What meals could I make using lentils apart from soups?

I have found two really good lentil recipes that I like a lot. One is for a vegetarian 'meatloaf' and the other is a broccoli lentil and rice casserole. There are many other recipes for lentil casseroles you can find on the internet. Indian dishes also often use lentils in curries, you can find these recipes by searching for Indian Daal recipes.
Lentils are also good for making veggie burgers or vegetarian sloppy joes.

I usually add more tomato sauce than the recipe says. Sometimes I also sub the egg out with flaxseed (1TBS of ground flaxseed + 3 TBS of lukewarm water + mix until gooey= egg substitute for just about any recipe, including baking).
Also I like to spread ketchup over the top before I put it in the oven.

I am not vegan so I sometimes substitute parmesan or other cheese for the nutritional yeast and just use real butter. I've also made this recipe with asparagus instead of broccoli, or both together and it is very good. There are similar recipes on the internet but this is my favorite so far because it only takes one dish and is so easy to make, you don't have to precook anything, you just mix it all together and stick it in the oven.

I want to try different varieties of meatloaf, but something of the originality. I don't want anything that is too spicy (and I know some people like to put some hot spices into foods). Any kinds of recipe's for meatloaf is okay, but please make it easy and simple.

First of all, I'm a vegetarian. Okay, I eat fish, but so what! If I were to start eating meat again (which, after 15 years, is unlikely), there are two places I'd start: a Monte Cristo sandwich (frikkin divine--with mango chutney or honey!) and the meatloaf my mom used to make.

Actually, it was late in entering our family meal repertoire, and it was courtesy of the soup mix from Lipton.

I'm sure the Alton Brown recipe is fantastic. Haven't tried it, as Alton was probably still trying to be a cameraman when I last ate meat, but if you want to try the Lipton one (which looks dang easy), check the link below. I'm including a second link, which, according to a person who lost the Lipton recipe, is the first one he/she's liked since. Good luck.

Oh yeah, and stop eating that wicked meat. Unless you REALLY like it.

I teach a middle school biotechnology class and we are talking about agriculture biotechnology. I really want to demonstrate how to make cheese with rennin in class but can't seem to find a recipe I used a while ago. I know it was a mozzarella cheese that we made last time but any would be fine.

I want to try to make a mock meatloaf out of soy crumbles. Does anyone have a recipe that you have actually tried? I already know there are countless recipes on line but I'm looking for an already tried recipe that's tasty : )

Have you tried that recipe? I've seen it online and the reviews suggest it falls apart and does not form because there is no binding agent.
I ended up finding one with Gimme Lean and made it last night. My omnivore hubby said it tasted like meatloaf LOL

Best Ever Vegan Mini Meatloaf
INGREDIENTS
Makes 10 mini meatloaves. Cut in half if you aren't feeding 3 growing boys.
- 2 8.5 oz pkgs tempeh, simmered in boiling water for 10 mins, cooled, then coarsely grated
- 1 large onion, coarsely grated
- 4 cloves garlic, finely grated
- 1 cup instant oatmeal
- 2/3 cup vital wheat gluten
- 2 tsp ground fennel seed
- 1 tsp sage
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp marjoram
- 3 tbsp soy sauce
- 2 tbsp HP sauce
- 2 tbsp BBQ sauce
- 2 tbsp olive oil
- 1/2 tsp browning sauce (optional)
- 1/4 cup (or more) water
Glaze
- generous 2/3 cup ketchup
- 1/2 cup brown sugar
- 1 tsp mustard
METHOD
Preheat oven to 350 degrees. Oil a 9 x 13 baking pan.
1. Mix grated tempeh, onion, garlic, oatmeal, flour, and spices in a large bowl. The spices are really up to you. I like a well spiced and complex flavour.
2. Add in sauces and oil, and enough water so you are able to mash everything up with your fingers. Knead/mush/mash for a few mins to mix everything well.
3. Divide dough into 10 pieces and shape into small loaves. Actually, they end up looking like lumps/rocks, not really laoves. Place into oiled pan.
4. Mix together ingredients for the glaze and spoon evenly on top of each loaf. Make sure the whole loaf is covered.
5. Bake, uncovered, for 50-60 mins, until glaze darkens.

