Vegetarian Meatloaf that also makes good leftovers for sandwiches?

I have several recipes that I use for vege "meatloaf", but all of mine seem to turn mushy after a night in the fridge, so they don't make good sandwich leftovers. Anyone have a good one that doesn't go mushy?

ok, this recipe may sound odd, but look at the ratings and comments; it's my favorite! leftovers are perfect for sandwiches. super easy to make with basic ingredients, too.

I was there recently and this dish was outstanding. Also they offered a vegan gravy to go with it. That recipe would be appreciated as well.
