Help! What is your favorite vegetarian dinner? We recently converted and need ideas!!!?

Q.

A. I was raised vegetarian and love the worthington and Loma Linda foods. You can find them in most stores in a section by themself. I asked a manager of a major grocery store one time, showed him a couple labels and they stocked it for me.

The canned fake chicken has a taste and texture of it's own but is really delicious in my opinion. You can do countless things with the vegeburger. I have fooled non vegetarians with vegeburger making a meatloaf and they loved it. I told them what it was after they took a couple bites and told me it was great, they did not believe they were NOT eating real meat!
One of my favorite all time for lunch is sliced nuteena (canned Loma Linda foods) and mayo with or without tomatoe maybe a sprinkle of salt if you like. One really special treat for me is the loma linda (made in loma linda, CA) is the OHHHH Tender bits. Here is one way I love to prepare and any non vegearian I served to ( three of them at different times) that has tried them loves them!!
RECIPE #1
1. With a fork, dip a tender bit from the can one at a time, into bowl of seasoned approx 1 cup of flour, or use a zip lock and shake it like shake n bake. (I eat these cold too, a couple while I am cooking them before I put the flour on)
2. Place floured tender bit into hot cooking grease on medium heat, olive oil preferred but whatever you use.
3. Turn when golden brown. Usually cook on three sides to avoid flour being dry. It will just start to go crispy.
4. serve hot.

RECIPE #2 (lunch)
you can do this with no dishes, just a fork or knife to spread the mayo.

Ingredients: Bread, Nuteena (good alone too!!) This 'meat' has a nice peanut taste.
1. open can of Loma Linda nuteena on both ends. You may have done this trick with dog food or cold cranbery sauce, if not you gotta try it. push the food through by pushing into the can with both lids cut but not removed, a little ways out one end. Carefully remove the lid that you pushed out and use the lid to slice off pieces and place on mayo'ed bread. That is the best way to remove all the meat in one piece.
Or. You can open one end, use a knife to cut a slice out at a time from the can by slicing at a slight angle with the first slice thicker on one end and it comes out sorta oblong.

3. The frozen garden burgers are wonderful for breakfast lunch or dinner if you fry them in hot butter, or olive oil or choice of frying substance, and while hot, place on mayo'ed toasted or not bread. I like mine with a slice of tomatoe.

This is making me hungry!

I eat a lot of baked potatoes alone with all the toppings for a snack.

I love being a vegetarian, the cost is a litlte high on the canned foods, as you will see in the website below, but I believe it is worth every cent when it comes to eating healthy and especially if you enjoy the flavors. Try one of ecah and go back and get your favorites each time.

A suggestion without intent to offend anyone: Drop into a Seventh Day Adventist Church on a Saturday just about noon, as they are coming out, by nature they all hang out and talk and visit for a few minutes before they go off to eat lunch, or leave a note on the door for one to call you, and ask them for some recipes. They are vegetarians and have all the ideas!! Guaranteed, and some super nice people to boot! I guarantee these are the most non-judging Christian people and care unconditionally about everyone. --Do not fear they are like family even if they do not know you and they will not try to trap you into joining like somme churches I have seen, they will only offer a nice invite if anything!! Lovely people. Any city, guaranteed! Or you can try it on your own, just a suggestion on the Church and I do not wish to offend anyone. I back these suggestions with my heart. Please use them if you wish.


I need a dinner idea! ASAP! I had a great idea and it was turned down : (?
Q. I wanted to make Mac-and-Cheese and Meatloaf for dinner but my mom said no, because she doesn't want to run the oven.

We have meatlovers and vegetarians....So something that could go either way.

Maybe something different, but not scary. Because we have alot of picky kids.

Recipes, websites, or just a food title. Anything helps!

A. I don't blame your mom; it can get pretty hot!

You can make the macaroni and cheese on the stove instead of baking it. You won't have the delicious crust on top, but you make it pretty much the same way. Cook the pasta and then make a cheese sauce with sauteed onions and garlic, milk, cheese, and a little nutmeg, black pepper, and salt. Then, just stir in your pasta and voila.

You can make chili with the ground meat. Or, if the kids prefer, saute onions and garlic, brown the meat and then just add some taco seasoning.

Don't forget to add some veggies! Enjoy your meal and thank you for helping your mom with the cooking.