Bucking Horse #6 from the Marlboro Country cookbook
4 cloves garlic, minced
1 large onion, finely chopped
1 each, celery rib and carrot, finely chopped
2 Tbsp. butter or margarine
2 tsp. salt
1 1/2 tsp. black pepper
1 Tbsp. Worcestershire sauce
2 lbs. lean ground beef
1 lb. each, lean ground pork and veal
1 cup fresh bread crumbs
1/2 cup milk
3 eggs
1/3 to 1/2 cup chopped parsly
1/2 cup Ketchup
In a heavy skillet cook first 4 ingredents till soft
stir in next 3 ingredents, remove from heat and cool.
In large bowl combine meats, cooked veggies, bread crumbs soaked in milk, eggs and parsley. Mix well. In shallow pan shape into 2 loaves. Bake 350 for 1 hour, spoon ketchup over loaves and bake 30 mins. or until meat thermometer reads 155. 10-12 servings. (I have cooked this with only pork and burger, I subbed more pork for the veal, someday I will try it with the veal)

I don't like anything fancy, just a simple meatloaf. I really like Morning Star's Veggie Crumbles, so I'd prefer to use that. And I don't want to spend a long time cooking it. Thanks.

I grate carrots, turnips, potato's, and then fine chop my onions and celery in a food processor, saute it all in a bit of oil, cool the mix, then add some TVP or Soya crumbs, chickpea flour, seasonings, tomato paste or organic ketchup, now I use liquid egg white but that is an option, you can use veggie broth, then I spray a piece of foil with veg oil or PAM, and mold it round in the foil roll the ends and bake it for 35-40 minutes at 350 d F, then unroll it and glaze it with a ketchup or BBQ sauce for 15 minutes, let it go for 10 more minutes, the let it sit for 5 minute before I slice it, I serve it with mashed potato's, veg and sometimes make a mushroom gravy with a tin of mushrooms and thicken it with cornstarch or flour slurry, adding some spices and herbs to flavour it, a bit of soya sauce to darken it to look like meat gravy.

I'm vegan and I normally cook only vegan food but I'm getting married soon and my boyfriend eats poultry, fish and drinks milk and I want to make him a full homemade meal just for him but I don't know what to make because I don't cook with those things. I've never cooked for him before so I want it to be really special. He loves chicken, beans, and rice so I need a really good recipe with these. I also want to make him a really good dessert. Something you've made before and everyone loved. Thank you!

You can use ground chicken or turkey or even crumbled tofu with soy sauce-- and he may never know that there was no meat with tofu-- just use ample BBQ sauce to mix

Shepard's Pie:
-Brown 1 pound beef/ ground turkey
-Add 1-2 cloves of garlic, 1 1/2 tsp Worcestershire sauce, and 3/4 cup ketchup
-Cover and simmer 20 minutes
-Coat casserole dish w/ nonstick cooking spray

1st Layer - meat sauce
2nd Layer - Green beans and corn
3rd Layer - mashed potatoes
Top with cheddar cheese (as much as you want)

350 degrees (preheated oven) for 30 minutes - bake uncovered


Meatloaf
1 1/2 pounds ground meat
1 slice of bread
1 egg
1 package of Lipton's Onion Soup Mix
pepper to taste
4 TBSP ketchup
1/2 cup half and half

*SAUCE*
4 TBSP apple cider vinegar
2 TBSP packed brown sugar
1/2 cup ketchup

preheat oven to 350 degrees

Mix sauce together until smooth and set aside

Add all ingredients together. Put in a loaf pan. Pour suace over and cook for 1 hour 15 minutes. Do this whether you use the sauce or not

or

Try Zatarain's Dirty Rice or Jambalaya Mix. With the dirty rice mix you have to use ground beef. With the Jambalaya Mix you can use chicken or smoked sausage.( *It taste best with sausage).

My version of ghoulash:

Ground Beef with vegetarain beans(pork and beans without the pork) with chopped onions, picante sauce, and tomato sauce. Serve over white rice.

Pasta Salad with veggies: Tri-colored rotini pasta with chopped onions, tomatoes, cucumbers and green olives. Mix with Robusto Italian Dressing. Add a little seasoned salt and black pepper. Chill in the frig.

Chicken Pettazini:

Spaghetti with chopped, grilled, boneless chicken breast, Four Cheese white sauce or the Roasted Garlic and Parmesan cheese white sauce. You can also add green pepper if you like.

Chocolate stuffed french toast

French bread
chocolate chips or chunks/morsels/etc
5 eggs
1 C milk
1 ts each cinnamon & vanilla

The night before you want to serve this:


Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.
Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

Preheat oven to 400F. Bake 20-25 minutes uncovered.

