meat'loaf sandwiches out of it for lunch the next day (awesome on soft bread with mayo....)!

Anyone have any tasty, HEALTHY vegan/vegetarian recipes? ?

stevie

I want to use more lentils and beans too!

Only thing is I hate zucchini and cucumber and peas (beans are fine, I don't know why)

I'm not looking for websites (unless you've got a really good one) just want to shake it up a bit, I love to cook. Nothing with too much cheese or fat thanks, I don't like that yuck feeling I get after something fatty or oily.

Seitan vs tofu "turkeys"?

Brook

So last year for Thanksgiving I made a stuffed tofu loaf ("tofurkey" if you will.) I really enjoyed it, but I've been eating a lot of soy lately, so I'm thinking tofu may not be the greatest thing to have for Thanksgiving dinner (and lunch the next few days.) My little sister, though, insists on having a fake turkey that night. So I was wondering if anyone has ever tried making a stuffed seitan loaf/turkey? I've never had seitan, but I've heard great things about it. Anyone have any reviews or tried and true recipes? I'm not really interested in premade products if there are any, but tips on making just plain seitan would be welcomed as well. Thanks in advance! :)
2b2gbi and marsh: I am not a fruitarian, nor does my religion prohibit me from causing harm to plants. If you believe that people should refrain from eating or using plant products, that is your business, but I would prefer that you do not preach to me as I have not and will not preach to you. Also, your responses in no way answer my question.
Oops, I guess those two deleted their answers. Please ignore the above added details. :)

Answer
Seitan roasts are quite easy to make and a delicious alternative to soy turkey roasts. This recipe I have made and is quite delicious http://www.youtube.com/watch?v=npw2LKpag5o&feature=channel. The exact recipe with measurements can be found at everydaydish.tv. I halved the recipe since there are only a couple vegetarians in my family. You can make this seitan roast fancy by adding a glaze to it and by using the puff pastry (most puff pastry is vegan, just check the ingredients) crust.

Another suggestion I have is this vegetarian meatloaf. http://www.vegnews.com/web/articles/page.do?pageId=1489&catId=11 I've made this too and it's really tasty. I usually like to add extra sauteed onions, garlic and mushroom for more flavor. I like that this recipe contains less processed foods. However, it doesn't taste anything like turkey, but it is another option that goes great with traditional Thanksgiving side dishes.

Any good vegetarian recipes? Suggestions?

Jessica

I was vegetarian (ovo-lacto) for about a year in high school. While I loved the diet and had no issues leaving meat behind, I was not exactly the healthiest eater and did not have a family to feed. I am considering making this lifestyle change again. Do anyone have any suggestions for meat replacement? We already eat tons of veggies and I always offer variety. Any good recipes with tofu/other meat replacements? For now, we would still consume dairy/eggs, with a goal of going totally vegan slowly.

Answer
This dish made all my meat-eating family members go gaga.

Vegetarian Meatloaf:

Ingredients
1 (12 ounce) bottle barbeque sauce
1 (12 ounce) package vegetarian burger crumbles
1 green bell pepper, chopped
1/3 cup minced onion
1 clove garlic, minced
1/2 cup soft bread crumbs
3 tablespoons Parmesan cheese
1 egg, beaten
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon parsley flakes
salt and pepper to taste
Directions
1.Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
2.In a bowl, mix 1/2 the barbeque sauce with the vegetarian burger crumbles, green bell pepper, onion, garlic, bread crumbs, Parmesan cheese, and egg. Season with thyme, basil, parsley, salt, and pepper. Transfer to the loaf pan.
3.Bake 45 minutes in the preheated oven. Pour remaining barbeque sauce over the loaf, and continue baking 15 minutes, or until loaf is set.

I usually have to cook it about an hour for it to set and I also mixed barbeque sauce and ketchup instead of just BBQ. Hope this helps! :)

Does anyone have a recipe for vegetarian "meatballs"?

Molly

My mom has this recipe for AWESOME meatballs and sauce. I recently stopped eating meat, but I do really miss that dish! It's even been christened "Molly Meatballs" after me, LOL. :)

So I was wondering, is there a recipe for "veg-balls" or something? (I was figuring I would just use the same sauce to coat them like in the original recipe.)

Thanks!

Answer
http://www.recipezaar.com/Vegetarian-meatballs-11028

Read the reviews for pointers. Here's what one reviewer said:

This is easily the best meat substitute recipe I've found. I altered the recipe a bit to make it more like an actual meatball recipe. The most helpful thing you can do is to grind up the walnuts in a food processor. Otherwise, your meatballs have a little too much crunch in them to pass for meat. Once you do that, take out a 1/4 cup of the cheddar cheese, and replace it with parmesan cheese. It also helps to add basil, oregano, parsley, garlic, and a little salt and pepper. Make you sure you keep turning the meatballs every few minutes as you brown them in the oven, or they will burn. Then, when finished browning, instead of pouring vegetable broth over them, throw them right into your pot of pasta sauce to finish cooking. These will look and taste like real meatballs. I've already had three meat-eaters tell me they could not tell the difference!! Highly recommended.

So many glowing reviews and so many people saying they couldn't tell the difference between this and meatballs.

Here's another:
Update: I have since made these for potluck dinners and NO ONE believes me when I tell them that they have no beef in them. My brother in law is a meat and potatoes kind of guy and declared to my sister that they were "the best meatballs he had ever had!" I decided to experiment a little and tried the mixture in a meatloaf...very tasty. My next experiment is to see if it can replace ground meat in tacos or chili

Wow!! I can't wait to try them myself!!

oh sorry i got off subject boca meatless products are great the grond boca meat is great in meat loaf

Tips on a vegetarian diet for a week?

icurious

My doc said this would be good for me. I just wanna know the food that i should eat. Thanks.

Answer
Well, it can be very simple, especially if you are just vegetarian and not vegan. In your frozen foods section you will find morningstar farms products, which are especially good, and also boca....

You can get the morningstar farms "grillers recipe crumbles" which is a vegan substitute for ground beef. I use this to make tacos, and spaghetti with "no-meat" sauce.

Since it's spring time and grilling season is here (where I live anyway), you can do grilled veggie- kabobs....You can eat rennet-free cheeses (sargento is animal rennet free, except their harder cheeses (parmesan, asiago, and provolone, etc))

Make some fab salads, or blackbean burgers (can of beans, some crackers and an egg or so, you make it sorta like a typical meatloaf and then form patties for the grill).

Good Luck, and when in doubt, check out some v&v recipe boards or vegetariantimes.com

Does anyone know a really good vegetarian meatloaf recipe?

i want to make one but i cant find a recipe that looks good... i don't want anything that looks unappetizing.

Answer
If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!