Vegans - I am looking for RECIPES for your most popular main dish with non-vegitarians.?
Q. In other words, what vegan main course or meal would you serve to a guest who isn't used to vegitarian food?

I specify vegan because I don't want to use dairy, but I am not opposed to a little egg (for you vegetarians reading this question.)

I steam some broccoli and make a baked or mashed sweet potato and it is a delicious comfort-food meal.

I can serve it as a starter or a whole meal. It can be paired with fajitas, tacos, enchiladas, etc. (all which can be made vegan!). I love the recipe because it gives a certain amount of spice to it, but you can go wild and make it super hot (which is what I like to do).

I am still on the fence about the cucumber sauce recipe, but it's quite good. If you're not opposed to a little dairy, you might want to buy the sauce from a store.

A. Strategies for saving money:

Look for specials on meats and vegetables

Buy seasonal vegetables and fruits

Frequent farmers' markets for fun and savings

Processed food coupons are generally a rip off compared to cooking it yourself or buying store brands

Eat lower on the animal - chuck rather than porterhouse, sholder chops braised rather than loin chops grilled

Eat lower on the food chain - chicken instead of cow, beans instead of chicken

Eat vegetarian one or two nights per week.

Plan your week morphing leftovers into later meals. Roast chicken on Sunday, chicken sandwiches on Monday and green salad with chicken and kidney beans for dinner on Tuesday night.

By whole chicken, cut them up yourself and make your own delicious fresh chicken stock with the bones and so forth.

Start the meal with soup, salad or pasta as a separate course, people will eat less of the main dish.

Make your own bread. Store bought french bread costs $3 - the fool proof crusty bread from the NYT cost about $1.25.

Don't buy chips, cookies or boxed cereals - corn flakes are more expensive than you think. Switch to bulk whole grains like rolled oats, bulgar etc.

Make a big pot of bean soup. My husband and I will eat it three times in a week with big smiles on our faces and friends over for dinner one of the nights (with the homemade bread and the salad first course they feel that they have a had a real treat!)

Comfort food are generally comfortable on the budget - meatloaf, mac&cheese, spaghetti and meatballs, tuna noodle casserole, pot roast.

Have fun, we'll survive.

Q. I don't even know where to start. I mostly lived off junk food. I now realize how bad it is and want to change. The healthy food to make at home seems so overwhelming in cookbooks and too much time and complicated for a person that never cooked.

I like to take bay steps. Any suggestions? also for snacks too?

A. Fruit Salad. You could do a lott with fruit and animal cracker, cut up the fruit into cubes and crush some animal cracker on top and put some raisins or something on top.

Craisins or any other fried fruit.

Apple Slices dipped in caramel (Or just plain apple slices)

Pudding cups/Fruit cups

Rice Krispie Bars

Graham Cracker Sandwich with jelly filling

Celery with peanut butter on top, sprinkled with raisins. Call this ants on a log!

Veggie Pizza

Real Fruit Fat Free Popsicles

Trail Mix

Apple Sauce

Yogurt with chopped fruit in it

Chex Mix

Air-popped popcorn with little or no butter

Wheat Thins

Budget Yet Healthy Dinner Ideas:

Ground Beef. You can either cook it with elbow macaroni & spaghetti sauce or you can cook it with alfredo pasta and Hunts gravy (99 cents only). It's delicious. Also, goes well with texas toast.

Broiled Pork Chops. You'll want to have them with steamed carrots and mashed potatoes.

Ground Chicken. I like to cook Ground Chicken with my Yellow Rice (you can buy Goya yellow rice mix for 99 cents) and throw it in the rice and add some corn for a more mexican-style dish.

Meatloaf! You can make it with ground turkey or extra lean ground beef. You can serve with a small serving of mashed potatoes and some peas.

Lean cut of beef with a baked potato and steamed broccoli.

Vegetable Soup.

Burgers (made with extra lean beef) with vegetarian baked beans and Dole Cole Slaw (from the bag).

Grilled Chicken served with peas & white rice.

Pasta Salad (cooked macaroni, add green onions, green and red peppers, pickles, olives (or any vegetable you may like) chopped up of course and for the dressing add zesty italian dressing to taste)

You can also cut the grilled chicken in cubes and add it to a salad.