Vegans: Do you ever crave for foods that you have blocked from your diet?

Boxed foods are disgusting,I only like to eat healthy foods.For these,once again check out the websites I gave you or hit your health food stores. Meat,is even more disgusting. The only things I may crave are dishes from my childhood. If I feel sad or homesick and I want something homey,I may make something like vegan stuffed peppers or mashed potatoes with really great side dishes.Those are both things my mom would make,only the mashed potatoes dish was usually with chicken. I've learned to make everything my mom would make when I was growing up,but vegan style. Even meatloaf,or spaghetti and "meat" balls.
There's no reason to have an unfulfilled craving as a vegan. I think I have a recipe for everything including vegan marshmallows for S'mores.
Here's some great cookbooks that have a lot of those great "childhood" recipes but veganized. They are all by Sarah Kramer and only some call for vegan substitute foods-"How it all Vegan", In the Garden of Vegan" and "La Dolce Vegan". They're lots of fun. Give them a go. Have fun with your diet and be creative.

I steam some broccoli and make a baked or mashed sweet potato and it is a delicious comfort-food meal.

I can serve it as a starter or a whole meal. It can be paired with fajitas, tacos, enchiladas, etc. (all which can be made vegan!). I love the recipe because it gives a certain amount of spice to it, but you can go wild and make it super hot (which is what I like to do).

I don't know about recipies necessarilly, but the smartlife sausage tubes are really low in points. My boyfriend used a tube of that and a tube of the smartlife ground beef along with a block of vegan cheddar cheese (the brand name escapes me right now, but they sell it at whole foods) and some ketchup to make a pan of vegan meatloaf that was 15 points for the entire thing.

3rd Layer - mashed potatoes
Top with cheddar cheese (as much as you want)

350 degrees (preheated oven) for 30 minutes - bake uncovered


Meatloaf
1 1/2 pounds ground meat
1 slice of bread
1 egg
1 package of Lipton's Onion Soup Mix
pepper to taste
4 TBSP ketchup
1/2 cup half and half

*SAUCE*
4 TBSP apple cider vinegar
2 TBSP packed brown sugar
1/2 cup ketchup

preheat oven to 350 degrees

Mix sauce together until smooth and set aside

Add all ingredients together. Put in a loaf pan. Pour suace over and cook for 1 hour 15 minutes. Do this whether you use the sauce or not

or

Try Zatarain's Dirty Rice or Jambalaya Mix. With the dirty rice mix you have to use ground beef. With the Jambalaya Mix you can use chicken or smoked sausage.( *It taste best with sausage).

My version of ghoulash:

Ground Beef with vegetarain beans(pork and beans without the pork) with chopped onions, picante sauce, and tomato sauce. Serve over white rice.

Pasta Salad with veggies: Tri-colored rotini pasta with chopped onions, tomatoes, cucumbers and green olives. Mix with Robusto Italian Dressing. Add a little seasoned salt and black pepper. Chill in the frig.

Chicken Pettazini:

Spaghetti with chopped, grilled, boneless chicken breast, Four Cheese white sauce or the Roasted Garlic and Parmesan cheese white sauce. You can also add green pepper if you like.

Dessert

Chocolate stuffed french toast

French bread
chocolate chips or chunks/morsels/etc
5 eggs
1 C milk
1 ts each cinnamon & vanilla

The night before you want to serve this:


Cut a loaf of French Bread into very thick slices. In each slice make a 3/4" cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.
Place into greased 9x13" baking dish. Mix up the eggs, milk & cinnamon/vanilla. Cover & refrigerate overnight.

Preheat oven to 400F. Bake 20-25 minutes uncovered.

Boxed foods are disgusting,I only like to eat healthy foods.For these,once again check out the websites I gave you or hit your health food stores. Meat,is even more disgusting. If I ever want something with a meaty texture then I just make some seitan.Also,I will sometimes eat tempeh,or tofu. If you really "need" something even more meat like try vegan sausages,burgers or "hot dogs". Cheese,I either use nutritional yeast or soy,nut or rice cheeses.
The only things I may crave are dishes from my childhood. If I feel sad or homesick and I want something homey,I may make something like vegan stuffed peppers or mashed potatoes with really great side dishes.Those are both things my mom would make,only the mashed potatoes dish was usually with chicken. I've learned to make everything my mom would make when I was growing up,but vegan style. Even meatloaf,or spaghetti and "meat" balls.
There's no reason to have an unfulfilled craving as a vegan. I think I have a recipe for everything including vegan marshmallows for S'mores.
Here's some great cookbooks that have a lot of those great "childhood" recipes but veganized. They are all by Sarah Kramer and only some call for vegan substitute foods-"How it all Vegan", In the Garden of Vegan" and "La Dolce Vegan". They're lots of fun. Give them a go. Have fun with your diet and be creative.

If you have ever worked with Textured Vegetable Protein (TVP), you can use this as a substitute in any ground beef recipes, or you can use the fake meat crumbles from morningstar or Boca. I prefer TVP because it's just straight up vegetable protein and not "fake meat" and it's all natural, has a really great texture, it's easy to use and it's really cheap. The only thing is that you have to get it at a natural food store. If you live by a Whole Foods, you can get it in bulk. It comes dry and you just boil some water and watever other flavors you want (spices, soy sauce, etc) then throw in the TVP and simmer it on low until it's absorbed all the water.

I'm in the process of writing a cookbook right now that has tons of TVP recipes!

By meatloaf, I mean something that sort of resembles a meatloaf made from ground beef (except using soy flour or some other vegetarian ingredient). It can contain eggs and/or milk-- no need to be vegan. Thanks.

Here's the meatloaf recipe I use...I found it on vegcooking.com. The ironic thing about this is that I HATED meatloaf when I was a meat-eater, but I like this version (go figure!). Enjoy!

~Mama's Mock Meatloaf~
Better than what mom used to make. Serve it with ketchup, mashed potatoes, and gravy.

1 medium onion, diced
1/2 green pepper, diced (optional)
3 Tbsp. vegetable oil
2 packages beef–flavor Gimme Lean Beef
1/4 cup oatmeal, dry
2 slices white bread, crumbled
3 Tbsp. ketchup
2 tsp. garlic salt
1 tsp. pepper

Coating ingredients:
1/4 cup ketchup
1/4 cup brown sugar
1/2 tsp. dry mustard
1/2 tsp. nutmeg

• Sauté the onion and green pepper in the oil over medium heat until soft. Combine in a bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. Thoroughly mix with a spoon or your hands.
• Press the mixture into an oiled loaf pan. Cover with foil and bake at 375 degrees F for 30 minutes.
• Meanwhile, mix together the ingredients for the coating and set aside.
• Remove the loaf from the oven and turn it out onto a baking sheet. Spread the coating over the entire loaf. Cook, uncovered, for another 15 minutes.

Makes 6 servings

Veggie Meatloaf

You won't miss the meat in this flavorful dish! Serve with mashed potatoes for a great meal! You can also substitute diced eggplant for the mushrooms.

INGREDIENTS:
1 cup uncooked white rice
2 tablespoons vegetable oil
1 onion, finely chopped
1 cup cooked lentils
1 cup chopped fresh mushrooms
1 tablespoon vegetarian Worcestershire sauce
salt and pepper to taste
1 egg, beaten
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried parsley
1/2 cup ketchup

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Meanwhile, heat oil in a small skillet over medium heat. Saute onions until tender. Set aside.
In a large bowl combine cooked rice, lentils, mushrooms, Worcestershire sauce, salt, pepper, egg, garlic powder, Italian seasoning, parsley and cooked onions; mix well. Press mixture into prepared pan; spread ketchup on top of loaf.
Bake in preheated oven for 45 minutes.


Hariton's 'Famous' Vegetarian Casserole

This is a very tasty dish consisting of all kinds of fresh vegetables and herbs baked in the oven. This will tantalize your taste buds. It has been a sell-out at our Greek Church at every function for five years now. We serve this on toasted, warm pita bread.

Original recipe yield: 36 servings.

INGREDIENTS:
8 large eggplants
8 large potatoes
8 green bell peppers
8 large onions
8 summer squash
6 tomatoes
1 pound fresh green beans
1 pound whole fresh mushrooms
2 bulbs garlic, cloves separated and peeled
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
1 (15 ounce) can tomato sauce
3/4 cup olive oil
salt and pepper to taste

DIRECTIONS:
Prepare the eggplant before assembling ingredients, by cutting them into 2 inch chunks and putting them into an extra large bowl with salted water to cover. This will draw out the bitterness from the eggplant. Let this sit for about 3 hours.
Preheat oven to 375 degrees F (190 degrees C).
Cut the potatoes, green bell peppers, onion, squash and tomatoes into 2-inch chunks. Cut the green beans and mushrooms in half and peel the garlic cloves.
Drain and rinse the eggplant, then combine it with all the other chopped vegetables, the dill, oregano and basil and place all into a 3x13x18 inch roasting pan. Pour the tomato sauce and olive oil over all.
Bake at 375 degrees F (190 degrees C) for 2 1/2 hours, adding a little water about halfway through cooking time to keep moist.


Easy Peach Cobbler
This is a great peach cobbler--so easy a child can make it! It is great right out of the oven served with vanilla ice cream.

INGREDIENTS:
1 cup white sugar
1/2 cup butter, room temperature
1 cup self-rising flour
1 cup milk
1 (15 ounce) can peaches

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a one-quart baking dish or 9 inch square pan, cream together sugar and butter. Mix in flour and milk until smooth. Pour peaches and their juice over the top.
Bake 25 to 30 minutes in the preheated oven, until golden brown.

Note: I didn't have self rising flour, so I used (according to a "substitutions" website I found) 1 cup of flour (minus 2 tsp), 1/2 tsp salt and 1 1/2 tsp baking powder for every cup of self rising flour.

I mostly use chicken breasts, ground turkey, and pasta. Things like meatloaf and spaghetti and chicken tacos come up often. What are some easy favorites that can be done on a weeknight or in the Crockpot that are simple and cheap? All ideas are welcome. I love vegetarian recipes too

I am also a teen and have been a vegan for almost four years now. I call this my super, extra, wholesome carrot loaf recipe:

2 tablespoons water or broth, for steam-frying
1 onion, diced
1 large garlic clove, minced
1 large wholesome carrot, peeled and grated
2 celery ribs, diced
1 cup mushroom, cleaned and chopped
2 cups veggie burgers or veggie crumbles
1 cup uncooked quick oatmeal or oat bran
1/4-1/2 cup vegetable broth, as needed
1/2 cup cooked oatmeal
1/4 teaspoon dried thyme
1/2 teaspoon dried sage
1 teaspoon dried basil
1/4 cup minced fresh parsley
1/4 teaspoon dried oregano
1/4 teaspoon dried rosemary
1 teaspoon ground cumin
3 dashes vegetarian worcestershire sauce
2 tablespoons soy sauce
Directions
1Preheat the oven to 350º. Spray a loaf pan or 8x8 square baking pan with nonstick spray and set aside (an 8x8 pan makes a crisper loaf).
2Grind the into a coarse meal using a food processor or spice/coffee grinder. Place in a large mixing bowl and set aside.
3Sauté any vegetables you've chosen in the water or broth for steam-frying until soft. Add to the large mixing bowl along with all the remaining ingredients. Mix and mash together well, adding only as much liquid as needed to create a soft, moist loaf that holds together and is not runny (you may not need to add any liquid if the grains and protein are very moist). Add more binder/carbohydrate as needed if the loaf seems too wet.
4Press mixture into the prepared pan and bake for 45 minutes to 1 hour, or until cooked through.
5Let the loaf cool in the pan for 10 to 15 minutes, then turn out onto a plate or platter and slice. Serve with potatoes, vegetables, and vegetarian gravy, if desired.
6Cold leftover slices of make a great sandwich filling

I absolutely love animals and am debating about whether or not I should become a vegetarian. The reason I want to become a vegetarian is more so of a control issue. With all of the wars, issues with the government etc. I feel like my lifestyle is one of the few things that I have some control over. I like meat but I don't like the fact that meat without growth hormones and junk doesn't taste good as opposed to meat that does include the harmful chemicals. Also I don't like that unless I personally start my own farm that I can't know for sure how the animals are treated and if they are killed humanely. I'm worried about becoming a vegetarian because I like meat (corn beef, steak, ribs, bacon, hot dogs, meatloaf, pork chops etc.) but at the sametime I don't want to contribute to the inhuman murder of animals. Another thing is that when I brought it up to my parents they are fine with me becoming a vegetarian but they said they aren't planning on fixing any special meals for me and that if we're having meat that I will have to fix something myself for dinner. The second thing I'm worried about is staying healthy. A couple of months ago I was anemic and had to take iron supplements and I'm worried about being anemic again as most sources of iron come from meat. If I do decide to become a vegetarian how far should I take it. Should I just rule out all meat (including like chicken stock etc.?). What are the pros and cons of becoming a vegetarian? Also a friend of mine told me that eating meat puts you at higher risk for cancer...is that true? That kinda freaked me out. Then again there are always talks about people claiming almost anything is linked to cancer.

LIFE puts you at a higher risk for cancer. But some things are associated with cancer.
My sister was a vegetarian for decades, and relied on soy for her protein source (soy and quinoa are the only complete proteins .. otherwise you are eating legumes and grains together). She got thyroid cancer, and had to have her thyroid killed, and now she has to mess with adusting the level of synthroid medication (artifical thyroid hormone).
She found out a couple years after her thyroid cancer that too much soy in the diet is associated with thyroid cancer.

Pro's of vegetarianism:
1. It's cheaper
2. You get to feel proud about yourself as long as it's not arrogance)

Con's:
1. You have to understand protein sources and how to get complete protein in your diet. AND Iron sources too. This means you have to preplan all your meals, checking out the nutritional content ahead of time .. until you have it all in your head.
2. You have to like legumes (beans, lentils, etc) and be prepared for more flatulence. Cheese and eggs have protein but are not healthy to eat on a daily basis. Nuts are fattening. Soy is okay but not every day. Quinoa .. we don't know yet. Best not to rely on it every day.
Most of your protein will be legumes eaten with grains (beans and rice, peanut butter on whole wheat bread, lentils and rice, etc).
3. It takes a lot more complicated recipes to make the food tasty. It's not like you can slap a bunch of garbanzo beans on the barbecue and cook then up in 10 minutes for supper. In the case of your parents, its the difference between having to cook at all and having to do complicated meals.

Your mother's primary concern will likely be your health, so be sure you can answer her questions. Have sources that demonstrate that it is perfectly possible for you to grow up strong and healthy without eating meat (or having a gallon of milk and 6 eggs a day to "make up for it").

Know the nutritional requirements for a fe/male your age and size (taking into account level of physical activity) and come up with examples of good vegetarian sources of the various nutrients. She will probably be mostly concerned about protein and iron. She might ask about B vitamins. Look it up, know how much you need and where you'll get it from.

Do some additional research so you can point out the health benefits of vegetarianism. (Not only do you want to demonstrate that it isn't dangerous to be a vegetarian, you want to show that it's actually beneficial.)

Get some recipes and cookbooks and learn how to make some stuff. You will be cooking for yourself a lot more these days. It is unfair and immature to expect your mom to start making a separate meal for you every night, so get ready for some Emeril action. (Note: yelling BAM! randomly might make your parents think you've gone off the deep end, so keep it down to a dull roar.)

If you are old enough to work, get a part-time job so you can purchase cookbooks and any special ingredients you may want (tofu, seitan, nut milk, etc). If you get an allowance or have money from birthday or holiday gifts, use some of it to invest in literature and/or exotic food. Heck, see if Mom and Dad will pay you to wash the car or mow the lawn. Use that money to buy stuff. (Being willing to invest your own time and money in a venture shows people that you're serious.)

Offer to help cook dinner once in awhile. Say everyone is having meatloaf for dinner. Say that you'll do the mashed potatoes and veggie. Make the salad as well. Make a rich mushroom gravy for everyone to use (if you make your own stock for it, it'll be extra-good). Heat yourself up a Boca burger (or whatever "central protein piece" you want) and help Mom serve. If everyone is having spaghetti with meatballs, ask Mom to buy the chunky extra-veggie sauce and set some aside for you before she adds the meatballs. Make the garlic bread and chop the onions, garlic, mushrooms, etc for her. In other words, you need to demonstrate that this is not going to create a lot of extra work for her.

Q. I'm going to a public school from a Catholic school, and there is a student at this school who has a severe peanut allergy. Normally I would just say, "Screw other people's needs," but no nuts are allowed in the building at all. So my problem is, what will I bring for lunch? What is a good egg replacement when cooking vegan TVP burger patties? any recipes?

I am just starting to cook with TVP granules and really would like to make some burger patties.

I am a former chef and when I make mine with TVP, I generally puree some of the veg in the food processor add some chickpeas and chickpea flour, even a bit of tahini sesame paste, available at Health food stores or any Indian market, even some whole wheat flour.

Also, at the health food store there is a protien powder made from veggies, it is a good binder for burger, veggie meatballs for spaghetti sauce and a meatloaf made with TVP, I use it at least once a week, and it is great in a veg chili too.
